New and innovative consumer demands and expectations on the Hungarian food market
485-499Views:136Food and eating have always encompassed more than the simple intake of nutrients; therefore, when thinking about food consumption, we need to examine several groups of influencing factors whose correlations from the aspect of the consumer are described by a complicated matrix. This paper focuses on the selection of signs indicating new and innovative consumer behaviours, and on the megatrends that are the driving forces of transitions and that lead to the consequences of strikingly reconsidered consumer decisions nowadays. The authors stress that there are qualitative and structural changes in food consumption in Hungary, with an increasing quantity of differentiated consumer demands appearing, a few of them influencing our everyday decisions even at
the concept level. The findings of primary research originated from a personal questionnaire survey consisting of 2001 respondents, in which we also focused on the attitude towards eating and media consumption related to gastronomy.
This paper is an introduction to the market segments detectable in the present Hungarian population aged 15–74 in the topics concerned. -
The effect of dissolved oxygen on common carp (Cyprinus carpio) and basil (Ocimum basilicum) in the aquaponics system
89-96Views:842Aquaponics is an integrated system that combines fish farming (aquaculture) and hydroponic plant production. The objective of this study was to examine how the level of dissolved oxygen with or without an air pump affects water quality, fish output and plant growth parameters for common carp (Cyprinus carpio) and basil (Ocimum basilicum).
Ebb – and flood aquaponics systems (with automatic syphon) was used. Two treatments were set in this experiment, one of which was the aquaponics system without air pump (unit I), where water of the plant bed was pumped two directions, one falling back to the fish tank oxygenating the water the other was pumped to the hydroponics unit. The other system (unit II) was designed with an air pump.
In the course of the study, water quality parameters, such as oxygen saturation, dissolved oxygen (DO), electrical conductivity (EC) and nitrite were significantly different (p<0.05). Total basil biomass was higher in unit II. (5367.41 g). The final biomass of common carp were
2829.45 g ± 79.24 and 2980.6 g ± 64.13 g in unit I and unit II respectively. Weight gain (WG) and specific growth rate (SGR) showed no significant differences (p>0.05) between the treatments. -
Investigation of the impacts of the by-product of sewage treatment on some characteristics of maize in the early growth stage
77-82Views:202The use of sewage sludge on arable land has been widespread for many years. This by-product, treated as waste, can provide valuable nutrients to the soil, but the applied amount of sewage sludge to arable land is limited. The possibility of application of sewage sludge is essentially determined by the composition of the sludge. The goal of the experiment was to demonstrate that the physiological, morphological, and biochemical parameters of maize (Zea mays L. cv. Armagnac) linearly change with increasing concentrations of sewage sludge (25%, 50%, and 75% as m/m%). The experiment was set up in a glasshouse. The following parameters were investigated: plant height, relative chlorophyll content, photosynthetic pigments (chlorophyll-a, chlorophyll-b, carotenoids), and leaf proline and malondialdehyde (MDA) content, and PS II quantum efficiency in the 3-leaf stages of the plants. Sewage sludge applied in lower doses had a beneficial effect on the initial growth of maize. The relative chlorophyll content was significantly higher in all treatments compared to the control. There was no significant difference in the maximum quantum efficiency of PS II reaction centers among the treatments. In this experiment, different concentrations of sewage sludge treatments had different impacts on the MDA and proline content of maize leaves. The proline content was significantly higher in all treatments, while the MDA content did not change significantly compared to the control.

Habitat suitability modeling of a Subterranean mammal in Iran: case study of the Western Mole-Vole (Ellobius lutescens)

Subterranean mammals, such as the Western Mole-Vole, have an important role as ecosystem engineers by creating underground burrows and tunnels and aerating, propagating seeds, and building shelter for other small mammals and animals. They are also a keystone part of the food source for other prey vertebrates. However, many areas are considered pests, and their habitats are fragmented due to human activities, which causes a reduction in their habitats and colonization. Habitat Modeling tools help us to predict a suitable niche for conservation planning. The purpose of this study is to predict habitat suitability for Western Mole-Vole in Iran by using the MaxEnt method to determine which part of Iran is a desirable habitat for this species. The result indicated that the northwest of Iran, especially the southern slopes of the Alborz Mountains and the Eastern slopes of the Zagros Mountains, provides suitable habitats for the western Mole-Vole. The environmental variables that are more influenced by the distribution of this species are elevation of 1800 to 2500 meters, human activities such as roads, and rainfed farms. Approximately 7% of Iran is a suitable habitat for the Western Mole-Vole.

Investigation of host-specificity of phytopathogenic fungi isolated from woody plants

Changing climate could create more appropriate environmental conditions for phytopathogens, thus formerly host-specify fungi could be able to colonize new hosts. Noxious plant pathogen fungi, which can infect several plant species are well-known worldwide. These genera may expand their range of hosts because of the appearance in new geographic areas due to climate change. This new exposure can result in serious problems in agriculture because of the lack of immunity. The susceptibility of apple tree was studied through testing pathogenicity in vitro with species isolated from walnut twigs and nuts, and identified by ITS sequences. Three of four tested species, Botryosphaeria dothidea, Diaporthe eres and Diplodia seriata colonized and necrotized the infected apple branches, while Juglanconis juglandina was not able to infect the twigs. Members of Botryosphaeriaceae were the most virulent, causing the largest lesions in the fastest way. This experiment draws attention to the threat of new host-pathogen connections, which can arise because of the favourable weather conditions and can spread between neighbouring cultures.

Comparison of alveohraph and extensigraph properties of winter wheat samples
27-30Views:343The rheological properties of dough are determined by the amount and proportion of gliadin and glutenin proteins. Extensibility and resistance to the extension of doughs which can be measured using the extensigraph or alveograph allow good assesment of the baking behavior under realistic conditions. In our study, we compared the extensigraph and alveograph parameters of 87 flour samples. The results showed that the alveograph parameters were different from the extensigraph parameters. The classification of wheat varieties was different, and the order of varieties, as well. The alveograph properties were affected by other factors than the extensigraph properties, except the W value. The two rheological tests did not give similar results, therefor neither test are replaceable.

Changing of some parameters of the soil-plant system as an effect of different composts
262-266Views:285Composting is an alternative way for practicing site-specific and environmental friendly plant nutrient supply. Our aim was to study the effect of different composts on plant and soil system.
Pot experiment with acidic sandy soil blended with three composts in five (0%, 5%, 10%, 25% and 50%) proportion was set up. Our experimental plant was perennial ryegrass (Lolium perenne L.). After the harvest of ryegrass we measured the fresh and dry weight of harvested plants, the P-, K-, Mg-contents, and the pH of soils.
The three composts had different effect on dry weight production and on nutrient-supply of soil. We established that one of the compost had significantly larger effect on the dry weight of ryegrass compared to the others. In this study we proved that favourable compost/soil proportion is different in the case of different composts. -
Wheat cleaning and milling technologies to reduce DON toxin contamination
89-95Views:599Mycotoxicosis caused by Fusarium fungi holds a huge risk considering economic and food safety issues worldwide. By applying milling technologies, we attempted to reduce the concentrates of DON toxin, as it is the most often found toxin in wheat.
The processes of sieving, aspiration and combination had been used on wheat with high DON toxin concentration. As a next step, grains were sorted using a horizontal cylinder separator, assorted by an optical and a gravity separator, and finally, the products were scoured and ground. The contamination level of the wheat and flour samples were defined by the HPLC-MS method.
Regarding the results, it can be stated that toxin concentration was most effectively reduced by optical separation and scouring, and by applying these milling techniques, food safety can be increased significantly.

The use of Common duckweed (Lemna minor) as a biological filter in the rearing of hybrid African catfish (Clarias gariepinus x Heterobranchus longifilis)
107-112Views:488The African catfish (Clarias gariepinus x Heterobranchus longifilis) is one of the most important fish species in Hungarian aquaculture. The larvae and juveniles are reared at high feeding rates, which can reach up to 10% of the biomass. Intensive feeding results in large amounts of effluent water, directly proportional to the intensity of fish production. The aim of this experiment was to investigate the potential of Common duckweed (Lemna minor) as a biological filter and its nutrient removal capacity during intensive fry rearing of the hybrid African catfish. In a recent study, two experimental recirculation systems, identical in water volume and design, were set up, in one of which duckweed was grown under aquaponic conditions, where the concentrations of nitrogen and phosphorus forms were monitored and the production parameters of the fish were determined. The results obtained from the experiment showed that the use of duckweed as a biological filter improves the water quality of the recirculation system. A significant amount of plant biomass was produced, which mainly reduced the nitrate and orthophosphate concentrations in the system water. As a consequence, the survival of hybrid catfish was improved, which also affected biomass growth, but had no effect on other parameters.

Daily soil carbon dioxide flux under different tillage conditions

In the scope of the present study, it was examined how carbon dioxide emissions of the soil evolve over a day. The results have been established based on the comparison of the effects of different parts of the day, tillage methods and irrigation.

In the developed side of the world there are presence of food lines with higher content in nutritious and/or vitamins and fibers such as: kalium, calcium, selen, magnesium, plus it contains less saturated fat. Because of that there is a new word in dietetics as functional foods.
Food having more inner content and/or biological values, so healthier, are called functional foods. Those foods components picked carefully for healthiness by modern knowledge of dietetics.
One of the best raw materials for functional food is the milk. It is already healthy by itself. The Körös-Maros Biofarm Ltd. has a goal of developing and marketing, health protecting organic functional foods in hungaricum products from cured milk. The Jedlik Ányos project helps the Ltd. to achieve this goal. We just finished an antioxidant test and we check if the antioxidant in present in the milk than we check the final product of the presence of the original antioxidant and the form and amount of it.
It had been feeding, for two weeks for three herd of cows selected for age, milk output and consanguinity. All of the three herd had been feeding with basic forage. One of the herds had been getting vitamin-E in the amount of 250 mg/bwkg the other group got licopin in the amount of 200 mg/bwkg once a day each by each orally, the third herd was the control group.
After two weeks we toke a sample of every herd were processed the samples into yogurt and cheese. Than we checked the raw milk, the cheese and the yogurt for antioxidant content with HPLC method. The test ended with good results by finding a great amount of antioxidant, in not only the raw milk but also in the final product. -
The effect of washing for the shelf-life parameters of spinach (Spinacia oleracea L.)

However, spinach may contain several pathogen bacteria: Escherichia coli, Klebsiella spp., Salmonella spp., Enterobacter spp., Citrobacter spp., Shigella spp. and Listeria monocytogenes, which can cause several serious health problems. This study investigates the effects of washing with citric acid for the shelf-life parameters of spinach in comparison to the effect of washing with water and control. Washing of spinach with 0.5% citric acid solution decreased the elasticity of the spinach leaves, as well as the chlorophyll content. On the other hand, the total plate count, as well as the yeast and mold count could be decreased with this treatment, but difference was not detectable at the forth storage day. The fecal indicator E. coli did not change, indicating washing was not effective in this case. Further optimisation of treatment and storage conditions may decrease microbial risk of fresh spinach consumption without decreasing its sensory quality.

Review on the fatty acid profile and free fatty acid of common carp (Cyprinus carpio)

Carp has high nutritional value content, favorable taste, it is rich in protein, and low in saturated fat. The nutritional content in fish is composed of many chemical constituents and influenced by many factors. One of the components that its content may be different due to internal and external factors is fatty acids, which may vary depending on endogenous and exogenous factors. The endogenous or internal factors include the genetic, size, sexual maturity, and life cycle phase. While microclimate, water quality, quality of food or diet habit, and the amount of available food or starvation are considered as exogenous or environmental factors. Freshwater fish has the ability to convert essential fatty acid into long chain polyunsaturated fatty acid like AA, EPA, and DHA. Most results showed that palmitic acid and oleic acid were the dominant SFA and MUFA in carp both for wild and farmed carp in all seasons. The PUFA for wild carp was mainly dominated by DHA, while on farmed carp by LA. It confirmed that high LA content in farmed carp was related to the diet habit. The amount of lipid and FA were changed in line with the season. Even the statistical analysis showed no significant difference, but some studies showed a contrasting result. Moreover, most obtained results acknowledged that FA tends to decrease during the spawning period. The amount and composition of FA were affected by the total lipid content. The lipid must be broken down into simpler compounds such as FA or FFA for the metabolism of fish. The result of metabolism then transported into the utilising tissue and used as energy.

Optimizing these dynamics is central to maize productivity, enhancement and sustainable crop production. Soil moisture sensors for sustainable water management in field crop production: A review of advances and application challenges

Traditional irrigation practices often lead to water use inefficiency, which harms soil health and reduces yields. To address this, reviewing previous studies on soil moisture sensors provides important context and guidance. Literature from Scopus, Google Scholar, and WoS (2019–2025) on soil moisture sensors for sustainable water management in field crops was screened. Out of 244 retrieved publications, 79 met the inclusion criteria with a focus on sensor technologies, applications, advances, and challenges, analysed thematically for research gaps and insights. Based on the findings, soil moisture sensors boost water management, improve yields of field crops, and support sustainable agriculture. However, hindrances related to high costs, lack of awareness, technical complexity, calibration needs, energy challenges, data interpretation difficulties, and compatibility problems hinder effective soil moisture sensor results. Integrating soil moisture sensors with decision-support tools optimises water use and protects soil health to promote long-term productivity under climate variability. Future research should strategise on the development of low-cost, reliable soil moisture sensors with technology subsidies, training, policy support, durability, integration, and simple data to empower farmers to adopt precision water management.

The effects of the climate change and the drought stress on potato production – A review

Originated from the Andes of South America throughout the last five centuries spread over the world and became a global staple food. Over the years potato production has greatly evolved due to advancement in agrotechnology reflecting in higher yields contrary to the worldwide decreasing production area. The wide range of potato’s ability for adaptation allows it to thrive in many different soil types and climates making it a main contributor in food security. Nonetheless rising temperatures, extreme weather events, water scarcity driven by climate change imposes serious challenges and threats for global potato production.
This review presents the short history of potato cultivation, statistics of present and past production and agroecological needs for ideal farming. The review also attempts to explore the impact of climate change on potato growing spotlighting on drought and heat sensitivity.
To deal with these climate change induced challenges several mitigation options are proposed just as foliar applications of salicylic acid, hydrogen peroxide, silicon and micronutrients to elevate perseverance against abiotic stresses. -
Recovery and confirmation of Haemonchus contortus from abomasal contents of roe deer (Capreolus capreolus) in Eastern-Hungary (Biharugra): A diagnostic case study
59-62Views:320Gastrointestinal parasites are ubiquitous. They occur both in wild and domesticated animals. Among such parasites of veterinary importance is the trichostrongyle worms, out of which the Haemonchus contortus species is regarded as the most pathogenic one in the small ruminant industry. The occurrence of this parasite in the sheep flock is now very well documented and an established fact in Europe, although the parasite was original of the warmer climatic region. Studies on the cross-transmission of H. contortus between the wild and domesticated animals are also on the rise although the question of the direction of transmission is still debated. This is an important area that needs to be addressed as it could potentially contribute indirectly to mitigating anthelmintic resistance. Hungary also has reported its share of the occurrence of the parasite, mainly in the sheep flock and a certain population of roe deer. The study presented here is the preliminary results of a diagnostic case study that confirms the presence of H. contortus in wild ruminant deer species that are close to the domesticated sheep population.

Coagulase-negative staphylococci in ewe udder surface and raw milk samples
221-225Views:403Coagulase-negative staphylococci (CNS) are among the major causes of subclinical mastitis in dairy ewe flocks. This has a financially significant impact on the ewe dairy sector and consumer health. The determination of the bacterial count, particularly CNS, is critical in terms of the quantity and quality of ovine milk. Thus, the purpose of this study was to quantify the CNS count in the udder surface and raw milk samples of the ewe, in addition to identifying CNS strains (n=8) collected from udder surface and individual raw milk samples by 16S rRNA gene sequencing. A total of 164 samples of udder surface and raw milk originated from four sheep farms were tested. The obtained values were compared between the different farms. Furthermore, values during 2018 and 2019 in the case of Farm I were compared. Significantly higher (p<0.05) average count was observed in udder surface samples taken from Farm I (2.8±1.0 lg CFU/cm2) than that of Farm III samples (2.3±0.6 lg CFU/cm2). In the case of individual raw milk, the higher value was observed in samples derived from Farm III (3.5±0.9 lg CFU/mL), while the obtained value was significantly lower (p<0.05) in samples originated from Farm IV (1.8±0.4 lg CFU/mL). In the bulk tank milk samples, the highest mean value was 5.3±0.4 CFU/mL, and there was no significant (p>0.05) variation between farms. Coagulase-negative staphylococci counts were decreased to a certain extent in both sample types tested during 2019 except for individual raw milk derived from the Tsigai breed. The correlation between the mean CNS counts of udder surface and individual raw milk was very weak (r=0.048). Staphylococcus simulans, Staphylococcus auricularis, and Staphylococcus equorum were identified by molecular sequencing and Staphylococcus simulans were the most frequently identified CNS species. A higher CNS count of bulk tank milk than individual raw milk indicates possible contamination during milking and storage. Therefore, further studies are required to investigate the other sources of bulk tank milk contamination to improve the hygienic quality of milk.

Following-up organic pollutants in the course of producing foods
244-248Views:391We analysed the raw materials in various food products, including additives, carrier solvents and end product for several selected organic pollutants. We analysed these food products for the type of chlorinated hydrocarbon pesticides, polychlorinated biphenyls and other currently used pesticides.
We analysed three product categories: bakery products, canned mushroom and meat products. The analysis of the bakery products and of the canned mushroom did not conclude in positive findings, which means that these products contained the agents given during the production of the product and the environmental pollutants in undetectable low concentration.
However, the results for meat and fish products indicate that polychlorinated compounds are persistent and are of a lipophyl character, as some of these components have been detected in these food products, the concentration of the PCBs were detected in the range of 9.8-24 μg/kg. -
The status of conservation and management of indigenous sheep breeds in South Africa - A review
79-91Views:425Indigenous sheep breeds in South Africa play an important role in local food security and they are adapted to local conditions. Their genetic and cultural values have to be recognised for national importance. The conservation of these breeds is very critical as most of them are already classified as endangered. The South African government has the initiative to attempt the conservation of these animals; however, it comes with several challenges. In addition to funding, breed conservation demands farmers to understand and recognise the role of such breeds in society. This is especially crucial in the rural communal lands where breeds are kept. Farmers that raise indigenous breeds should be taught the necessity of maintaining the purity of these breeds. Indigenous sheep breeds in South Africa are not favored by the commercial farmers and thus they are more vulnerable. This review outlines the nature of sheep farming and the conservation status of four indigenous sheep breeds in South Africa. The effort and challenges that are met in current conservation arrangements are discussed. Moreover, we emphasise on the conservation techniques that are employed in South Africa.

Effect of anthocyanin-rich Hungarian tart cherry extract on blood antioxidant status in C57BL/6J mice
335-341Views:374In this study male C57BL/6J (B6) mice were used to determine the possible effects of our Hungarian tart cherry extract in a chronic obesity mouse model on antioxidant capacity.
The control group received standard mouse chow, the high fat control group was switched to high fat diet and tap water supplemented with 5% sucrose. The high fat+anthocyanin group received the high fat and sucrose diet, but dissolved in the drinking water they received anthocyanin-rich tart cherry extract. After six weeks, the antioxidant capacity and SOD activity were measured. Antioxidant capacity was decreased with a significant elevation of SOD activity. The tart cherry extract made a significant enhancement in antioxidant capacity and SOD activity. Our results show that chronic anthocyanin intake has a potential to enhance redox status associated with obesity.

Impact of chronic heat stress on digestibility of nutrients and performance of meat type ducks
51-55Views:318The aim of the study is to determine the effect of vitamin and mineral supplement under permanently high environmental temperature (30±1 °C) on the digestibility of nutrients, performance and furthermore the composition of duck meat in the growing period. A total of four hundred mixed sex 14 days old Cherry Valley type hybrid ducks were used for the study. Two experimental diets were formulated in the study (control and vitamin E, C and zinc supplemented diet). Based on the results the following conclusions were drown: the antioxidant defence system plays an important role in the reduction of heat stress generated lipid peroxidation process. Feed additives which have direct or indirect antioxidant effects can reduce the negative effects of heat stress on the ducks performance and meat composition. Digestibility of nutrients (Dry Matter, Crude Protein, Crude Fat) was not affected by antioxidant supplementation under chronic heat stress (30±1 °C). The performance was affected significantly by Vitamin C and E and zinc supplementation under heat stress (P<0.05). In the treated group the daily weight gain (dWG) increased and the feed conversion ratio (FCR) was improved significantly (P<0.05). The energy and protein conversion was decreased also significantly (P<0.05).

5-11Views:531Laboratory methods of semen evaluation are used to select males for artificial insemination. The current review describes several techniques that have been recently used for sperm analysis. Conventional microscopic methods in combination with the objective computerassisted sperm motility and morphology analyzers and flow cytometry, allows to obtain more precise information about the membrane and functional status of spermatozoa. By using several methods to detect motility, viability, acrosomal and capacitation status besides DNA integrity sperm biology and some of the mechanism involved in sperm cry injury can be better understood. The number of possible targets related to sperm quality is increasing, and possible that some of them could enable sperm analysis for predicting freezability and fertility to be improved.
