  • COVID-19 outbreak lockdown and its impacts on marketing of horticultural produces in Zimbabwe

    Coronavirus disease of 2019 (COVID-2019) outbreak resulted to a global health problem. Lockdown was one of the common options suggested to curb the pandemic. Horticultural produces are perishable so delayed post-harvest marketing cause losses. This study aimed at evaluating the marketing of horticultural produces and farmers’ level of preparedness during the COVID-19 lockdown. A self-administered questionnaire was posted online from April 7 to May 7, 2020 the first month of COVID-19 lockdown in Zimbabwe (began on March 30, 2020). The study targeted horticultural farmers around Harare peri-urban and had 300 respondents. Data on sociodemographic, farmers’ behavior, awareness and attitude toward marketing and desire to minimize post-harvest losses was obtained. Frequency counts and percentages were determined. Chi-square tests on independent variables were done to test associations with demographics using SPSS version 8. There were significant (P<0.05) relations between awareness and attitude toward marketing, age and level of education. Demographic variable influenced the famers’ marketing behavior and attitude during COVID-19 lockdown. Most farmers reported highest (>35%) produce sale leftovers at the markets and spoilage during than prior the COVID-19 lockdown. The lockdown resulted to low sales and most farmers were unprepared for any crisis during the marketing stage of their production. The research contributed to an understanding of how a crisis situation influence marketing of horticultural produce and raises awareness regarding post-harvest losses. A qualitative study is recommended as a follow-up of this work.

  • Conventional PCR primers for the detection of grapevine pathogens disseminated by propagating material

    Polymerase chain reaction driven by sequence specific primers has become the most widely used diagnostic method to detect and identify plant pathogens. The sensitive and cost-effective pathogen detection is exceptionally important in the production of propagating material. In this paper we have collected primer sequence data from the literature for the detection of the most important grapevine pathogens disseminated by propagating stocks by conventional polymerase chain reaction. Basic protocols to obtain template nucleic acids have also been briefly rewieved.

  • Comparative study of cherry varieties used in intense culture

    Research in sweet cherry production is intensely stimulated worldwide. The programs started also in Hungary to develop technologies and to find suitable varieties for the purpose of intense cultivation. It means that dimension of crowns should be smaller, with higher number of plants per hectare. Understocks, which let grow the trees slower, are scarce in this species. On the one hand, the braking effect of the respective stocks is insufficient, they get old pretty soon, loose ramification, yield too small fruits and do not comply with the aims of intense cultivation. Experiences prove the necessity of stocks for intense culture, which are vital, growing, easily regenerating, and freely branching. Mahaleb (Prunus mahaleb), a strong growing stock, is still suitable. Further improvement is expected from the contribution of technological elements and the choice of variety. In the present paper, a 9-year old plantation is shown with trees trained to (slender) spindle, and the yield and fruit quality of the year 2009 has been analysed with 6 varieties involved.

  • Postharvest features of chrysanthemum cut flowers as affected by different chemicals

    Cut flowers of Chrysanthemum morifolium RAM cv. Suny Reagan were treated with different concentrations of 8- hydroxyquinoline sulfate (8-HQS), silver thiosulfate (STS) and 1-methylcyclopropene (1-MCP) in order to improve the post production quality. 8-HQS was used at 200 and 400 ppm with or without sucrose at 50 O. STS was used at 0.2, and 0.4 mM with or without sucrose at 50 g/1 1-MCP was used at 0.3, 0.5 and 0.7 g/m3 for 6h.

    All the treatments of 8-HQS prolonged the vase life and minimized the percentage of weight loss of chrysanthemum cut flowers compared to the control. The vase life was larger when sucrose not combined with 8-HQS. The best treatment of 8-1-IQS was 400 ppm 8-HQS without sucrose. STS treatment led to prolong the vase life and minimized the percentage of weight loss comparing to the control. In addition, the effect was better when sucroseas was added to STS. The treatment of STS at 0.4 mM + 50 g/I sucrose was the best one. 1-MCP treatment increased the vase life and lowered the percentage of weight loss at any level comparing with untreated control. The best treatment in this concern was 1-MCP at 0.5 g/m3 for 6h. The chlorophyll content (chl.a and chl.b) of the leaves for the best treatment of each chemical was higher than that of the control. The treatment of 1-MCP at 0.5 g/m3 6h gave the best results in this respect.

  • Effect of biochar and inorganic fertilizer on the quality of beetroot (Beta vulgaris L.) in Kenya

    Despite its health benefits, the production and quality of beetroot is still low in Kenya due to the application of non-recommended rates of fertiliser and soil amendment. This research aimed at contributing to the improvement of the beetroot quality in Kenya. It was designed to determine the effects of biochar and NPK (17-17-17) on the quality of beetroot in Kenya. An RCBD factorial experiment was conducted at Egerton University farm, Kenya, for two seasons.  Biochar (0, 5, 10 t/ha) and NPK (0, 200, 300 and 400 kg/ha) were applied together before planting. Data were collected on beetroot diameter, total phenolics, total soluble solids, calcium, iron and phosphorus contents and analysed using SAS statistical software. The co-application of biochar and NPK significantly (p≤0.05) increased the beetroot diameter, iron, calcium, phosphorus, TSS and phenolics content in season two and not in season one. The sole application of biochar showed a significant increase in the iron content of beetroot in season one. However, biochar did not have a significant effect on beetroot diameter, mineral content, TSS and phenolics content of beetroot in season two. The sole application of NPK at 200, 300 and 400 kg/ha significantly (p≤0.05) increased the diameter of beetroot and iron content in both seasons one and two and also significantly improved the calcium and phosphorus content in season two. These NPK levels were not statistically different from each other, but different from the control. It is therefore recommended to apply NPK and biochar for quality beetroot.

  • Farm-scale evaluation of two widely used sanitation practices for reducing primary inoculums of apple scab in organic apple production

    Effects of two widely used sanitation practices were evaluated at farm-scale level on leaf degradation and primary infection by Venturia inaequalis in an organic apple orchard (Eperjeske) on two apple cultivars (Jonathan and Prima) from 2011 to 2013. The tested sanitation practices were eradication of fallen leaves by collection and disc cultivation. Treatments of eradication of fallen leaves by collection and disc cultivation reduced signifi cantly (P< 0.001) leaf litter density with 70–85 and 40–55%, respectively, compared to untreated plots in both years. Above treatments in the same order reduced spring scab incidence with 40–50, and 10–20%, respectively, compared to untreated plots. Incidence of leaf scab in autumn was not signifi cantly lower (P< 0.05) in the treatments in the years.

  • The effect of timing and IBA treatments on the rooting of plum rootstock hardwood cuttings

    In propagation of plum by hardwood cuttings, the success of rooting is affected by several factors. Many authors deal with the timing of cutting collections, others investigate the optimal extent of hormonal stimulation. However, there is no data, as yet, about the coherence between these two factors. The aim of this experiment was to find the most advantageous condition s, with regards to both timing and IBA doses, for rentable propagation of the examined varieties. Five varieties were studied: 'INRA Marianna GF 8- 1', 'Myrobalan B', 'MY-KL-A', 'INRA Saint Julien GF 655/2' and 'Feher  besztercei'. Cuttings were collected on  seven  occasions, during  late autumn  and winter, and were treated with IBA solutions of different concentrations. The optimal dose of IBA was found to be dependent both on the variety and the actual date of cutting collection . Results are reported, along with suggestions for optimal doses and collection periods.

    Thinning is a h ighly crucial point of the apple production technology. According to results of numerous studies the earliest thinning is deemed to have the best amending effects. There can be considerable difference between trees of the same cul tivar and age in a plantation in respect to their flowering, in the numbers of fruits set and also in their canopy volume. Thus it can be crucial -just l ike in the case of pruning- to establish a fruit thinni ng su i ted for specif ic characteristics of actual trees. This experiment was established to examine how does primary fruit set (fruit load before thinning) and further on specific (fruit/TCS cm2) and absolute (fruit/tree) fruit-load of the trees affect quality attri butes at harvest. Our experiment was establ ished in a plantation on medium-tight loamy soil in north-east of Hungary. Harvest date was determined w ith the joint observation of the calendar date, starch-index, flesh firmness, background colour and fruit weight. Three fruit-load levels were established based on local experience and on data of several years, I Ot/ha lower and higher besides the advised optimum yield in the same orchard with slender-spindle shaped 'Gala must' cultivar standing on M9 rootstock in 1m x 3,8 m spacing. In the establishment of the 15, 25 and 35t/ha fruit-load levels on 20-20 apple trees total number of fruits set was counted at each tree. After this number of apples due to be removed was defined using an objective index on the basis of trunk cross sections (fruit/TCScm2) (Lafer, 1999). The following attributes were measured: weight (g), flesh firmness (lb/cm2) total soluble solid content (Brix %) and total titrate-able acid content (g/J).From the data on sugar and acid content quality index (Pomona value) was determined (Thialult, 1970). We could ascertain, that in an orchard, of the same aged but in concern to trunk cross sections somewhat different trees besides the specific index (apple/TCS cm2 the absolute fruit load (fruit/tree) can also be an important data, that has considerable effect on the internal quality. Secondly we could observe, that higher level of fruit load before thinning (primary fruit set) negatively affects quality index of the apples irrespective of the specific fruit load level (fruit/cm2 TCS) set later. Results underlines necessity of the earliest chemical thinn ing.

    Intensive research has been implemented on different aspects of the bee pollination of pear in Hungary in the past decade, extending to the following topics: the effect of the opening sequence of the flowers within the inflorescence of pear cultivars on the effectiveness of bee pollination; the nectar production of flowers of pear cultivars; intensity of honeybee visitation and their foraging behaviour at the flowers of pear cultivars; flower constancy of honeybees to pear plantations; competition by weeds in bloom for bee pollination in flowering pear orchards; and some aspects to the bee pollination strategies of pear plantations (the effect of the limitation of bee pollination period on the set and the yield, possible compensation of frost damage of flowers by bee pollination in pear orchards, the optimal size of single cultivar block in pear plantations). The results of these studies are reviewed in this paper and some important aspects that need further studies are outlined.

     

  • The necessity and possibilities of irrigation in fruit growing under conditions of Hungary

    Climatic and soil conditions are highly suitable for most temperate fruit species and promise profitable yields with good quality. An accurate choice of the growing site is, however, decisive because of the wide range agro-climatic variation an soils within the country. One of the most important factors is the annual precipitation which does not exceed, in general, 700 mm. The aims of irrigation practices are, succinctly speaking, the improvement of quantity and security of yields and the guarantee of quality. The relative importance of those criteria changes according to the fruit species. In up to date apple, pear and cherry production, micro-irrigation systems are mainly considered. According to recent experiences, the micro-jet type of water distribution should be preferred to the dripping system. In cherries, the choice of the method is motivated by the need to prevent fruit cracking. Most of the peach and apricot plantations are located on the dry and moderately dry regions of the country. Because of the late freezes, the improvement of security is crucial. There the investment of irrigation systems should concentrate to the possibility of anti-freeze sprays. High water requirements of plums are met in Hungary by irrigation where the method should be decided at the plantation and adapted to the harvesting procedure which could be mechanised or (in high density plantations) picked by hand. Sour cherries are perhaps the less dependent on watering under Hungarian conditions. Yields in small fruits: currents, gooseberries, raspberries and strawberries could be increased by irrigation to 40-50 % and may improve quality too. In those cultures the system of moving flexible wing tubes are considered to be the best irrigation technique.

  • The effect of rootstock on the tree size of apricot cultivars

    The apricot is propagated on several kinds of rootstocks in Hungary. The main aspects of selecting rootstocks are as follows: adaptability to environmental circumstances, primarily soil conditions, ensuring the tree size that complies with the cultivation method, and compatibility with the grafted cultivar. At advanced, intensive orchards rootstocks ensuring smaller tree size are privileged. For the establishment of the appropriate cultivation system, it is important to be aware of the expected growing vigour and tree size of certain cultivar­rootstock combinations when the orchard is designed. In the course of our experiment the size of 15-year-old trees of 4 apricot cultivars were examined on several rootstocks at an orchard in Siófok. On the basis of the data measured for each cultivar-rootstock combination, it can be stated that trees on wild apricot (P. armeniaca) rootstocks are the largest in size. Trees on prune (P. domestica) rootstock have 10-15% smaller crown volume than the previous combination. Trees on bullace (P. insititia) rootstock have the smallest tree size and their crown volume is 30-50% smaller than that of the trees on P. armeniaca rootstock. Thus, the application of prune and bullace rootstocks is beneficial at intensive apricot orchards as the size of trees can be reduced by their usage. However, their compatibility with the cultivars and their adaptability to the ecological conditions of the production site have to be tested before applying them widely. In the course of our research incompatibility was not experienced for any of the cultivar-rootstock combinations examined. Nevertheless, the drought tolerance of the rootstocks examined showed significant differences. Trees on P. domestica or P. insititia rootstock requires more water than those on P. armeniaca rootstock, therefore, they have to be irrigated.

  • Certification programme for production of virus-free propagating material of grapevine and its results in Hungary

    In Hungary, detection of virus and virus-like diseases of grapevine began in 1960's at the Research Institute for Viticulture and Enology by János Lehoczky and his colleagues. At present, sixteen virus and virus-like diseases of Vitis vinifera are known to occur in Hungary.

    Regular virological screening of grapevine varieties started in 1972. The present system of screening (visual selection, indexing, ELISA) has been established using methods with continuous improvement according to recommendations of international organizations.

    In the first year symptomless grapevine plants are selected and marked during surveys carried out twice in the vegetation period: at about flowering and in the second half of September. At the first selection time plants are sampled for ELISA.

    In the spring of the second year, overwintered canes are checked by woody indexing on 8 indicator species in the field.

    In the third and fourth years the nursery is evaluated twice again. At the end, the marked grapevine plants, giving negative results on all indicators in every case, are considered virus-free.

    In autumn of the fourth year, the virus-free material is planted out under screenhouse and also in a special mother block (nuclear stock) for maintenance and propagation.

    Mother blocks of virus-free scion varieties have been established on 2 ha and those of rootstock varieties on 0.5 ha planted with the following number of varieties included in the national list: 71 European scion — and 12 rootstock varieties or variety candidates/clones. It is necessary to increase the area of Pre-base, Base and Certified stocks exclusively with tested virus-free (clean) material.

  • Prevalence of banana diseases and post-harvest losses in Kenya, and biocontrol potential of arbuscular mycorrhizal fungi against Fusarium wilt

    The demand for bananas (Musa spp.), which is ranked as the most important fruit crop in Kenya has been on the rise owing to both their dietary contribution and income generation. Meeting this demand has however been hampered by losses during production or post-harvest. This study assessed banana disease and post-harvest losses in leading producing counties in Kenya namely; Kisii, Nyamira and Embu. The study also assessed the efficacy of Rhizophagus irregularis in controlling Fusarium oxysporum f.sp. cubense. Structured questionnaires were used to collect data on post-harvest losses. Disease scoring tables, charts and photos were used to confirm observed symptoms and hence, disease occurrence and severity. AMF biocontrol efficacy experiment was conducted using tissue culture bananas grown in the greenhouse. The study revealed that most smallholder farmers were unaware of the causes or the prevalence of post-harvest losses. The findings also revealed a significant difference (p<0.05) in the severity of banana diseases across various cultivars from the three counties. The AMF treated bananas showed a significant difference (p<0.05) in plant height, total leaf area and chlorosis in comparison to other treatments. The study also revealed a reduction of Fusarium’s pathogenic effects including chlorosis, reduced leaf surface area and eventual necrosis.

  • Evaluation of cauliflower genotypes by different growing method

    Cauliflower is currently cultivated on 350-400 thousand hectares in the world and around 1500 ha in Hungary. Its cultivation requires considerable expertise as it is sensitive to environmental factors and adequate nutrient supply. The aim of our experiment was to compare three genotypes (Abeni, SV5777 AC and Telergy F1) by different growing method – under plastic tunnel and on open field. On open field the planting was on 19th of March, 2018, the row and plant distances were 45 and 35 cm. Under plastic tunnel the transplants were set out on the same day with the same genotypes as on open field, with 55x45 cm arrangement. The results have proved that cauliflower curds from plastic tunnel was two times bigger than on open field. The more protected environment had a positive effect not only on the mass of the curd, but also on the biomass production. Among the examined genotypes Abeni showed the highest yield (about 1 kg/plant) under plastic tunnel. The shape of the head is important for the market. According to our data, we measured the width and height of the curd. Open field conditions induced wider curd with longer stem and caused lower product quality and weaker correlation between the parameters than plastic tunnel.

  • Economic aspects of applying hail protection nets in apple plantations

    The up to date intense apple growing in Hungary is capable to produce yearly about 500-1000 thousand Ft/ha income, which means that the investment of 4 000–5 000 thousand Ft is returned by producing 10-20% net income. The economic balance may, however, be upset by the damage caused by hail, quantitative and qualitative, with an apparently increasing frequency experienced in each third or fourth year. Estimates prove that each hail causing 50% damage may reduces the income proportionately to the capital by 1.5–2.0 percent points, which means a serious threat for the economy of apple production. According to calculations, a plantation producing 30–40 t/ha yields would not be able to raise incomes compensating the investment of 7.0–10.0 million Ft/ha, let alone the frequencies of hail damages. Consequently, 50–60 t/ha yields are needed to become successful, and in planning of new plantations those high yields are aimed with hail nets. An additional difficulty is represented by a lack of financial resources to install hail protection nets.

  • The role of black locust (Robinia pseudoacacia L.) in establishment of short-rotation energy plantations in Hungary

    Establishment of short-rotation energy plantations for fuel production has been of international interest for many years. Energy plantation experiments in Hungary have been conducted for a longer time. In the country black locust ( Robinia ps eudoacacia L.) is one of the most important stand-forming tree species, covering approximately 23% of the forested land (410 000 ha) and providing about 19% of the annual timber output of the country. This fast growing species seems to be suitable for energy plantations as well. So, in Helvecia (Central­ Hungary, sand-soil region) two energy plantation s were established u sing common black locust and its cultivars improved in Hungary. The spacing variations of the common black locust were: l.5x0.3 m, I .5x0.5 m and l.5x 1.0 m. At the age of 5 the closest spacing ( 1.5x0.3m) produced the greatest annual increment in oven-dry weight (6.5 t ha·1 yr- 1). In the trial with black locust cultivars planted in spacing of 1.5xl.0m, at the age of 7 the highest annual increment in oven-dry mass was produced by the cultivar ' Ulloi' (9.7 t ha-1 yr- 1) followed by the common black locust (8.4 t ha-1 yr- 1) and the cultivar 'J tiszkiseri (1.6 t ha·1 yr- 1). The trials have verified that in temperate climate the increment in oven­ dry dendromass of black locust energy plantation s has ranged from 6 to 12 t ha·1 yr·1. On the basis of the trials' evaluation the quantity of dendromass mostly depends on site quality, species and cultivars, as well as on the initial spacing (plants per hectare).

  • Evaluation of producer organisations in the fruit and vegetable sector: Experiences from Hungary and Belgium

    This paper focuses on the Producer Organisations (POs) in the fruit and vegetable sector in Hungary and in Belgium. Findings are drawn from a survey among members and leaders of POs. The aim of the research is to evaluate the operation of the Hungarian POs and to compare the results with the Flemish ones based on the perception of the respondents. We mark out from the research results that Hungarian PO members and PO leaders' perception significantly different in the following constructs: satisfaction with the CMO, environmental friendly production and willingness to cooperate. The most important difference between Hungarian and Flemish respondents was about the willingness to cooperate, and about the innovations in trading activities.

  • Comparative evaluation of different valerian (Valeriana officinalis L.) lines

    Research project to establish a Hungarian valerian cultivar with acceptable production, biological and chemical properties of five promising Valeriana officinalis L. lines were studied. The populations were not homogeneous especially with regard to leaf shape and colour. Line 'IV/1' showed the strongest vigour, was characterised by the highest root-yield (381.79 g/plant), volatile-oil (0.60 m1/100 g) and valtrat content (1.15%). However, the highest valeric-acid content (0.20%) was measured in another line, 'I/5'. According to our results, the above-mentioned lines (1/5', 'IV/1') could be the basic material of breeding work in the future.

  • Fruit drying traditions in Hungary

    Since the early eras of human history, the gathered products (roots, shoots, crops, fruits etc.), the environmental conditions of the preservation of the animals caught and the fishes; and accidental observations have been born new methods. Under cold and moderate climates, the effect of permanent frost, the use of ice as a means of curing as in dry, desert areas is the drying or exsiccation and the dehydration of salt. For convenience reasons, some of these methods have been forgotten, but the resurfacing of different fruits seems to resume. The short review gives an overview of the methods of drying used in the Carpathian Basin, especially among the Hungarian ethnic groups, which by the Hungarian ethnology thoroughly explored. The author attaches outstanding importance to the fruit-drying industry, because dried-ups at industrial scale are not equivalent to traditional low-fat lime scales. Excellent drying products are much better in terms of eating habits, with modern methods and small-scale production relatively easy to produce.

  • Challenges of the vegetable and fruit market

    The situation of the horticulture sectors have been in the limelight of the professional and economic decision makers all over Europe. This article analyses the situation of the sector from economic point of view and reveals the main reasons of its low income and high risk. It concludes that one of the biggest problems is the trading uncertainty in the vegetable and fruit sector that is caused by the asymmetric market structure of the post-regime era. Since sizes of vegetable and fruit plantations do not allow producers to supply individually the extremely concentrated food retail trade or the processing trade they must find alternative ways for trading their products. The study introduces two alternative solutions. One alternative is foundation of modern multi-level producer co-operatives with the help of EU subsidies. Secondary and tertiary co-operatives may achieve better market position and lower trading price risk with managing production, professional marketing, and improving the information flow. The other alternative is searching for new trading channels such as local provision, restructuring of local markets, and direct trade (home delivery and pick-it-yourself programmes). The shorter producer-consumer distance means better quality at lower price for customers and income in the case of smaller amount of products for producers. It is concluded that both solutions together or separately may help individual producers in their trading problems. However, whichever way they choose, producers must co-operate.

  • Epidemiological survey of Xanthomonas arboricola pv. juglandis and Gnomonia leptostyla on natural population of walnut (Juglans regia) in eastern Transylvania

    In Romania, walnut Juglans regia L. is an important fruit crop, although most of the fruit production comes from non-grafted walnut trees, which are natural hybrids. Breeding programs have been launched during last 30 years to develop new cultivars with uniform fruit quality. In addition, foreign cultivars have been introduced and tested to establish a valuable walnut genepool. To improve the present assortment of generative rootstocks in walnut and to examine the infestation level, a long term survey was carried out in Eastern Transylvania. The main physical characteristics of fruits and its variation to the infestation level were considered. The cumulative distribution of Xanthomonas arboricola pv. juglandis and Gnomonia leptostyla were relatively low and the maximum value was around 15%. The highest infestation of husk with X. arboricola pv. juglandis was observed for roundish forms and differences were statistically significant comparing with other phenotypes. Infestation with G. leptostyla was similar for roundish, elliptic and thwarting egg-shaped phenotypes, while the husk infestation for egg-shaped phenotypes was not observed. The walnut population studied in our experiment can be considered as a genetically valuable population. More than 20% of them have upper class quality fruits with at least or more than 50% of nutmeat. Do to the large scale climate variation in Eastern Transylvania and the high humidity favourable for pathogen infestations, these population can be considered resistant and well adapted to abiotic and biotic factors.

    Powdery mildew, Phylloxera and downy mildew epidemics devastated large areas of vineyards in Hungary in the 1800s. V. 12375 E.2) of Seyve-Villard 12375, Franco-American hybrid selected in Eger was used by Hungarian breeders. Several valuable hybrid families have originated from crosses of this variety hybrid.

    In the Research Institute for Viticulture and Enology at Kecskemét, two valuable table grape hybrids were registered under the names of R.65=Esther and R.78=Fanny coming from 2 hybrid families of the parent S. V. 12375 E.2. Both varieties may be cultivated "environmentally".

  • Effect of certain bentonite products on the temporal variation of elemental content in white wine

    The 'terroir' character of wines can be shaped with certain technological elements such as bentonite fining. Bentonite is an agent used for the removal of thermolabile proteins in wines. However, during fining, the quantity of certain wine components can change, including the elemental composition of the wine. According to the recommendations of bentonite suppliers, wines should be racked off the bentonite fining sediment within 2-3 weeks. However, in winemaking practice, wines can remain on bentonite fining sediment for up to 1-4 months. One reason for this is that racking wines off the sediment has a negative impact on wine quality. Thus, it is a question of how much the later or earlier racking time can alter the elemental content of the wine. Our study aimed to examine the elemental content of wines treated with three different bentonite products sampled from over the bentonite fining sediment at various time points. Our investigation was conducted with the 2019 vintage white wine of the University of Debrecen. Fining was performed with three bentonite products: Nucleobent, BW200, and Granubent Poretec. The sampling schedule following fining was: 0 days - unfined control, 7th, 14th, 27th, 56th, and 85th days. The macro-, meso-, and microelement contents (P, K, Ca, Mg, S, Al, Na, B, Cr, Mn, Fe, Co, Ni, Cu, Zn, Sr, Cd, Ba, and Pb) of the wines were determined using ICP OES and ICP MS devices. Our results showed significant changes in the Al, Na, Cr, Fe, Co, Ni, Sr, Ba, Cu, and Pb contents of the wines depending on the sampling time. It is noteworthy that all three bentonite products increased the Al and Pb contents of the wines. For Fe, dynamic increases were observed over time with the BW200 product, reaching the threshold value of susceptibility to brakeage. However, from a winemaking technology perspective, it was favorable for the Cu content of the wines to decrease with both earlier and later racking times, for all bentonite products examined. Based on the elemental analyzes of the white wines studied, it can be concluded that racking of wines should be timed according to the recommendations of suppliers.

  • Concentration of ‘Oblachinska’ sour cherry juice using osmotic distillation

    Sour cherry is one of the most famous and characteristic Hungarian fruit what is also commonly used in food production as a colour additive. The sour cherry cultivar, ‘Oblachinska’ was shown to be a rich source of antioxidant compounds, including mainly anthocyanins. Valuable compounds in fruit juice – vitamins, polyphyenols etc. –are heat-sensitive molecules, which should be taken into account during the process of concentration to prevent degradation. Osmotic distillation seems a suitable option to product high quality sour cherry juice because this process does not require high temperature or pressure. Raw juice with approximately 15°Brix was used for the experiment and tried to concentrate up to 60° Brix where the water activity low enough to inhibit the microbiological deterioration. Before and after the process, TPC (total phenolic compounds) and FRAP (ferric reducing antioxidant power) was measured using spectrophotometric methods to determine the effect of the osmotic distillation. Our results point out that osmotic distillation is a promising method to concentrate sour cherry juice and prevent the loss of valuable compounds.

    Ecological or biological growing techniques are generally recognised as actual trends in agricultural production. The objective of our experiments is a comparison of apple fruits grown alternatively by integrated versus ecological technology. In a collection of varieties, the possibility of the experiment was feasible. At the same time, a comparison of the popularity of existing varieties was also actual. The organoleptic consumer’s tests rated the varieties, and the comparison with instrumentally raised “objective” data could be compared with the subjective ratings, which did not coincide with each other. This phenomenon was revealed in the rating of acid-sugar harmony, where the internationally used quality index of Thiault produced a different range of the samples then the consumer’s test. The same contradiction was observed between ratings of firmness and the data raised by penetrometer.
