Water consumption of the wine grape varieties Kövidinka K.8 and White Riesling B.7
25-30.Views:147In the Carpathian Basin Kövidinka and White Riesling are promising wine grape varieties. As in the region continental climate dominates and dry years are not uncommon it was natural to study the water requirement and consumption of the two varieties. Morphological characters affecting transpiration were observed including leaf area, hairiness, number and type of stomata. The amount of water transpired per unit leaf area and time and rate of water consumption were measured in a model trial in cuttings with known water supply.
The water consumption of vine cuttings depends on varieties and is determined by the genotype but it is also affected by environment. Kövidinka requires little water and uses it to its advantage White Riesling requires more water and uses it rather lavishly. The results of our model trial could be introduced directly into viticulture practice.

Hazardous element content and consumption risk of 9 apricot cultivars
61-65.Views:309The heavy metals pollution is one of the problems that arise due to the increased uses of fertilizers and other chemicals to meet the higher demands of food production for human consumption. In order to assess possible health risk of apricot (Prunus armeniaca L.) consumption, levels of Arsenic, Cadmium, Mercury and Lead were determined in fresh and dried samples of "Jumbo cot", "Tom cot", "Gold strike", "Gold bar", "Bergeron", "Bergarouge", "Sweet cot", "Yellow cot" and "Zebra" apricot cultivars. Wet digestion of samples with concentrate HNO3 – H2O2 digester mixture and inductively coupled plasma–atomic emission spectroscopy was used. Highest content of As, Cd, Hg and Pb among all cultivars, were 0.5, 0.04, 1.5 and 0.5mg/kg of dried apricot samples. Fresh fruit samples also contain 0.2, 0.016, 0.6 and 0.2 mg/kg of Arsenic, Cadmium, Mercury and Lead respectively. Daily intake of metals, hazard quotient and health risk index to reveal health risk possibility of dried and fresh fruits consumption were calculate and compared.

Assessment of apple varieties based on consumer judgement in integrated production for fresh consumption
71-74.Views:240In a former paper we treated the same relation comparing varieties frown in the biological or organic system of growing, now the tests have been performed with samples grown by the integrated system. The scores registered properties as taste, skin, colour, consistency and size. In addition, we also explored the relation between general impression and the individual properties.As first purpose, we started with collecting primary data on 15 samples taken from fruits grown by the integrated method and kept over 60–90 days in a store, then offered to the consumers. The test is based on an organoleptic assessment (records are registered in a questionary). The individual judgements are processed and coefficients of correlation between the traits (taste, skin, size, colour) calculated. The validity of the mathematically proved relations is considered to be decisive in judging the preferencial consumption of fruits.

Sensory evaluation of white asparagus (Asparagus officinalis L.) hybrids
51-55.Views:338Comprehensive system of sensory evaluation was developed to obtain information on the different varieties by determining asparagus quality parameters. 9 sensory characteristics were estimated to describe flavour differences. The tests were carried out in 4 varieties of white asparagus (Asparagus officinalis L.) grown on brown humus sand soil by etiolate method in ridge cultivation. The experiment was performed at the University of Debrecen in Debrecen-Pallag. To increase the Hungarian asparagus consumption, a classification of varieties
regarding to asparagus flavour is necessary. In our experiment it could be stated that there are strict correlations (0.892) between the sweetness – total impression and between lacks of unpleasant aftertaste – total impression (0.870). The result of surveys can lead to higher popularity of the asparagus. These results are presented in order to recommend the varieties to producers for a successful marketing. The taste of asparagus is mostly influenced by variety, soil type and growing conditions. In our experiment, ‘Vitalim’ hybrid exceeded by several sensory parameters. This hybrid scored 788.38 over 900. The elder population showed more interest in asparagus consumption than younger ones. 50% of the participants are able to pay only 500-600 HUF/kg. It could be realized to ensure the proper growing place, hybrid and direct trade. Marketing and more information is necessary to increase the popularity of this vegetable among the younger generation. -
Sour cherry for fresh consumption in the retail sector A consumer aspect
81-84.Views:195The basic objective of our study is the promotion of fresh consumption of sour cherry and the enhancement of necessary knowledge. Primer collection of data was planned in three groups of retail shops, always sour cherry being the matter of study. The sampling dates were adapted to the sour cherry season weeks in Hungary. Three samples per week have been taken. Every time a short interview and purchase was planned. Every time, it was stated that the commodity was held for a longer period on the shelf, which trespasses the optimum of the fruit. At the same time there was no concordance between quality and price. From the point of view of the consumer this cannot be accepted.

Influence of strawberry and raspberry consumption on the antioxidant status of human body
109-113.Views:169Several parameters influencing the antioxidant capacity were measured in our experiments to compare strawberry and raspberry cultivars. The analysed cultivars were: 'Honeoye', 'Elsanta', 'Onebor (strawberries) and 'Glen Ample', Fertődi zamatos', 'Mailing Expoit' (raspberries). Besides the determination of dry matter content the content of glucose, fructose, total phenol and anthocyanine, the reducing power, H-donating activity and total scavenger capacity were measured as well as the compound of mineral nutrients. Among the species and the cultivars, differences were obtained. These results call the attention to the features of cultivars and to count on the antioxidant-capacity describing values in case of consuming these fruits. In early spring and summer the consumption of strawberry and raspberry has a beneficial contribution to the antioxidant status of our body. In this respect these are more valuable than the year-long consumable apple. Accordingly, our measurements showed higher amount of sucrose, phenolic compounds and anthocyanine in raspberries, but strawberries contained more glucose and fructose and had stronger H-donating activity. It is worth to keep in mind that e.g. which cultivar contains more of certain compounds because of the strictly determined allowable dose in some diseases (e.g. diabetes).

Strategy of the sour cherry verticum in the Northern Great Plain Region Hungary (Analytic study)
7-31.Views:294Sour cherry growing and consumption grows dynamically around the world. The present volume of 1 million tons will incerase within 10 years with 20-30, or even with 50%. In the world wide sour cherry production, Europe is a decisive factor, i.e. 2/3 of the volume is grown there. Prominent capacities are concentrated in East-Central Europe, mainly Poland, Germany and Hungary. In the future, new concurrent exporters are expected on the European market as Turkey, Iran, Serbia-Montenegro. Hungarian sour cherry production has rich traditions, so the growing techniques and the assortment of sour cherry varieties make Hungary a „Great Power" on this field. Fresh fruit and products developed from sour cherry represent values distinguished as „Hungaricum" on the markets. Sour cherry growing and the path of its products are one of the „pulling branches" of Hungarian fruit growing. Sour cherry occupies 15% of area for fruit growing and 40% within the stone fruits. Sour cherry was grown widely in Hungary, it was grown everywhere as for utilizing waste areas. This is the main reason that yields are low as a mean of 15 000 ha and the volume is low (50-60 000 tons) only. To that poor figure the heavy infections of Monilia contributed substantially in the last couple of years. The two most valid arguments of using the present varieties as the best solution are 1) the cross bred new varieties, and 2) the selections of local, traditional varieties, which substituted the earlier dominant 'Pándy meggy' variety, which had a good quality but yielded poorly. Sour cherry growing of Hungary shifted from the dry regions of the country toward the cooler and more humid regions, where the weather excesses secure a less risky production. The most decisive region is the Norther Great Plain Region comprising SzabolcsSzatmar-Bereg county, where more than the half of the Hungarian sour cherry volume is produced, and which is bound to increase its production in the future. The majority of sour cherry produced in Hungary is processed, moreover, an important fraction of the exported fresh fruit is also used by the industry. The main importer of Hungarian sour cherry is Germany. The industry manufactures mainly canned products, a smaller fraction will be processed to other products. The expected volumes of sour cherry grown in Hungary in the next 5 and 10-year-period was estimated from data based on the ratio of young plantations, predicted consequences of the global climatic changes, phytosanitary aspects, furthermore, on the development of the technological level. In the region, the volume grown within 5 years, 40 000 t/year will increase within 10 years to 55 000 t/y. The processing in Hungary is not sufficiently differenciated, which is attributed partly to the characters of the varieties, partly to the weaknesses of the processing industry. One of the reasons is the suitability of varieties mainly for canning products. Processed sour cherry products could not be sold at the same price levels achieved by concurrent sour cherry growing countries. The vertical structure of the path of products of sour cherry disposes of adequate processing capacity being ready to be developed or there is sufficient intention of making investments for the purpose of manufacturing special sour cherry products. Significant tasks of development are actual in the field of the ecological and biological conditions of production. Volume and yield security as well as the maturity time and diversification of processing possibilities are the main endeavours in widening the assortment of varieties to be grown in the near future. The main objective in growing techniques is the modernization of phytotechnical procedures, and new solutions of methods of mechanical harvesting and related technical innovations are necessary in the sour cherry verticum. A key question is the effectiveness of phytosanitary procedures with special reference to the Monilia fungus and to the cherry fruit fly as the most important pest. There are two points of break through in the Hungarian sour cherry verticum. On the one hand, meeting the increasing demands in fuits for fresh consumption, on the other hand, the diversification of processed sour cherry products and their introduction to the markets. Both are aiming to increase the competitiveness of the Hungarian sour cherry. For that purpose, outstanding varieties and excellent as well as internationally recognised fruit qualities are ready to be utilized. The most susceptible problems of the Hungarian sour cherry verticum are associated with marketing, alliance of the grower-and processor organisations and their co-operation because no overall integration within the sour cherry verticum has been established yet. Most urgent necessity as well as possibility of changes are felt in the Northern Great Plain Region.

Results of experimental storage of sour cherry (Prunus cerasus L.) fruit
65-78.Views:296In utilisation of sour cherry cultivars, the paradigm has gradually changed in the sense that fresh consumption gained much more attention than before on a worldwide scale. Consequently, much more attention is paid to the problems connected with the storage, i.e. preservation of fresh fruit for direct consumption. It is a genuine interest of growers, traders as well as of consumers to be informed about the possibilities of preserving economically the fresh status for a longer period after harvest during the warm summer weather in addition to the lengthening of the harvest season by choosing cultivars of different dates of ripening. Recent results of purposeful experiments indicate that the storability of the fruit of 6 main Hungarian sour cherry cultivars is on the same level ('Érdi bőtermő, 'Debreceni bőtermő’, 'Újfehértói fürtos', 'Kántorjánosi', 'Éva', 'Petri'). The traditional conditions facilitated the maintenance of freshness over a 5-week-long period, and the loss of volume was less than 7%. During the first 2 weeks, there was no difference between the cultivars regarding loss of volume and decay, moreover, the effect of time elapsed after harvest and of adversities of transport was not significant. It could be stated that 2 week of storing is safely feasible. We need only 2 °C temperature and 90% of relative humidity. The relations of oxygen and CO2 of the atmosphere is less decisive than temperature alone. No essential difference has been registered between the storing in plastic trays versus plastic boxes either. A study was performed to assess the modified atmosphere packaging (MAP) effect on Hungarian sour cherries growing in Iran (`Érdi bőtermő and ‘Érdi jubileum') shelf life. The harvested fruits stored at 0 °C under modified atmospheres (15% 0, and 10% CO2 and 75% nitrogen) for 6 weeks. Descriptive analysis showed that sour cherry stored in control condition had a higher deterioration rate than those stored in under modified atmosphere, which showed a lower rejection rate and a longer shelf life than those stored in modified atmosphere.

Effect of different starter and foliar fertiliser rates on some compositional parameters of sweet corn (Zea mays convar. saccharata Koern.)

Researches nowadays aim to find out what role the different vegetable species play in protection of the human organism. Consumption of vegetables and fruits more times a day plays an important role in this process. The valuable chemical components in plants can eventually be influenced, besides, by environmental characteristics, also by the elements of the production technology applied. Our work aimed to find out what eventual changes occur in the composition parameters of sweet corn (Zea mays convar saccharata Koern.) receiving different NPK fertilizations and top dressed with foliar application of Zn and Mg, destined chiefly for fresh consumption, in response to the treatments mentioned above. The fertiliser rates were compared with the help of the variety Spirit (normal sweet, very early ripening).

Sensorial appraisal of sour cherries grown by environmental technology
27-30.Views:247Sour cherry samples have been tested by a panel of potential consumers, and the judgments expressed by points given for each attribute. The correlation of individual traits with “general impression” has been explored. Primary raising of data was aimed to evaluate the effect of environmental growing technology upon sensorial impression of fruits for fresh consumption. Organoleptic tests consist of tasting and filling out of forms with numerical data as ratings them regarding taste, flavour and flesh firmness. The values of coefficients of correlation showed that a couple of other attributes as appearance, juiciness and sugar/acids perceived were irrelevant from the point of view of acceptance, i. e. the general impression.

Estimating of water consumption of cherry trees
15-17.Views:210Despite of its importance there is no exact information on water use of new scion/rootstock composite trees, which would be needed to optimized irrigation. Our research purpose is to define exact water-demand of different rootstock/scion composite trees, calculating seasonal weather changes and by using the results decrease irrigation costs. The investigations are carried out in Soroksár, at the Experimental Farm of Corvinus University of Budapest in May 2008. From among the investigated trees two are budded onto Prunus mahuleb `Érdi V' seedlings, two on "Korponay' seedlings. The sapflow measurements are carried out using Dynamax Flow 32 equipment with Dynagage trunk sensors. The first daily maximum of sapflow was around 10:00 a.m. (2.5 kghour I), the second maximum was always between 14:00-15:00 p.m. (2 kgday- I). Comparing to the very intensive morning water uptake by 20:00 p.m. the water flow slowly reached the minimal level. Significant differences can be seen on rootstocks: trees on `Korponay' rootstock always showed more intensive sapflow and a higher morning peak than trees on `Árdi V'. But later during the day they have the same run.Based on our results the water quantity transpired only by the trees reached in May 86-104 mm, while the precipitation was only 42.4 mm. This means a 40-60 mm deficit in the orchard, which should have been supplied by irrigation despite of the satisfying horticultural performance of the orchard. In the first half of the month beside the steady vapor pressure deficit the shoot and leaf surface growth could cause the increased sapflow.

Conditions of rentability in the apricot industry of Hungary
127-129.Views:185Total investment costs of an up to date apricot plantation requires about 5000 thousand HUF/ha. Modern
plantations yield under normal conditions 15–20 t/ha with 80% quality for fresh consumption. Consequently, taking the life span of a plantation (15 years), the internal rate of return of 15–17% per year (IRR), that means that the costs of investment will be regained in the 9–10th year, which is considered to be satisfactory. However, weather hazards (frost, hail) may occur at a probability of 20–25%, therefore, maintaining the quality (80% for fresh consumption) and yields (15–20 t/ha) are badly needed to speak about rentability. This level of yields maintains the option of feasibility up to 20–25% losses. -
Evaluation of morphological parameters and bioactive compounds in different varieties of beetroot (Beta vulgaris L. ssp. esculenta GURKE var. rubra L.)
31-35.Views:466Beetroot consumption based on pickled beets generally in Hungary which is due to the higher yield from second crop harvested in autumn and processed by manufacturing industry. Researches of the past years confirmed its favourable nutritional-physiological effects on human body so demands, as for fresh salad, also increased. The trial aimed at testing the interaction of varieties on quality parameters and in the same time suggestions are made how to use different varieties of beetroot according to its quality. Morphological and sensory evaluations were examined on 10 varieties of beetroot harvested in autumn. The regular spherical shape can reduce the refining loss during the processing of beetroot which is beneficial for the manufacturing industry. In our trial the root shape of Libero, Mona Lisa and Rubin varieties approached most the regular spherical shape (diameter/length – 1.0) which is favoured by not only processing industry but also fresh market. The highest red pigment content (betanin) was observed in Mona Lisa, Akela and Cylindra (34.58–47.66 mg/100 g). A similar trend could be observed in yellow pigments (vulgaxanthins) which proves the close correlation between the quantities of the two pigments (r=0.898). Highest total polyphenol (77.13–83.37 mg GAE/100g) and flavonoid (21.73–22.73 mg CE/100g) contents were detected in Akela, Mona Lisa and Bonel. These varieties are favourable for fresh salad and they can satisfy processing requirements also. Highest water soluble solids content was found in Akela (7.15%). In our conditions nitrate (NO3-N) values below 900 mg/kg were examined in all of the varieties which is favourable in the case of beetroot.

Hungarian fruits and vegetables of high anti-oxidant activity as functional foods (Review article)
13-21.Views:442Recently, projects aiming to enhance the consumption of fruits and vegetables are intensified. Experts agree in the principle of fresh vegetable foods being a valid panacea in averting risks of ailments as well as curing immune-insufficiency, inflammations, moreover, certain cancerous processes. It is generally accepted that among substances of biological activity the anti-oxidant compounds such as vitamins C, E and carotenoids, etc. have the major role in this process. Hungarian agriculture has outstanding chances in utilising its natural as well as cultivated plant resources and favourable climatic conditions. It would be, however, necessary to build up a databank of antioxidant substances found in fruits and vegetables and including the modifying effects of technology, growing site, variety, etc. The concept of promoting the trade of Hungarian food-specialities as "Hungaricum" needs, urgently, the aid of a databank of that kind. Some of those excellent products are for instance the sour cherry, pepper and onion. They enjoy high priority as "Hungaricum" in the EU and it should be enhanced by intense and consequent research work, which may prove their role as functional foods. The USA is the leading country in research on the anti-oxidant substances of sour cherries, and up to now more than 17 compounds have been found in Hungarian varieties among others. In pepper fruits used as vegetable and source of vitamin C, the analyses are still lacking because research of the past concentrated on the products of milled spice pepper. Onion and garlic are entirely unexplored in this respect. It should be noted that availability of these fresh products in the moderate climate is restricted to a relatively short season. For that reason, some processing and preservation methods are needed in order to use those fruits and vegetables as functional foods all around the year. The scientifically founded endeavour as a solution of the questions mentioned is stimulated by vigorous commercial interests as well as by the urgent needs of the consumers to improve their health.

The main properties of fruit offered on the retail market in Hungary
67-69.Views:243The small enterprises of the Hungarian retail market of food and related commodities are in a dismal crisis, many of them got bankruptcy, whereas fruit and vegetables are offered in large shop-chains and supermarkets. Traditional small shops near to the domiciles are still highly esteemed by the population and their lack is regretted especially because of commodities for fresh consumption. For the purpose to evaluate the situation, I planned the comparative study of fruits offered in the retail markets by tracing their origin, quality and prices. From the six shops selected for the study three represent department stores belonging to different chains. Independent entrepreneurs manage the next three shops of vegetables with own suppliers. It was stated that the retail shops offer mainly fruits of Hungarian growers. It is however worthwhile to state that the origin of the produce was frequently not marked. The fruits imported from abroad, apple, pear, peach, were sold at substantially higher prices than those of Hungarian origin.

The effect of storage to optical properties in case of two apple fruit varieties
33-36.Views:286The keeping quality of fruits is a very important factor in storage point of view, since it could be elongated the consumption time of fruits. In many cases the storage may be necessary, e.g. in short time it is not able to market due to the rich harvest, or all fruits could sell in markets throughout the year. The keeping quality of various fruit species is greatly different; moreover it could be observed some differences between the varieties as well. In our research, we have investigated the spectral properties of the external surface and fl esh of two ripe apple varieties – Jonagored and Granny Smith – before and after storage (about 3°C and about three weeks). The hyperspectral investigation was carried out with AvaSpec-2048 Fiber Optic Spectrometer. The experimental results represented the differences between healthy and chilling injured apple fruits. Furthermore, some indices were created to given countenance to the spectral differences.

Factors affecting apricot fruit antioxidant capacity and mineral element contents
95-99.Views:235Several epidemiological studies revealed that the consumption of antioxidant compounds and the risk of atherosclerosis, increased blood pressure or cancer are inversely proportional. The individual amounts and relative proportions of macro- and micro elements present in food is also of great consideration since these are involved in a wide range of physiological processes including the influence of the redox homeostasis. The antioxidant power and mineral nutrient content of fruits might be affected by several factors including genotype, ripening stage, year-effects or a wide range of environmental conditions. This study was carried out to survey the antioxidant power and mineral element content in fresh fruits of apricot and analyse some genetic and environmental factors that may have important contribution to the inner content of apricot fruits. In addition, the influencing effect of the extraction procedure used for antioxidant analyses was also tested. Our analyses indicate that a considerable fraction of antioxidant capacity is attributable to the hydrophilic antioxidants. The genetic background has crucial importance in determining apricot fruit antioxidant capacity and mineral nutrient content; however, the growing season and the ripening time of fruits may have also important effects.

Farm economic evaluation of raspberry production
53-56.Views:289Hungary was considered as one of the most significant raspberry producers in the 1980’ies. The acreage and the produced quantity, however, reflected a decreasing tendency during the past two decades: the 7 000 hectares existing in the year of 1990 reduced to 1 500 hectares, the current territory does not reach the 500 hectares. The annual yield is only 1 to 3 thousand tons. The level of domestic fresh consumption is very low, due to the fact that it is a relatively expensive fruit for Hungarian consumers. The requirement of the processing industry is satisfied by raspberries from mainly Polish and Serbian import. These two countries belong to the biggest raspberry producing countries in the world by producing raspberries of more than 50 thousand tons. Comparing to the Hungarian production costs and yields they are able to transport their products here at a very low price, consequently they hold the prices at a low level. The profitability of the domestic raspberry production is rather unfavourable, production often shows a deficit even in orchards of good standard; furthermore the lack of labour causes an extremely great difficulty, which is an important component of the decline of the production independently from cost conditions.

Chemical characteristics of nectarine genitors used for breeding program in Romania
41-43.Views:125The geographic location of Bucharest area, the nature of its soil and its climate offer remarkably favourable conditions for nectarine growing, with juicy and well flavoured fruit, good for fresh consumption and processing.
The five years' investigation (1996-2000) has helped to identify some nectarine cultivars and hybrids (NJN 58, ARK 165, ARK 139, Morton, ARK 107, Romamer I, ARK 125, Firebrite) with exceptional fruit quality (dry matter content, titratable acidity, vitamin C content, overall sugar, and amount of pectic substances).
Dry matter content varied over the three years from 8.3 to 18.5% (NJN 68), meanwhile titratable acidity varied between 0.26 and 1.08% (Romamer I). Sugar / acidity ratio was within the limits of 8.6 and 36.5 (Nectared 7). Nectarines have high vitamin C content, over 10 mg/100g (Fairlane, NJN 67, Regina, Harko), glucides were found in Firebrite, Romamer I varieties and NJN 21, CIR1T127, HFSR3P4, HNA hybrids.
Some cultivars have been recommended for planting in this southern area of Romania (Crimsongold, ARK 125, Harko, Hardyred, ARK 134), others used as quality genitors (ARK 85, Nectared 7, NJN 21, ARK 21, ARK 134, Fantasia) in breeding projects.

Evaluation of the competitiveness of fresh tomato
Views:276The existence of international trade and related trade theory are closely related to competitiveness. The following study focuses on the competitiveness of Hungary, which studies the development of comparative advantage in terms of tomato for fresh consumption among horticultural products. As a consequence, the main objective is whether Hungary has comparative advantage over EU-28 countries in case of fresh market tomato. Data in the study were provided by FAOSTAT database. The study period focuses on results from 2004 to 2019, breaking them down into 5-year (average) cycles. The method chosen was the RCA index group, the most widely recognized and applied index group for calculating comparative advantage. Although Hungary is not a significant vegetable-producing country in Europe, the fruit and vegetable sector accounts for 10-13% of the production value of agriculture. Regarding the results, it can be stated that Hungary does not have comparative advantage in case of tomato products. With respect to values of the tomato sector, the RCA index is in the range of 0<RCA≤1, therefore we have no comparative advantage. Spain and the Netherlands have stable competitive advantage. These countries show weak comparative advantage in each period studied, as the indicator values exceed 1 but do not reach 2.

High antioxidant - and anthocyanin contents of sour cherry cultivars may benefit the human health: international and Hungarian achievements on phytochemicals
45-47.Views:448Evidence suggests that a diet with high fruit and vegetable consumption may decrease the risk of chronic diseases, such as cardiovascular diseases and cancer, and phytochemicals including phenolics, flavonoids and carotenoids from fruits and vegetables may play a key role in reducing chronic disease risk. Recent research has proved that sour cherry (Prunus cerasus L.) is a valuable natural source of some bioactive compounds important in human health preservation. According to the published data, the most important biological effects of sour cherry are connected — directly or indirectly — to their endogenous antioxidant behaviour as well as to their specific pattern of anthocyanin components. In the present work, we measured the total antioxidant capacity of some Hungarian sour cherry varieties in combination with their anthocyanin-, and vitamin-C content. In 2003, twelve clones were selected and grafted from a local sour cherry population called "Bosnyák" sour cherry grown in small home gardens and farms of the village Csengod (Great-Plain Region, South Hungary). Other Hungarian sour cherry varieties, i.e. cv. Újfehértói fürtos, cv. Érdi bőterrnő, cv. Debreceni bőterrnő, cv. Csengődi and cv. Kántorjánosi served as a control.

Antioxidant, polyphenol and sensory analysis of cherry tomato varieties and landraces
75-80.Views:263Among vegetables produced both for raw consumption and processing, tomato is one of the most important one in Europe, by production area and by yield as well. In the past years several study dealt with the investigation of the inner content of tomato, with special regards to antioxidant content. In this paper cherry tomato varieties and landraces from conventional and organic production were compared. Besides basic investigations sensory analysis were designed and Antioxidant Capacity (AOC) and Total Phenol Content (TPC) were measured. The aim of the research was to compare varieties and to study the effect of variety and production methods on antioxidant capacity and sensory profiles.

Consumer preference for apples: the role of attributes influencing the choice and consumption
37-43.Views:375Consumers consider good quality fruits to be those that look good, are firm and offer good flavour and nutritive value. Nowadays, consumers are, however, increasingly interested in food qualities which cannot be discovered by looking, tasting or smelling the products but their roles are not yet really cleared up. Therefore the objective of this study was to explore the importance of selected kinds of attributes (taste, size, colour, cultivar, origin and price) in fluencing the choice of apples of customers. In accordance with several authors, fruit qualities (taste, size and colour) seemed to be the major attributics influencing the choice of apple independently of people's age and gender. However, the size of fruit had lower importance with increased age. Generally, females gave higher importance rating for most attributes than did male. The price was getting more important for consumer's choice with age which can be connected with their socioeconomic situation. The origin of fruit and the cultivar did not have important influence on consumer's choice. Authors also investigated the preference of consumers for six selected apple varieties ('Jonagold', 'ldared', 'Royal Gala', 'Golden Reinders', 'Braeburn' and 'Granny Smith'). and pointed out the role of the origin in fruit quality and in choice of apple in the case of 'Granny Smith' cultivar. Apple fruit samples from Austria, Argentina, Chile, Hungary and South Africa were involved in this study. Authors evaluated fruit quality parameters of above cultivars and compared them to consumer preference. Consumer preference usually represented the quality attributes of the fruit well. It is also concluded that degree of liking of apple cultivars varies through gender and age. Children and young consumers preferred 'Royal Gala', 'Granny Smith and 'Braeburn' mostly. In spite of 'Idared' is one of the cultivars grown on the largest area in Hungary, the lowest preference ratings were given for it in both gender categories. Middle-aged consumers (between 25 and 50 years or age) preferred crispy apples with red or blemished skin color ('Royal Gala' and 'Jonagold'). 'Jonagold' and 'Idared' were the most preferred cultivars for the consumers above the age of 50 likely because of their relatively low price, as price plays a significant influencing role in the purchase of these consumers. The relatively expensive and soury 'Granny Smith' appeared not really preferred by this age group. In spite of the significant differences in instrumentally measured fruit quality parameters among 'Granny Smith' fruit samples from different countries, consumers did not give significantly different preference rating scores for those.

Vegetative Indicators of sour cherry cultivars and resistant clons
55-58.Views:195Sour cherry is a hungaricum. Hungary has several excellent and self fertile sour cherry cultivars. Hungarian sour cherries have a name for fruit quality and they are suitable for fresh consumption. Today breeding is focused not only on fruit quality, but also on disease resistance. The new, investigated cultivars have these characteristics too. But growth characteristics are also very important because they contribute to successful production. The vegetative and generative properties of the cultivars are different. If a cultivar is very productive, the ignorance of cultivar-specific pruning may result in the decrease in tree condition and fruit quality. The properties of producing fruiting wood greatly determine the renewal capabilities of cultivars. Knowing these properties is essential in case of sour cherries, the fruit species that requires a lot of sunlight and tends to produce bare wood. The research of candidate cultivars until now focused on fruit quality. Our aim was to investigate the vegetative characteristics of the resistant ‘bosnyák’ cultivar group in detail, defining the growth characteristics of these cultivars.
