Lavandula species are worldwide grown essential oil producing medicinal plants with considerable economic value. Beside volatile oil, lavender also contains different phenolic compounds which have been less widely studied till now. Cultivation of lavender has become widespread in Hungary in the recent years, however, growers have limit...ed knowledge on the productivity of cultivars available. In our research we were aimed to studying the antioxidant capacity and total polyphenol content of samples collected in two growing areas (Dörgicse and Szomód) from flowers of two L. angustifolia (‘Hidcote’, ‘Munstead’) and two L. × intermedia (‘Grosso’, Grappenhall’) varieties, during the full blooming period of 2017. Antioxidant capacity of the samples was determined by FRAP assay (Benzie and Strain, 1996), while total polyphenol content (TPC) was measured by a modified method of Singleton and Rossi (1965). According to our results, varieties of L. × intermedia showed higher values of antioxidant capacity and of total polyphenol content, than those of L. angustifolia cultivars. Among them, both the antioxidant capacity (179.6 mg AAE/g DW) and total polyphenol content values (152.4 mg GAE/g DW) of ’Grosso’ from Dörgicse were the highest. Concerning FRAP values of all the cultivars investigated, larger variability were found in Dörgicse, than in Szomód. Regarding the effect of growing area, each cultivar represented similar FRAP values in Dörgicse and in Szomód, except for ’Grosso’. However, in the case of TPC values, higher variability was observed between the growing areas, especially in the case of ’Grosso’. In the future our studies on lavender polyphenols will be completed with qualitative evaluation of the values obtained by HPLC analysis.
It is well known that beetroot quality is determined mainly by the red pigment content (betacyanins) and its uniformity of the root. The effect of the most important red pigment components (betanin). the total polyphenol content and antioxidants were studied in 20 beet root varieties. Antioxidants were expressed in FRAP (ferric reducing ability... of plasma) values in pM/I.
Our results indicated a close correlation (r = 0.7799 and r = 0.7435. respectively) between betanin and total polyphenol contents of the root as well as between FRAP values.
Our measurements showed more than threefold differences in total antioxidant activity among varieties. the lowest value being 196.4 13M/1 and highest 702.57 pM/I. The corresponding betanin (16.3 and 57.8 mg/100 ml) and total polyphenol (37.5 and 85.5 mg/100 ml respectively) contents show similar differences. Based on our results it can be stated that varieties of higher betanin and poliphenol contents have higher antioxidant values as well.
Accordingly, the two compounds must have a role in the evolution of antioxidant effects.
Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity e...xpressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.
The aim of this study was to investigate the postharvest effect of methyl jasmonic acid (MJ) and hot water on internal break-down and quality loss of apricot fruit under shelf life conditions. Cultivar Flavor cot apricot fruit were used to treat with water as control treatment, with 0.2 mmol/L MJ and with hot water 35 oC for 5 min. F...ruit were stored at room temperature and were examined every 2 days for internal break-down and quality loss. Results showed that treated fruits with MJ and hot water showed the lowest weight loss and the highest firmness during all assessment times. Control fruits showed losing of customer acceptance from the day 2 of shelf life and then decreased dramatically to approximately loss all the acceptance at day 8. The SSC showed sever reduction in untreated fruit after day 6 at shelf life. Total phenol content reduced and polyphenol oxidase (PPO) increased in all assessment times for all treatments. Meanwhile MJ showed the best values for phenol content and lowest PPO activity. The results supported the idea of using some elicitors like methyl jasmonic and hot water treatments to enhance shelf life of apricot fruit.
The goal of the present work was to compare different sweet and sour cherry cultivars and cultivation methods (bio/integrated) with respect to polyphenol content and antioxidant activity. The concentration of total polyphenols ranged between 880–1050 mg kg-1 of fresh fruit, whereas antioxidant activity expressed as TEAC was found to be betwee...n 5.4 and 10.3 mmol kg-1 for the sweet cherry cultivars examined. In case of sour cherry the level of polyphenols ranged between 1283 and 3490 mg/kg fresh edible part of the fruit. Antioxidant activity was recorded between 15–32 mmol kg-1 for the different sour cherry cultivars included in this work. After one-month storage at low temperature, the total phenols and antioxidant activity decreased by 2–40% in the sour cherry cultivars studied. The anthocyanin content in cherry cultivars was less (131–312 mg kg-1) than the135–1893 mg kg-1 found in sour cherries. Anthocyanin level was higher in samples produced under organic farming conditions than in those produced with integrated cultivation.
In our work we have studied red wines of some vine-districts. In the centre of interest was resveratrol. We declared, there was not significant difference between varietys in polyphenol comparison. There was significant variety in anthocyanin and colour-intensity.
Beetroot consumption based on pickled beets generally in Hungary which is due to the higher yield from second crop harvested in autumn and processed by manufacturing industry. Researches of the past years confirmed its favourable nutritional-physiological effects on human body so demands, as for fresh salad, also increased. The trial aimed at t...esting the interaction of varieties on quality parameters and in the same time suggestions are made how to use different varieties of beetroot according to its quality. Morphological and sensory evaluations were examined on 10 varieties of beetroot harvested in autumn. The regular spherical shape can reduce the refining loss during the processing of beetroot which is beneficial for the manufacturing industry. In our trial the root shape of Libero, Mona Lisa and Rubin varieties approached most the regular spherical shape (diameter/length – 1.0) which is favoured by not only processing industry but also fresh market. The highest red pigment content (betanin) was observed in Mona Lisa, Akela and Cylindra (34.58–47.66 mg/100 g). A similar trend could be observed in yellow pigments (vulgaxanthins) which proves the close correlation between the quantities of the two pigments (r=0.898). Highest total polyphenol (77.13–83.37 mg GAE/100g) and flavonoid (21.73–22.73 mg CE/100g) contents were detected in Akela, Mona Lisa and Bonel. These varieties are favourable for fresh salad and they can satisfy processing requirements also. Highest water soluble solids content was found in Akela (7.15%). In our conditions nitrate (NO3-N) values below 900 mg/kg were examined in all of the varieties which is favourable in the case of beetroot.
Frost tolerance of pear cultivars was checked after artificial cold treatment in 2003-2005. Limbs collected during the endodormancy were exposed in a climatic chamber for 24 hours to —25; —28 °C, while those collected in the ecodormancy were kept at —15 and —18 °C. Frost damages of buds were registered according to a visually defined...scale, then peroxidase (POD), polyphenol oxidase (PPO) enzyme activities and carbohydrate contents were checked in buds and spur-part below the buds. POD activity of untreated control in tissue below buds was higher than in the buds, which were increasing continuously during the endodormancy and decreased at the end of the ecodormancy. During endodormancy, cold treatment of —25 and —28 °C effected different changes of enzyme activity in buds of the cultivars. In the ecodormancy, enzyme activities increased after a cold treatment of —15 °C, whereas the activities decreased significantly after —18 °C. `Kaiser' — susceptible to frost — with its higher values of both enzyme activities marked out from other cultivars, which is correlated with its stress response. Changes in carbohydrate components — especially in glucose — of buds monitored well the different stress responses of tolerant and resistant pear cultivars induced by frost stress.
Different grape processing, fermentation and aging technologies were compared in our study on the white wine-grape variety Grüner Veltliner between 2012 and 2014 in Hungary,Cserszegtomaj. The vines are grown on brown forest soil on dolomite bedrock, stocks were planted 3x1 m row and vine space, respectively in our experimental area. The soil h...as slightly alkaline pH, the orientation of the vine rows are East-West. The training system is modified Guyot cordon, with 1 m trunk height and cane pruning method. After the harvest half of the yield has been put into the de-stemmer crusher before pressing while the other half has been pressed immediately (whole bunches). From the filtered and bottled wine anthocyanin, and polyphenol content was measured in 2013 and 2014. Another enological technology testing experiment has been set on aging of Grüner Veltliner in 2013. The wine was fermented with addition of fine lees from juice sedimentation. Traditional (racking only), battonage and fast ready-made aging technologies have been set together, each treatment in three replicates were observed.
Soluble solids (Brix°), carbohydrate, organic acid, lycopene, polyphenols and HMF content of indeterminate round type tomato Lemance F1 fruits were measured in six ripeness stages from mature green to deep red stage. Color of fruits was determined by CIELab system. The L*, a*, b* values were received directly and used to calculate f...rom which the a*/b* and the chroma were calculated. The Brix', carbohydrate, lycopene and HMF content were the highest in the 6111 stake (deep red). Carbohydrate contents constitute nearly 50% of the Brix°. The mature green stage had the lowest acid content but in subsequent stages it was fundamentally unchanged. Polyphenol content changed little during fruit ripening. Lycopene content changed significantly during maturation and accumulated mainly in the deep red stage. Analyses showed that a*/b* was closely correlated with lycopene and can be used to characterize stages of maturity in fresh tomatoes.
Biological active compounds and valuable characteristics of some apple varieties and candidates were measured in our trials. Fruits of ’Rosmerta’, ’Hesztia’, ’Cordelia’ and ’Artemisz’ are recommended to enrich the Hungarian assortments for fresh consumption and choice of new tastes. Based on examined parameters it can be assumed... that novel Hungarian resistant varieties are suitable for juice and fruit concentrate production, and due to high pectin content of their remaining pomace these varieties can be raw material of pectin production as well as they are also suitable for jam production mixed with other fruit species. Furthermore, functional food industrial product having high quality can be produced by using novel resistant varieties because of their high pectin and polyphenol content. Beside of their high market value their suitability for growing among orchard conditions is confi rmed by lower costs of production because of less plant protection treatments.
Among vegetables produced both for raw consumption and processing, tomato is one of the most important one in Europe, by production area and by yield as well. In the past years several study dealt with the investigation of the inner content of tomato, with special regards to antioxidant content. In this paper cherry tomato varieties and landrac...es from conventional and organic production were compared. Besides basic investigations sensory analysis were designed and Antioxidant Capacity (AOC) and Total Phenol Content (TPC) were measured. The aim of the research was to compare varieties and to study the effect of variety and production methods on antioxidant capacity and sensory profiles.
Authors investigated the antioxidant effect of wine-phenolics, expressed as total antioxidant status (TAS-value). This property may play an important role in elimination of the harmful effects of free radicals in human body.
Independently of their polyphenol composition, special quality Tokaj wines did not show extremely high TAS-values.... In Tokaj Aszu wines the total antioxidant status was independent of the "puttony" number but was influenced by the length of aging time.
