Aim of this research/project to determine the external and internal preferences of pear using descriptive sensory analysis, consumer preference. The research was performed on local consumers. Destructive measurements included fi rmness by puncture tests, soluble solids content (SSC), titrated acidity (TA). While there is a general positive trend for increasing preference with fi rmness, some consumers will prefer softer apples, and some will dislike the fi rmest pear. Sensorial judgement is able to classify the attractiveness, preference of properties specifi c for pear. Tests were performed by 13 persons on 4 pear varieties (Bosc kobak, Conference, Packham’s Triumph, Dessertnaia) checking 11 sensorial properties on a scale of 1 to 100 points. Relations of measurements and judgements were processed by correlation analysis. For analysis, the objects were furnished in 2011 from different growing sites (Csenger, Mérk and Nagykanizsa), taking from the store (in January) immediately. Among those the best notes were given to Bosc kobak and Conference coming from Mérk and to Packham’s Triumph grown at Nagykanizsa. It was stated that the success of sensorial judgement depends on the state of maturity, which is diffi cult to guarantee to be synchronous among samples of different varieties. Mature fruits are more praised as a sample of Bosc kobak taken from a chain of department store proved to be of balanced composition regarding its sugar/acid ratio (0.12) and the optimal fi rmness (5.75 N/cm2). Results of the correlation analysis suggest that the thickness of the skin is a decisive component of preference (r= 0.857), the typical pear flavour (r= 0.948), the taste as sweetness and acidity (r= 0.930 and r= 0.813). At the same time, no valuable relation could be detected between the data raised in the laboratory and the preference expressed by the sensorial tests, which should signalise that the opinion of consumers does not depend on any individual parameter obtained in the laboratory (sugar- or acid content, fi rmness) but rather on the complexity of several decisive components together (sweetness, acidity, fl avour, skin, etc.). The consumers’ preference cannot be measured objectively without the aid of adequate expertise and a prosperous surrounding, samples of optimal maturity and a thoughtfully edited judging form.
The aim of this study was the estimation of storability of 10 apricot varieties in regard to percentage fruit weight loss, firmness, acidity and T.S.S in fruit during storage periods from one week to 4 weeks. All the variety gave the same trend as all of them loss weight, firmness decreased, acidity and T.S.S decreased but the differences were not the same in all varieties. in case of some varieties the percentage of fruit weight loss reached to about 9 % after 28 days also the differences between varieties in two seasons refer that this character is determined by genetic factors beside effect of environmental and agriculture factors.
The effect of acidity (pH) ranges on the mycelial growth and stroma formation of Monilia fructigena Pers: Fr. and of M. polystroma van Leeuwen was determined on agar plates and apple fruits. Four isolates of each of the brown rot fungi and two apple cultivars, `James Grieve' and 'Cox's Orange Pippin', were used for the study. For the agar plate study, a range of the initial pH was prepared from 2.5 to 6.5. The dishes were inoculated with a 4 mm plug of each isolate and incubated at 23 °C in darkness. The mycelial growth was measured after 1.5, 4, 7, 10 and 20 days of incubation. After a 30-day incubation, stroma formation was determined by image analysis and weighing of mature stroma. In the fruit experiment, both cultivars were inoculated with one isolate of M. fructigena and of M. polystroma. The pH changes were determined after 7, 14, 28 and 35 days of incubation in both healthy and inoculated fruits. The fastest mycelial growth was at pH 4.5 for M. polystroma and at pH 3.5 for M. fructigena. After a 30-day incubation, M. polystroma isolates produced twice or three times more stroma compared to M. fructigena isolates. For both brown rot fungi, the amount of mature stroma increased from pH 3.5 to 5.5, and then decreased at pH 6.5. Results of the.fruit experiment showed that healthy fruits were quite acidic (pH < 3.5), but pH rapidly increased in the inoculated fruits for both cultivars, reaching pH 4.6-5.4 depending on cultivar and fungus isolate. On both cultivars, the stroma developed at a significantly higher pH for M. polystroma than for M. fructigena. Biological and practical implications of the results are discussed.
The geographic location of Bucharest area, the nature of its soil and its climate offer remarkably favourable conditions for nectarine growing, with juicy and well flavoured fruit, good for fresh consumption and processing.
The five years' investigation (1996-2000) has helped to identify some nectarine cultivars and hybrids (NJN 58, ARK 165, ARK 139, Morton, ARK 107, Romamer I, ARK 125, Firebrite) with exceptional fruit quality (dry matter content, titratable acidity, vitamin C content, overall sugar, and amount of pectic substances).
Dry matter content varied over the three years from 8.3 to 18.5% (NJN 68), meanwhile titratable acidity varied between 0.26 and 1.08% (Romamer I). Sugar / acidity ratio was within the limits of 8.6 and 36.5 (Nectared 7). Nectarines have high vitamin C content, over 10 mg/100g (Fairlane, NJN 67, Regina, Harko), glucides were found in Firebrite, Romamer I varieties and NJN 21, CIR1T127, HFSR3P4, HNA hybrids.
Some cultivars have been recommended for planting in this southern area of Romania (Crimsongold, ARK 125, Harko, Hardyred, ARK 134), others used as quality genitors (ARK 85, Nectared 7, NJN 21, ARK 21, ARK 134, Fantasia) in breeding projects.
The extraordinary abundance of precipitation in 2010 (somewhere around 1000 mm) influenced highly the development of taste and flavour in cherry fruits. As stated, only a few varieties out of 27 were acceptable as for commercial quality. Under the given climatic conditions, actually ‘Bigarreau Burlat’ earned 965.11 points and proved to be the best in the early ripening group. In the mid season group, three varieties earned more than 1000 points (‘Giant Red’, ‘Carmen’ and ‘Vera’ grown at Nagykutas and Pallag), whereas in the late ripening group ‘Germesdorfi’ sent from Csenger (1084), ‘Linda’ (1070.07) and ‘Lapins’ (1052) received recognition. Correlation has been tested on the basis of 27 varieties between the individual properties. We sated that the most important attributes, which influenced the general impression of decision makers are the following: form and size of the fruit (r=0.835 and 0.797), furthermore juiciness (r=0.776), taste (r=0.876) and sweetness (0.875). Crispness was considered to be typical to cherry (r=0.743). Relation between acidity and sweetness was also essential to determine the acceptance of the cherry character.
The composition of five pear varieties (‘Abate Fètel’, ‘Bosc’, ‘Williams’, ‘Conference’, ‘Packham’s Triumph’) grown in Nagykanizsa was investigated in three consecutive years (2008, 2009, 2010). A storage experiment was performed in 2008. Four winter pear cultivars were kept in an ULO store for four months and their parameters measured after two and four months. The parameters tested were: size, weight, water soluble solids, titratable acidity, glucose, fructose, sucrose, water soluble pectin, total polyphenols, free radical scavenging capacity, copper and zinc content. The fruits of ‘Conference’ and ‘Bosc’ varieties were found to contain the highest sucrose and total sugar content, while ‘Abate Fétel’ had the lowest sucrose and highest glucose levels among cultivars tested. ‘Williams’ pear was the most acidic. Brix, total sugar, sucrose and water soluble pectin were decreased during storage. Titratable acidity slightly decreased in fruits of Conference pear. Polyphenols and free radical scavenging capacity did not show a significant change during storage.
Sour cherries are not adapted to long storage. The largest percentage of sour cherries reaches the consumer either directly or indirectly through the tin can or the frozen pack. Different concentrations of ethephon usually are used commercially to facilitate harvesting sour cherry fruits that this hormone influences on fruit quality. The objective of this study was effect of ethephon preharvest application on sour cherry fruits quality during storage period at modified atmosphere packaging was investigated. Modified atmosphere packaging used with 10, 15 and 75 percent for 02, CO, and N2 respectively that those held at 0 °C. This gas compounds synchronous to 0 °C temperature caused to increase shelf life postharvest of fruits. Fruit samples were evaluated at harvest date and after 6 weeks in storage. Skin fruit colour, pH, total soluble solids, titrateable acidity, sugar/acid ratio, firmness were monitored. Ethephon concentration influenced on total soluble solid, titrateable acidity, sugar/acid ratio and L* value. In more case, 225 ppm ethephon's concentration has no observable different to control samples. Thus, the best ethephon's concentration was 225 ppm ethephon's concentration.
Remote sensing of fruit tree micro environment plays a major role in both horticultural and soil mapping applications. In frame this study presented a novel method to survey the spatial distribution of physical and water management properties of soils. The examinations were carried out at an intensive experimental apple orchard in Debrecen-Pallag. The examination site is the part of the Experimental Pomology plantation of the University of Debrecen, Faculty of Agronomy. Particle-size distribution, plasticity according to Arany, metal content by XRF spectrometry, soil physical parameters, acidity, electric conductivity of soils, were measured to obtain appropriate information on the physical properties of the soil. Based on the results, the accurate spatial positions of those sites were characterized where soil loosening should be implemented in 0,3–0,4 m depth. Spatially precise soil physical barriers were determined for applied micro-irrigation system. Based on the micro-element content and pH, the accurate spatial positions of those sites were selected where melioration and micronutrient fertilization is needed. These detailed data sources also applied to calibrate the applied airborne hyperspectral images to extend spatially these point based information.
A two trial greenhouse experiment was carried out at Rwanda-Israel Horticulture Centre of Excellence located at Mulindi Station to evaluate seedling quality on growth, yield and quality of tomato. The seedlings were grown in different growing media and produced seedlings with varying quality indices. The growing media of peat moss 100% (T2) and sand + goat manure + carbonized rice husks 50%: 10%: 40% (T8) were revealed in seedlings with the highest mean quality indices of 31 and 28 respectively, while sand 100% (T2) presented the lowest quality indices during both trials. The transplants were planted in polybags filled with 2:1 of topsoil and kitchen manure arranged in a randomized complete block design (RCBD) with four replications. Collected data were subjected to analysis of variance and means were separated using HSD test at a 5% level of significance. The results revealed that the seedlings grown in T1 (S1) and T8 (S8) consistently presented tomatoes with better growth performance and yield. S1 and S8 produced mean yield of 93.59 and 92.35 t/ha respectively while S2 had the lowest yield with 53.86 t/ha. The fruit produced from seedlings grown in T4 (S4) had the highest mean sugar acid ratio of 5.88 but not significantly different from 5.61 and 5.44 of S1 and S8 respectively. Hence, there was a positive relationship among seedling quality and growth and yield performance of tomato but not in fruit quality.
Indeed, in the last decade a large number of new sour cherry cultivars with new notable flavor characteristics have been released. There is no enough information related to qualitative characteristics which consistently segregated based on their predominant sensory characteristics. The present study carried out at tow consecutive years (2008 and 2009) and examined some qualitative characters which are the main importance in the specialty cherries trade, The main objective was to determine fruits quality of Érdi bőtermő, Oblacsinszka, Debreceni bőtermő, Csengődi, Pándy 279, Éva, Kántorjánosi, Újfehértói fürtös and Petri sour cherry cultivars. Changes observed in major characteristics such as fruit detachment force, width, length, weight, peduncle length, flesh firmness, brix, citric acid, Suger/acid ratio and pit weigh.While observed no change in flesh/pit ratio and Coordinate of colour (X*, y*, x*), hue angle and chroma value, in different years. In all measured factors, there was significant difference between selected cultivars of sour cherry fruit. Debreceni bőtermő showed higher values of fruit detachment force in 2008, while had the lover of fruit detachment force in 2009. Fruit firmness of “Érdi bőtermő” were monitored at lover value in both 2-year.
Twenty-one hot pepper genotypes comprising of local (15) and exotic (6) types (C. annuum, C. frutescens and C. chinense) were characterized for selected fruit traits after propagation in a glasshouse at the Makerere University Agricultural Research Institute Kabanyolo in Central Uganda using a completely randomized design with three replicates. Ripe fruits were harvested and analyzed; traits evaluated were all significantly different at P<0.05 with variations in quality attributes. The genotype OHA-B305-10 had the highest ascorbic acid content (128.86 mg/100 g) and is recommended for improvement of both local and exotic genotypes targeting the fresh market. Genotypes CAP0408-12 and UG2 WE0511-22, with highest total soluble solids (16.17 ºBrix) and dry matter content (28.59%), respectively should be used in improvements for industrial use or processing to products such as chilli powder or flakes. BRS-M205-04 with highest titratable acidity (1.04%) can be used in enhancing shelf life of genotypes with low titratable acids as well as for the fresh market. In spite of the intraspecific relationships among genotypes, significant differences were observed in their quantitative traits. These genotypes will, therefore, be useful in improving the quality of hot pepper fruit in Uganda.
Many methods and techniques have been introduced for measuring alterations in the fruit and in its surrounding environment related to sunburn incidence. The research objectives, fruit materials and the environment to be evaluated dictate the methods to follow. These procedures are either non-destructive and involve techniques that allow us to track the course of sunburn development and related environmental parameters, or destructive and involve the removal of fruit from the tree for field/laboratory measurements. Techniques employed can be used for pre-symptomatic monitoring (before symptoms become visible) or characterizing the symptoms already present. The principles behind the measurements and their usefulness for sunburn assessments are discussed and critically evaluated in this review paper. Descriptions and evaluations of the methods and techniques were made in the following groups: 1. Thermal measurements; 2. Visual assessments; 3. Fruit quality measurements; 4. Measurements of physiological and biochemical alterations; and 5. Practical evaluation of sunburn damage. Thermal measurements involve methods tracking the ambient temperature and fruit surface temperature, and their relation to sunburn formation. Visual assessments cover all measuring techniques (skin color, chlorophyll fluorescence, radiation reflection, electron microscopy) that are able to detect changes on/in the fruit skin related to sunburn formation. Fruit quality measurements are used to point out differences in qualities (soluble solids, firmness, titratable acidity, and water content) between unaffected and sunburned areas of the fruit. The measurements of physiological and biochemical alterations (gas exchange, pigment analysis, enzyme activity, gene expression) give us a better insight to the mechanism of sunburn formation. Practical evaluations involve many procedures that are used by scientists to characterize the susceptibility of cultivars, evaluate protection technology, etc. For this purpose, the following methods are in use: expressing the percentage of the total fruit surface area affected by sunburn or the percentage of the total number of fruits damaged on the tree, or even a scale based on the severity of the symptoms occurred. All assessing methods and techniques described here have their pros and cons as well as their specific applicability, therefore any of these cannot be favored to use exclusively for assessing sunburn incidence. The combination of these techniques will be the best choice to meet a given research objective perfectly.
An investigation was conducted on uniform, healthy, eight year old trees of Nagpur mandarin (citrus reticulata Blanco) at Fruit Research Farm, Department of Fruit Science at College of Horticulture and Forestry, Jhalawar during 16 September, 2014 to 1 March, 2015. Various doses of calcium nitrate (1.0%, 2.0% and 3.0 %), boric acid (0.2 %, 0.4 % and 0.6 %) and zinc sulphate (0.2 %, 0.4 % and 0.6 %) were sprayed before harvesting and compared with untreated ones. The results obtained indicated that the trees sprayed with T27 i.e. (calcium nitrate 3.0 % + boric acid 0.6 % + zinc sulphate 0.6 %) showed maximum increase diameter of fruit, fruit weight, fruit volume, number of fruits per plant, fruit yield per plant, estimated yield per hectare, reducing sugar, non reducing sugar, total sugar, juice per cent, sensory score and reduced peel thickness over control. Further, T24 treatment combination (calcium nitrate 3.0 % + boric acid 0.4 % + zinc sulphate 0.6 %) has also significantly increased number of segments per fruit, TSS, TSS: Acid ratio, ascorbic acid content, and reduced number of seeds per fruit and acidity percent of fruits.
Our results show that the different cultivation methods have higher effect on the yield than on the grape quality. In 2007 the weather was extreme dry (from May to August only 195 mm precipitation was recorded) the straw mulch proved to be the best solution regarding the yield and the grape quality. Although no significant differences were observed in the sugar- and titratable acidity content of the must, the ratio of noble rotted berries was higher on the straw mulched plots. Straw mulch could conserve the moisture content of the soil and it seems to be contributed to the conformation of suitable microclimate for Botrytis infection, but for long distance conclusions further examinations need to be investigated. The less yield and ratio of rot was observed in case of barely covered vines and the vegetative growth of the grape was less intensive in case of these vines.
It was stated as a summary that a system of testing pear varieties on scale of 100 degrees, weighing 11 properties, gives a comprehensive information on qualities of pear varieties. The points of the form to be filled out, distinguishes the appreciation of accessory flavours and tastes from the main properties. Under the title of taste, sweet and acid taste are evaluated separately. The presently used system is a step forward as the composed characters do not influence the judgement of each other. In the representation of results, the 100 degree system was more efficacious than the usual 5-point system because there was no need of using fractions, and the graphic profile is more expressive, so the commodity is better visualised. The assembly of the jury was divided into two groups as below and above 35 year old persons. The two groups judged differently the acidity, sweetness and the thickness of the fruit peel. It was suggested that the choice of the produce should consider the differences in taste and give up the idea of being equally favourable for both groups. The samples of different growing sites revealed that the best quality is produced at Nagykanizsa, and this capacity would be able to supply the market also in the large super-markets and chain of department stores in Hungary.
The aim of our experiments was to investigate the internal quality parameters of some old melon and watermelon landraces or varieties whether they have any desirable characteristics. Measurements were carried out using 8 different types of melon (Cucumis melo L.) and 8 accessions of watermelon (Citrullus lanatus [Thumb]), which were self pollinated under greenhouse conditions. Besides the determination of dry matter content; soluble solids, titratable acidity of the fruit juices, investigation of carbohydrates, total phenol content was measured by spectrophotometer. Total antioxidant capacities were determined spectrophotometrically using the FRAP method. We found some accesions both among melon and watermelon varieties, which could be characterized by outstanding inner content.
Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.
Prima’, ‘Gala’, ‘Remo’, ‘Topáz’, ‘Idared’, ‘Releika’, ‘Resi’, ‘Rubinola’, ‘Rajka’, ‘Rewena’ and ‘Florina’ apple cultivars, both from organic and integrated farming, from Pallag and Újfehértó, were compared. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined at harvest and after cool storage. Organic apples were more acidic, while integrated fruits had mostly higher copper and zinc content. Total polyphenols and TEAC values did not show a significant difference as a function of farming technology. A principal component analysis shows the separation of provenances as well as stored and fresh apples. Results are considered as preliminary.
The research field was at Siófok, in Hungary, which is situated in the South East side of Lake Balaton. The physical characteristic of the soil is sandy loam and loam and the peach orchard is irrigated. The detailed goals were mapping and analyzing of physical properties of the soil in water management point of view, mapping the acidity and CaCO3content of soil for precision liming, measurement of humus the element content. Sites with different physical characteristics (from sandy loam to loamy clay) could be distinguished. The reason for this is that besides the possible increase of clayminerals, the increasing rate of colloidal humus content contributes to larger soil plasticity. Statistics also proved positive and strong correlation (r=0.822) between the soil plasticity and humus content. In the case of pH, only a small part of the orchard is has to be limed, since most of the orchard has neutral pH, which is advantageous for nuts and stone fruits. It has to be mentioned, that the CaCO3 supply is also appropriate for the stone fruits. Based on the results hyperspectral imagery can be a good solution for detecting calciferous soils, although these measurements are still need validation.
