  • Quality-satisfaction-loyalty: consumer behaviour in catering

    Our study is the result of the initial research of a qualitative and quantitative research consisting of more stages. The survey was made between 2007 and 2013 and specially focused on the satisfaction of Hungarian customers of catering enterprises with hot kitchen as well as on factors influencing satisfaction and customer loyalty. The results proved that a well planned, central strategy cannot be prepared for the whole catering industry as even enterprises with the same profile (warm food kitchen) show significant differences. The most important task for an enterprise is to establish and know its appropriate clientele well in order to suit its services, selection to their requirements. Our assumption that customers of fast food restaurants, canteens have lower expectations from selection, personal relations, quality of services than customers of restaurants, public houses, wayside inns, brasseries with traditional methods of selling was proven. In the lattest, the main aspect of choosing a 'favourite place' was the quality of human relations, with the special role, besides other customers, of the staff. Establishing unique atmosphere to the liking of customers can be regarded as an important point of the operational strategy. It was also proven that the majority of regular customers of restaurants are men, coming from the economically active population. Other active users are youngsters, they mainly go to fast food restaurants. More impersonal advertisements hardly have any effect, while successful word of mouth propaganda can be achieved by consequent, high level work. Regular customers can be characterized by rather emotional than market-based attachment. Favourite units are mainly preferred because of their atmosphere, relationships with acquaintances and friends, not because of measurable features, selection or prices. Those visiting catering enterprises with hot kitchen more frequently are more critical and less satisfied, in spite of this, they are reluctant to part from their regular places.

    The background of the study is based on previous studies dealing with the areas of Transdanubia and Central Hungary. Those works have proved the hypothesis of author that local ingredients and dishes represent minimum role on menus. The question is how similar or different the choice of menus of Northern and Southern Great Plain is from the previously examined areas of Hungary.Additional questions may also arise in terms of the usage of local ingredients available near catering units. This piece of work has studied several menus of Northern and Southern Great Plain, Hungary.The material was collected from different types of restaurants, ‘csárda’-s and inns. The methodology was two-tier: data collecting on the one hand, and the detailed examination of differences between the catering units on the other hand: the number of dishes, the right order of dishes, the appearance of local ingredients and dishes, the consideration of seasonality, the usage of different cooking methods and group of dishes. The study reflects the main problems of countryside restaurants in Hungary. Only a minimum number of dishes could be connected to local dishes out of more thousands.All in all, dishes are not as precise and perfect as the ‘old ones’used to be; that is why it is important for every expert to keep traditions alive in daily routines and by way of strategic means too.

  • Guest satisfaction survey at the Aquaticum Debrecen Thermal and Wellness Hotel

    Aquaticum Debrecen Thermal and Wellness Hotel is one of the most successful hotels in the North Great Plains region as well as in Hungary. The key to success lies in high level customer satisfaction. On the one hand only the satisfied guests will return to the hotel, on the other hand the guests’ positive or negative opinions will be shared with thousands of potential customers immediately by means of the Internet. Consequently, exploring the main factors of guest satisfaction has never been so important as nowadays. An online questionnaire system was introduced to the hotel in 2010, which resulted in an increased number of customer responses, thus it became possible to analyse the various aspects of customer satisfaction in a greater detail. In the present study the critical factors of guest satisfaction are analysed. We investigated the guests’ willingness to return to the hotel, and found that there is no significant difference between the guests’ gender, age, permanent place of residence and the fact if they travel alone or with a company and their willingness to return to the hotel, i.e. guest satisfaction. However, business travellers’ opinion significantly differs from the recreational travellers’ views concerning their return to the hotel. Business travellers are less satisfied and less willing to return. Furthermore, we investigated whether the problems experienced by the guests in the hotel influence the guests’ willingness to return to the hotel. We found that the guests who experienced problems are less willing to return. However, we also concluded that there was no significant difference in their willingness to return among those guests who experienced problems during their stay and these were efficiently handled, and those guests who did not experience any problem.

  • Regional differences in the economical sustainability of sports halls

    The precondition of a health conscious behaviour in a community is establishing a healthy development of the community, an important part of which is the community’s attitude to sports and health. A basic manifestation of this is whether the leadership of a specific settlement is committed to developing sports facilities and, on the other hand, to what extent residents make use of these facilities. The aim of our research was to point out the number of sports facilities currently available for catering everyday physical education introduced in 2012, leisure sports and competitive sport events in two different regions of Hungary. We also examined the resources available for maintaining the facilities and the degree to which existing facilities are exploited. Existing sports halls of the Northern Great Plain and Central Transdanubia were included in the research. We wish to emphasise, in regards to the infrastructural developments of the coming few years, that it is essential to consider the fact, even in the planning phase of facilities, that sport events in themselves do not make the facilities economically sustainable.

  • Climate change effects on ski tourism

    Nowadays, climate change poses a common recurring problem in our everyday life. The weather forecasts tend to be inaccurate, the swiftly changing weather often makes fun of the people. The same unpredictability applies for forecasting the amount of precipitation or snowing. The major problem in ski tourism consists in the gradual shift of seasons, namely there is no snow in December yet, while at Easter-time we can count on such an enormous amount of snow. I’d like to present this climate condition and offer a sort of way out of this problem. In my empirical study, I have carried out document-analysis along the data collection phase, and I made half-structured deep-interviews, as well.
    My research questions were the following: How is the winter season affected by climate change or by the lack of snow? Due to the unreliable climatic conditions what is the estimated ratio of drop in tourism in the season? How much shorter is a skiing-season and how does it affect the operation of the local ski-school? What are the features of pre, and post peak-season tourists’ emergence? How and for how long can a smaller ski-resort be maintained? What is the biggest challenge, problem at the ski-resorts along the state border?
    First of all, I’d like to present and tackle the various solutions emerged facing the challenges of climate change effects related to skiing, on the other hand, I have made some personal interviews with Hungarian ski instructors working abroad and also with managers of Austrian ski schools trying to find out the various answers and reactions they have hammered out coping with the new challenges and difficulties in ski tourism.
    Hungary can not be considered a skiing nation, although more and more people tend to take up skiing and get involved in this special field of sport tourism. The number of ski slopes being built and developed is increasing, yet the Hungarians ski-lovers tend to visit rather the foreign sport centers for the time being. The reasons mostly involve the various length and versatile difficulty level of the ski slopes. We should also take into account the challenging conditions imposed by climate change on the smaller winter sport centers and the way they can cope with it and also compete with other sport centers with similar features.
    Climate change affects considerably the operation of skiing season, and the service providers must adapt to the new conditions. Many resort venues struggle for survival, though most of the local self-governments are clearly aware of the importance of ski-tourism, particularly in Austria.

  • The motivations for the diversification of the Nigerian economy focusing on sustainable agriculture

    Agriculture is one of the major branches of the economy in Nigeria, the most populous country in Africa. It employs around 70% of the population and its contribution to the national GDP ranges around 45% (2012). In spite of the fact that most of the area is arable the majority of food, the Nigerian population consumes, comes from imports. The paper attempts to provide in insight to the reasons, why Nigeria could still not achievew self sufficiency from major food crops and livestock. Beyond the rapid growth of the population, one of the major reasons is the rich oil and natural gas reserves, the exploitation and export of which has been providing with the country with “easy cash” for the recent few decades. Another reason is that the agricultural holdings are small and scattered, and farming is carried out with simple tools and techniques. Modern and large-scale farms are not common. The political leadership and economic decision makers of the country already recognized the necessity of the development of the food and agricultural sector, which – contrary to the oil industry – would exercise a deep and positive impact on the rural society as well. Nigerian agriculture is being transformed towards commercialization at small, medium and large-scale enterprise levels.

  • Analysis of the cavebath of Miskolctapolca’s brand elements and guests satisfaction

    In the region of Northern Hungary the unique Cavebath of Miskolcatapolca is one of the leading health tourism service positioning itself on national and international market with its developing supply items and 4 star qualifications. It has a unique natural background all over in Europe; this uniqueness gives an opportunity to develop brand, which is a determinative item of competitiveness. Because of the competition between destinations and the ever-changing nature of tourists’ expectations and behavior tourism destinations need to be managed as other commercial brands. The aim of our research was to analyze the role and possibilities of product development which is based on the unique natural factors, and to help to expand the domestic health tourism supply. We examined how the possibility of branding and brand equity change based on brand elements; how satisfied are guests with the services; how often guests visit the bath; what kind of period guests arrive in the bath; what kind of services do guests try; how do guests arrive in the bath with. In summer of 2014 we asked 210 Hungarian customers to fill the questionnaire in the Cavebath. The choosing of guests happened randomly. 199 questionnaires were correctly filled.
