  • Analysis of the Affective and Conative Components of Consumer Attitude in the Image of the Pálinka

    The research aim is to explore the potential role of consumer attitude components in image development related to a traditional Hungarian alcoholic beverage, the pálinka. This study focuses on the effect of the affective and conative components of attitude on image of the pálinka. The relevance of this research is the expansion of the pálinka market in recent years and the change of the regulatory environment about homemade spirits. Distillate made at home, which product improperly called homemade pálinka, is very popular in Hungary. This study was supported by the data from a nationwide, representative consumer survey carried out in 2019 and 2020. A total of 626 subjects participated in this survey, the sample is representative for the Hungarian adult population according to gender, age group and region. To understand the effect of the affective and conative attitude components, we used Likert scales and graphically illustrate the consumer feeling and behavior about the homemade spirit and the “in-store” pálinka. The study confirmed the advantage of homemade spirit image over in-store pálinka, and points out the importance of education and information in the case of the affective and conative components of consumer attitude. The reconsidering of the marketing communication of the in-store pálinka producers is timely and very important; however, this task requires a comprehensive marketing strategy covering all three attitude components, and this is the only way for them to remain competitive.

  • Functional Foods, Consumer Attitudes and Personalized Nutrition

    The dramatic spread of the so called diseases of civilization have occurred in the last decade worldwide. Deaths caused by them have long been of the highest rate among all causes of deaths. In parallel with the spread of the diseases of civilization, population of developed countries is increasingly ageing that increases the number of inactives and those who rely on health treatment. The outlined factors pose new challenges to the food industry: it requires the development new foods that slow down the spread of the diseases of civilization that hit the humankind through their health care effect, and at the same time provide longer life in health for the ageing societies. In the decade after decoding the human genome an extremely rapid development occurred in the techniques of genomics, and in the disciplines applying genomics methods. Researches in genomics focus on how the human genome interacts with the environmental factors for determining the gene expression. Nutrition as one of the most important environmental factors has an obvious impact on the health but we have not known yet exactly what this impact is and what its mechanism is. The so called nutrigenomics – that is a new discipline – aims to reveal the relationships that are not yet known. The personalized nutrition is a conception that adapts the diet, the foods, and the nutrients to the unique needs of the specific person.
    The authors examined the relationships between the functional foods, consumer attitudes and personalized nutrition in the framework of a nation-wide representative consumer survey of 500 people. According to the results majority of the consumers (73.8%) believes that her/him nutrition (diet) follows a normal structure and all that she/he needs enters her/his body automatically. Knowing the critical health state of the population it can be stated that the high agreement portion is based on misbelieves. This is also indicated by the fact that 57.4% of consumers only eats foods that tastes good, even when it is supposedly less healthy. In the next half year almost 50% of the Hungarian population do not intend to switch to a nutrition considered healthier by themselves. Further 22% of the respondents already feel some urge to change their behavior, they compare the costs and the potential benefits of change. Only 5.0% of the interviewees switched to a nutrition considered healthier by themselves in the last six months, and the rate of those who maintain the positive change is 17.4%.
    In the current situation there is no other option than raising awareness of the population for foods that provide excess nutrition benefits. These are the functional foods that hold important position in the education to healthy nutrition of the population. However, it is does matter in which strategy they are used by the enterprises. This applies for the development of both new technologies and new functional foods where involvement of consumers is inevitable today.
    The so called perception screening theory answers the solution of the anomalies between the scientific objectivity and the consumer perception. We tried to apply the perception screening theory in a new discipline, entirely unknown to the consumers. The nutrition genomics and its major application area, the personalized nutrition are novel concepts to the population to such an extent that preferences and attitudes related to them have not occurred yet. This is why it could be interesting which most important psychological processes are the ones that can lead to the adoption of the new technology, and the development of the positive consumer attitudes. According to the results Hungarian consumers are mistrustful against the new technology and they are uncertain – despite its obvious advantages. The not so positive attitude is likely caused by more factors together. Traditional thinking, reluctance to the new play a role in it as well as the lack of information and misbelieves related to the genetic tests. The technology is novel to the consumers to such an extent that we found significant differences between the consumer segments only in some cases, i.e. consumer preferences cannot be classified, they are highly scattered. Finally, the authors developed an optimized practical model by which the successful launch of a new functional food and its hindering factors can be securely forecasted.

  • Analysis of the Food Consumer Behavior in the Online Environment: Does Digital Food Consumer Exist in Hungary?

    In recent years one of the major players in the market have changed radically, the consumer. They have been titled as „digitally enlightened” citizens by various researches. The main characteristics of „traditional” consumer’s behavior have been discussed previously by numerous researchers. However research on digital consumers, especially in domestic circles, is still in initial stage.
    The main objective of this article is to determine the online consumer behavior trends in our country, in relation to information and shopping in particular of food. At the end of this publication we intent to answer the question asked in the title, i.e. does digital food consumer exist in this country.
    In our study we used the online consumer buying behavior process as base. Each step was mapped out by using relevant and current literature analysis. Using national representative survey (N=1000) we examined in detail the food-related online information searches and the shopping opportunities in online shops.
    The convenience factor – similar to the description of the literature- is the most advantageous aspect of online shopping. At online shops the other factors examined convergence occurring in the median values show the uncertainty of customers’ purchasing behavior, which results in a lack of trust in food purchases.
    Overall, we can conclude that the majority of literature and research on food consumption behavior doesn’t separate properly the online consumer’ roles and most of the emphasis is on the final purchase. Based on literature research, we have attempted to differentiate the digital food consumers based on online behavior in which the basis for the subsequent researches hypothetical fives categories were distinguished.

  • Consumer Satisfaction/Dissatisfaction and Handling of Complaints in out of Home Eating Sector

    The contribution of the eating-out-of-home sector to the overall food spending of Hungarian households is very low, especially when compared to other, well developed countries. In order to increase this market – besides the improvement of the elements of macro- and micro-environment – a significant task is to strengthen and improve the consumer satisfaction and loyalty. Consumer satisfaction/dissatisfaction is a complex system whose key element is complaint handling. The research team conducted a questionnaire survey in the spring of 2014 in Hungary (Central Hungary and Northern Great Plain regions) with a sample of 1063 respondents of the age group 15+ years. In the survey, the research models and findings of former international research projects were taken into consideration. Our research results are in compliance with the international research results and trends, although differences may be found in the numbers and extent of the Hungarian results. In the Hungarian eating-out-of-home sector, the desired service quality of the consumers exceeds the detected quality of services particularly in the key areas. Despite the frequent consumer dissatisfaction, the documented forms of dissatisfaction, which could be recognized directly by the management (e.g. direct complaints towards the staff, registered opinion on the claims book), are very low. Guests prefer to use the indirect channels of complaint (for example choosing other restaurant, negative word of mouth, or reducing tips), which will result in that the specific reasons of complaints could not be recognized by management of the restaurant. The exploration and registration of the original problems are the main prerequisites of the successful improvement of consumer satisfaction, therefore establishing an active complaint management system should be a key task for the restaurants.

  • Analyzing Consumer Attitudes Towards Health-protecting Food

    The main goal of our research was to analyze the role of health-protecting food in our daily nutrition. In our secondary research, we analyzed the generalities and characteristics of health and health behavior with the help of relevant domestic and foreign literature. We analyzed the domestic tendencies of health in details. We examined the most important characteristics of functional foods and investigated the factors of personalized nutrition. Based on a literature review, in our primary research we conducted an online questionnaire survey with 231 respondents. Our survey cannot be considered representative, however, the proportion of genders in our sample population is almost the same as the Hungarian population’s. In the questionnaire survey, we examined the frequency of consumption of health-protecting food. After that, we analyzed respondents’ perceptions of the actual health effects of health-protecting food. We have measured consumer attitudes towards health-protecting food. We analyzed the perception of potential health risks and problems from the consumer perspective. We measured the impact of various health factors on shopping. Besides, we have explored our intention to participate in personalized nutrition-related programs. Based on our research, most of the analyzed health-protecting food is consumed once or twice a week. It can be stated that the respondents considered the examined food categories less scientifically proven. We could identify the preventive behaviors of respondents for various health problems. However, there is also uncertainty in the decision of respondents in what is the right way to prevent the diseases. In this uncertain situation, only experts can provide real help to them.

  • The Effect of Product Information on the Consumer Behaviour in the Course of Food Purchase

    This study investigates the course of the consumer’s information progression in order to underlie further quantitative and qualitative researches. This survey reviews the whole process of the information progression through which the consumer can decide which product to choose. The optimal consumption structure is configured by different principles and effects, and on the other hand every consumer is influenced by a diversity of information during the decision making process and the usage as well. The process of how individuals elaborate this information depends on numerous factors. The demographic and personality factors, qualification and profession, extant knowledge, the motivation for looking for information are very important as well as the evaluation of data. The cognitive, conative and emotive attitudes play an important role in the different stages of the information processes. The diverse information sources have a different effect on the consumer, too. The effectiveness of the information transfer is influenced by the consciousness of the consumer and how voluntarily they want to optimize their decision. In this process the extent to which they are concerned (for example a disease or prevention) plays a remarkable role. An important function of the stakeholders is to support the consumer’s decision with incomplex, laconic and authentic information. Without this the intended communication may generate a contradictory effect, however too much information may lead to rejection.

  • Chocolate Consumption Habits of Hungarian Women and Their Consumer Behaviour Regarding Sugar-free Chocolate

    In line with the global trend of health and wellness, there is now an increased demand for products that have a positive effect on health (or that are at least less unhealthy), such as sugar-free or reduced-calorie chocolate, especially among female consumers. Therefore, in our research, we set out to explore the chocolate consumption habits of Hungarian women, with particular regard to consumer acceptance of sugar-free chocolate. In the course of our primary research, we conducted an online questionnaire survey with the participation of 370 female respondents, during which we explored some elements of their consumer behaviour related to conventional and sugar-free/reduced-calorie chocolates; moreover, possible differences in the willingness to pay for sugar-free and conventional chocolates were also examined by using the packaging of two real, 100 g Stühmer milk chocolate bars and their modified versions as well. According to our results, the vast majority of women interviewed like chocolate, with milk chocolate being the most popular. Most of them eat chocolate a few times a week, but consumption of sugar-free/reduced-calorie chocolate is much less common. When buying chocolate, the respondents are clearly most influenced by the taste, which is followed far behind by the price, and then the healthiness of the chocolate. Most of the women asked are interested in sugar-free and reduced-calorie chocolates, the majority of them consume such products because of health awareness. The respondents’ willingness to pay for sugar-free chocolates is not lower compared to the versions sweetened with sugar, but the willingness to pay reaches the market price only in the case of a gift purchase; in the case of a purchase for one’s own consumption, it mostly falls short of it.

  • The Size and Characteristics of the LOHAS Segment in Hungary

    Until the 1990s, those exchange processes were in the focus of marketing in which the producers had the bargaining power in their hands. After realizing the limited sources and the natural challenges at the beginning of the twenty-first century, today marketing experts are interested in global issues like sustainable development and sustainable consumption. The aim of our research was to define the size of the Hungarian LOHAS consumer group by analysing its lifestyle based on sustainable values. This has been achieved in three steps. At first, the appearance of sustainable values was analysed using factor analysis. Secondly, we made the value-based lifestyle segmentation of the Hungarian consumers with the help of k-means analysis, and finally, with further segmentation, we estimated the size of the consumer group that is the most devoted to LOHAS values. In order to achieve the set objective, a nationwide representative questionnaire-based survey was carried out involving 1000 people in Hungary. During the value-orientated research, 25 lifestyle statements were drawn up. The 25 statements were grouped around 5 aspects which were the following: environmental consciousness, health consciousness, ethical values, authentic values and individualism. Results reveal that in the value order of Hungarian consumers, the characteristics showing in the direction of sustainability are present and they are separated in six value categories. They are individualist values, authentic values, environmental consciousness, ethical (competence) values, health consciousness and ethical (corporate) values. From among the value dimensions, authentic values, health and environmental consciousness, as well as ethical corporate behaviour are especially important to Hungarian consumers. According to our results five value-based segments could be separated which are Uninvolved elderly people (16.4%), Young trend followers (32.1%), Young environmentally conscious people (18.6%), Ethical traditionalists (22.6%) and also Disappointed pessimists (10.3%). The biggest cluster, the group of Young trend followers, reflects the characteristics of the LOHAS consumers’ lifestyle the most. Yet, this segment cannot entirely be regarded a consumer group devoted to LOHAS values. The biggest heterogeneity can be observed based on the ethical (competence) values of Young trend followers, and a further segmentation of this group was considered necessary to be able to ascertain the rate of the most devoted LOHAS consumers. The third sub-cluster that overestimates the ethical (competence) statements the most can be identified with the LOHAS consumer group. Based on the results of our research, their rate is 8.7% within the Hungarian population. Further research is necessary to find out whether the situation of value orientation in the other Eastern European countries is similar to that in Hungary, where the social and the cultural backgrounds show many similarities.

    The Traditions-Tastes-Regions (TTR) programme has more than 20 years of history, promoting and economically stimulating the traditional and local food products of Hungary. Since 2002 the TTR is a registered trademark and used for product differentiation. At the end of 2018 altogether 92 producers with 176 products had the right to use the trademark. The Geographical Indications Programme – initiated by the Hungarian government in order to increase the number of the Hungarian GI products in the EU register – is also based on the TTR initiative. The demand of the Hungarian traditional food products in general, as well the supply side of the TTR programme is well described by the literature, however the field of the consumers’ relation with the TTR trademark seems to be undiscovered. In spite of this background, this study tries to describe the recognition and the embeddedness of the TTR trademark among the Hungarian consumers. Part of an international survey conducted by the Strength2Food H2020 research project, the TTR trademark was analysed on a sample of 444 Hungarian consumers, retrieved from an online survey. Results suggest that the almost 40% recognition of the TTR trademark significantly exceeds recognition of the EU geographical indications labels. However, only roughly 10% of the consumers seeks purposefully food products with TTR label. Regular buyers of such foods usually seek for meat products. Based on the binomial regression models the recognition of the TTR trademark’s logo is significantly higher among female, older and non-vegetarian consumers with lower income levels. The place of regular purchase is also statistically significant: consumers with regular purchase in organic shops and in short food supply chains (directly from the producer) tend to be more aware of the TTR logo. Regarding the regular consumption of such products we can say that males and consumers shopping in supermarkets and discounters are becoming a frequent buyer of TTR products with a higher probability.

  • Analysis of University Students’ Behavior Towards Online Grocery Shopping Based on the TAM-Model

    These days new, alternative forms of sales such as parcel delivery, direct sales, telephone and the internet are playing an increasingly important role in commerce. Relevant literature and statistics prove the success of e-commerce at national and international levels. Our aim is to identify a segment of online sales where this performance is still modest. Online grocery shopping has not been integrated into consumer’s life so far compare to other market-leading product categories (clothing, footwear). During the secondary research, we conducted extensive literature analysis using national and international sources. In the course of primary research, a questionnaire survey was conducted as a quantitative procedure. 501 students were involved from the Faculty of Economics of the University of Debrecen in this non-representative survey, in which we sought to reach as many cultures and nations as possible. Our main goal was to answer the question of the factors behind the development of online consumer preferences in the fast moving consumer goods (FMCG) product category. For this the Technology Acceptance Model (TAM) was applied in the primary research. The Likert scale was applied to assess the students’ position on the topic. The 18 statements underlying the analysis were adapted from the researches of Radka and Martin (2018). After the reliability test, a factor analysis was made. The variables were compressed into three factors. Because of the better understanding, the exploratory factor analysis and the data reduction were separated. Principal component analysis was made on the statements belonging to each factor. Subsequently, a cluster analysis of four was conducted or four clusters for Hungarian and foreign students. The hypothesis about the attitude towards buying food online among the FMCG products is more reserved for Hungarian students than for foreign students has been proved.

  • Drivers of Local Food Product Consumption among Young Consumers

    Future trends in sustainable food consumption include, among others, the expansion of short food supply chains coupled with a shift in consumer behaviour, e.g., a growing interest in product information, increased appreciation of trust towards local producers and locally produced food. There is a growing body of literature on local or alternative food to address the problem of consumer behaviour called the buyer's "black box". This paper aims to identify the most prominent drivers for the segment of young consumers for purchasing healthy and quality products: curiosity, uniqueness, and experience. We conducted this study to direct the attention specifically to the buying behaviour of young consumers, as previous research found this segment the most open to sustainable food consumption. A quantitative study was conducted on a large-sample survey with respondents aged 18 – 45 in Hungary. The questionnaire focused on product features, intrinsic and extrinsic motivational elements, and demographic characteristics. The findings of this study can support managerial decision-making and serve as a basis for further academic research.

  • The Marketing Communication Opportunities of the Probiotic Yoghurt

    The probiotic yoghurt is a product category, representing added value, which can be assigned into the functional food product category. During the research, We collected primer informations about the consumer attitudes and customer habits in connection with these products. During the survey a national, 1000 people repesentative customer were interviewed in July 2013, among 18-75 year-old population. Two focus group interviews were also conducted. Based on the obtained results, conclusions were drawn about the effective and appropriate marketing communications strategy for the development of consumer groups. Surveys have shown that there is a need of probiotic yogurt in the market, consumers demand and are looking for these products. However, you should keep in mind the differentiated communication directed toward different groups of consumers.

  • The Actual Questions of the product and the Consumption of Soltvadkert' Wine

    In our work looking for the answer for the next questions: What is the current situation for winemakers nowadays in Soltvadkert. What is the reputation of their wine? What do local habitants think about the wine of their city? What is the opinion about it the tourists? Do the people remember to the counterfeit wine? To know the answers we make qualitative and quantitative survey. We made 5 interviews with viticulturist on Soltvadkert. We asked them about the market-opportunities, the effects of economic crisis, the impact of import wines, the connection between the local winemakers, the trends of Hungarian wine-consumption. The questions for the consumers are the follow: The consumption habits linked to the wine, the knowledge about the winemakers of Soltvadkert, the wine-purchasing habit. We asked 100 local residents and 100 tourists. The result of this survey is the SWOT analysis, which we made and show in this article.

  • Eating Behaviors of Preschool-Aged Children – Gender-Linked Differences

    A growing popularity in the consumption of foods with low nutritional value is increasing amongst the preschool age groups worldwide, which is partially responsible for the increase of childhood obesity rates globally. Thus, it is vital to examine the eating behavior of preschool aged children, as these are known to effect the daily energy intake. On the contrary, gender differences could possibly also influence the food intake and therefore health-related outcomes in children. In order to investigate the relationship between the children’s eating behavior and their gender, a survey was conducted amongst the parents of children aged between 3-7 in Hungary, which included Wardle et al.’s (2001a) 35-item instrument, the Children’s Eating Behavior Questionnaire, together with questions concerning possible food allergies and demographics. The sample of size N=365 was then analyzed using SPSS via the INDSCAL method. The initial creators of the Child Eating Behavior Questionnaire found only one gender difference, namely that the incidence of eating fussiness was slightly higher in boys, the findings of the current study were able to verify this result together with other dissimilarities. The findings indicate that other eating behaviors can be linked to gender, including that girls’ desires to drink, which is generally higher than that of boys and that boys tend to eat slower than girls. Boys also lean towards emotional undereating, while girls have a tendency towards emotional overeating. The information above can be of great use to marketers in the food and beverage industry as well as the healthcare industry.

  • Investigating the Coffee Consumption Habits

    Coffee consumption is a widespread activity nowadays all around the world. It is a very popular beverage, with many variants as are known. Caffeine can cause many effects in our bodies. These include health benefits and adverse effects. According to 2018 data, the annual per capita coffee consumption in Hungary was 3.1 kilograms, making it the 24th largest coffee consumption country in the world. The aim of the research was to reveal the coffee consumption habits at the domestic level, based on the results of a questionnaire survey based on secondary data collection. In our research, we have also placed great emphasis on examining the beneficial and harmful health effects of coffee consumption. Our further goal is to explore whether domestic consumers are aware of the health effects of coffee consumption. Our hypothesis, defined in connection with our research, was, “Those people who frequently consume coffee are unaware of the health effects of coffee”. As a first step in our research we made a secondary data collection and our second step was the primary data collection. The basis of our primary research was the questionnaire we prepared, which was shared online. The size of the examined sample is 1 664 people. The sample population does not statistically represent the population of Hungary, therefore we do not consider the survey to be representative, the results are only exploratory. Based on our research, we found out that although most of the people who consume coffee often are aware of the beneficial and harmful health effects of coffee, this is mainly true for women, but less so for men. Men are more likely to know only the harmful effects. Our results have shown that those who are aware of all the health-affecting properties of coffee are not more conscious of the amount of coffee consumed than those who are unaware of only the good, bad, or both of the properties.

  • Sports Activity vs. Consumption of Dietary Supplements

    Previous research on consumption of dietary supplements and consumer motivations has shown that there are different motivations behind their widespread consumption in recreational and competitive sports. This research examined the consumption of the main nutritional supplements, the relationship between different forms of sports and dietary supplement consumption, as well as their relationship with age.  The questionnaire survey was conducted by telephone among those who mainly exercised recreational sports activities and a total of 236 valid responses were obtained. The sample is gender-balanced and overrepresents younger segments by age groups. The majority of recreational athletes interviewed in the research are among the potentially stable consumers. Only 10% does not consume and does not plan to use supplements. The interview recorded the main types of supplements (vitamins and minerals; amino acids, proteins; essential fats, etc.) as well as the preferred forms of sports (device-free and device-intensive aerobics and cardio; fitness and team sports). As for the purpose of consuming dietary supplements it can be said that the main motivator is the preservation of health, followed by the improvement of physical well-being, cartilage protection, muscle gain, and then performance enhancement. Among other things, the research revealed differences in consumption motivations for dietary supplements by age group, the relationship between sports type and dietary supplement consumption. Health preservation as motivation spans different age categories, however, cartilage protection and improvement of physical well-being are more typical for the 25+ and 35+ age groups, while supplements consumed to increase muscle mass and performance shift to the younger side of the sample.  Different patterns appear for each type of sport, only the outstanding rate of consumption of vitamin preparations is the same. Device-free aerobic and cardio 91%, device-intensive aerobic and cardio 88% and fitness sports 85% are the proportions of people who often consume vitamin preparations several times a day, once a day or several times a week. The results suggest that the primary driver of the use of dietary supplements is the preservation of health, but product knowledge is an important consideration, as excessive intake of these supplements can even lead to damage to health.

  • Impact of Personal Values on the Change of Health Behaviour and the Conscious Food Purchase

    Major aim of the examination is to reveal relationships between personal values, the switch to the health conscious nutrition method, and the food consumer behaviour based on the value list by Kahle (LOV). In order to attain this goal a nationwide representative survey was conducted in Hungary with the participation of 1000 persons. According to the results the most important value for the population is safety that is followed by the need for fun and enjoyment in life. During the analysis of the value list a factor structure – different from the standard – was revealed that formed the base of the segmentation. Four consumer segments were identified, the Value oriented, the Moderately value driven, the Safety seeker, and the Disappointed segments.
    The Value oriented segment can be considered as the primary target group of health protecting foods as members of this group moved to the direction of more health conscious consumption and in parallel of more health conscious food purchase to the greatest extent (18.5%). The second group showing significant changes is the Safety seekers that suggests that the extent of the value orientation significantly affects the behavior, i.e. food purchase and food consumption independently of its content. The value content provides information to the development of the content elements of the marketing strategy and the marketing message for the producers of health protecting foods.

We analysed the lifestyle of two sustainable consumption groups, the LOHAS (Lifestyle of Health and Sustainability) and the LOVOS (Lifestyle of Voluntary Simplifiers). As a first step, connection points were being looked for between the LOHAS and the LOVOS segments with the assistance of the literature review. Secondly, a questionnaire-based survey was carried out involving 298 students of the University of Debrecen. In this step appearance of sustainable values was analysed using factor analysis both for LOHAS and LOVOS segments separately. Next, we made a value-based lifestyle segmentation of the students with the assistance of hierarchical analysis in the case of the LOHAS segment and k-means analysis in the case of the LOVOS segment. According to the results, four value-based segments could be distinguished in both the LOHAS and the LOVOS groups. In the case of the LOHAS consumer group, the ambitious trend followers (the cluster size was 25.1% of the asked students) reflect the characteristics of the LOHAS consumers’ lifestyle to the greatest extent. In the case of the LOVOS consumer group, the most dedicated cluster was the conscious simplifiers (the cluster size was 34.55% of the asked students). However, this segment does not entirely reflect all the values of the LOVOS consumers’ lifestyle, so further research is necessary in the future.

    The traditional and regional foods represent distinctive and unique values for customers in the world food market by their inimitable tastes and appearances. In today’s fast-moving world in which globalization’s different – both positive and negative – effects determine the daily activities of consumers and influence their needs, their choices and their decisions during the regular food and raw material purchases; it is relevant to strive for the presence and regular consumption of traditional products also to become known to a wide circle of society. The key objectives of our research are the main effects of traditional and regional foods in the Northern Great Plain, particularly with regard to the marketing and economic aspects approach. Our study is an experimental study of a later larger number of elements and representative survey, and it is based primarily on online questionnaires. During the research we received 151 available questionnaires. The interviewed inhabitants of the region have declared a positive opinion in the context of traditional and regional foods, most of them purchased and consumed these products regurarly.

  • Examination and Consumers’ Evaluation of New Pilot Products from Pseudocereals

    Nowadays the importance of the use of pseudocereals is increasing, especially in the diet of health conscious consumers and those who follow reform diet. In our research we produced pilot products with health-beneficial properties. The main ingredients were pseudocereals, such as buckwheat, amaranth and quinoa flour, and our aim was to get more information about their possible uses in nutrition. These grains have typical (buckwheat) or bitter taste (amaranth), therefore our second aim was to survey the consumers’ opinions, which help us to determine further direction of development. In our research we produced bakery pilot products from the previously defined mixtures of different gluten free flours and natural additives, taking into account the consumer’s demands, because more and more people are looking for the opportunity to reduce the gluten intake improving their health condition. Physical and chemical parameters of pilot products were determined. Finally, we evaluated the consumers’ opinions by a sensory test and questionnaire, therefore, we got results not only about the quality of products but the consumers’ preference orders too.

  • Game-meat Consumption Behavior the Image and Market Positioning of Quality Venison

    The purpose of our research is to understand the wild game meat, and more specifically, venison consumption behavior of the Hungarian population. In order to examine the issue, we have conducted questionnaire surveys as well as focus group interviews. Only 36.6% of the respondents reported that they consume game-based foods with some frequency. The main reason for the low consumption rate is related to the price of wild game meat which consumers consider too high. Based on focus group interviews, we concluded that the main problem is that most people do not even consider trying game-meat as they do not know about possible preparation methods. The results of our questionnaire survey reveal that 22.4% of the population has consumed red deer, while fallow deer has only been consumed by 7.7%. The respondents primarily associate deer meat with men, as they consider hunting and the preparation of wild-game foods a masculine activity. In Hungary, deer meat is a lesser known product considered to be a luxury good, for which a new marketing communication and sales strategy is needed. Limiting factors include unfamiliarity, high price and that respondents consider wild-game a seasonal product.

  • Main Characteristics of Table Egg Consumption in Hungary

    In the last years many changes occurred in the egg sector in Hungary; the sector’s participants have to face with a number of challenges today as well. Both egg production and consumption decreased significantly in Hungary. The objectives of present survey are (1) to identify factors which are important for domestic customers in the course of purchase and consumption of table egg and (2) to investigate how informed the consumers are as regards table egg. To examine the aforementioned objectives online inquiry was applied, in pursuance of it 729 appreciable questionnaire put in. 99 percent of respondents consume eggs occasionally or regularly, while 79.1 percent of them buy as well. The findings suggest that the freshness and soundness of egg the most important factors for the domestic consumers.On the other hand trademark, price of kilogram and colour of egg influence on the decision of customer less. Present study only focuses on the importance of the factors influencing purchase and consumption, furthermore it introduces the consumers’ opinion on these factors.   • A Netnographic Study of Health-Conscious Food Consumption in the Digital Era

    Health-conscious lifestyles and the consumption of foods which are considered healthy are becoming increasingly important globally and domestically. Thanks to digitisation, the consumer has a wide range of new and innovative ways to obtain useful information. Social media and its elements have reformed access to information over the past decade. The main objective of our research was to assess the impact of digitisation on healthy food consumption. In this article, we analysed particular social media platforms (Facebook, Instagram and Youtube) with a netnographic observation and examined the role of influencers in health-conscious food consumption. During secondary research, we clarified basic definitions and analysed recent and near-term trends. In the primary research, the netnographic survey was conducted in two sessions (September and October 2018 and December 2019). The aim was to broaden the research while comparing the results of the two observation sessions. Only Hungarian language sites were used for our observations. We analysed the Facebook pages and groups related to healthy eating. For the terms related to the topic under study (e.g., “healthy lifestyle” and “conscious eating”), we identified the same pages in most cases. So a given page has appeared for more than one search term. The creators of the groups typically include 4-5 keywords in the title at a time. We have analysed the number of hashtags with and without accents associated with health-conscious, free-from and plant-based nutrition. The majority of the analysed hashtags showed a tendency for their accented variants to grow more than non-accented ones in the past year. In addition, we systematized the Hungarian influencers with Youtube channel in the research topic. Based on the results, it can be stated that relatively few influencers operate a channel with a higher number of subscribers in the fields of healthy eating and healthy lifestyle. To sum up, the mention of healthy lifestyle in social media is complex and it is not tightened to health-conscious food consumption.
