    Within the Hungary-Romania Cross-Border Co-operation Programme for 2007-2013 the University of Debrecen and the University of Oradea is to elaborate a soil strategy for the Nyírség and Bihor Mts region.Project partners expect the strategy will support and strenghten national, regional and local soil policies and contribute to the competitiveness of the region by protecting and developing various soil functions.Project partners also expect to prevent cross-border problems with soil and reduce the competition caused by cost differences.The elaboration of the strategy includes the problems of erosion, deflation, compaction, water-deficiency, inland water-threat, problems induced by the usage of fertilizers, loss and substitution of soil organic matter, amelioration (bentonite, sewage sludge, fermented biogas). Based on summarised data of former examinations and new experiments a concise database will make it possible to calculate and apply the Sustainability Index Model, which may be useful in order to address EU supports properly based on objective calculations,and may be useful to determine the optimal culture. The project also encourages the farmers to keep in mind the cross-compliance, since EU gives financial support to realise sustainable soil strategy based on EU directives. This may enhance the options to initiate the take off of rural areas with shrinking export facilities, to mitigate social tensions and the effect of migration processes.

A strategy is worth to realize only if we get satisfying answers to the questions related to the audit. A complex strategy audit method helps to appraise how the planning process is integrated.

  • Sport as power of integration among minorities

    The opportunities and development of skills in the field of sports may open a door to social inclusion that also facilitates social integration. Based on the funding provided by the national sports strategy and integration, the research project can be developed further on and implemented. The efforts of the European Union (EU) and of the European Council towards the member states are carried out through its directives, and the analyses of these documents provide guidelines for the elaboration of the Hungarian Roma strategies. Funding is one of the key factors for the elaboration of Roma integration strategy and its efficiency. The research highlights upon the way of thinking and mentality of Roma young people about sports currently, and on the importance of sport affairs for them. Also, reflects on the factors which promote motivation to have successful career goals and achieve those based on the program. The sports integration survey suggests conclusions on the role of mentoring in Roma youngsters’ studies, in sports, in building social relations, the role model motivating for them, or on the supportive role of the parents or even the lack of it in their families. The expected result would be a survey on sporting habits of the Roma minority and disadvantaged youth and their positioning in education through which we could develop programs to promote the integration of the Roma minority and to improve their general circumstances. The National Social Inclusion Strategy (Ministry of Human Capacities, National Social Inclusion Strategy 2011–2020) provides the financial background of the integration project whose application also prevails in the field of sports integration. The aspirations of the EU provide guidance to the amount of funding and its allocation manners. The National Roma Self-Government’s (NRSG) sports integration project and best practice has provided the basis for the sports integration research project. The survey is examining the recreational habits, motivational factors, study levels among the Roma minority and the disadvantaged young people. Based on the questionnaire, we can draw some conclusions about the development of sports integration programs. The issues cover the field of sport activities of young people aged between 9-18 and on the significance of sport opportunities for break-out for the Roma youth, and on the effect of role models for them. The sports integration projects treat simultaneously the development of education and sport, furthermore they are significantly linked to each other. The target group of the questionnaire survey are mainly the Roma and disadvantaged people. The sample item number is 1216 completed questionnaires from the whole territory of the country, from 16 schools. As shown in the survey, the sport and the level of education are significantly related to each other. Those who do any sports, obtain higher level of achievement in their studies. It can be revealed by the fact that through mentoring the sportsmen can promote their school performance and sport development together. The research highlights on another observation, namely, it also confirms the legitimacy of sports integration program and points out the direction for development. For accomplishing the goal of social inclusion through sport we have at hand the appropriate concept. It is, furthermore necessary to strengthen and to develop the mentoring program, which ensures the lower drop-out rate among the participants. The effect of Sports integration is motivating for the Roma and for the disadvantaged youth. The use of sport as a tool for social inclusion proves to be of utmost importance.

  • Long-term government responses to sustainable tourism development: principles and strategies

    Tourism is one of the leading sectors in the world economy. Enhancing its well-known economic, social and environmental benefits while managing its negative impacts are highly important for the national governments in European Union. Strategic planning is essential to meet the long term requirements of sustainability. National sustainable development strategies and tourism strategies are fundamental means of strategic planning as they provide guidance for the decision-makers of the tourism sector. The member states of the European Union have prepared their national sustainable development strategies, furthermore the Union’s common strategy and the national strategies of some member states have already been revised and renewed by now.The Hungarian strategies – National Sustainable Development Strategy and National Tourism Development Strategy – were completed the World Tourism Organization published its twelve aims for an agenda for sustainable tourism in 2005. Consequently these strategies are expected to contain references to the sustainability requirements and environmental, economic and socio-cultural aspects of tourism development. In the present study we analyse the issues of sustainable tourism development in the sustainable development strategies of the EU and Hungary and the National Tourism Development Strategy of Hungary 2005-2013 with special attention to the principles laid down by the WTO in 2005. Our aim is to investigate the cohesion between the principles of sustainable development and sustainable tourism, and their manifestations in some of the strategic documents influencing Hungarian tourism development.

  • Exploring livelihood strategies of herder households in Mongolia: income-based approach

    The classification of livelihood strategies is important for identifying different lifestyles and developing poverty reduction measures. The research was aimed to identify Mongolian herder households’ livelihood strategies and assess capital factors that impact their choice and livelihood outcomes in connection with wealth and poverty. A total of 350 herder households were surveyed using the stratified sampling methods from four different economic regions. The Income-Based Approach was applied to identify herder households’ livelihood strategies based on their primary income sources and Pearson correlation was used for assessing the influencing input. The study hypothesizes that herder households earn the majority of income sources from animal husbandry and an essential factor in the choice of livelihood strategy is the number of animals. The study found that livelihood strategies of nomadic herder households clustered into four main types: а) livestock income sources, solely b) earn from kinship and assistant herder salary in addition to livestock income; с) social benefits and pension income in addition to livestock income and d) income sources dependent on natural resources in addition to livestock income. Location, financial capital, and physical capital were the main factors for choosing a specific livelihood strategy. There was an insignificant difference between poor and wealthy herder households in terms of physical assets ownership. To reduce rural poverty, we need tailored sustainable development policies based on different herder households’ livelihood strategies.

  • The marketing strategies of Serbian honey producers

    Serbian honey producers are exposed to the increased international competition of recent years. To face up to the new changes, producers are progressively using diversification strategies, such as direct sales and production diversification. The direct sales strategy allows the producers to increase the product added value, while diversification aims to offer new products to the consumers. The aim of this paper is to analyse the honey marketing strategy of Serbian honey producers. The first part of the paper analyses the structure of production costs, production performances as well as the determinants of the honey supply. In the second part of the paper, analysis is focused on the determinants of direct sales. Finally, in the third part of the paper, diversification strategies are discussed. The data for this research has been obtained on the basis of a representative sample consisting of 84 Serbian honey producers interviewed in 2011 and 2012. The results show that the Serbian honey producers operate with more or less similar production costs and with production performances that do not differ significantly. They use direct marketing for two reasons: firstly, it affords personal contact with consumers, and secondly, they aim to decrease the transaction costs, thereby keeping a higher share of the product’s final value. Offering new products to consumers is an attempt to create additional product demand.

  • Empirical research on corporate strategies in Hungarian dairy industry

    Corporate strategy has never been as important as it is nowadays. Markets are changing rapidly because of consumer demands, innovations, information flow and economic changes. Our paper concentrates on Hungarian dairy industry (hereinafter dairy) and four main objectives were defined to be analysed: (1) domestic dairy company features, (2) main strategic characteristics, (3) how companies’ strategy resonates on the consumer side and (4) companies’ financial background were analysed as well. A company database was made in order to prepare for the primary research and to understand better the nature of today’s market. B2B (26 companies) and B2C (503 people) surveys were used in order to gain primary data. In 2017 132 Hungarian companies were observed in milk processing, but 44% of the market participants are not present in dairy competition. It is a fairly fragmented market structure because 10-20% of the annual turnover is accumulated among the 80-90% of competitors. The factor analysis of the data proved that the dairy companies followed m strategies at the same time; and it is assumed that most of them are unconscious. Strategically, the majority of the dairy sector is not up-to-date and modern enough. SMEs sector management skills and strategic preparedness are considered to be out-of-date and insufficient. Strategic planning can possibly have an influence on financial results, which was only partly proved by the analysed criteria system. The production and use of own raw milk supplies might make companies experience financial benefits. Nearly 78% of the respondents would rather purchase goods made from own raw material. The willingness to pay a higher price for this was in average 5-15%.

  • Green house gas mitigation and headline targets of Europe 2020 strategy

    Climate change is considered as one of the biggest challenges of XXI century and global action is needed to mitigate greenhouse gases (GHG) and adapt to changing water levels and temperatures, which affect food supply and ecosystem integrity. Climate change will have significant economic and social impacts in many regions of EU and sectors like agriculture is considered to bear greater adverse affects. Less developed regions and certain sections of society (the elderly and/or low-income households) are expected to suffer more from climate change. Climate change policy of EU, adopted in December 2008, includes ambitious targets for 2020. The policy is focused on a sustainable future with an energy-efficient economy by (i) cutting greenhouse gases by 20% (30% if international agreement is reached), (ii) reducing energy consumption by 20% through increased energy efficiency and iii) meeting 20% of energy needs from renewable sources. In the frame of the headline targets of Europe 2020 Strategy, this paper discusses most important greenhouse gas-emitting activities in agriculture, emphasizes the importance structural changes through the modernisation of infrastructure particularly in developing regions of EU and calls for enhancing the competitiveness of economy to promote energy efficiency.

  • Analysis of the process of introducing euro in new member states: Defining lessons for Croatia case study: Slovenia

    On 1 May 2004, EU made a historical enlargement by expanding from 15 to 25 members, and with another enlargement in 2007, EU is now a union of 27 member states. Following the new member states accession to the EU the next challenge for them is joining European Monetary Union and introducing the euro as a national legal currency. This thesis concentrated on the analysis on how the new member states handle the process of joining the Euro-zone with the main objective to examine whether there are any possible lessons that Croatia can apply to its EMU integration path. The thesis is mainly focused on analysing the Slovenian EMU integration process, as this member state has been identified by the Croatian Authorities and Croatian National Bank as the one whose experience Croatia should try to follow. The central questions that are discussed are weather Croatia is economically and politically capable to follow the Slovenian example, and, on the other side, weather the Slovenian example is the best one to follow i.e. should Croatia introduce euro by using the quick EMU entry strategy as Slovenia did. In order to answer those questions thesis focused on analysing and explaining different strategies for euro adoption chosen by the new member states with special emphasis on the strategy of quick EMU entry approach chosen by Slovenia. The thesis also concentrated on analysing the Slovenian political and economical path from Yugoslavia to the EU and especially on its economic performance and key economic indicators prior to introducing euro. Finally, with the aim to compare the economic performance between Slovenia and Croatia and define similarities/differences in their transition and EU accession process, the thesis gave a detailed overview of the Croatian current economical and political situation. After brief analysis of all pros and cons of an early euro adoption, the thesis concluded that following the experiences of small sized countries with opened economies and strong trade orientation towards the countries of the Euro-zone, such Slovenia is, would be a comprehensive and logical strategy for Croatia. Early euro adoption would provide more benefits than costs for Croatian economy and society in general. The thesis also concluded that Croatia should face no major problems when it comes to fulfilling most of the Maastricht criterion on time, in order to be able to adopt the euro in the shortest possible period as Slovenia did. However, the thesis also highlighted that in order to do so Croatia has to put a serious emphasis on improving certain aspects of its current macroeconomic situation, in particular the one concerning the percentage of state sector deficit in the GDP and the size of public debt.

  • The new strategic directions of rural development in Hungary

    The notion of sustainability is the basis for our future possibilities. Local sustainability, in the centre of which can be found the livable settlement, is especially important in rural areas.Without developing rural areas, there is no developing society. The growth of the Earth’s population and the world economy has already surpassed the carrying capacity of this planet which may result in an “overshoot and collapse”. This can still be prevented today. The population of towns and cities is rapidly increasing. Urbanization is a very fast process, even in Hungary. In large cities with millions of inhabitants crime and lumpen lifestyle pose huge problems. However, the bases of a successful economy are morals and a puritan lifestyle, which so far have characterized rural villages. 70% of the poor and needy live in rural areas in the developing countries and agriculture provides livelihood for 40% of the world’s population. The International Assessment of Agricultural Knowledge, Science and Technology for Development (IAASTD) was established in 2002 by FAO and theWorld Bank to learn more about the role of agricultural science and technology. After the positive decision some comprehensive summaries were made on all the related topics with the participation of 400 scientists. The assessment provided many lessons to learn and at the 2008 closing sessions in Johannesburg, the reports were accepted and it was proved that rural areas have a significant role in providing adequate means of earning a livelihood. The Ministry of Rural Development composed a domestic-level study with the title of the National Rural Strategy. The objectives stated in the study can be seen as the main directions of the Hungarian rural strategy. The land policy aims to support the 50–70 hectare family farms and have the agricultural lands under national authority. The population must be provided with ample and safe food. The priority of local economy, local sale, and local markets is important. The positive exploitation of our natural resources may result in the strengthening of rural areas. The deterioration of rural areas must be stopped. In order to halt these processes swiftly fundamental, patriotic economic and social policy changes, a strong people’s party, a short-run crisis treating and a medium-long-run strategic development and action plan are needed which is based on the respect of work and moral norms, national cooperation, solidarity, and the defense of our mutual interests rather than on speculation (ÁNGYÁN, 2010). The greatest problem of Hungary is low employment.Workplaces may be created in the least expensive and the fastest manner in irrigational agriculture. In order to achieve this, the role of the state must be reconsidered and EU rules on state intervention must be reviewed.

  • Motivation solutions for small and medium-sized enterprises in the Southern Transdanubian Region

    The singularity of human resources and the complex interests in the world of work are a constant challenge for business executives and HR colleagues. While the difference between the performance of a motivated and an unmotivated employee can be up to twice as much at almost the same cost level, the motivation strategy is typically either absent from the business life, or operates on a reactive concept based on an unconscious design. Although the mere presence of motivation and its various levels are less quantifiable in exact terms with direct tools, a performance which is much weaker than possible is measurable in the short and long term, and its negative economic results are clear. The aim of the research is to examine the motivational practices of small and medium-sized enterprises (SMEs) operating in the Southern Transdanubian Region. Involving 300 businesses we evaluated the applied wage system, the role of money among the motivational tools, the extent and causes of fluctuation, the system of employee training, the way of performance evaluation, the reasons for underperformance, the importance of motivation, the company motivation strategy and the efforts to retain the key people. The employee motivation can be increase in several forms, but the priority of needs and claims is constantly changing. Updating this motivational matrix is a real leadership challenge, but this effort can pay off multiple times. According to the results it can be stated that the motivation strategy – as a key economic issue – is not given sufficient attention in business practices.

  • Marketing characteristics of Tokaj wine specialities based on factor and cluster analyses

    The marketing kind of analysis in the domestic and international markets of Tokaj’s wine speciality has not happend yet. The present research scientific method supportedly defines the consumers of Tokaj’s wine speciality and it determinates the overlay receipt. The basis of the questionnaire research at the wine consumers cirlce is a representative sample of 1179 people. It confirms the truthfulness with factos and cluster dissection. On the hungarian market 5 sections can be devided, which has been determined by the earning category, the wine savvy and the referene price interval. Tokaj Wine Specialities named “late vintage” are also available. This name can be confusing for the consumer, some do not understand in what they differ from other Tokaj Wine Specialities, as actually all Tokaj Wine Specialities are late vintage wines; particularly, wine is harvested later than usual, occasionally in October or November. The findings obtained during the research can beutilised in practice, too. In accordance with the results and conclusions, we have several practical suggestions. Our methodological suggestion is that the result of the cluster analysis based upon a large number of representative sample should be cross-checked with focus group tests; what is more, upon justification and verification, a detailed analysis of the given segments can also be performed better with this method. It would be worth studying the exact reasons for the popularity of wines with the name ”late vintage”. Such types of Tokaj Wine Specialities should be given higher priority in marketing terms. My suggestion is that the type of wine accepted and liked by consumers should be kept count of as TokajWine Specialities officially, too. The future marketing strategy has to be developed by knowing the sections and by it’s further research which has to integrate to the strategy of Tokaj’s wine region.

  • Agri-environmental management and rural development: Hungary after EU accession

    In Hungary, similarly to developed countries, the share of agriculture in the GDP has declined. Even so, preparation of the sector’s long term strategy is crucial, as the role of agriculture exceeds the results represented in the GDP. Environmental and social functions of agriculture are revaluated in developed countries, and consumers at the end of the food chain actually govern the entire process. This is why information plays an increasingly important role, and gives signals (Verbeke, 2005) to the actors in the economy and society. This research area is diverse (including agricultural policy, environmental policy, rural development and sustainable development), and so I applied an interdisciplinary approach and conducted an integrated examination. The results show that in recent decades, the pressure of agriculture on the environment has been lower in Hungary than in the EU-15 and agri-environmental measures have taken hold in all types of land-use systems, even though they are more important in protected areas. Although this development provides a good basis for a long term strategy social capital has lost strength (Csath, 2002), so fostering the creation of internal and external rural networks – one instrument for this could be the Leader programme – is essential for sustainable rural development.

  • Human rationality, environmental challenges and evolutionary game theory

    In recent years, game theory is more often applied to analyse several sustainable development issues such as climate change and biological diversity, but the explanations generally remain within a non-cooperative setting. In this paper, after reviewing important studies in this field, I will show that these methods and the assumptions upon which these explanations rest lack both descriptive accuracy and analytical power. I also argue that the problem may be better investigated within a framework of the evolutionary game theory that focuses more on the dynamics of strategy change influenced by the effect of the frequency of various competing strategies. Building on this approach, the paper demonstrates that evolutionary games can better reflect the complexity of sustainable development issues. It presents models of human – nature and human – human conflicts represented by two-player and multi-player games (with a very large population of competitors). The benefit in these games played several times (continuously) will be the ability of the human race to survive. Finally, the paper attempts to identify and classify the main problems of sustainable development on which the game theory could be applied and demonstrates that this powerful analytical tool has many further possibilities for analysing global ecological issues.

  • Defining the strategic objectives of Hungarian mutton product chain and elements of marketing strategy in the beginning of the second decade of the century

    The sheep sector is regarded to be a “black sheep” in Hungary, both in terms of economy and marketing. On one hand, the sector is not easily traceable as available relevant data are partial and infected by the effects of black market or underground economy; on the other hand, there are no clear, concrete statistical data or surveys on consumption either.
    The present study attempts to dissolve the above anomalies and present findings by fact-based model calculations and actual marketing surveys. The fact-based model developed and used for more than 200 variables verifies the correctness of economic calculations. Original examinations were performed by Béla Cehla, doctoral candidate, in 2000–2011. The marketing survey, although not in full accordance with statistical requirements, was carried out in 2012 and it processed relevant data authentically.
    The main conclusions are the following: It is clear so far that genetic basis should primarily be evolved in the industry, as it is the factor that mainly contributes to profitability and price-type factors come only following it. Genetic modification is achievable by changing breeds or crossbreeding. The findings of product chain level sensitivity analysis have provided clues that the added value generated in the sector is already determined during slaughter lamb production and progeny influences this value in approximately 80%. Critical points are feed conversion ratio and the relating price of lamb feed, which influence added values by 2.7–2.9%. The remaining factors affect added value through feeding costs, although not considerably.

  • Spatial urban plans as a basis for agribusiness development

    The main goals of the spatial development of rural areas are to protect and prevent degradation of agricultural land, forests and protected areas, as well as to encourage (more) balanced territorial development. Given that the quality and development of agriculture largely depend on the level of consciousness and awareness of the population in rural areas as to the opportunities and benefits of their involvement in the adoption and approval of planning solutions, the aim of this paper is to define a communication strategy to help raise the awareness of the focus groups (landowners, farmers and investors) of the importance of and link between spatial planning and development of agribusiness and rural areas, exploring different techniques and methods of using various communication channels. The methods which will be used in the paper include secondary research, SWOT analysis, and trend and historical analysis. The research results show that it is essential from the very beginning to take the views of various stakeholders into account through frequent thematic dialogues, in order to incorporate a consensus which has been reached together with the expert team of the developer, into planning decisions. Only such an approach can lead to sustainable and enforceable plans as prerequisites for the realisation of realistically planned investment in rural areas. Furthermore, it is very important to legally standardise such an approach so that public participation, as a mandatory legal procedure, can be defined through precisely defined steps and established performance indicators from the very beginning of the process of adopting planning documents.

  • Hungarian endeavours for the enhancement of economic relations in Southeast Asia focusing on a new partnership with Vietnam

    Beyond a brief review of the economic integration process among the states of the ASEAN region, the authors of the present study aimed to examine and analyze the main economic, social and political characteristics of the Hungaro-ASEAN relations. The importance of the topic of this research is underlined by the fact that the Hungarian government considers big importance to the improvement of the foreign economic relations with Asian economies. This intention was expressed by a new foreign economic strategy „Eastern opening” announced by the government in 2012, even though the foreign trade statistical figures did not justify its success by now.The authors believe that increasing opening towards Asia serves Hungarian economic interests. Therefore, it is a right and desirable direction to proceed, they consider that in the background of the modest results there might be the insufficient knowledge of the market mechanisms, the actors of the local supply chains and the potential partners. They believe that in order to make the Hungarian foreign economic endeavours in this direction more successful a more thorough examination of the local characteristics – including the actual demand arising at the targeted markets - is necessary. This opinion is prevalent to not only the Asian „Giants”, like China, India and Japan, but also to smaller states, like the ASEAN members, which – together - in terms of population and economic performance – reach the dimensions of an economic great power as well.
    Furthermore, the integration of the ten Southeast Asian countries develops rapidly, which is coupled by their increasing weight in the world trade. The dynamic economic and social development in the ASEAN region – and in parallel with this the growing demands and purchasing power - may encourage the Hungarian ventures in theory. However, there are still very few Hungarian entrepreneurs, who are ready to enter the market in the region and able in long run to operate there successfully. It is a well-known fact that the since the regime has changed in Hungary, foreign trade became strongly concentrated towards the EU members.
    The ASEAN countries – because of the geographic distance and by other reasons - definitely cannot mean an alternative of the EU market, however in a certain extent they can relieve this one-sided concentration and may provide additional opportunities for the Hungarian export of goods, and rather to the export of Hungarian services and know-how. The ratio of the ASEAN region within the entire Hungarian foreign trade turnover is small nowadays, furthermore – according to the statistical figures – this region is rather an import resource for Hungary than being an export market. This fact – just itself – is should not be considered as problem. When the amount of the import exceeds the amount of exports, that means that it is more worthwhile to do business with suppliers from there countries than with others. By and large all this is prevalent to the field of the agricultural trade as well: Hungary imports a range of commodities which cannot be produced by domestic farmers or in Europe (spices, tropical fruits, etc.). It is obvious that the ASEAN region cannot be the major market for the Hungarian agricultural export, not even in long run. However, there are still a lot of opportunities to enlarge the turnover of goods and services and enhance the co-operation in this geographic region. In the last chapter, the authors outlined an example in case of Vietnam – co-operation of joint public warehousing of agricultural commodities – which may be a good example for the promising potential opportunities. In contrast with the majority of the ASEAN countries, the Hungaro-Vietnamese political and economic relations had started much earlier than the regime was changed in Hungary. However, the potential advantages arose from this fact – the network of connections and the sympathy of Vietnamese professionals graduated in Hungary, the reputation and popularity of Hungarian agricultural products and technologies, the achievements of R&D in the field of agriculture – could not be utilized from Hungarian side. Vietnam, however still preserved its socialist political establishment, but in terms of its economic development strategy and economic policy has gradually been standing on the basis of market orientation. Vietnam, with its population of ninety million shows a rapid and successful development and it means good opportunities even for Hungarian entrepreneurs. It would be a mistake to leave these potentials unused.

  • Education for rural development and agribusiness in post-socialist Slovakia

    Agricultural education and training in the former Czechoslovakia has traditionally focused on fostering the position of cooperatives and state farms. The destruction of socialist agriculture and the reduction of commuting opportunities in the urban space during the transition have resulted in the handicapped socio-economic position of the Slovak countryside and its population. The role of education and training in fostering agribusiness growth and rural development could therefore become a crucial strategy. The aim of this article is to analyse the current state of education and training for agribusiness and for rural development in Slovakia using the methods of literature research and document analysis. The article interprets general trends in the development of adult education in Slovakia during the transition period. The main priorities and perspectives formulated in the national strategy for education in agriculture (for the period 2007-2013) are discussed in the mentioned context. With a focus on the leading role of the Slovak University of Agriculture in Nitra, the paper assesses the current status of formal and further agricultural education and training offered in academic and other educational institutions. The paper concludes by discussing implications, recommendations and challenges for developing education and training initiatives for agribusiness and rural development.

  • Quality-satisfaction-loyalty: consumer behaviour in catering

    Our study is the result of the initial research of a qualitative and quantitative research consisting of more stages. The survey was made between 2007 and 2013 and specially focused on the satisfaction of Hungarian customers of catering enterprises with hot kitchen as well as on factors influencing satisfaction and customer loyalty. The results proved that a well planned, central strategy cannot be prepared for the whole catering industry as even enterprises with the same profile (warm food kitchen) show significant differences. The most important task for an enterprise is to establish and know its appropriate clientele well in order to suit its services, selection to their requirements. Our assumption that customers of fast food restaurants, canteens have lower expectations from selection, personal relations, quality of services than customers of restaurants, public houses, wayside inns, brasseries with traditional methods of selling was proven. In the lattest, the main aspect of choosing a 'favourite place' was the quality of human relations, with the special role, besides other customers, of the staff. Establishing unique atmosphere to the liking of customers can be regarded as an important point of the operational strategy. It was also proven that the majority of regular customers of restaurants are men, coming from the economically active population. Other active users are youngsters, they mainly go to fast food restaurants. More impersonal advertisements hardly have any effect, while successful word of mouth propaganda can be achieved by consequent, high level work. Regular customers can be characterized by rather emotional than market-based attachment. Favourite units are mainly preferred because of their atmosphere, relationships with acquaintances and friends, not because of measurable features, selection or prices. Those visiting catering enterprises with hot kitchen more frequently are more critical and less satisfied, in spite of this, they are reluctant to part from their regular places.

    Development of strong and competitive sector of small and medium enterprises has very important role in process of total transition in Republic of Serbia. This sector should be one of the guidelines of economical development and future, like in developed countries. Within the Strategy of development of SME and entrepreneurship in Republic of Serbia from 2003 to 2008 government of the Republic of Serbia, not accidentally, placed among many sectors which are expected to contribute and boost economical development, increase the employment rate, and realize increased influx of means deriving from export, the priority is on sector of processing of agricultural products. It can be concluded that significant contribution from agriculture to improvement of total economical situation is expected. Accession to EU should be considered primarily not only as the opportunity but serious task in regard to restructuring of the agriculture. However, impeding circumstance,in regard to export ofagricultural-foodproducts,first ofallto EU countries, isthefact that thismarket is under strict protective measures within the policy of agriculture and measures of agrarian protectionism. In such conditions it is very difficult for producers and processors of food to enter such closed markets. Small and medium enterprises are facing the choice of the business strategy:

    – to place the existing product on current market;

    – to place the existing product on new markets, including export;

    – to sell the new product on existing market;

    – to place the new product on new markets, including export.

    Therefore, based on analysis of domestic market, volume and structure of import and export of agricultural and food products, as well as analysis of food industry and agricultural production in Serbia, it is necessary to define potential programs for small and medium enterprises with production which could be economically efficient and profitable from the aspect of investment.

  • An incubator model based on the territorial value chain

    Policies to promote and encourage local foods may take many different shapes depending on both the specific targets and strategies. Some policies, especially at a local level, promote supply-chain vertical and horizontal integration as a comprehensive strategy which aims to help firms pursue several of the promoting policies. A business model that focuses its attention on the consumer of the product and territory can be a crucial driver in generating a ‘land fecundation’ as a response to globalization. The aim of the paper is to investigate the link between rural development and territorialisation, exploring the role of Local Action Groups Integrated Projects of Food Chain and Rural Development Programmes from 2007-2013 in a region in Southern Italy. The article makes use of a value chain approach, starting with Porter’s value chain model and five forces model of competition; it proposes a methodological framework for the development of an organisational model that includes and builds networks between the several stakeholders and local programmes, creating a shared strategy to revitalising the area and the food choices of its residents. This revitalising process takes place through the implementation of a multi-purpose incubator establishing strong partnerships that are able to foster complementarities among all rural stakeholders. Conclusions and implications for policy makers are drawn: a model of territorial organisation could link territorial capital and local stakeholders, and therefore the programming carried out under the entire RDP.

    The branding strategy is based on future goals relating to clients, aimed at increasing awareness of the brand, creating a positive brand image and establishing a preference for the brand and ensuing brand loyalty. A brand is a very important factor for competitiveness and establishes a leadership position in the market, given the major impact that this form of intellectual property has on the perception of consumers and the success of innovative products on the market. The bottled water market has increased by about 35% in the last five years on the global level, dictated by young consumers who are becoming increasingly aware of the significance of proper nutrition in maintaining health. The research presents qualitative information on the market value of bottled water brands, the general characteristics of retailers, as well as on their target customers. The main task of this paper is to confirm the usefulness of marketing research in modern business as well as to present the benefits of brand value measurement to current or future brand owners. It is to be hoped that the results presented in this paper may serve as a good basis for upgrading marketing activities, based on a better understanding of target customers and their particular needs, through better communication for the purpose of stronger corporate branding.

  • Strategy for the restaurant business in Russia in terms of sanctions and import substitution

    This article describes the situation established in August 2014 in Russia. The article considers an example of a famous restaurant «Metropol» (Moscow), taking into account the prevailing situation in Russia. The study of customer attendance, assortment and price policy towards the main products forming the restaurant’s menu was conducted. As a result, recommendations were given, in order to preserve the client base and revise the assortment of dishes.

  • Relationships between coping strategies and psychoactive substance use

    The study examines the relationship between coping strategies and smoking and alcohol consumption among athletes, recreational athletes and non-athlete individuals.

    The factors examined were measured by a validated questionnaire version of Folkman-Lazarus (1980) (Ways of coping) (16 items) and asked about the smoking and alcohol consumption patterns of the respondents. The total sample number was 813 people, of whom 341 were athletes, 292 were recreational and 180 were non-athletes. 54.4% of the sample is female and 45.6% is male. In my research, I focused on mapping intrapersonal coping strategies among athletes, recreational athletes, and the non-athlete individuals, and explored gender differences. Furthermore, how smoking and alcohol consumption appear as a negative coping strategy in the measured sample.

    As a method besides descriptive statistics the Kolmogorov-Smirnov test was used to verify normality, and the hypotheses were tested with non-parameterized test (Kruskal-Wallis, and Mann-Whitney).

    For coping strategies I found a significant difference among the non-, recreational and competitive athletes, and there is a significant difference between genders as well.

    In the case of cognitive restructurings, there was a significant difference in favor of sports and recreational athletes versus non-athletes, while in problem analysis and passive coping I found a significant difference in favor of women compared to men.

    Significant differences were also found in the case of psychoactive substance use. Among the three groups, as the intensity of sport increases, the number of smokers decreases. In the case of smoking, a significant difference was found in the coping strategies referring to reduction of the stress in the whole sample. In the case of alcohol consumption, in coping strategies were found significant differences between stress reduction, problem analysis and passive coping.
