  • Analyses of Hungarian sour cherry germplasm with simple sequence repeat markers

    Twenty-four sour cherry cultivars (genotypes), belonging to four cultivar groups were fingerprinted using microsatellite markers. All genotypes have been arisen from the Carpathian basin, which could be secondary gene centre of sour cherry, since its progenitor species, ground cherry and sweet cherry overlap here. Five SSR primer pairs, earlier used for fingerprinting Turkish sour cherry germplasm were tested. None of the five primer pairs showed any polymorphism within the cultivar groups. The primer pairs were able to distinguish between the cultivar groups. The Oblacsinszka and the Cigánymeggy cultivar groups were the most difficult to separate, while the Pándy cultivar group was the most distinguishable.

  • Effect of different flower thinning techniques on annual fluctuation of macro and micronutrients in sweet cherries

    The seasonal dynamic of macro- and micronutrients uptake of a sweet cherry cultivar cv. 'Katalin' (Prunus avium L.) was studied according to apply different flower thinning techniques. Beside control treatment, three thinning treatments were performed: (I) thinning for I flower/inflorescence, (2) thinning for 2 flower/inflorescence, (3) thinning for 3 flower/inflorescence. Soil examination was carried out to establish the growing conditions of orchard site. Moreover, for studying the temporal dynamic of nutrient uptake plant analytical examination was performed four times per year based on leaf collecting according to the phenological phases. It was found that the macro- and micronutrients contents of leaves were showed significant differences between treatments before ripening, at ripening and after ripening stage. It was found that thinning has influence on mineral composition of leaf. Flower removal unbalanced the equilibrium of generative and vegetative processes. The applied manual flower thinning treatment resulted improving vegetative processes like nutrient uptake and storage.

  • Storage ability and differences of carrot varieties defined by firmness changes measured with new non-destructive acoustic method

    Carrot production in Hungary is getting more important these days. The condition of the quality insurance is to choose the proper variety of carrot and store on optimal conditions therefore measuring firmness and matter parameters are very important. Four varieties of carrots were measured (Bangor, Olympus, Napa and I3olero). The roots were stored in unsealed polyethylene bags at 4-10 degrees Celsius and 95% relative humidity. The vegetables were measured three times: at harvest, after I .5 months of storage and after four months of storage. The samples were tested by non-destructive acoustic. Stillness measuring method during the 112 days experiment for firmness. In laboratory were measured weight loss, dry material -NO3 and sugar content as an important matter parameters.

    The firmness change as a function of storage time are the following: First part of the storage (after 60 days), the Napa variety changed least in the case of acoustical parameter, at the same time its weight Foss and dry material content were not rise significantly, while its sugar content increased with 50%. The l3olero variety had the highest changes of sugar content during storage. During the second storage period, the softening speed of all samples was increased. The Bolero had the highest average mass loss (32,7%) and NO3 content changes as well. All measurements showed the largest changes for the Bolero variety. The highest percentage of dry material content was found by the Bolero and Napa varieties (18-20%).

    In this experiment, we found that the Bolero variety showed the greatest loss in compressibility during storage. If both firmness and weight loss results are considered, the Napa variety is found to be the most storable variety in sort period. The Bangor variety was found to be the best for long-term storage.

  • Comparative study of three rosemary (Rosmarinus officinalis L.) clones during the growing season

    The growth rate of three rosemary clones, `Harmat', 'Salem' and `Horvát', their essential oil content and its components as well as the total phenol content and total antioxidant capacity in their aqueous and ethanolic extracts were compaired. Total phenol content (determined by Folin-Ciocalteau reagent) and antioxidant power (FRAP-value) of aqueous and ethanolic rosemary extracts were measured by spectrophotometric method. The essential oil content was determined from drug by water-steam distillation. `Harmat' showed the most intensive growth through the vegetation period. The total antioxidant power of the ethanolic extracts from all the three clones was similar: a decrease was observed at the end of the season. In most cases more antioxidant compounds were dissolved in the aqueous extracts. The total quantity of phenolic compounds shows a good correlation with the potential extent of stress effects. The difference among the phenol contents of the various clones can be derived from the difference in their tolerance, because phenols have antioxidant effects contributing to protection against harmful impacts. Difference between the two extraction methods (aqueous and ethanolic) is due to the distinct solubility of compounds. Some other components, like essential oil compounds also possess antioxidant effect and in this way they may influence the antioxidant power of extracts.

    Exports and local marketability of both pepper protected cultivation and open field pepper production depend on whether we succeed in the near future achieving developments capable of bringing about significant improvement of yield and quality, as well as enhanced yield security. Results from experiments and surveys carried out on farms involved in production suggest that nutrient management is one of the factors whose development could considerably improve the marketability of pepper. Technological improvements in the field of nutrient supply are also urged by the more and more demanding environmental regulations, so it is inevitable to introduce a balanced system of nutrient supply system for pepper as well. The article is a collection and summary of the relevant results of 30-year experimental work in Hungary.

    Under conditions of Hungary, more than 400 varieties of apple, pear and quince varieties have been observed for time of blooming and fertility relations in order to check the possibility of their use for intense plantations in different combinations with polliniser varieties. Low (below 3%) rate of self-fertility occurred at 65% of apple varieties. That partial self-fertility, however, is far from being sufficient to produce acceptable yield, thus allogamous pollination is absolutely necessary. The same is true for the rear and quince varieties grown in Hun­gary, too. The normal development requires the presence of viable seeds in the fruit set, most in quince, therefore, association of the right varie­ties is most important in that species. Apple and pear varieties are assigned according to their blooming time to 4, quince varieties to 3 groups. The yield of all three pomaceous species declines with the growing distance from the potential pollen source. In the intense plantations, the critical (maximum) distance to be observed is 20 m for apple and 15 m for pear and quince. In combining the placement of varieties, also the principles of a variety-specific cultivation are to be considered carefully. The double objectives are satisfied most by the system of Malus­pollinisers developed for intense plantations.

    Fruits of twelve quince (Cydonia oblonga Mill.) commercial cultivars and selections were compared in the ferric reducing antioxidant power (FRAP) and total phenolic content (TPC) of intact and peeled fruits. The antioxidant capacity and total phenolic content ranged between 5.99 and 63.10 mmol AA/100 g FW, and 3.92 and 12.83 g GA/100 g FW, respectively. These ranges cover an almost 8-times variation among the tested genotypes in case of antioxidant capacity and also declares two-times variation for total polyphenolic content. Cultivars ‘Aromate’ and ‘Bereczki’ possessed the lowest antioxidant capacity and ‘Román portugál’ and ‘Bereczki’ had the lowest polyphenolic contents. In contrast, cultivars ‘Champion’ and ‘Konstantinápolyi’ possessed the highest antioxidant capacity and ‘Mezôtúri’ and ‘De Husi’ had the highest polyphenolic contents. The Pearson’s coeffi cient was relatively moderate but signifi cant (r=0.51) indicating a weak interdependence between FRAP and TPC values of quince fruits. Our results led us to the conclusion that quince might be considered as a valuable source of antioxidants and polyphenolics.

  • Economic figures of plum production at national level of Hungary

    In Hungary, natural conditions are optimal for growing plums. In spite of that, plum production was not a successful business in the past years. The reasons of it are, first of all, the utter fluctuation of yields and of the producer’s prices, increment of direct costs of production, dwindling incomes and uncertainties on the market. Serious problems are caused by the high rate of aged plantations, which are not counterbalanced by new plantings. Decisive is the “loose” ranging of the branch by the Union regarding plum production, which is expected for the sake of enlarging production and markets. Our aims are to analyse the management of the eight-year-long period, 2002-2009, and the fate of components of husbandry. The results presented are means of an utterly heterogeneous population of enterprises, being hardly suitable to make actual decisions, but they may enlighten upon challenges and recognise tendencies within the branch.

  • Selection of the chance seedlings of `Mézes körte' (Pyrus communis L.) from the gene bank of Keszthely

    We have concluded the selection tests of the `Mézes körte' seedlings planted in the spring of 2006, with special emphasis on the cotyledonary, foliage leaf and the height of plant. Out of the 75 seeds planted in rows, there were 40-45 pieces growing out, so during the first cotyledonary test we had to calculate with almost 40% decay. On 12th April 2006, we recorded some of the important characteristics of the seedlings in their cotyledonary stage which characteristics were important from the point of view of selection (cotyledonary form, cotyledonary length, cotyledonary thickness, cotyledonary colour, cotyledonary petiole length, cotyledonary petiole thickness, cotyledonary petiole colour). The above morphological characteristics are shown in Table No. 1-6. We have also tested the seedling in foliage leaf state, paying special attention on the development stage of the plants (colour of foliage leaf , height of plant). We have completed statistical calculations of the two above mentioned characteristics. The result of that is summarised in Table No. 8-9. The variation coefficient show smaller value in the case of the foliage leaf number (15-32%), while the wider range of spread of the data referring to the height of the plant is shown by the 33-61% CV values. On charts No 4-9. we present the relationship between the height of the plant and the number of foliage leaf, as well as the differences between the two graphs. Based on the above charts and graphs it can be defined that the 40% destruction of the developing seedlings during the period till the next measurement reached 70-80% level. In spite of this however some seedlings showed strong and balanced growth (A44, B42, C25, D16, E5, E39, F38), the further testing and selection of those is to be completed in the future.

  • Comparative study of some nutritionally important components on different cabbage (Brassica oleracea L.) genotypes

    Vegetables of Brassicaceae are especially important because of their inner values, which play a provably positive role in curing and preventing diseases. Cabbage (Brassica oleracea L. convar. capitata provar. capitata) is still today one of the most frequently consumed green vegetables, which is known to brake the absorption of carcinogenous substances and to obstruct cell mutation. Different cabbage cultivars were compared growing under the same circumstance. The level of different carbohydrate fractions and some biologically active quaternary ammonium compounds were determined. In all cases we analyzed the antioxidant capacity of samples characterizing the free radical scavenging capacity.

    Clearly detectable significant differences were found between the varieties tested, which appeared suitable for selecting the most precious varieties for human nutrition.

  • Effects of meteorological factors on fruit qualities of 'Fuji' apple in Korea

    'Fuji' apples from five different growing regions in Korea were analyzed for internal and external quality attributes which included fruit shape, color and sugar. Significant relationships were observed between final fruit color (a*) and air temperature in August. Red color was poorly developed where the average temperature in August was over 25 oC. The sugar composition was significantly different depending on region. The sucrose content decreased with increasing temperature above 16 oC during the harvest season. The fruit shape was not affected by agro-climatic conditions in this study.

     

  • Effect of the environmentally friendly production systems on the vegetative characteristics of apple cultivars

    In this study effect of the environmentally friendly production systems on the brunch cross sectional area of apple trees trained to free spindle canopy are presented based on the data of 39 cultivars. According to our results branch thickness of the apple cultivars located in the lower, middle and upper region of the tree are more homogenous in the integrated production system compared to the organic one. Therefore the severity of the annual maintain pruning must be necessarily more moderate in the integrated growing system, than in the organic production system.

  • Relations of phenometrical indices of apple fruits with weather variation in the assortment of varieties of an apple gene bank

    The purpose of phenometry is to examine the measurable parameters of the plants in order to follow up the consequences of weather processes. We should fi nd the reasons, why the diameter of fruits grows larger in one season and smaller in the next. Variation may occur as a response to insuffi cient provision of water or nutrients, but also because of pathological effects and of extremely high or low temperatures, moreover, of extraordinary heavy fruit load. There are phenometrical characteristics, which consider the fi nal consequences (density of fl owers, fruits set, drop of fruits), whereas other parameters could be followed up (size, length and width of fruits) as the dynamic components of growth. The quantitative parameters of growth are functionally related to each other, where the weather conditions, soil humidity and nutrients are on the input side, thus it is possible to model the growth of fruits as a function of the environment. Initially, the relations between the main weather variables and the phenometrical data have to be cleared. In the present study, the interactions between the mentioned phenomena are presented and numerically defi ned.

  • The future of the Hungarian sour cherry growing branch

    The present study deals with the actual situation of the Hungarian sour cherry production in order to outline the chances of the future and the trends of the development anticipated. The general conclusion accepted that on the long run Hungarian sour cherry production ought to be reorganised. The conditions of keeping the position on the international market are outlined: integration of small farms into large plantations (several times 10 hectares), introduction of mechanical harvest and high (15–20 t/ha) yields. For all that, adequate expertise should be developed on the cooperative farms, where the up to date technology could be applied with innovative initiatives. Small farms (up to 1–2 hectares) and home gardens have no chances to stay on the competitive market. The actual volume of sour cherry of 40–70 thousand tons per year cannot be increased in the future. The sour cherry area was 16 000 ha in 2001, the actual is around 12–13 thousand, and will decline during the following 5 years to less than 10 thousand hectares.

  • Determination of the cold tolerance off sour cherry cultivars with frost treatments in climatic chamber

    Nowadays, sour cherry buds can be seriously damaged by spring and winter frosts. Unlike other fruit species threatened by high frost damage, sour cherry cultivars have not been assessed for frost tolerance. The aim of .our survey was to establish the relative cold tolerance of the Hungarian cultivars after treatment in a climatic chamber, and to optimize the methodology formerly elaborated for the frost treatment of apricot. Fourteen cultivars of Hungarian sour cherry (Prunus cerasus) were used in the experiments, which spanned the winters of 2005/2006 and 2006/2007. Our data were used to rank cultivars in two groups according to their levels of cold resistance. We also recommend critical temperatures and treatment times for the testing of sour cherry cultivar resistance to cold in climatic chambers.

  • Some structural characteristics of the flowers of apple cultivars with different susceptibilty to fire blight

    Several morphological characters of the hypanthium (size and form of the surface, the shape of the hypanthium) and anatomical traits (number and pattern of stomata) of apple cultivars (Malus domestica L.) with different susceptibility to fire blight were studied. The size of hypantium surface was calculated by modelling the hypanthium with a truncated cone. Three types of hypanthium surface form have been revealed: straight, convex and a complex "shouldered" one. The angle between the style and the wall of the hypanthium was narrow or wide. The stomata on the hypanthium surface can be arranged in a zone in the middle third of the hypanthium or dispersed more or less evenly. The number of stomata/flower substantially differed among the cultivars examined. The highest stomata number was detected in the flowers of the tolerant cultivar (Freedom)

    No single characteristics of the hypanthium could convincingly be correlated with susceptibility to fire blight. We suggest, however, that combination of morphological properties that sustain moist environment in the hypanthium contribute to susceptibility.

  • Examination of valuable ingredients of some wild fruits

    A possible way of the development of Hungarian agriculture is the selection and growing of new fruit species and varieties featuring special qualities, with high biological nutritive and health protecting properties due to their natural composition. A reserve for such new fruits is the native dendroflora, e.g. those wild-growing trees and shrubs of Hungary, which bear edible fruits. The publication is giving a summary of chemical analyses done on the fruits of the plants listed below. The research team on the project started the work in 2001 with

    woody species (genera) as follows:

    • common elder (Sambucus nigra) clone named Szcs-1, Szcs-2, Szcs-3, Szcs-4, Szcs-5, SzcsK-1, SzcsK-2
    • dog rose (Rosa canina) types: clones named Sz-1, Sz-2, Sz-3, Sz-4 and Sz-5 .
    • native rowans: Sorbus dacica, S.rotundifolia, S. degenu, S.bakonyensis cv. Fánivölgy
    • hawthorns: Crataegus monogyna, C. orientalis,C..v lavallei.
    • cornel cherry: Cornus mas cv. Császló.

    The present paper is reporting on the content of the following compounds in the fruits: dry matter (refractometric values), total acid content, ascorbic acid, 13-carotene, pectin, minerals and carbohydrates. The results have shown that these wild fruits have excellent composition. Besides their curative effects, their content of minerals, ascorbic acid and 13-carotene has surpassed that of the traditional fruits. These fruits are rich in ascorbic acid, 13-carotene and pectin. The high content of the above-listed, biologically active compounds makes the new wild fruits studied suitable for the preparation (and later: mass-production) of special curative and exclusive products.

  • Evaluation of hot pepper (Capsicum annum L.) varieties for green pod yield and quality under rain fed production at Teppi, South Western Ethiopia

    The trials were designed with three replications in a randomized complete block design in order to evaluate the phenological, growth and yield potential of hot pepper varieties such as ‘Mareko fana’, ‘Melka Zala’, ‘Melka Awaze’, ‘Melka Shote’ and local check. Significant difference was observed between growing year and used varieties. The varieties also performed significantly different (p<0.05) for most of the considered traits in the study. The result revealed that varieties ‘Melka Zala’, ‘Mareko fana’ and ‘Melka Awaze’ were scored highest green pod yield of 8.39, 8.71 and 11.39 ton per hectare, respectively. However, ‘Mareko fana’ variety was susceptible to disease attack as compared to other varieties. Therefore, promoting both ‘Melka Awaze’ and ‘Melka Zala’ varieties for widespread production for Teppi and the areas with similar agro-ecological conditions could contribute to boost the productivity of hot pepper. ‘Mareko fana’ could also be used for dry pod purpose due to its attractive color.

  • Organic versus integrated apple growing: I. differences in soil and leaf parameters

    The aim our study was to establish whether significant differences in nutrients uptake and quality of soil and leaf exist between organic and integrated grown apples. The study was performed at the orchard Fruit Research Station, University of Debrecen, at Debrecen-Pallag during 2002–2004. Macro and micro elements were measured in soil and plant samples. Analyses of variance of soil nitrogen data indicated highly significant differences between the two management systems (P < 0.001) for each examined nitrogen fraction. Analyses of variance of soil phosphate data indicated significant differences (P < 0.05) between the two management systems for orto-PO4 3– contents. Our data indicated that highly significant differences between the two management systems (P < 0.001) for magnesium, copper, and zinc; while significant differences between the two management systems was at P = 0.007 for calcium. Three year’s data of leaf phosphorus, sulphur and zinc were not shown significant differences between production systems. Nevertheless manganese and copper contents of leaves were higher in the organic orchard compared to the integrated one.

  • The effect of nitrogen supply on specific yield and fruit quality of apple (Malus domestica Borkh.)

    The aim of the present study was to determine the effect of nitrogen supply on yield and fruit quality of apple cultivars and to explore the relationships between canopy density and the different fruit quality parameters.

    The experiments were carried out at Kálmánháza, in Eastern Hungary in a private orchard in 2003-2004. The response of four apple cultivars ('Elstar', 'Gala Prince', 'Granny Smith', 'Idared') to different nitrogen dosages was studied. The assessed and calculated indices were: yield, fruit diameter, fruit height, shape index, fruit mass, firmness, dry matter content and colouration. The results indicated that nitrogen fertilization has a significant effect on the yield and fruit quality of apple cultivars. The calculated specific yield values were reduced by the application of nitrogen via the increase in the volume of the canopy. An opposit trend was observed for fruit diameter, fruit height and fruit weight, which increased with increasing nitrogen supply. The reduced shape index caused flattening of fruits.

    However, the improvement of fruit quality via increasing nitrogen dosage is only virtual, since these dosages increase the fruit size, but firmness, dry matter content and colouration are diminished, which decreases the value of the fruits on the market.

    The authors also studied the relationships between canopy density responsible for assimilation and light supply of the fruits and the different fruit quality parameters. The closest linear inversely proportional relationship was found in the case of colouration. There was a negative linear relationship between canopy density and firmness or dry matter content. The relationship between canopy density and fruit mass could be described by a quadratic polinomial function.

  • Hungarian fruits and vegetables of high anti-oxidant activity as functional foods (Review article)

    Recently, projects aiming to enhance the consumption of fruits and vegetables are intensified. Experts agree in the principle of fresh vegetable foods being a valid panacea in averting risks of ailments as well as curing immune-insufficiency, inflammations, moreover, certain cancerous processes. It is generally accepted that among substances of biological activity the anti-oxidant compounds such as vitamins C, E and carotenoids, etc. have the major role in this process. Hungarian agriculture has outstanding chances in utilising its natural as well as cultivated plant resources and favourable climatic conditions. It would be, however, necessary to build up a databank of anti­oxidant substances found in fruits and vegetables and including the modifying effects of technology, growing site, variety, etc. The concept of promoting the trade of Hungarian food-specialities as "Hungaricum" needs, urgently, the aid of a databank of that kind. Some of those excellent products are for instance the sour cherry, pepper and onion. They enjoy high priority as "Hungaricum" in the EU and it should be enhanced by intense and consequent research work, which may prove their role as functional foods. The USA is the leading country in research on the anti-oxidant substances of sour cherries, and up to now more than 17 compounds have been found in Hungarian varieties among others. In pepper fruits used as vegetable and source of vitamin C, the analyses are still lacking because research of the past concentrated on the products of milled spice pepper. Onion and garlic are entirely unexplored in this respect. It should be noted that availability of these fresh products in the moderate climate is restricted to a relatively short season. For that reason, some processing and preservation methods are needed in order to use those fruits and vegetables as functional foods all around the year. The scientifically founded endeavour as a solution of the questions mentioned is stimulated by vigorous commercial interests as well as by the urgent needs of the consumers to improve their health.

  • Adaptation of temperate climate horticultural plants in tropical and subtropical developing countries II. General characteristics, Hungarian experiences and possibilities

    The cooperation of Hungarian professionals with Chinese, Thai, South-Korean, Taiwanese and Brazilian colleagues should deserve much more attention than actually done. We refer to the transfer and adaptation of production technologies as well as biotechnological developments in vegetables, fruits, ornamentals and medicinal plants from the Temperate Zone to the tropical and subtropical regions. According to our information Hungarian colleagues involved in extension work are highly esteemed on the same level as Japanese, Chilean, Italian and French colleagues. We could state that immigration of investors, local enterpreneurs as well as those coming from expansive regions of Europe, North America and oversses, representaives of supermakets keeps to be accelerated by the increasing confidence triggered also by the successful management of profitable plantations, vineyards and fruits initiated first about 15 years ago.

    For Hungary, the presence and achievements of Hungarian horticultural expertise in tropical and subtropical zones yielded unequivocal advantages. Therefore, the next actual step of development would mean the organisation of a network of the "Units of Horticultural Mission" in the tropic and subtropic countries. We are convinced that those Units will stimulate the traffic of technologies as centers of transfer within and between the regions and contribute to the increasing influence of professionals on the production and trade of horticultural commodities. The introduction and testing of new varieties of vegetables, fruits, medicinal plants (as well as ornamentals), the development of the growing technologies, adaptation and acclimation of Temperate Zone germ plasm representing the general trends of advanced production will be the most important tasks of the Mission with a sufficient oversight upon the whole world. It is taken as a fact that Hungarian horticulture and breeding is competitive on the world market. We are ready to contribute to the development of horticulture on a worldwide scale. The Hungarian R & D will be attentive in the future to manage the accumulated capacities by information and mediating needs and offers to the volonteers of the profession. The reality of the above propositions are amply proved by successes of the Agroinvest Co and of other professionals registered in abroad.

    To keep on the top of the world list of the profession we have to follow up the international trends by our permanent presence on the most important centers of administration and production of the world in order to hold on the hot line of the Hungarian administration competent in financing the R & D activities. We need specialists which are open minded, speak languages, familiar with the tricks of informatics, economics and politics, competent in deals, able to make decisions, etc. The education and training should be strenghtened to he conform with those trends. That proposal involves also the need to follow up the activities of the transnational companies, the regular, active participation on international conferences, the permanent attention paid to electronic informations available in the worldwide networks as well as the printed periodicals of horticulture. It is also related to the attraction of investors to the developments aimed within the country as well as abroad. At last but not at least we have to keep in mind that the work performed abroad by the Hungarian professional is a kind of "para-diplomatic mission" which cannot be substituted by any other, sometimes very expensive activity charged on the officia erliplomatic missions. The benefit of it is, however, valid to the whole country because false stereotypes developed during the last 50 years cannot be abolished otherwise.

    There are profound, long-term changes in world apple production and trade. The former hegemony of Europe in apple production doest not exists any more, among the most important apple exporters the emerging economies have a growing importance. The globalising apple market means new challenges of traditional producers. This is especially true for Hungary, which has been the most important apple exporter in terms of quantity thirty years ago, but now its production hardly covers the domestic demand. A necessary precondition of the modernisation is the re-construction of plantations and the cold-storage system. Analysing the economic effi ciency of apple production and cold storage, it is obvious, that a necessary precondition for the modern, competitive apple production is the availability of cold-storage facilities. Neither the apple-production, nor the cold-storage can not evaluated separately from each other. Under current Hungarian conditions there is a need for active state support for the establishment of cold-storage facilities.

  • Composition and sensory properties of sour cherry cultivars

    Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.
