  • HOUSEHOLDS’ FOOD CONSUMPTION BEHAVIOUR DURING COVID-19 PANDEMIC: EVIDENCE FROM RURAL HOUSEHOLDS IN SOUTH AFRICA

    The food consumption behaviour of households has been affected by the lockdown restrictions that were implemented to reduce the COVID-19 infection rate. This study was aimed at analysing the food consumption behaviour of rural households during the COVID-19 pandemic in South Africa. To achieve this, a simple random technique was used to collect data from 120 in Merry Pebble (MP) Stream Village. Thereafter, an Ordered Probit Model was used to examine the extent to which households have increased, decreased or maintained the same quantity of food consumed during COVID-19. The results indicated that 46.7% of the rural households had consumed less food during COVID-19 pandemic, 32.5% consumed about the same amount of food, and 20.8% consumed more food. The variables that contributed towards a decrease in food consumption are employment status, household size, loss of income, and social relief grants. On the contrary, bulk buying and food parcels had stabilised food consumption, while the number of employed people in a household and food bought from restaurants contributed towards an increase in food consumption during COVID-19 pandemic. With regard to consumption behaviour per food item, fresh produce, meat, snacks and fast food were consumed less during COVID-19, while there was a constant consumption in dairy products, and an increase in consumption of canned food, frozen food, prepared food, grains and water. The study recommends that the government should continue with the economic and social relief programmes that were created during COVID-19, as they play an important role in increasing and stabilising food consumption by rural households.

  • Interventions to encourage sustainable consumption

    Sustainable consumption is hampered by a discrepancy between consumers’ attitudes and their actual behaviour in the market place. Psychological construal level theory provides an explanation for the attitude to behaviour gap as a motivational conflict between high and low level of mental construal. Based on self-determination theory it is argued that this motivational conflict presupposes extrinsic motivation for sustainable behaviour. Based on self-regulatory styles, the present paper identifies and illustrates four types of intervention strategies that can cater for extrinsic motivation for sustainable development among light users. The underlying mechanisms of these interventions suggest that the transition from external to internal regulation is catalysed by social feedback.

  • Consumer approach of health and ayurveda

    The aim of this study was to explore the differences of health interpretation between people with ayurvedic approach and non ayurvedic but health conscious approach. While Ayurveda has a holistic approach to health, the European medicine focuses on its physical aspects (bio-medicinal model). Although theoretically a complex interpretation of health (bio-psycho-social model) is the most accepted in Hungary, we examined whether it prevails on a practical level. We carried out a representative survey (N=1000) to examine the health-related knowledge and behaviour of the Hungarian population. To achieve deeper understanding of the subject, we carried out two focus group discussions. We selected health conscious people in the first group and ayurvedic oriented people in the second group to compare their attitudes towards health. The results showed that the majority of the Hungarian population (83,2%) have recognised that health is more than a bio-medicinal approach, it is built up of physical, psychological, mental and social factors, but in most cases we found huge gaps between recognition and action. During discussions the ayurvedic oriented group construed an interpretation that contained all the five health dimensions of WHO and mentioned spirituality as an additional dimension, while the health conscious group mainly emphasized physical health. We also asked the participants about their own health behaviour and found the same pattern. It can be stated that the Hungarian population theoretically admits an integrative model of health but it does not appear in their health behaviour. It seems that ayurvedic orientation contributes to bringing knowledge to practice. Ayurvedic oriented people have a more complex interpretation of health and are willing to do more for their health, so they are a good target group for prevention campaigns and health care services. It also suggests that the spread of ayurvedic approach could contribute to better health behaviour in Hungary.

     

  • Is it worth being socially responsible?

    Several definitions for corporate social responsibility (CSR) exist and these vary greatly as to the activities it should cover and their motivators. Among the benefits of CSR are positive marketing/brand building, brand insurance and employee loyalty. Numerous arguments against CSR prevail, e.g. social responsibility is not a problem that belongs in the sphere of activities a corporation should be addressing or even that CSR distracts businesses from addressing the primary need to concentrate on sales. Thus, the strong economic question: is CSR worth it? In 2014, we carried out a representative survey in Hungary, in which the effects of responsible business practices on consumer purchase behaviour were studied. With our research results, we could show that there is a considerable gap between the apparent interest of consumers in CSR and the limited role of CSR in purchase behaviour.

  • The direct and indirect costs associated with food hypersensitivity in households: A study in the Netherlands, Poland, and Spain

    Background: Recent studies show that food hypersensitivity, such as food allergy or food intolerance, has the potential to affect direct, indirect and intangible economic costs experienced by individuals and their families. This research assesses the direct and indirect economic costs of food hypersensitivity at the household level in the Netherlands, Poland, and Spain.
    Methods:  A self-administered postal survey was conducted (n=1558). Respondents with food hypersensitivity were clinically diagnosed cases recruited through clinical centres in Poland and Spain. In the Netherlands, food hypersensitivity cases were recruited through hospitals, patient organisations and advertisements. The controls formed the baseline sample and were obtained from households in which none of the members had food hypersensitivity. The monetary value of indirect costs, forgone time, was calculated using the opportunity cost method. The indirect and direct costs were expressed in purchasing power parity. Analysis of co-variance on the cost items was used to test the within-country differences between respondents with food hypersensitivity and respondents without food hypersensitivity, as well as across the three countries.
    Results: The average total direct and indirect costs across all countries for families with food hypersensitive family members are not higher than for households without food hypersensitive members. However, the intangible costs for food hypersensitive individuals appear to be higher than for individuals in the control group.
    Conclusions: These results do not support the hypothesis that all food allergies incur high costs to the individual. However, being hypersensitive to foods may have a negative impact on quality of life compared to people who are not food hypersensitive.

  • Market trends and consumer demand for fresh berries

    We present an analysis of markets for fresh strawberries, blueberries, blackberries and raspberries in the United States during 2008–2011. We use weekly panel data covering supermarket purchases in 52 cities. The primary goal is to estimate demand elasticities for fresh berries and thereby provide a better understanding of consumer behaviour in response to price changes and the nature of competition among these crops. We estimate fixed and random effects models for double log demand equations and a complete demand system, the Almost Ideal Demand System. The latter specification can be used to estimate demand relationships that conform to utility maximising behaviour. The elasticity estimates are very robust across the different specifications and estimation methods. This increases confidence in our findings and provides some assurance that choice of functional form or estimation method is not driving our results. We find that retail demands for all berry crops are in the elastic range and that the different berries are substitutes for one another. The demand for strawberries was the least elastic with an own price elasticity of –1.26 and blackberries were the most elastic with a demand elasticity of –1.88. Blackberry demand was also the most responsive to the prices of competing berry crops. The study provides clearer insight into markets for berries in the United States. In addition, it fills a gap in the present lack of up-to-date consumer demand elasticities for these crops and will be useful for growers, decision makers and consumers.

  • Health factor in soft drink consumption, German example

    Consumer lifestyle and health are relevant factors to understanding consumption preferences.The number of lifestyle diseases has dramatically increased worldwide. The main cause for these diseases is the change in lifestyle; including a lack of attention to physical activity and good nutrition. Health and lifestyle are important factors by purchase decision process. In accordance with these, I examine the consumer behaviour toward soft drinks with special regards to healthy lifestyle and the state of health. My examinations can be considered mainly as a qualitative research among German students, which can serve as a basis for further analyses and research, however, the conclusions and experience gained from it are worthy of consideration. I differentiated five categories: ice tea, carbonated soft drinks, fruit juices, mineral waters, sport and energy drinks and studied the consumer behaviour toward them. The study focuses on the consumption of these and the factors influencing their purchase with special regards to lifestyle.

  • Quality-satisfaction-loyalty: consumer behaviour in catering

    Our study is the result of the initial research of a qualitative and quantitative research consisting of more stages. The survey was made between 2007 and 2013 and specially focused on the satisfaction of Hungarian customers of catering enterprises with hot kitchen as well as on factors influencing satisfaction and customer loyalty. The results proved that a well planned, central strategy cannot be prepared for the whole catering industry as even enterprises with the same profile (warm food kitchen) show significant differences. The most important task for an enterprise is to establish and know its appropriate clientele well in order to suit its services, selection to their requirements. Our assumption that customers of fast food restaurants, canteens have lower expectations from selection, personal relations, quality of services than customers of restaurants, public houses, wayside inns, brasseries with traditional methods of selling was proven. In the lattest, the main aspect of choosing a 'favourite place' was the quality of human relations, with the special role, besides other customers, of the staff. Establishing unique atmosphere to the liking of customers can be regarded as an important point of the operational strategy. It was also proven that the majority of regular customers of restaurants are men, coming from the economically active population. Other active users are youngsters, they mainly go to fast food restaurants. More impersonal advertisements hardly have any effect, while successful word of mouth propaganda can be achieved by consequent, high level work. Regular customers can be characterized by rather emotional than market-based attachment. Favourite units are mainly preferred because of their atmosphere, relationships with acquaintances and friends, not because of measurable features, selection or prices. Those visiting catering enterprises with hot kitchen more frequently are more critical and less satisfied, in spite of this, they are reluctant to part from their regular places.

  • ANALYSIS OF CONSUMER BEHAVIOUR IN THE EUROPEAN POULTRY MEAT MARKET

    This research has also confirmed that poultry meat is currently in its golden age, not only in our country but also globally. The beneficial physiological effects of poultry meat, its nutritional value (high protein content), and its role in modern nutrition and diets have made it the most popular and 'fashionable' meat product of our time. Healthiness as a megatrend has favoured the consumption of poultry meat, which has been consumed for decades, and is reflected in the growth in production, trade and consumption. The trend of environmental awareness has also pushed the meat market towards the consumption of poultry meat as it is one of the least environmentally intensive compared to other meat types. Poultry meat is the second most commonly consumed meat in the EU, but in some European countries, it has taken over the overall lead (e.g. Hungary, Cyprus, and the UK). Poultry is not only preferred for its healthiness and low environmental impact, it is also an easy, versatile, quick-to-prepare, cheap source of protein. These advantages are expected to lead to further growth in the future in terms of production, trade and consumption, China, the US, the EU and Brazil dominate the poultry sector.

  • The characteristics of consumer attitudes in the food market in Hungary

    The objective of our research was to examine the health status and health behaviour of the Hungarian population in relation of food consumption by identifying relationships between the underlying factors. In our research we used the objective factors from secondary data concerning nutritional status and body image as a framework for the interpretation of the examined relationship of eating attitudes and body attitudes. We chose survey as our test method, it was carried out on a national representative sample of 1000 people. After the examination of the factor structure of the two attitude measuring questionnaire, five consumer groups have been identified by the cluster analysis. The five clusters are: Uncontrolled Impulse Eaters, Dissatisfied Tense, Uninterested, Overweight Impulse Eaters and Conscious Consumers. This segmentation based on eating attitudes and body attitudes could serve as a guidance for health marketing experts and the manufacturers of health protective food to determine and address their target group.

The emerging post-industrial society can be characterised by the dominance of service industry, more leisure time of the population, higher disposable income and more conscious consumers. These conscious consumers are more and more quality orientated and reject undifferentiated mass products. New customers of tourism and hospitality industry are not only more affluent – so less price conscious – and more quality orientated but they are also seeking activity, participation, fantasy, and experience. These new types of tourists are interested rather in aesthetic aspects of life and are seeking highly differentiated, personalised experience. In the following article the authors, professors of the French ESSCA business school overview theoretical aspects of new, post-Fordist tourism demand and present examples of the new tourism and hospitality products having emerged in the developed countries during the last years.

  • Factors affecting acceptance of smart retail solutions in Hungary: an empirical study using UTAUT2 model

    In today's digitalisation process, retail is also undergoing a transformation, with the emergence of new smart solutions. Integrating intelligent solutions into a business model means new strategic challenges for retailing companies. The aim of the research is to examine the factors influencing the behavioural intention and use behaviour of smart retail solutions (SRS). The proposed model was based on the extended Unified Theory of Acceptance and Use of Technology (UTAUT2). Data was collected by conducting a questionnaire of 302 Hungarian respondents. Confirmatory factor analysis (CFA) and partial least squares (PLS-SEM) estimation were implemented. The results showed that behavioural intention is significantly and positively influenced by effort expectancy and it is significantly and negatively influenced by facilitating conditions. Most of the respondents are not yet regular users of SRS, and the market penetration of front-end intelligent solutions in retail is considered as rather low.

  • Analysis of Bathing Habits among Spa Visitors

    The valorisation of healthy lifestyle has indicated the dynamic increase of healthcare sector. The consumer behaviour has been forming deterministically in health tourism. Visitors of spa towns can select various combinations of services either to sustain their health, to rest, to relax or to recover. It has a great importance for spas offering complex health tourism services to know the demands of guests and to reach the target groups with special, personalized service packages. After considering the statistical indicators of tourists visiting the spas of Northern Great Plain Region and the competitors of a selected spa, this paper aims to investigate the coherence among bathing habits, influencing factors of service demands, age and non-motivating coherences. The survey was taken place in a selected spa in Hajdú-Bihar County in August 2018 with random sampling questionnaire involving 256 visitors. During data analysis the coherence among indicators was examined with variant analysis (Levene’s test), in case of significant result with Welch’s t-test. Variances in age groups were analysed with Tamhane’s and LSD tests (post hoc analyses). We concluded that the primary information source of spas is still the suggestion of friends, acquaintances independently of the age of the respondent. Knowing this is relevant for further marketing communication. The most important features among the respondents are the condition of the spa and cleanness which are the basics of quality services. Motivations with coherence to age are social life and gaining experience, recovery and disease prevention. Visitors have the largest interest for family and kid programs. Recognition of bathing habits helps in marketing communication, reaching target markets effectively, pricing and service developments as well.
