The main properties of fruit offered on the retail market in Hungary
67-69.Views:237The small enterprises of the Hungarian retail market of food and related commodities are in a dismal crisis, many of them got bankruptcy, whereas fruit and vegetables are offered in large shop-chains and supermarkets. Traditional small shops near to the domiciles are still highly esteemed by the population and their lack is regretted especially because of commodities for fresh consumption. For the purpose to evaluate the situation, I planned the comparative study of fruits offered in the retail markets by tracing their origin, quality and prices. From the six shops selected for the study three represent department stores belonging to different chains. Independent entrepreneurs manage the next three shops of vegetables with own suppliers. It was stated that the retail shops offer mainly fruits of Hungarian growers. It is however worthwhile to state that the origin of the produce was frequently not marked. The fruits imported from abroad, apple, pear, peach, were sold at substantially higher prices than those of Hungarian origin.

Economic figures of plum production at national level of Hungary
111-113.Views:268In Hungary, natural conditions are optimal for growing plums. In spite of that, plum production was not a successful business in the past years. The reasons of it are, first of all, the utter fluctuation of yields and of the producer’s prices, increment of direct costs of production, dwindling incomes and uncertainties on the market. Serious problems are caused by the high rate of aged plantations, which are not counterbalanced by new plantings. Decisive is the “loose” ranging of the branch by the Union regarding plum production, which is expected for the sake of enlarging production and markets. Our aims are to analyse the management of the eight-year-long period, 2002-2009, and the fate of components of husbandry. The results presented are means of an utterly heterogeneous population of enterprises, being hardly suitable to make actual decisions, but they may enlighten upon challenges and recognise tendencies within the branch.

Economic aspects of aged apple plantations in Hungary
13-16.Views:150Being competitive is a goal all over in the EU. Competition is free and getting closer among the competitors of the apple industry. In Hungary, one of the most important issues of apple industry has been what are the prospects for aged plantations, which account for 50% of crop land. Based on our results, 80% of those apple plantations on the down-grade yielding apple, the ones only for processing, do not meet the criteria of competitive production. For those plantations in better shape that yield 30-40 t/ha, of which at least 20-30% are for fresh production, it can he profitable. Because of the future trend in technology and economy, however, even the latter ones can not be considered being competitive in the long run.

Evaluation of sour cherry varieties grown with environmental technology

The general impression, which is decisive, when a consumer chooses to purchase the commodity, should be interpreted in more objective, measurable terms. Primary data have been collected on fresh fruits derived from different growing technologies by organoleptic tests and the data filled up in the forms are processed with correlation analysis. The components were: taste, aroma, flesh firmness. The coefficients of correlation showed that the rest of characters as the appearance, juiciness, and the sugar/acid ratio.

Economic figures of sour cherry production at national level of Hungary
107-109.Views:174After the political changes of 1989, economical processes impaired heavily the Hungarian fruit growing branch, more particularly production of sour cherry. Paralleling with the increasing mass of production, producer’s prices dwindled drastically. At present, Hungarian growers cannot cover the costs of production, nay, hardly raise income. My purpose was to analyse the cost and income relations of the sour cherry branch during the period of 2002-2009 years in order to find out what are the decisive features, which reveal the trends to be considered. The data presented in the paper are means of a heterogeneous population of values, which cannot be utilised for immediate use in management, but they may reveal the challenges and tendencies of economics of the branch.

Cost and profit analysis of sour cherry production for industrial purposes in Hungary
75-79.Views:294Our main objective in this present study is to evaluate the profitability and efficiency of sour cherry production by a complex economic analysis of its technological process. We concluded that the per kilogram prime costs range between 80 to 90 HUF/kg in case of sour cherry for industrial purposes. On this basis, it is clear that the 50 to 90 HUF/kg regular selling prices of previous years do not make profitable production possible. Under the present market conditions even considering per hectare average yields of 10 to 15 tons the establishment of sour cherry orchards is not economical, the internal rate of return is below the interests of money-market and the recovery will not be happened even during the whole life-time of the orchard. In this way the domestic enterprises should not only raise the yields but realize technological changes (e.g. mechanic harvesting) in order to decrease the production costs in a significant way and to maintain a profitable sour cherry production. It is expected that the enterprise farming on great land (several ten hectares), being settled for mechanic harvesting (subordinating everything to this), reaching yields of 15 to 20 tons per hectare, producing on high technological and input levels, having specialized knowledge will stay on the sour cherry market far in the future.

103-105.Views:281Apple is the most important fruit in Hungary, despite of that, it is a paradox that during the last years, apple growing was the most unsuccessful enterprise among the prosperous ones in the country. The real cause of regression was unequivocally the low price, which could be obtained and the inadequate structure of apple varieties. A heavy problem is still the overweight of the quality doomed to supplying the processing industry instead to the fresh consumption. In order to improve the conditions, we aimed the economic analysis of the five year long period, 2005-2009, to trace the changes involving values and costs of production, income and all conditions combined with this activity. The data presented in the paper are means of a heterogeneous population of values, which cannot be utilised for immediate use in management, but they may reveal the challenges and tendencies of that branch in economics.

Assessment of apple varieties based on consumer judgement in integrated production for fresh consumption
71-74.Views:236In a former paper we treated the same relation comparing varieties frown in the biological or organic system of growing, now the tests have been performed with samples grown by the integrated system. The scores registered properties as taste, skin, colour, consistency and size. In addition, we also explored the relation between general impression and the individual properties.As first purpose, we started with collecting primary data on 15 samples taken from fruits grown by the integrated method and kept over 60–90 days in a store, then offered to the consumers. The test is based on an organoleptic assessment (records are registered in a questionary). The individual judgements are processed and coefficients of correlation between the traits (taste, skin, size, colour) calculated. The validity of the mathematically proved relations is considered to be decisive in judging the preferencial consumption of fruits.

Sensorial appraisal of sour cherries grown by environmental technology
27-30.Views:222Sour cherry samples have been tested by a panel of potential consumers, and the judgments expressed by points given for each attribute. The correlation of individual traits with “general impression” has been explored. Primary raising of data was aimed to evaluate the effect of environmental growing technology upon sensorial impression of fruits for fresh consumption. Organoleptic tests consist of tasting and filling out of forms with numerical data as ratings them regarding taste, flavour and flesh firmness. The values of coefficients of correlation showed that a couple of other attributes as appearance, juiciness and sugar/acids perceived were irrelevant from the point of view of acceptance, i. e. the general impression.

Sour cherry for fresh consumption in the retail sector A consumer aspect
81-84.Views:192The basic objective of our study is the promotion of fresh consumption of sour cherry and the enhancement of necessary knowledge. Primer collection of data was planned in three groups of retail shops, always sour cherry being the matter of study. The sampling dates were adapted to the sour cherry season weeks in Hungary. Three samples per week have been taken. Every time a short interview and purchase was planned. Every time, it was stated that the commodity was held for a longer period on the shelf, which trespasses the optimum of the fruit. At the same time there was no concordance between quality and price. From the point of view of the consumer this cannot be accepted.

Evaluation of producer organisations in the fruit and vegetable sector: Experiences from Hungary and Belgium
115-121.Views:199This paper focuses on the Producer Organisations (POs) in the fruit and vegetable sector in Hungary and in Belgium. Findings are drawn from a survey among members and leaders of POs. The aim of the research is to evaluate the operation of the Hungarian POs and to compare the results with the Flemish ones based on the perception of the respondents. We mark out from the research results that Hungarian PO members and PO leaders' perception significantly different in the following constructs: satisfaction with the CMO, environmental friendly production and willingness to cooperate. The most important difference between Hungarian and Flemish respondents was about the willingness to cooperate, and about the innovations in trading activities.

Views:191After the change of the political system the main looser was in Hungary the fruit-growing branch. The yields varied at high amplitudes, and the production increased slowly in spite of multiple planting activities. The European Union ranked fruit production “loosely” to the products, which allows the extension of its markets. Thus I decided to analyse the economic relations of the period between 2002 and 2008 in order to reveal the main effects of movements. The pictures are the resultants of a heterogeneous population, which cannot be influenced on the level of enterprises. But they are utilised for the recognition of challenges and trends on the level of branches of economy. The immediate costs increased the production monotonously, which cannot be compensated by a thrifty management of the general costs. Thus costs of production increased dramatically, whereas the marketing of products could not realise the values.

Investment appraisal of a plantation establishment for intensive apple production
17-20.Views:193For fruits, establishing intensive apple-orchards requires the highest amount of investment cost, while the returns depend on many factors. Based on farm and bibliography data we appraised an investment in a model in some variations that are the most used in practice (100% owner's capital and 55% owner's capital +45%o subsidies). The profitability of the investment has been analysed using the methods of NPV (Net Present Value) and DPP (Dynamic Payback Period). The essence of our analysis is a sensitivity analysis with the optimistic, pessimistic and realistic combinations of the yield and the market price. Plantation establishment financed by only own (corporate's) sources turns into profitable over 7-10 years in average and favourable cases, but the opposite is the case in unfavourable circumstances. By subsidy of 45% for investments, it is highly possible to return by the fifth or sixth year after the year of establishment, but it can return by the twelfth year even in unfavourable case.
