New types of tourism and tourism marketing in the post-industrial world

The emerging post-industrial society can be characterised by the dominance of service industry, more leisure time of the population, higher disposable income and more conscious consumers. These conscious consumers are more and more quality orientated and reject undifferentiated mass products. New customers of tourism and hospitality industry are not only more affluent – so less price conscious – and more quality orientated but they are also seeking activity, participation, fantasy, and experience. These new types of tourists are interested rather in aesthetic aspects of life and are seeking highly differentiated, personalised experience. In the following article the authors, professors of the French ESSCA business school overview theoretical aspects of new, post-Fordist tourism demand and present examples of the new tourism and hospitality products having emerged in the developed countries during the last years.

Consumer attitudes and preferences about the pork meat in Hungary (based on cluster analysis)

This study focuses on consumer’s attitudes about (pork) meat, what do they think about the healthness of the different meat type, what are the strengths and weaknesses of pork meat, what are the main features of good quality pork meat, what are the major pork purchase influencing factors and what are the favourite food of the respondents from pork meat etc. Then I analyze the tendency of these values (cross tabs, bar/pie charts, means, Chi-square), where can be found significant differences, and make a cluster analysis to identify the pork consumers in Hungary.

Goat Keeping and Goat Milk Products in Human Nutrition - Review
24-36Views:882The aim of this paper is to review the status quo and future perspective of goat keeping and goat milk products, particularly emphasising the role of goat milk products in human nutrition. Across the globe, goats can be kept almost anywhere, even in poor surroundings. Considering the deteriorating geographical conditions due e.g. to global warming, the importance of goat and goat products will probably further increase. Goats can play an important role in the nutrition of the continuously increasing human population. The wool, meat and milk of goats are all valuable products. Goats are able to provide high quality products under diverse climate conditions and in extreme environments. Globally, more people drink jmilk from goats than from any other animal. Due to the components and profile of goat milk, it can be processed and a wide range of high quality and healthy value added products can be produced from it. Goat milk plays a decisive role in feeding starving and malnourished people in developing countries. In developed countries, a significant segment of many populations suffers from gastro-intestinal disorders and cow milk allergy. Goat milk plays an important role in the treatment of certain health problems. Moreover, due to its favourable effects on human health, goat milk has found a niche for itself in the trend towards healthy nutrition in developed countries, where connoisseur consumers are ensuring goat milk products a growing market share. In these countries, goat milk products, e. g. cheeses are also recognised as gastronomic and festive products.

Current situation and development of the bee-keeping sector in Hungary

Development of rural areas also very important issue in the European Union, which could contribute to the improvement of profitability of small family businesses, higher employment rate in rural areas as well as slow down the migration of people from rural into urban areas. Nowadays the bee-keeping– as one of the activities can provide alternative income for small businesses in rural areas– has become more and more important topic in Hungary. Bee-keeping sector provides income roughly 15 thousands families in Hungary. At the same time it takes important role in the preservation of rural landscape, traditions and their regional values. However, the sector has serious problems, as well (for instance quality issues, competitors on the market, etc.). It can be stated that the market position of Hungarian honey can be preserved through the improvement of quality assurance and product development. These developments can be carried out by the utilization of national and European Union funds.

Regional examination of certain factors influencing the quality of life

The majority of families living under the minimum subsistence level cannot cover their housing maintenance costs. These costs include the rents of tenement flats, public charges, water, electricity, gas and district heating charges. Cutting the number of unemployed people and stimulating economic activity is a high priority. Important tools towards achieving these goals include the promotion of non-agricultural activities by households engaged in agriculture, incentives for rural micro-enterprises, the development of rural and agro-tourism and support for traditional arts and crafts. As for general subjective well-being,although its average value is positive, merely 50% of the population is contented. Naturally it does not mean that we are unhappy. 4 respondents out of 5 claim that they are rather happy.This may suggest that the picture is not so pessimistic as it is revealed by questions about living conditions.

The evolution of the Avacongress
113Views:426In the early 1990’s MBA educations started independently in Warsaw, Prague, and Debrecen. In the middle 1990’s a small network was estblished with the mentioned institutions, as well as supporters from different universities like Wageningen, Aberdeen, Cork, later Fayetteville fromArcansas (USA). In the beginning of the 21st century the network became bigger. That time did Kiev join the Network, and started negotiations with Moscow Paralell to extended network leading by Warsaw University we applied for a EU Leonardo grant. The proposal was to develop the teaching and learning materials in the programme to a common approved standard. In order to improve the quality of teaching a set of commonly approved, standardized teaching materials had been eveleoped: Handbooks fo rmodules taught within 7 courses of the MBA programs: Public Policy, Economics, Management, Marketing, Finance, Operational Methods and International Agribusiness. Handbooks and case studies had been put on Warsaw University’s website and are now accessible for teachers and students from all academic institutions participating in the project. Materials had been developed by teams of experts in specific fields from different Universities.The whole set of materials was prepared in English. Another product of the project is the quality assurance standards applied by all MBA programs and an accreditation procedurefor the International Board. That time formulated the name AGRIMBA which is official name of the International Network on Agribusiness and Commerce.

Demographic and lifestyle attributes with a fundamental role in food supplement consumption (exploratory research)
181-185Views:346The worldwide proportion of food supplement consumers has been steadily increasing, more than 50% of the Hungarian population tends to buy at least one type of dietary supplement. In most cases, the purchase and consumption of food supplements are not based on medical indications but depends on consumers’ individual decisions. The study of consumer groups enables the investigation of typicalities which have an impact on attitudes related to the consumption of food additives. The present study explores the demographical factors determining the global consumption of dietary supplements by secondary research. It sought to explore the typical features of consumer lifestyles in line with the research findings, based on previously specified criteria, through qualitative focus group examinations. My study focused on subjects who bought and purchased at least one type of food supplement in the previous year and placed a high emphasis on healthy diet and lifestyle in their everyday lives. The consumption of dietary supplements indicates growth with age and it is more common among women. Consumers with higher qualifications and incomes tend to buy products with vitamins and minerals in a greater proportion. The identification of nutrition factors revealed that the proportion of those who do not need extra nutrient intake is high among food supplement consumers. It is primarily true of women having a healthy lifestyle (they typically consume high amounts of vegetables and fruits, they are physically active, non-smokers and do not use alcohol); moreover, their socio-economic status is typically high. The findings of my quantitative research suggest that the purchase and consumption of dietary supplements are most characteristic of the “Successful”, “Quality oriented- successful” and “Loyal to the brand - modest” groups in the lifestyle-based consumer segments. The investigated sample showed ambiguous attitudes towards product quality and willingness to pay in all the three batches. Nevertheless, it can be established, when consumers buy food supplements, brand sensitivity proves to be a dominant factor in addition to - typically Hungarian - price sensitivity. Based on lifestyle factors, the current research may bring us closer to the exploration of the motivational and attitude patterns of consumers’ food supplement purchases.

Master training in Agribusiness and Rural Development at the University of Zagreb
87-91Views:380The title of the proposed JEP project is: “Agribusiness Higher EducAtion Development” with the acronym AHEAD. This curriculum development project – in case of acceptance – will last for three years, from July 2005 and June 2008. The primary project site is the University of Zagreb, Croatia; the contractor and the co-ordinator institution is the University of Debrecen, Hungary. In the consortium, 3 further European universities (University of Hohenheim, Wageningen University and Scottish Agricultural College) will participate, from the Croatian side the Ministry of Agriculture, Forestry and Water Management and an additional 7 Croatian institutes will also be involved. The total number of members in the consortium is 13.
The main objective of the AHEAD project is to establish new BSc and MSc programmes in Croatia at two Faculties of the University of Zagreb. These are as follows: Agricultural and Rural Development, Food Safety and Quality Management and pilot MSc training in Agribusiness and Rural Development. These are preceded by faculty retraining programmes in food safety and quality management, as well as agribusiness and commerce within the framework of a MBA programme accredited by the International MBA Network. The professional content of the project is a modernised curriculum and training palette that would be available by the end of this project at the University of Zagreb, serving not only the higher education of the country, but the demand of the Croatian national economy as well, in line with the basic principles of the European Union. -
A Value chain analysis of Sesame (Sesame Indicum L.) in South Omo Zone, Southern Ethiopia
Views:462Sesame is the main cash crop in Ethiopia and it is mainly produced in northern and southern part of the country especially South Omo Zone. In the zone sesame is highly produced, but it production is not known regionally and at a country level. So this study was aimed to research sesame value chain of the Zone. Simple descriptive statistics and value chain approach were employed for data analysis during this study. It attempts to deal with mapping and identifying sesame value chain actors and their roles, examines marketing channel, cost margin structure and assessing challenges and opportunities within the study area. The results of the study indicated that out 5589.3 quintals were supplied to markets for various actors and five alternative marketing channels were identified to transact the sesame product through intermediaries. The most important volume of sesame (4900.8 quintals) was marketed through channel V and the lowest volume in channel I. producers get the highest share in channel IV and the lowest in channel II. Barriers to entry traders into the market are that the capital requirement and therefore the wholesalers govern by volume transacted and internal control criteria within the market. Fertile land and high demand for the product were essential opportunity. Pests and disease, Low level of input utilization, Shortage of input supply and high price of inputs were the challenges of sesame production whereas lack of market information, price variability, delay of buyers, low bargaining power and poor product quality were the challenges sesame marketing.

Networking on the utilization of local natural resources

This project is based on a research work (using the findings of the surveys completed by the representatives of hosts living in the eastern part of Hungary). The project itself is based on the adaptation of the theory of tourism into practice by presenting existing natural values in the supply portfolio of tourist service providers. A unique natural environment can be found alongside a 120 km-long stretch of River Tisza. These natural values interlink and complete each other with respect to Lake Tisza and River Tisza. Regions and settlements situated further from the specified settlements are also rich in natural values which guests will definitely be pleased to get acquainted with. The six landscape centres (including LHH regions) alongside river Tisza (in the two regions) symbolise the interdependent system of the sample area of the project while a single landscape centre in the Pásztó Minor Region embodies a unique character. A register will be prepared for each landscape centre containing unique natural values that can be involved in the tourist supply and handicraft/economic activities (e.g. basket weaving, floodplain economy) that are or can be built on these natural values. A pictorial English/German-Hungarian professional dictionary summarises the distinctive nature of landscape centres. The education material demonstrating the registers is going to be developed both in conventional and electronic form; its spatial IT appearance on the Internet is considered a special feature. The education material will be supplemented with other information currently missing such as those related to environmentally friendly economy, and the legal context. The methodology allows the adaptation of the method in other regions, even in the whole country. The new qualifying and benchmarking system and the trademark managed by a profession-specific cluster that strengthens network co-operation and controls the development guarantee the achievement of high quality tourism.

Competetiveness of the Montenegrin fruit and vegetables sector and recommendtations for impovement
69-75Views:214A number of facts, primarily including high fragmentation at all levels, weak vertical integration, limited dimensions in comparison to competitors poor technological level and unbalanced quality/price ratio make the sector weak, low competitive and exposed to international competition, reducing its capacity to capture any existing market potential. Almost all opportunities are frozen by prevailing weaknesses and threat impacts are exacerbated by a largely prevailing number of weaknesses. High production unit cost appears to be a major constraint to local supply market competitiveness. This situation appears to be mainly caused by general low levels of productivity – provoked by not adequate and up-to-date cultivation practices, reduced levels of input use, utilisation of old and, therefore, less performing varieties, and also farm management shortcomings. High losses from reduced availability of post-harvest facilities and equipment add up to the problem. The improvement of the sector is not easy. In other words, there is a lot to do for the Montenegrin sector operators to increase sales: tackle imports and increase market shares in the domestic market and abroad. Based on our research, we suggest that the Montenegrin fruit and vegetable sector should primarily aim at substituting imports, increasing domestic consumption and developing exports to the region (CEFTA countries) primarily via promising market opportunities. Based on our analyses of the state of affairs of the sector, the competitiveness and the market potentials, the recommendations for improvement competitiveness are outlined.

Views:275For a given region, competitiveness and sustainability play a vital role, as they are critical determinants of residents' quality of life and economic situation. The intensive implementation of rural development also offers opportunities for economic growth. Traditional and regional food products obviously give opportunities for the development of rural areas. Also, their production is significant for the local and Hungarian economies and society. Increasing the production of these food products and expanding and increasing their market outlets can contribute to maintaining the population in certain areas of the region and, among other things, protecting and preserving the tangible and intangible heritage of rural areas. Urban areas are also of particular importance for traditional and regional food: local events, such as themed festivals, and catering operators can also help to promote food products through a conscious, well-thought-out sales and marketing strategy.
My research aims to characterize the economic position of traditional and regional food and products among local consumers in the Northern Great Plains region. During the survey, 1.349 people completed the questionnaire, and all of them gave valid responses. I focused on local specificities, gauging the opinions of residents in the region in relation to traditional food consumption in order to assess their willingness to pay more for traditional and regional food.

Selection of agricultural land for multifunctional agriculture
49-52Views:268The modern concept of rural development implies the use of agricultural resources, primarily agricultural land, for other (non-agricultural) activities besides its agricultural purpose. The integral aim of this concept of rural development is the maximization of economic results, besides the sustainable development of rural areas, environmental protection and the production of strategic (staple) agricultural products. The objective of this paper is to define the general, theoretical, quantitative model for the determination of the size and quality of agricultural land which, considering the above-mentioned demands (criteria), is optimal for the utilization in agricultural production in certain regions. The remaining agricultural land would be available for the non-agricultural purposes. The economic optimal model for the selection of agricultural land in the traditional agriculture is the model of linear programming. The criteria of the land selection for traditional agriculture are the economic effectiveness (measured by net income or by gross national product) and the economic efficiency (measured by the production economy). The maximum economic effectiveness is determined by the standard method of linear programming and the maximum economy by the method of broken linear programming. The solution of compromise can be determined by multi-criteria programming, based on the minimum differences. The limitation groups in the mentioned variations of the model are: limitations of production quotas of agricultural products, minimum quantities of staple agricultural products, limitations of processing plants in a region (minimum and maximum), limitation of crop rotation, limitations of the needs in animal husbandry for bulky for age and limitations of agricultural land according to various types of utilization. By quantitative defining of the structure and size of agricultural land for traditional agriculture, “the surplus” and structure of agricultural land available for non-agricultural purposes is automatically determined.

Problem analysis of the Hungarian tobacco sector
161-166Views:382The Hungarian tobacco sector went through significant changes in the last decades. The reason of the changes were our accession to the EU, then the changes in subsidiary system, the effect of the world and within the EU’s strict tobacco policy. The number of tobacco farms declined and the future became uncertain for the farmers. Size of the farms increased and there were a concentration in the sector, so the smaller scale farmers’ activity ceased. It causes several problems in rural areas, because one of the main strengths of the sector was its significant role in rural development, as the tobacco in small scales was able to produce an acceptable income in such areas where due to the poor soil quality economically successfully growing for other plants are not suitable. The main goal of this paper is to present the Hungarian tobacco sector and its main strengths, weaknesses, possibilities and threats compared to the European Union’s situation.

Marketing aspects of consumption of Hungarian pork meat
109-114Views:337The most important aim of authors’ study is to get to know the Hungarian pork consumption in our days. Our aim is set to estimate pork meat consumption and purchasing habits of consumers who are living in Eastern part of Hungary. The pork section is influenced negatively by several factors nowadays, which have a clear effect on the pork consumption and cause its declination. During the research work a questionnaire survey was made in 2007 and 2008. 1089 persons in different locations of Eastern Hungary were altogether asked. The data were evaluated by statistic hypothesis testing. Based on the evaluation a clear picture was got about the consumers’purchasing and consuming habits, and their ideas, opinions about the Hungarian pork as a food and as an item wearing a kind of national behaviour. Through many questions the volume of consumption was explored, and the pork’s proportion was compared to the rest of other meat types. It is verifiable that the pork consumption can be handled as a national habit, which is not the same by different age groups and educational qualifications. The importance of some factors during purchasing was also examined. Exceptionally important factors are: quality, the appearance, the origin and the price, that were mostly considered by the customers.The effect of pork promotion advertisements and its evaluation by the customers were surveyed too, which in connection with the efficiency showed a fairly stable picture both in 2007 and in 2008. The examination of price elasticity showed that this figure is influenced not just by the product group itself, but the purchasing power of the costumers, as well.

Research on the natural features of karst water, on the example of some water intakes
63-67Views:275The existence of safe and abundant raw water sources is a priceless treasure for any country. Water resources are of particular importance for Montenegro, especially for the development of tourism and agriculture which represent the backbone of its economic development. With respect to water potential, Montenegro is at the top of Europe. However, it is not a sufficient factor, but the very way it is used and protected, as well as the improvement of its valorization. Economic development which is not based on the conservation and good governance of natural resources may have negative consequences for the overall development. The aim of the paper is the study of natural properties of karst ground waters and their changes through interrelation of some ions, as indicators, on the example of five intakes in use. The paper presents the results of the research on the said waters and the values of indicators which point to their exceptional benefits for the water supply. However, the effects of the anthropogenic factor are evident, which are reflected in the range of the mole ratio of Ca /Mg ions ranging from 5.4 to 9.6, and the values (eqv.SO4/Cl) ranging from 0.3 to 2.0. Protection of the environment, especially preservation of the quality of water resources of Montenegro, imposes the urgency of implementation of the objectives of the Water Framework Directive.

Fresh Produce Retail Price Comparisons in Trinidad and Tobago
29-34Views:300As the competitive landscape of the food and grocery retailing sector in Trinidad and Tobago is being transformed and consumers are separated from producers, shoppers are more reliant on price/quality cues in making their purchase decisions. The purpose of this study is to identify the retail outlet with the lowest and or highest price for a selected number of fresh produce items, in an effort to direct shoppers to relatively cheap nutritious sources of fresh produce. ANOVA and the Games-Howell test were the analytical procedures used. The ANOVA results indicated that there is statistical difference for all the items at the different retail outlets – farmers’ markets, roadside markets, public markets and supermarkets.
The Games-Howell results obtained indicated that the supermarket mean prices were the highest for all items. Shoppers who purchased pineapple at the farmer’s market instead of the supermarket in 2016 could have potentially achieved the greatest savings of $6.52/kg.

Education as a factor of awareness development of organic product consumers

To develop a habit of consuming organic food, as is case with all habits, it is necessary to educate the younger population, so that they can become accustomed to the fact that organic food is a source of both human health and a healthy environment. Therefore, educational institutions should initiate actions in order to develop awareness of the importance of healthy and safe food (especially fresh fruits and vegetables) among youth. This action has already been carried out in some countries.

Bread consumption habits in the gluten free diet
113-119Views:667Gluten is a protein found in many grain products. Celiac disease is a genetic autoimmune disorder characterized by sensitivity to gluten. When a person with celiac disease consumes gluten, his/her immune system perceives the gluten to be a harmful substance and reacts negatively. The only treatment for individuals with celiac disease is lifelong adherence to a gluten-free diet. It is one of the most frequent and well defined of all lifelong diseases. In Hungary, 1-2 % of the population is said to be affected, but only every 10th has been diagnosed. Bread is a basic and frequently consumed food made principally from wheat. Gluten is the main structure-forming protein in flour, and is responsible for the elastic characteristics of dough, and contributes to the crumb structure and appearance of many baked products. Gluten removal results in major problems for bakers. Currently many gluten-free products available on the market are of low quality, exhibiting poor mouth feel and flavour. People wishing to eat bread in the gluten-free diet basically have two options: buying or baking the bread for themselves. There are several gluten-free bread brands are available on the Hungarian market. The price, ingredients, texture, colour, softness of the available breads are different. There is a rather good choice in gluten-free flour mixtures on the Hungarian market, as well. The composition of these mixtures are also different. The aim of our empirical research was to investigate the gluten-free bread consumption habits of people following gluten-free diet. The research was carried out using Google forms in January 2017. Size of the sample is 196. The online form was shared in four closed gluten free Facebook groups in Hungary since they are really active in sharing information concerning gluten-free lifestyle and diet. Summarizing, in this study we wish to examine how evolve the world pork meat production, trade and consumption, and to demonstrate the main consuming countries, highlighting the role of China, as it is the most populated country in the world with its 1.4 billion inhabitants.

Having gained access to land, control over the land held is very important in improving the quality of life as it plays a vital role in poverty reduction among small scale farmers. This study examined the relationship between land control and poverty status of farming households in Nigeria. The Nigeria General Household Survey (GHS) 2018 was used. Analytical tools used include descriptive statistics, Land Control Index (LCI), Ordered probit regression and Logit regression models. From the results, majority of the Nigerian farmers were male (84.6%) with a mean age of 50±15years, and 81.1% were married, having a mean household size of 7±4 persons. The mean farm size held by the households was 4.42±14.9ha. Farming households had access to the highest proportion (62.79%) of their plots by inheritance, still showing the dominance of inheritance as a means of land access in Nigeria. Also, households had access to 11.80% of the plots by outright purchase, 11.20% by rent in cash or kind (farm produce), and 0.64% by sharecropping; these underscore the growing rural land market in Nigeria. Majority (88.8%) of the households had no control over all the plots of farmlands held (LCI=0) while 6.03% had total control of the plots of farmlands held (LCI=1). This implies that majority can only carry out farming activities (having use right) on the farmland and did not possess legal documents for the land (not able to dispose of the land). The mean household expenditure on food and non-food were ₦8,609.37 and ₦12,587.08, respectively. The mean total expenditure was ₦18,809.20(±10444.45) and the poverty line was ₦8,433.34. The poverty incidence was 41.03%; 41.03% were poor while 58.97% were non-poor. Location of household in the rural sector, especially in the North East, South West, and South East, was significantly positive in determining the level of land control by farming households at 1%. At 10% level of significance, low land control (HCI≤0.25) and medium land control (HCI=0.51-0.75) would significantly increase the likelihood of the household being non-poor by 27.4% and 33.6%, respectively. Land control positively influences the poverty status of the farming households in Nigeria; farming households with low land control can increase their chances of being non-poor. Rural farmers should be encouraged to obtain legal documents on their land to facilitate higher level of control.

Consumption habits of “Free range chicken” in Hungary
69-73Views:379Poultry is highly ranked in theWorld meat production and consumption (it accounted for 32% in 2007), and, in the past 20 years it was growing with an annual rate of 3–6%, higher than in case of any other meat-types. This tendency is also valid for Hungary: poultry has the largest share (29.8 kg/person/year, 47%) in the domestic meat consumption since 2000, which is among the EU top (KSH, 2007). As the result of the animal health and nutrition scandals, the EU animal welfare and quality requirements and the advancements in health consciousness the Master-Good group launched the production, processing and trade of free-range poultry under the brand “Free-range chicken”. The new products had good consumer responses, because at present 1.5% of the processed chicken in Hungary (25 tons/week) is under this brand. As it regards the future of this product, we can expect the decrease of the current 1.5 times higher production price over broiler chicken, due to the increasing energy, labour and other cost items, thus the increase of the domestic consumption by 25–30% per annum can be foreseen. Besides the growth in domestic demand, increasing foreign consumer demand can also be expected because of the space requirement of the production. Summarising the above mentioned: „Free range chicken” can be one of the most successful products of the Hungarian poultry industry. In order to realise the prognosis mentioned above, it is inevitable to learn the consumer attitudes towards the brand. A primary market research programme supported by the Master Good group has been launched to study the main features of the domestic chicken meat consumption – including the „Free-range chicken” as highlighted brand. The primary aim of the research was the complete assessment and evaluation of the Hungarian chicken consumption habits and the identification of the possible take-off points. The research undertaken resulted basic information concerning the internal structure of the Hungarian poultry consumption (including that of the „Free-range chicken”), the potential consumer groups and their requirements, provided information on the consumers’knowledge of the products and identified the elements of the consumers’ judgements. This will serve as basis for a marketing communication programme to increase the domestic „Free-range chicken” consumption.
