Possible explanations for the transformation of the Northern Great Plain Region's labour market

The changes in society's status, the rate of increase and the level of development can be tracked for example in the diverse variation of labour market. In my study I would like to demonstrate the typical processes of labour market based on the time scale between 2000-2007, and I also want to reveal the root causes of the change in unemployment rate. The source of data is a regular, representative labour-survey by the Hungarian Central
Statistical Office based on interviewing people, as well as registration on place-hunters by the Employment and Social Office together with the summary of governmental subsidy. I targeted the age-groups between 15-74 years in my analysis, but the results are not modified by the over 65 years old population because of their small economical importance. I define the status of labour market by markers among others like economical activity, employment rate, unemployment rate, and I also consider the change in the amount of registered place-hunters in the period examined. My aim is to determine the responsible coefficients of the change in unemployment rate. -
Comparative analysis of maize hybrides grown for bioethanol production purposes
11-14Views:108The objective of this study was to evaluate the effects of crop year on the main components of maize grown for bio-ethanol production yield, starch content and starch yield per hectare of maize hybrids were investigated in a droughty (2007) and in a favourable years with optimal weather conditions (2008, 2009). We measured very low starch yield (1.5 t ha-1) in the year with unfavourable precipitation supply (2007) together with higher starch content (73%). In the case of good precipitation supply we measured a much higher starch yield per hectare (7.7 t ha-1) with lower content (72.4%). In 2009 the starch content (74.5%) exceed the results of the two previous years, but on the other hand the average of starch yield was (4.9 t ha-1) which falls between the other two years values.

Spectral analysis of stress symptoms caused by apple powdery mildew (Podosphaera leucotricha
83-88Views:243An orchard can be examined on the basis of spectral data, using methods with which the reflected radiation can be divided into a large number of (several hundreds) small spectral channel (some nm). Calculated on the basis of such hyperspectral data from different index numbers the water supply of foliage conditions can be well characterized.
The research site is an intensive apple orchard, which located in University of Debrecen, Agricultural Sciences Centre, Farm and Regional Research Institute at Pallag. During my experiments the preliminary evaluation of spectral, non-invasive measurement method are carried out for detecting stress symptoms caused by Podosphaera leucotricha.
Based on the results narrow band greenness indices (NDVI705, mNDVI705, mSR705 and REP) can be used for determination of diseased canopy and for the detection of stress symptoms of Podosphaera leucotricha,. These statements can be utilized in precision plant protection systems, since it can be a basis for such integrated active sensors with LED or laser light source, measuring reflectance at the certain spectral range, which can facilitate real time status assessment of orchards and can control precision fungicide utilization.

Growth and yield patterns of black locust (Robinia pseudoacacia L.) sample trees affected by site conditions: case studies
125-128Views:90The trees removed from the long-term experiment plots are available for the measurements as lying trees. Through the determination of the volume in sections along the stem, the stem form, the stem volume and other factors can be specified. The comparison of the stems of individual trees of first and third yield classes of black locust (Robinia pseudoacacia L.) stands shows that site conditions have a main effect on the yield (mean tree volume). The difference can be as high as 53% at the age of 30 depending on the sites. To determine the growth patterns based on tree volume is rather a new approach in the light of the relevant literature. The obtained results also highlight the importance of choosing the appropriate tree species for a given site.

Agrobotanical Analysis of Bean (Phaseolus vulgaris L.) Equilibrium Populations Suitable for Regional Land Cultivation
148-152Views:73The local bean landraces maintained at small-scale farming level should have importance as complementary source for completion of plant genetic resources with potential role in local land cultivation. Also, they should be used as primary material in breeding activities targeted on improving the foodstuffs quality. In the research were used especially landraces collected in Nyírség, Körös-mellék and Tápióvidék region. Our main objective was to reveal the relationship between the adaptation ability of landraces and the distance from their original collecting place. For that reason the location of the experimental plots was choosen by taking into account that they must be checked in each region, on it’s original region and similarly in other two different regions. On the base of the recorded agro-morphological traits we can get answers on the shaping of adaptation ability, and in the same time by a general chemical characterisation we should know more about the variation of qualitative parameters with a potential economical role. In the designing of experiment a main importance had the conditions where the research is taking place. All activities related to the maintenance of experiment were done in frame of a low input agricultural system to emphasize as much as possible the natural endowments of regeneration places.

Evaluation of Origin and Conformation of Excellent Cows with Long Productive Lives
13-17Views:111In the last few decades a new intensive milking stock has developed as a result of breed-converter crossing in Hungary. Beside this reproduction biology of the population was affected adversely by the keeping-, and feeding technology. Serviceable lifetime has shortened and service period has lenghtened. Whereas profitable milk production needs cows with longer productive life, larger life-time production. In our work we analysed the productivity-, and reputation parameters of the 200 highest lifetime-productivity cows of Hungary. We found that inheritance has not got important role in the serviceable lifetime. Adaptability and good constitution of Holstein-friesian is proved by the fact that cows with large life-time production are reared in large plants, some of them in large stocks, industrial environment. We found during the analysis of reputation parameters that these prominent cows mostly have deeper body, higher dairy form, higher rear udder, smaller foot angle. We found some weak connection between the milk production and the reputation. Loose correlations between useful material content and some linear traits were found.

Impact of ammonium nitrate and Microbion UNC bacterial fertilizer on dry matter accumulation of ryegrass (Lolium perenne L.)
35-39Views:103Pot experiment was performed to investigate the effects of increasing NH4NO3 doses with or without Microbion UNC bacterial fertilizer
application on dry matter production of ryegrass (Lolium perenne L.). Experiment was set up on calcareous chernozem soil of Debrecen-Látókép and on humus sandy soil of Őrbottyán. The bi-factorial trials were arranged in a randomized complete block design with four replications. Grass was cut three times. Dry matter production was determined and the sum of biomass of cuts was calculated as cumulated dry weights. Analysis of variance was carried out on the data in order to provide a statistical comparison between the treatment means. The least significant difference (LSD5%) test was used to detect differences between means. On the basis of our results it can be concluded, that the dry weights of ryegrass cultivated on chernozem soil were higher than on sandy soil. With increasing nitrogen supply the dry matter production of grass significantly increased in both types of soils. In case of sandy soil the increasing effect was more expressed, but dry weights of this soil never reached the appropriate values of chernozem soil. Application of Microbion UNC had positive effect on dry matter production of ryegrass grown on both two types of soils but the effect was more expressed on chernozem soil. Finally it can be concluded that the increasing effect of NH4NO3 on biomass weights was more expressed in both types of soils, the biofertilizer application also increased the dry weights of plant in a small degree. -
Single nucleotide polymorphism analysis in meat-production related genes in broiler chickens
79-82Views:186In broiler chickens, the intensive selection for growth rate, feed efficiency, body composition (breast muscle weight) traits in the last decades was successful. To improve economically important characteristics, it is possible to use molecular markers associated with meat production traits. The aim of this study was to examine genotype polymorphisms in ROSS 308 broilers for thyroid hormone responsive Spot14α, insulinlike growth factor 1 (IGF1), IGF-binding protein 2 (IGFBP2), somatostatin (SST) and prolactin (PRL) genes. A further goal of this investigation was to study the relationship between the polymorphisms and phenotypic characteristics.
In the investigated broiler population, the frequency for CC homozygous genotype was 0.77 in Spot14α (AY568628), AA homozygous genotype was 0.80 in IGF1 (M74176), GG homozygous genotype was 0.85 in IGFBP2 (U15086), DD homozygous genotype was 0.60 in PRL (FJ663023 or FJ434669). Only the AA homozygous genotype was found in SST (X60191). Chickens with AC genotype in Spot14α, and with GG genotype in IGFBP2 had higher body weight (BW) and carcass weight (CW), compared to CC and GT genotypes. However, the differences were not significant (P>0.05). There was significant association (P<0.05) between PRL genotypes and body and carcass weight, where chicken with homozygous DD surpassed individuals with homozygous II genotypes.

The effect of foreign stallions on the Hungarian Furioso-North Star breed
67-70Views:216The most common aim of animal conservation programs is to maintain genetic diversity. Furioso-North Star is an indigenous Hungarian horse breed originated from Mezőhegyes Stud. The breed is based on two founder stallions, Furioso Senior and North Star Senior. The aim of this research study was to analyze the effect of the foreign breeding stallions to the genetic structure of Hungarian Furioso-North Star breed. The genetic structure of the breed was studied from pedigree data what was received from the Furioso-North Star Horse Breeding Association. Foals born between 2015–2018 were chosen as reference population. Every breeding stallion was marked by nationality (Austrian, Czech, German, Hungarian, Romanian or Slovak) according to their birth place. The population was described with genetic variability, what was calculated using Endog software. The Furioso-North Star breed is popular in Central Europe and nearby countries. The stallion imports and the stallion transfers were necessary and useful as they made changes in the composition of the genetic variability. The new genes and the new lines have refreshed the genetic structure. There were several breeds, like the Nonius, Shagya Arabian and English Thoroughbred, whose had an impact on the genetic structure of the Furioso-North Star breed.

Effect of the Cropping Year on the Quality of Winter Wheat
89-95Views:187We examined the formation of quality parameters of winter wheat in a small plot variety comparison experiment from four cropping years. Our aim was to estimate the year effect on several quality parameters of winter wheat.
We established in relation to the distribution of precipitation of the examined years that the years 1997 and 2000 were behind the thirty year average typical precipitation of this site both in the case of the whole vegetation period and the spring and summer. It was unfavourable for qualitative wheat production. 1998 and 1999 were good for cropping considering the amount and distribution of rainfall.
Examining the formation of quality parameters we found that the baking value was maximum in 1997, with a moderate amount of normal distributed rainfall for the examined varieties. The mid-late maturating varieties showed better baking value in drought years than in wet years. In the case of the wet gluten content, we established higher values after a rainier spring-summer period. There is a conspicuous difference between the falling number of extensive and intensive varieties and the year had significant effect on the formation of values. We established with correlation analysis that both the precipitation of vegetation period and the maturing rainfall had considerable effect on the value of falling number. Examining the effect of fertilization on the formation of wet gluten content as a quadratic equation, we found that precipitation may both increase and maximalize the value of this quality parameter. -

Development of the reproductive tract of immature gilts
165-166Views:74Mechanisms of regulation of litter size in pigs are complex and depend on many factors, including genetic regulation and also physiological and anatomical development of the reproductive tract in gilts. Improvement of growth rate in present breed pigs raises the question as to whether, with the development of the reproductive tract, sexual maturity would also be attained.
The aim of the study was to assess the morphometric traits of reproductive tracts taken from gilts slaughtered at 100 kg body weight, i. e., just when they may become actively sexual mature.
This study was concluded on 80 prepubertal gilts of the Polish Landrace (PL) breed tested at the Pig Program Testing Station. The animals were kept in individual pens with control feeding and standard management. They were slaughtered after attaining 100 kg body weight. Immediately after slaughter, the reproductive tract was removed and carefully assessed. The morphometric estimation of the reproductive tract involved the
measurement of uterus weight with ligament, vagina-cervix length, uterine horns and oviducts length, ovaries weight, height and width. Uterus volume capacity was also determined, based on volumetric method of Kwaśnicki’s (1951) with own modification.
All pigs were divided into three groups in respect to age at slaughter: A – below 160 days (n=38), B – from 160 to 180 days (n=28) and C – above 180 days of age (n=14). The results were elaborated statistically computing the arithmetic means (x) for every traits and standard deviations (s). One-way analysis of variance ANOVA was performed. The significance of differences between age groups was estimated using Duncan’s test.
Calculations were performed with STATISTICA 8PL Software.
Obtained results are presented in the tables below. The most pronounced differences in the development of the reproductive tract are dependent on the age of gilts concerning only the uterus weight (P≤0.01) and uterus vagina-cervix length (P≤0.05). Gilts at age 160-180 days attained the full stage of reproductive tract development. Differences between the compared age groups of gilts dealing with the other morphometric traits
and ovary characteristics were statistically not significant. -
Toxic elemental content of Hungarian blaufränkisch wines
87-90Views:201Toxic elemental contents are one of the food safety risks in wines. Therefore International Organization of Vine and Wine (O.I.V.) defined the limit of some elements in it. Thirty Hungarian blaufränkisch wines were analysed by ICP-MS in order to determine the concentration of toxic elements. All wines are passed by the O.I.V limits to toxic element content (Cu, Zn, Cd, Pb) according to analysis. Copper is the only outlier in some samples, but they also did not overstep the limit. In the case of zinc the maximum is approximately fourth, in case of cadmium and lead the highest concentration is less than tenth and sixth of the O.I.V. limit, respectively.

Phenotypic characterization of Satu Mare Tumbler pigeon breed
31-34Views:26The aim of this study was to determine morphological characteristics of the tumbler pigeon breed of Satu Mare. This pigeon breed was first described in 1932 and was very close to extinction at the end of the 20th century. Data collection was carried out in two stocks having birds from three breeders (Bertalan Juhos, Cosmin Lupu and Werner Hartmann) in Satu Mare. In addition to the breeder, sex and color variety were also evaluated. The performed conformation measurements were statistically compared using multifactor analysis of variance. Lupu’s birds were longer compared to other breeder’s stock, while beak and wing was longer in Juhos’s stock. Thoracic perimeter was smaller whereas queue length was the longer for Juhos’s birds. Cocks’ values were significantly exceeding values of hens, except beak length. Recessive red pigeons had longer body than blue birds. Beak length of recessive yellow pigeons was significantly longer that it was computed for black birds. Wingspan was longer for dun birds than it was estimated for recessive yellow pigeons. These differences show that there is reasonable genetic variability in the breed which is desired in small populations. Due to the variability within the breed, stabilising selection might be favorable, with a special account for avoiding inbreeding.

Búzaminták fungicid szermaradvány ellenőrzése és gombafertőzöttségének kimutatása
45-51Views:90To protect crops with chemicals against different microorganisms are very important because residues of toxins could pollute infected grains. This could have the meaning of serious danger to the human and animal health. Similarly important is knowledge of details about presence or absence of any practically applied protective compounds. Experimental studies were performed on fungicide treated cereals of the Cereal Research Non-Profit Company, Szeged. Chromatographic methods were used (GC and some GC-MS) to find low level fungicide residues, microwave-assisted isolation of ergosterol was followed by HPLC to detect possible fungal infections and a more detailed microbiological analysis completed the work. Concerning the dry year 2000, no fungicides were found in the samples (by November), the ergosterol level was found to be less than 8 ppm, meaning good quality, coupled with an extremely low level of fungal infections. This was confirmed by direct microbiological testing. In comparison with the microbiological results from 1999, a negative difference can be recognized, most probably due to the rainy weather throughout the year.

Evaluation of Soil Degradation Based on High Resolution Remote Sensing Data
145-148Views:110Soil salinity is the main problem of soil degradation in the Grate Plain with cultivated area of 20% affected. Its influence is accelerated on the water managed and irrigated lands. Remote sensing can significantly contribute to detecting temporal changes of salt-related surface features. We have chosen a farm where intensive crop cultivation takes place as a test site as soil degradation can be intensive as a result of land use and irrigation. In order to evaluate soil salt content and biomass analysis, we gathered detailed data from an 100x250 m area. We analyzed the salinity property of the samples. In our research we used a TETRACAM ADC multispectral camera to take high resolution images (0,2-0,5 m) of low altitude (300-500 m). A Normalized Vegetation Index was computed from near infrared (750-950 nm) and red (620-750 nm) bands. This data was compared with the samples of investigated area. Analyzing the images, we evaluated image reliability, and the connection between the bands and the soil properties (pH, salt content). A strong correlation observed between NDVI and soil salinity (EC) makes the multispectral images suitable for construction of salinity map. A further strong correlation was determined between NDVI and yield.

Horn colour varieties of the Hungarian Grey cattle
83-87Views:128The Hungarian Grey Cattle breed is a ‘success-story’ of the national genetic conservation work. Traits of the breed have been subjects of several research projects, although many relationships remained unclear. Our present research results were meant to call attention to a less emphasized trait of the breed: the different horn colour varieties. Research work was carried out in the Hungarian Grey stock of the Hortobágy Non-profit Company for Nature Conservation and Gene Preservation. Ratio of the three main horn colour varieties (white, ‘cardy’, green) were determined in the observed female, male and steer stocks. Our results showed no significant differences (P<0,05) in the distribution of the horn colour varieties of the female and bull stocks, and of the female and steer stocks. We found that on the basis of the ratio of white colour, four sub-categories can be distinguished within the ‘cardy’ colour variety. Results of the statistical analysis (P<0,05) confirmed that the colour of the horn and the ratio of the black part on the horn tip are two different traits.

The possibility of use of the 0,01 M CaCl2 and Baker- Amacher extractants for the determination of plantavailable potassium
7-15Views:89The Hungarian fertilizing recommendation systems use AL soil test for the evaluation of potassium supply. The 0.01 M CaCl2 is a definitely milder extractant, it extracts the easily soluble and exchangeable potassium amount. Its European introduction was already taken into consideration in 1994. The research project on this topic is started in several european countries, also in Hungary at the Department of Agricultural Chemisty of Agricultural University of Debrecen. Another advantage this multielement method is that the different element-ratios can also be calculated.
The Baker-Amacher extractant’s principle is that it contains a known amount of K, P, Mg in the CaCl2 solution. During the soil extraction adsorption and desorption process take place, so the adsorption or desorption can be calculated from the original and the final concentrations.
In this paper we introduce the results of comparing analysis of the samples (n=630) from Soil Information and Monitoring System. Our aim was to measure the use of new extractants beside conventional extractant (AL) for the evaluation of K-supply would be reasonable.
It can be stated that there is a medium close relationship (r=0.75) between AL-K and 0.01 M CaCl2-K. My calculations confirmed the results of former examinations, and proved that the two extractants don’t extract and change the same rate of K-fractions. We found that regression between 0.01 M CaCl2 and AL depend on texture classes, pH classes, amount of lime, and organic matter content of soils.
Comparing the relations between AL and Baker-Amacher we find relatively loose correlation (r=0.45). We stated that there are K-fixing soils among soils considered to be well supplied with potassium by AL. This might be caused by the high amount of mineral clay and the quality of mineral clay. We stated that the dK averages show that the Hungarian nutrient-supply categories characterize generally well K-supplement of soil.
It can be stated that it would be necessary to use new extractants to specify evaluation of plant available K. We found that the 0.01 M CaCl2 and Baker-Amacher extractants could complete usefully the AL procedure and could help effective potassium fertilization. -
Economic questions of precision maize production on chernozem soil

The sustainable development in crop production also calls for the harmony of satisfying human needs and providing the protection of environmental and natural resources; therefore, the maximum consideratio of production site endowments, the common implementation of production needs and environmental protection aims, the minimum load on the environment and economicalness. Precision farmin encompasses the farming method which is adjusted to the given production site, the changing technology in a given plot, the integrated crop protection, cutting edge technologies, remote sensing, GIS, geostatistics, the change
of the mechanisation of crop production, and the application of information technology novelties in crop production. Modern technology increases efficiency and reduces costs. The efficiency of crop production increases by reducing losses and the farmer has access to a better decision support information technology system. In addition, we consider it necessary to examine the two currently most important economic issues: “is it worth it?” and “how much does it cost?”. During the analysis of agricultural technologies, we used the precision crop production experiment database of KITE Zrt. and the Institute for Land Utilisation, Regional Development and Technology of the Centre for Agricultural and Applied Economic Sciences of the University of Debrecen.
During our analytical work, we examined three technological alternatives on two soil types (chernozem and meadow). The first technology is the currently used autumn ploughing cultivation. We extended our analyses to the economic evaluation of satellite navigationassisted ploughing and strip till systems which prefer moisture saving. On chernozem soil, of the satellite-based technological alternatives, the autumn ploughing cultivation provided higher income than strip till. In years with average precipitation supply, we recommend the precision autumn ploughing technological alternative on chernozem soils in the future. On meadow soil, the strip till cultivation technology has more favourable economical results than the autumn ploughing. On soils with high plasticity – considering the high time and energy demand of cultivation and the short amoung of time available for cultivation – we recommend to use strip till technologies. -
The effect of plant density on the yield of sweet potato
125-128Views:479A field study was conducted in South-East Hungary during the main cropping season of 2016, 2017 and 2018, with the objective of determining the effect of plant spacing on the productivity of sweet potato. Production technology experiments of four repetitions were set up in a randomized block design on sandy soil. The performed treatments consisted of four variations of plant spacing (row distance x plant-to-plant distance): 80 cm x 20 cm, 80 cm x 30 cm, 100 cm x 20 cm, 100 cm x 30 cm. The plant material was the Hungarian registered sweet potato variety ‘Ásotthalmi-12’. Analysis of variance revealed that planting density significantly affected the average yield of storage roots. The highest yield per plant was achieved with the 100 cm x 30 cm (2016, 2017), as well as with the 80 cm x 30 cm (2018) setups. On hectare level, our results showed that the highest plant density of 62,500 plants ha-1 (80 cm x 20 cm setup) could give the highest yield. Comparing the highest tons ha-1 results to those achieved with the plant spacing setups resulting in the highest yield per plant, the differences can be even 13 or 14 tons at hectare level. This finding underlines the importance of choosing the proper planting density towards the higher end.

The role of leaf area and photosynthesis in optimising the sowing date of maize
5-10Views:154Our sowing date experiment took place in the Demonstration Garden of Institution of Plant Sciences, Agricultural Center of University of Debrecen, in 2012–2014. The thesis contains data of test year 2014. Our purpose, besides several other examinations, was to observe how sowing date influences leaf area index and activity of photosynthesis of maize hybrids, and how those factors affect fruiting. In the experiment we monitored the change of the leaf area index and the photosynthesis of hybrids with four different growing seasons.
Based on the results, it can be concluded that most of the examined hybrids reached their smallest leaf area with the third sowing date and with the highest yield results. Hybrid Da Sonka had the largest leaf area (4.10 m2 m-2), and hybrid DKC 4590 produced the highest yield (13.16 t ha-1)
with the third sowing date.
During testing the photosynthetic capacity, the extremely high performance of the youngest plants with the third sowing date is outstanding, which can be explained by the different ripening periods. Examination of the correlation between the photosynthetic capacity and the yield, by linear regression analysis, also proves that photosynthesis has a determinative role in fruiting.
The results obtained confirm that not only the environmental and agricultural factors in the growing season have effect on the yield, but also other factors like the leaf area index and the photosynthesis are determinative parameters, and all those factors together, modifying effects of each other, develop average yields.

Evaluation of decreasing moisture content of different maize genotypes
147-151Views:305An experiment was conducted to evaluate the decrease in grain moisture content in three maize hybrids in Debrecen in 2017. Armagnac, Sushi and Loupiac were the examined hybrids in this study. The culture medium and temperature conditions were applied uniformly for all three hybrids. According to the results obtained from the ratio of moisture content of seeds per day, the Armagnac variety in the intensive drying down phase loses more time and moisture content, so it can be concluded that the produced dry matter is more than in the case of other varieties. Armagnac requires more time to achieve yield, while the Sushi and Loupiac hybrids produce less harvest. Regarding the slope of the regression line, the rate of loss of moisture in the grain has been negatively correlated with the amount of “b” in the three examined hybrids. In regression analysis, the coefficient of explanation showed that the effect of day in the Armagnac was 97% in the Loupiac, 95% and in the Sushi 90% of the total dynamic value of moisture motion.

Tourism-Based Analysis and Development Potentials in Hortobágy
272-278Views:110Tourism – especially ecotourism and health-tourism – could be one of the sectors which could make Hungary economically competitive after joining the European Union, by ensuring thousands of people employment possibilities, if they take advantage of local and regional opportunities. For this reason, it would be necessary to analyse the two types of tourism mentioned above, as well as to collect data and especially impressions concerning how these potentially lucrative sectors could best be structured and managed, as well as to predict their probable effects.
The most important objectives of my study are to introduce the values of Hortobágy, to analyse the present status of tourism in the Hortobágy National Park, and to make suggestions for increasing the numbers of tourists, by making Hortobágy more attractive.
As a resident of Debrecen, I visited the region several times and took part in programs at Hortobágy as well. I was always curious how the trip to the Hortobágy could be made more enjoyable.
My research was carried out with the help of questionnaires, which were made in three languages – Hungarian, English and German –. In August 2002, I approached foreign and Hungarian tourists in Hortobágy village, and asked them to fill them in. To evaluate the questionnaires, I used Microsoft Excel ’00. During the evaluation, I calculated distribution, arithmetic mean and deviation. Moreover, I obtained the level of significance.
My assumption that tourists visiting Hortobágy are “one-day” tourists, who are visiting the Hungarian Pusta because of an actual program, was supported by my research. I must emphasise that mostly passive tourism opportunities are offered in Hortobágy, where tourist are only external observers of the programs.
In order to change this situation, I suggested that visitors to Hortobágy can be encouraged to stay longer by offering them various programs, in which tourists are actively involved. My program recommendations include a craftsman’s house or tent, where the visitors can try to make typical folk instruments. Moreover, I made suggestions as to how to teach tourists to make Hungarian dishes. I also outlined several one-day program possibilities. Among the opportunities, I also mentioned the need to provide tourists possibilities to spend several days in a conventional Pusta life-style. To realise these things adequate infrastructure and information system should be developed. -
Application of the SDS-PAGE method for the characterisation of winter wheat flour quality
112-118Views:140The principle, development and importance of the SDS-PAGE method are presented in this article. The SDS-PAGE method has become one of the basic methods of molecular biological research, because it is widely applicable and its sensitivity is excellent in the separation of wheat storage proteins.
We have shown the application of this method with a concrete example. It was also tested whether, it was possible to obtain a better baking quality product from a large amount of poor quality less valuable wheat by fractioning the flour according to particle sizes after grinding. We studied the rheological properties of flours with different particle size fractions from the original flour. The baking quality of the original flour was B2. The 125-90 and 90-63 μm fractions have significantly better baking quality (B1) than the original flour. The protein contents of these flour fractions were also significantly higher than the protein content of the original flour. We had a question: what has influenced the baking quality: the protein content or other factors? We searched for an explanation on these results in the protein composition of the flour samples. We studied the distribution of glutenin-fractions by SDS-PAGE method and evaluated them. We found with correlation analysis that the amount of LMW-Glutenin D-group (52-60 kDa) is in a strong, negative correlation to the baking quality (r = – 0.855*). Therefore, the baking quality of flour samples was influenced by this glutenin fraction. -
Following-up organic pollutants in the course of producing foods
244-248Views:174We analysed the raw materials in various food products, including additives, carrier solvents and end product for several selected organic pollutants. We analysed these food products for the type of chlorinated hydrocarbon pesticides, polychlorinated biphenyls and other currently used pesticides.
We analysed three product categories: bakery products, canned mushroom and meat products. The analysis of the bakery products and of the canned mushroom did not conclude in positive findings, which means that these products contained the agents given during the production of the product and the environmental pollutants in undetectable low concentration.
However, the results for meat and fish products indicate that polychlorinated compounds are persistent and are of a lipophyl character, as some of these components have been detected in these food products, the concentration of the PCBs were detected in the range of 9.8-24 μg/kg.
