  • A comparative analysis of the profitability of pineapple-mango blend and pineapple fruit juice processing in Ghana

    This study analyzes the profitability of fruit juice processing using data from Kudors Fruit Juice Limited at Kasoa in Ghana. The cost involved in fruit juice processing (which includes the capital cost and the operating cost) was obtained from the Company. This study compares the profitability of blend (i.e. fruit juice made up of pineapple and mango blend) with that of pineapple juice alone. The viability of the project was determined using the discounted measures of project worth: Benefit-Cost Ratio (BCR), Net Present Value (NPV) and Internal Rate of Return (IRR). The empirical results reveal that pineapple juice processing had a BCR of 1.03 which means that going into the pineapple juice processing is profitable. The value of the NPV (GHS11,728.00) and IRR (23%) further confirms that pineapple juice processing is profitable because the NPV is positive and the IRR is greater than the discounted factor (21%). The results also showed that it is more profitable to invest in the blend (pineapple and mango blend) than the pineapple juice alone as it yields a BCR of 1.36 which was greater than the BCR of 1.03 for the pineapple juice only. Furthermore, the value of the NPV (GHS176,831.00) which is greater than the pineapple juice only, suggests that the blend is more profitable even though the IRR for both are the same. Moreover, it is also more likely to recover capital investment earlier in the processing of the blend than when one goes into pineapple juice processing only, because the net cash flow in year 2 (GHS 58,146.00) for the blend is more than triple that of the pineapple juice only (GHS17,826.00).These results have policy implications for the development of Agribusinesses in Ghana.

  • The economic efficiency of apple production in terms of post‑harvest technology

    This study analyses how the level of postharvest technology’s development influences the economic efficiency of apple production with the help of a deterministic simulation model based on primary data gathering in producer undertakings. To accomplish our objectives and to support our hypotheses three processing plant types are included in the model: firstly apple production with no postharvest and prompt sale after the harvest, secondly parallel production and storage combined with an extended selling period and thirdly production and entire postharvest infrastructure (storage, sorting-ranking, packing) with the highest level of goods production and continuous sales. Based on our results it can be stated that the parallel production (plantation) and cold storage, so the second case is proved to be totally inefficient, considering that the establishment of a cold storage carries enormously high costs with resulting a relative low plus profit compared to the first type of processing plant. The reason for this is that this type is selling bulk goods without sorting-grading or packaging; storage itself – as a means of continuously servicing the market – is not covered properly by the consumers. Absolute efficiency ranking cannot be established regarding the other two processing plants: plantation without post-harvest infrastructure resulting lower NPV, but a more favourable IRR, DPP and PI as developing a plantation and a whole post-harvest infrastructure.

    In the 21st century a country’s success significantly depends on how it can solve the problems (supply safety, growing prices, climate change, etc.) induced by the application structure of the fossil energy sources with the means of energy saving, energy efficiency and the utilization of renewable energy resources. The utilization of renewable energy sources has positive effects on five key areas: environment protection, energy policies, fulfilment of EU expectations, agriculture and rural development and on the whole of the national economy. The bioenergy – beside fulfilling the national economic aims – it is putting up the value of the role of agriculture and rural development. The role of agriculture is multi-functional in the process. The agricultural sector has an important task in the area of bioenergy to ensure the proper quality and quantity of raw materials for the increase of bioenergy utilization. This also means new sales perspectives and opportunities for the producers. Above all this, the agricultural policy aims for the agriculture and the rural development segment to be the unambiguous winner of the new bioenergy sector and for most of the available profit to stay with the agricultural sector, with the rural players. For this reason encouraging the raw material production it wishes to encourage the producer their primary process and their local utilization. One of the fundamental objectives of the measures is that agriculture should go beyond the raw material production and take steps towards processing and utilization. The multifunctional role in the product chain might mean extra income and more added value for the producers and the active players in the process. The other objective is to promote the local utilization, the scatter of the environmentally friendly energy sources in rural areas, to change the energy is “lying on the ground unutilized” principle while local processing and promoting the utilization, to achieve a lower energy dependency and to optimize and disseminate cost efficient solutions. To realize all this means a great task and a huge challenge for the agricultural government as well as the rural societies and micro regions but might lead to a successful rural development. The range of the tools and measures to fulfil the aims might be very broad, from the regulating instruments to the various subsidies, coordination and dissemination tools. Part of the subsidy schemes are direct production-type of subsidies (the so called direct payments, for example the area based subsidies) and the other main forms are the investment-type subsidies which are for technology development, promotion of competitive production and local processing and for establishing a green energy industry. In the period of 2007-2013 the key elements of the development schemes were drafted in the frame of the New Hungary Rural Development Programme (ÚMVP) and the Environmental Energy Operational Program (KEOP). The available raw materials and the conditions are taken into consideration while designing the development schemes because a successful realization of a product chain means the assurance of the inputs and outputs. The starting point of determining the development direction is the principle of an operation which is sustainable and economical on the long run. In addition such developments are considered reasonable which are viable on medium and long term and bring numerous rural development, environmental and societal returns.

  • DECENT WORK AND COFFEE SECTOR: ARE THE COFFEE ESTATES IN KENYA COMPLYING WITH DECENT WORK IN PRODUCTION AND PRIMARY PROCESSING?

    Coffee plays a big role in Kenya, it contributes to 30 percent of agricultural jobs and country’s exports. However, casual workers within coffee estates still get challenging employment conditions including long working hours, unfair wages, limited social capacity, and lack of collective bargaining that results in poor living standards and job insecurity. And also, no research shows compliance with decent work in the Kenyan coffee sector. This study sought to provide new literature about decent work compliance in production and primary processing within Coffee estates in Kiambu county. Snowballing sampling method was used to collect data among 385 casual workers from EAAGADS, Fairview, Maakiou, and Magumu coffee estates. Descriptive statistics and inductive logic were used to generate decent work indices from statistical indicators explaining each decent work pillar. Decent work indices 0.41 and 0.44 show the low compliance of social dialogue and safety at workplace dimensions respectively. Results, also show that effort has been done under productive employment and social protection dimension as shown by indices of 0.65 and 0.51 respectively. Moreover, there is a need for ILO inspection to ensure whether there is a promotion of decent work practices within coffee production to promote the living standards of coffee casual workers and also the stimulation of sustainable development of the County as well as the Country.

  • What is the Success of High School it Education? An Investigation into Higher Education Students’ Knowledge of Spreadsheet Applications

    Teaching Computer Science in higher education is imperative, even though today’s students have been born into a world where technology is an essential part of everyday life. To efficiently master modern, business, technical and scientific knowledge and to proficiently produce quality results in a work environment it is crucial to have high level IT knowledge. In business, Excel is the lingua franca and so knowing how to aptly use spreadsheets is a must for our students. The primary objective of the authors was to examine the perceived and actual knowledge of spreadsheet applications of students entering higher education. Accordingly, a questionnaire and a practical assignment have been developed. In the questionnaire, students were asked to provide information concerning their previous IT studies and rate their knowledge of word processing, spreadsheets and database management. During the practical, students were asked to solve an Excel exercise taken from a high school Computer Science final exam at standard level. Out of the 666 registered students on our electronic education system (Neptun) at the beginning of the year, 557 took part in this survey, and following data cleansing and processing, 513 were considered in the results. Looking at the results of the practical, the most significant proportion of students, 142 of them have performed between 0-10%. A total of 260 students have achieved less than 20% performance and 434 people, which is nearly 85% of students have accomplished less than 40%. Compared to the results from the self-evaluation questionnaire it is very poignant that the actual scores differ quite significantly (in both directions) from the perceived knowledge of the students.

  • INTEGRATING SERVICE VALUE CHAIN GOVERNANCE ON SMALL SUNFLOWER PROCESSING INDUSTRIES IN DODOMA, TANZANIA

    Small-scale sunflower oil processors dominate Tanzania’s sunflower value chain but face persistent performance challenges. This study examines how service value chain governance – defined by factors such as transaction complexity, service characteristics, technological capabilities, market transparency, market structure, and institutional frameworks – influences the capabilities and performance of small sunflower processing industries in Dodoma. Drawing on global value chain and transaction cost economics theories, we hypothesize that high transaction complexity and service intangibility negatively impact processors’ technological and human resource capabilities, while robust technological capacity and market transparency improve logistics and marketing performance. A cross-sectional survey of 275 sunflower oil processors in Dodoma was conducted, and six multiple regression models were used to test each specific hypothesis. Results show that all six governance factors significantly affect the processors’ operational capabilities in the expected directions. High transaction complexity and service heterogeneity are associated with lower technological competency and workforce efficiency, whereas greater technological capability and market transparency yield improved logistical coordination and market access. Fragmented market structures (many small suppliers) correlate with weaker financial performance, and a strong institutional framework is linked to better regulatory compliance. These findings highlight critical governance-related barriers and enablers for small agro-processors. We discuss practical and managerial implications for improving value chain integration – including investing in technology, training, and policy support – and outline theoretical contributions.

  • Legal-economic barriers to price transfers in food supply chains

    Recent price movements have put food supply chains under pressure. On the one side, upward price tendencies on commodity markets result in higher costs to processing firms. On the other side, these firms are confronted with a strong retail sector that is able to prevent compensation to protect consumers’ and own economic interests. Regulatory impediments of European law, especially with respect to foodstuffs, can adversely be utilized as barriers to protect the interest downstream the supply chain. The problem is that legal-economic instruments which can serve to smooth price volatility in supply markets can also opportunistically be used at the expense of the middlesection in food supply chains (i.e., mainly small and medium sized producers). The aim of this article is to identify the legal-economic mechanisms that effect price transfers in food supply chains in the European Union and define policy adjustments to improve pricing mechanisms, while safeguarding the interests of the processing industry. Policy alternatives to improve the smooth functioning of notably intermediate markets in food supply chains are the restructuring of competition law, improved processor information management and creating transparency of value added in the supply chain by means of labelling devices.

  • MONTE CARLO SIMULATION FOR STRESS TESTING ENDOGENOUS PROFITABILITY FACTORS DURING POLYCRISIS: A CASE STUDY FROM THE POULTRY SUBSECTOR

    Can historical company data help estimate future performance during economic uncertainty? This study investigates whether past business cycles can be used to estimate profitability in the context of a polycrisis – a period marked by overlapping disruptions such as avian influenza, COVID-19 trade restrictions, extreme weather events, and rising feed and energy prices. These shocks have severely impacted agro-related industries, such as poultry processing. Focusing on three Central European poultry processing companies, we use Monte Carlo simulations for stress testing their profitability for the 2023 period, aiming to support financial planning by analysing firm-specific, endogenous, management-controllable factors. Return on Sales (ROS) and Return on Equity (ROE) are used to evaluate profitability, incorporating variables such as euro exchange rates in the case of export-driven firms. Our results indicate that Company “A,” characterized by stable operations, had the lowest probability of negative ROE, while Companies “B” and “C” demonstrated greater volatility. We found that the model provides a good estimate of the factors affecting the companies’ profitability that are directly or indirectly reflected in their accounting data. Indicating that the test could be a valuable tool for supporting managerial decision-making in financial planning, though further refinements are needed to enhance accuracy.

    In the past few decades data processing and in-company communication has changed significantly. First there were only a few computers purchased at companies, therefore departments developed applications that covered corporate administration which lead to so called isolated solutions. These days with the spread of electronic data processing the greatest problem for companies is not gaining information – since they can be found in all sorts of databases and data warehouses as internal or external information – rather producing information that is necessary in a given situation. What can help to solve this situation? It is informatics, more precisely ERP systems which have substituted software that provided isolated solutions at companies for decades. System based thinking is important in their application beside the fact that only data absolutely necessary for managerial decisions must be produced. This paper points out why we consider practice oriented teaching of ERP systems in higher education important.

  • WHAT DRIVES FEMALE FARMERS’ PARTICIPATION IN OFF-FARM ACTIVITIES? THE CASE OF RURAL NIGERIA

    Women often lack access to productive resources such as land and capital in most developing countries. This forces them to take part in off-farm activities to augment their little farm income. This study investigated factors that affect the involvement of women farmers in different types of off-farm entrepreneurial livelihood activities in rural Bauchi state, Nigeria. A purposive sampling method was used in selecting three local government areas in the western agricultural zone of the state and a random sampling method was used in selecting ten wards. 5% registered women farmers in each selected ward, making 134 respondents. Semi-structured questionnaires were administered to women farmers in 2017. The results revealed that food processing, farm product sales, trading and tailoring are the major off-farm livelihood activities engaged in by rural female farmers. Logit regression results revealed, as expected, that different factors affect their involvement in various types of off-farm activities. Food processing and tailoring required relatively high start-up capital and access to electricity as an investment and the use of machines was needed. Thus, access to credit or remittances and to electricity increases the probability of being involved in these activities. The requirements of trading being lower and access to market increases the probability of being involved. Provision of extension services, rural credit facilitation programmes, rural electrification, road and market structure development are instruments that are appropriate to support women farmers' involvement in off-farm activities. 

  • Organic food sourcing, processing and distribution: a case of satisfying a growing market

    A case study of an organic food company in the Slovak Republic involved in producing and sourcing inputs, food processing and distribution is presented. The case is based on a June 2014 “live” case study prepared for students in International MBA in Agribusiness programs at the Slovak University of Agriculture in Nitra, Warsaw University of Life Sciences and the National University of Life and Environmental Sciences of Ukraine, Kiev. The company was established in 2001 with the objective to bring organic food to health conscious consumers. The company grows organic spelt grain, wheat, rye, buckwheat, herbs and apples on its 156 ha and 400 ha of owned and rented farmland. The company further processes these crops into more than 40 finished products. Students are presented with company information and summaries of a company visit and discussions with management. Students perform PEST and SWOT analyses, identify a shortage of owned and leased land as a problem the company must address, conduct research and analysis, and recommend product specification contracts as a solution to the problem.

  • Exploitation of relations among the players of the mutton product cycle

    The continuous weakening of Hungarian sheep sector and its low effectiveness in terms of value added have posed crucial problems in recent years.The focal problem has been partially caused by economic and market problems.Among these issues, mostly the poor mutton supply chain gives rise to difficulties; therefore the present study seeks to reveal the factors/input variables which predominantly influence the generation of value added. We have constructed a model for the mutton product cycle to represent the relations of phases but mutton trade is not included.The most significant aim of our investigation was to identify the volume of value added generated during processing in various phases of the product cycle and the change of which inputs affected this volume. The received findings suggested that in case of capital uniformity the output of processing was mostly influenced by sheep progeny on the bottom level of the mutton product cycle.

     

  • Analysis of the influential factors on gross value added in the Hungarian sheep sector

    The competitiveness of the Hungarian sheep sector has been in steady decline for some time now. Crucial has been the problem that the value added in the sector is not generated in Hungary, as most of the produced lambs in Hungary leave the country with an average weight of 21 kilograms, with slaughtering happening abroad.A model has been constructed for our investigations, which introduces the connections between the product cycle phases for mutton in Hungary. This model allows us to calculate the volume of gross value added generated within specific product cycle phases. We used Monte Carlo simulation for our examination, for which the Crystall ball software package was utilized, namely the OptQuest module, for optimization. First, we conducted an optimization of an experiment number of 500,000 for “Gross value added” in the case of the slaughterhouse. During the optimization, Easter, Christmas and August lamb ratio and ewe number, as well as progeny, were set as decision variables and examined as values of gross value added, the decision variables of which contribute to obtaining the best results. The gained decision variables were set in the model and a Monte Carlo simulation was run with an experiment number of 500,000, where only the values of the conditions were changed along the pre-set dispersion; the values of the decision variables were fixed. The most significant aim of our investigation was to identify the volume of gross value added generated during processing in various phases of the product chain and the change of which inputs affected this volume the most. The findings proved that, in the case of capital uniformity, the output of processing was most influenced by sheep progeny on the bottom level of the mutton product chain. This factor is followed by that of weight gain in the source material producing and fattening sub-modules, as well as the gross wage in starter lamb feed and meadow hay in the source material producing sub-modules. Contour plots helped to describe the connections between these factors. By using contour plots, the volume of gross value added might be forecast for various combinations of factors.

  • The operation of the Hungarian broiler product chain

    The general objective of this paper is to present the inner connections of the broiler product chain and the process of value generation in the economic situation of 2007. I introduce the input-output model of the broiler product chain adapted from macro-economic analysis, in which I calculated the direct connections of the product chain phases and between the national economic branches outside the chain. Then I point to the disproportion of the product chain through the profit distribution. Moreover, to evaluate the process of the value generation I demonstrate the value added generated along the value chain (year 2007). On the basis of the results 825 EUR of value added is realized to one ton of ready product (chicken meat), from which the major portion is shared by processing. The paper also determines the added value and the major factors influencing its ratio within the product chain.

  • TREND ANALYSIS OF UGANDA’S COFFEE SECTOR

    Coffee (Coffea arabica and C. canephora) is an important commercial crop globally, and the second most traded global commodity by developing nations after oil. Uganda is among the top 10 coffee exporters worldwide, and second in Africa. The total export amounted to 301,366 tons of “green” coffee in 2021, forming the second-largest commodity export, and contributing about 12.4% to Uganda’s total formal exports. However, the country’s overall performance over time remains unclear given the fluctuations in production and export prices.   This study aimed to evaluate the production and export trends of Uganda’s coffee sector by: (i) defining the overall direction of coffee production and export value, (ii) assessing the market variability, and (iii) evaluating the global cross-cutting issues regarding coffee production and export. Data was extracted from FAOSTAT and Uganda Coffee Development Authority (UCDA) databases. Trends were analysed using the Mann-Kendall and Sen’s Slope test, while market variability was analyzed using the fixed base index (FBI) and coefficient of variation. VOSviewer software was used to analyze literature from the Web of Science database to highlight cross-cutting issues. Results indicated a significant positive increase in coffee production and export value (p = 0.0001, Slope = 1736.67 tons and p = 0.001, Slope = 4.44 million USD) respectively. Among the top ten coffee producers, Uganda presented the third worst unstable coffee export value with a 20.1% coefficient of variation. Fairtrade, climate change, and certification were the most outstanding global cross-cutting issues. Market stabilization mechanisms should be developed through value addition by establishing coffee processing and roasting plants, as well as strategic governance and policy support to counter emerging global challenges such as climate change.

  • Externality effects of honey production

    Bee-keeping and honey production has a long history in Hungary. Honey is an important and healthy food of people and it can be consumed without any human processing. The honey production has important role, too. Some researchers say that if honey bee will extinct the humanity in the world would also extinct. It is true since plant pollination by honey bees is very important. It is confirmed by researchers’ studies that plant pollination by honey bees has significant positive external impacts on potential yields in orchards. Although the contribution of honey production to the GDP in Hungary is only a few per cent, other benefits play more important role. One of them is the positive external effect – mentioned above – and the other is the contribution to the biodiversity of the nature. This paper focuses on secondary research methods, gathering and evaluating data regarding the positive external impacts of plant pollination by honey bees as well as finding possible solution for the problem that bee-keepers have a lot of costs in connection with carrying honey bees to orchards, while farmers “only” benefit from the positive externality of plant pollination of their fields. To evaluate its economic effects a numerical HEEM-model was developed and applied for the Hungarian situation.

  • Selection of agricultural land for multifunctional agriculture

    The modern concept of rural development implies the use of agricultural resources, primarily agricultural land, for other (non-agricultural) activities besides its agricultural purpose. The integral aim of this concept of rural development is the maximization of economic results, besides the sustainable development of rural areas, environmental protection and the production of strategic (staple) agricultural products. The objective of this paper is to define the general, theoretical, quantitative model for the determination of the size and quality of agricultural land which, considering the above-mentioned demands (criteria), is optimal for the utilization in agricultural production in certain regions. The remaining agricultural land would be available for the non-agricultural purposes. The economic optimal model for the selection of agricultural land in the traditional agriculture is the model of linear programming. The criteria of the land selection for traditional agriculture are the economic effectiveness (measured by net income or by gross national product) and the economic efficiency (measured by the production economy). The maximum economic effectiveness is determined by the standard method of linear programming and the maximum economy by the method of broken linear programming. The solution of compromise can be determined by multi-criteria programming, based on the minimum differences. The limitation groups in the mentioned variations of the model are: limitations of production quotas of agricultural products, minimum quantities of staple agricultural products, limitations of processing plants in a region (minimum and maximum), limitation of crop rotation, limitations of the needs in animal husbandry for bulky for age and limitations of agricultural land according to various types of utilization. By quantitative defining of the structure and size of agricultural land for traditional agriculture, “the surplus” and structure of agricultural land available for non-agricultural purposes is automatically determined.

  • International students in Hungarian higher education

    Overall, higher education in Hungary is popular with students from abroad, even if there are significant differences in terms of its structure. The ever-faster increase in the annual headcount of the international student body serves as proof to this statement. The expansion of the size of the body of international students is of special importance in higher education since in 2016 the Hungarian government set the objective of having 40,000 international students by 2023 (EMMI, 2016).

    Numerous studies have been published on this topic, usually focusing on specific issues, including, for example, the countries from which we receive most of the students, the most popular majors, possible economic advantages due to the presence of a great number of international students, and how internationalization takes place in higher education in Hungary.  

    By means of processing data published by the Hungarian Educational Authority [Oktatási Hivatal], this paper aims to present the changes in the number of international students in Hungary over the past ten years. This also includes the discussion of the structure of these changes related to a variety of issues such as relations, types of institutions and their ownership, levels and types of programs, as well as gender proportions. However, even with this effort, the officially available statistics are suitable for presenting a properly detailed assessment of the situation only to a limited extent.

  • Economic Performances of German Agri-Food Businesses: an Extension of Existing Discourses on the Topic

    Considering the circumstance that literature dealing with the economic performance of agri-food businesses in general, or particularly with the German agricultural sector, mainly deals with strictly agricultural-related theory in order to explain the economic success of agri-food businesses, the present paper aims to extend existing discourses to further areas of thought. Consequently, the characteristics: a) increased size of agribusiness, b) pull-strategies, c) the development of new markets and d) focus on the processing industry, that all correspond to the current picture of the German agricultural sector and are considered to be significantly responsible for recently managing to outpace the French agri-food sector, will be first explained in their success against the background of mainly non-agricultural-related literature. By doing so helpful and rather unnoted perspectives can be contributed to existing discourses. Second, the paper presents scatter plots which portray correlations between a) the added value of agriculture and the regular labor force, b) the added value of agriculture and the number of agricultural holdings and c) the added value of agriculture and the number of enterprises concerning milk consumption. Corresponding scatter plots which show different developments in Germany and France can be related to the findings of the first part of the paper and allow new perspectives in existing discourses as well.

  • The analysis of costumer satisfaction in recreational tourism

    Due to increased health awareness and the growing amount of assistance to boost it, health tourism research has gained significance in our days. The present study focuses on the analysis of customer needs for recreational tourism and their habits; moreover, it interviews the guests of 15 Hungarian wellness hotels through a questionnaire survey. Next we attempt to explore the rate of guest satisfaction with healthpreservation services. The study presents the findings of this research activity until now, whereas the results of further data processing will be published in the future.

  • Agribusiness higher education development – training needs analysis

    With the tremendous changes in political and economic systems of the Republic of Croatia after independence, new challenges have been put to the higher education system as well. The system used to be structured to serve a centrally planed economy with predominantly state ownership. Universities were producing graduates to be employed on statefarms,inagri-foodsystems(socalled„kombinats“),the state owned processing industry or cooperatives. The graduates were specialised in particular branches, such as crop production, vegetable production or livestock husbandry. Therefore, they were not educated to understand the whole system of a company or the agri-food system. In one word, they were not prepared to run firms as managers, although they were highly educated. Small and medium size entrepreneurs in agri-food business have been rather an exception than a rule, and prior to the transition there was not to much experience in managing, financing or marketing for such a firms.

Besides being one of the most ancient and successful pizzerias in Naples, da Michele is renowned all over the world for the quality of its raw products, dough processing, and output. In the last years, da Michele also started pioneering the pizza production and commerce industry with an innovative franchising model and a new company appointed to managing this latter business. This work makes use of in-depth interviews and data collected on the field. For such scope, top managers and employees of both the local and the international companies were interviewed. The study finds that da Michele managed to become a benchmark for territorial food products and, more recently, for high-standard franchising, jumpstarting a successful brand-new company and food business project.

    Development of strong and competitive sector of small and medium enterprises has very important role in process of total transition in Republic of Serbia. This sector should be one of the guidelines of economical development and future, like in developed countries. Within the Strategy of development of SME and entrepreneurship in Republic of Serbia from 2003 to 2008 government of the Republic of Serbia, not accidentally, placed among many sectors which are expected to contribute and boost economical development, increase the employment rate, and realize increased influx of means deriving from export, the priority is on sector of processing of agricultural products. It can be concluded that significant contribution from agriculture to improvement of total economical situation is expected. Accession to EU should be considered primarily not only as the opportunity but serious task in regard to restructuring of the agriculture. However, impeding circumstance,in regard to export ofagricultural-foodproducts,first ofallto EU countries, isthefact that thismarket is under strict protective measures within the policy of agriculture and measures of agrarian protectionism. In such conditions it is very difficult for producers and processors of food to enter such closed markets. Small and medium enterprises are facing the choice of the business strategy:

    – to place the existing product on current market;

    – to place the existing product on new markets, including export;

    – to sell the new product on existing market;

    – to place the new product on new markets, including export.

    Therefore, based on analysis of domestic market, volume and structure of import and export of agricultural and food products, as well as analysis of food industry and agricultural production in Serbia, it is necessary to define potential programs for small and medium enterprises with production which could be economically efficient and profitable from the aspect of investment.

  • Consumption habits of “Free range chicken” in Hungary

    Poultry is highly ranked in theWorld meat production and consumption (it accounted for 32% in 2007), and, in the past 20 years it was growing with an annual rate of 3–6%, higher than in case of any other meat-types. This tendency is also valid for Hungary: poultry has the largest share (29.8 kg/person/year, 47%) in the domestic meat consumption since 2000, which is among the EU top (KSH, 2007). As the result of the animal health and nutrition scandals, the EU animal welfare and quality requirements and the advancements in health consciousness the Master-Good group launched the production, processing and trade of free-range poultry under the brand “Free-range chicken”. The new products had good consumer responses, because at present 1.5% of the processed chicken in Hungary (25 tons/week) is under this brand. As it regards the future of this product, we can expect the decrease of the current 1.5 times higher production price over broiler chicken, due to the increasing energy, labour and other cost items, thus the increase of the domestic consumption by 25–30% per annum can be foreseen. Besides the growth in domestic demand, increasing foreign consumer demand can also be expected because of the space requirement of the production. Summarising the above mentioned: „Free range chicken” can be one of the most successful products of the Hungarian poultry industry. In order to realise the prognosis mentioned above, it is inevitable to learn the consumer attitudes towards the brand. A primary market research programme supported by the Master Good group has been launched to study the main features of the domestic chicken meat consumption – including the „Free-range chicken” as highlighted brand. The primary aim of the research was the complete assessment and evaluation of the Hungarian chicken consumption habits and the identification of the possible take-off points. The research undertaken resulted basic information concerning the internal structure of the Hungarian poultry consumption (including that of the „Free-range chicken”), the potential consumer groups and their requirements, provided information on the consumers’knowledge of the products and identified the elements of the consumers’ judgements. This will serve as basis for a marketing communication programme to increase the domestic „Free-range chicken” consumption.

  • Factors influencing the gross value added in the sheep production chain

    The competitiveness of the sheep sector in East Europe has been decreasing from year to year. The value added in the sector is not generated in the countries as a high proportion of the lambs are exported. For example, in Hungary, 95% of the lambs, unnecessary for replacement, are sold at an average weight of 21 kg and are slaughtered abroad. A stochastic model was constructed to investigate the connections between the cycle phases of the mutton production. Three modules were distinguished, the lamb production, fattening and slaughtering-processing sub-modules. The aim of our study was to identify the gross value added generated in the three sub-modules and to analyse the main factors influencing its volume using the conditions in Hungary as an example. The major hypothesis of our research was that the profitability of the production chain is mainly determined by the breed. The results showed that, considering market prices, the gross value added in the processing module was mostly influenced by the number of lambs sold per ewe per year at the bottom level of the mutton product chain. The next most important factors were the weight gain in the lamb producing and fattening sub-modules and dressing percentage in slaughtering-processing sub-module. Contour plots were constructed which help to describe the relationship among analyzed factors. Using the contour plots, the gross value added for different combinations of these factors might be forecast.
