  • Field Vegetable Production in Hungary

    Hungary is a country with excellent ecological potentials and with rich traditions in vegetable production. The total vegetable production area comprises about 100 000 ha and annual production amounts to 1.4-1.8 million tons, 75-80% comes from fields and the rest from forcing. Approximately 40 species are produced, but only 20 of them play a dominant role. The most important ones arc: sweet corn, peas, peppers, watermelon, onions, tomatoes, gherkin, carrots, beans, white cabbage.

    40-45% of the total production is processed, 20-30% sold on the fresh market and 30% exported.

    Vegetable production is based on rural farms of 1-5 ha average acreage. It provides living for about 70-100 000 families. The low number of producers' organisations is a major setback.

    Profitability of vegetable production is rather low. Production costs are high, wholesale prices are depressed.

    Vegetables are produced for the industry by contract. Fresh vegetables are sold through local markets (15-20%), the wholesale market (decreasing importance) and direct marketing (35-40%).

    Against the self-sufficiency of the country there is a seasonal import of vegetables mainly in winter and early springtime.

    Hungarian legal regulations are harmonized with the EU directives, EU standards are accepted and applied, traditionally good market connections and cooperation with several EU countries enable the country to be a partner of EU vegetable growers.

    Recently, projects aiming to enhance the consumption of fruits and vegetables are intensified. Experts agree in the principle of fresh vegetable foods being a valid panacea in averting risks of ailments as well as curing immune-insufficiency, inflammations, moreover, certain cancerous processes. It is generally accepted that among substances of biological activity the anti-oxidant compounds such as vitamins C, E and carotenoids, etc. have the major role in this process. Hungarian agriculture has outstanding chances in utilising its natural as well as cultivated plant resources and favourable climatic conditions. It would be, however, necessary to build up a databank of anti­oxidant substances found in fruits and vegetables and including the modifying effects of technology, growing site, variety, etc. The concept of promoting the trade of Hungarian food-specialities as "Hungaricum" needs, urgently, the aid of a databank of that kind. Some of those excellent products are for instance the sour cherry, pepper and onion. They enjoy high priority as "Hungaricum" in the EU and it should be enhanced by intense and consequent research work, which may prove their role as functional foods. The USA is the leading country in research on the anti-oxidant substances of sour cherries, and up to now more than 17 compounds have been found in Hungarian varieties among others. In pepper fruits used as vegetable and source of vitamin C, the analyses are still lacking because research of the past concentrated on the products of milled spice pepper. Onion and garlic are entirely unexplored in this respect. It should be noted that availability of these fresh products in the moderate climate is restricted to a relatively short season. For that reason, some processing and preservation methods are needed in order to use those fruits and vegetables as functional foods all around the year. The scientifically founded endeavour as a solution of the questions mentioned is stimulated by vigorous commercial interests as well as by the urgent needs of the consumers to improve their health.

    Laboratory germination tests have been made with three white fruit pepper varieties and with one spice pepper in filter paper rolls wetted with KCl solutions of different concentration. Parallel tests have been conducted with the other species (lettuce, tomato, kohlrabi) to compare the salt tolerance of paprika with that of other vegetable crops.

    In greenhouse, the action of KCl has been investigated with transplants raised in soil mixture, in rockwool and with seedlings transplanted from rockwool into soil mixture. Like the trials in the laboratory, the experiments in soil mixture have been made with other plant species, too.

    In our experiments, we have chiefly tested the salt sensitivity of sweet pepper varieties. In cold forcing, 0.3 1/plant nutrient solutions of different NaCI content were given twice weekly. EC of the nutrient solutions containing 0.25% Volldünger Linz complex fertilizer was made up to 6, 10, 14 and 18 mS/cm, respectively, by 2.51/9.17/17.97/26.76 g/m2 doses of pharmacopeal NaCI every week. The solution used for the control treatment contained Volldünger only (EC 4.4 mS/cm). Irrigation was made with pure water (EC 0.6 mS/cm) when necessary.

    The varieties chosen for the experiments were the following: Feherözön, HRF F1, Syn. Cecei (of white, conical fruit), Boni (of white, blunt, infolded fruit), Titan F1 (of pointed, hot fruit) and Pritavit F1 (of tomato shaped fruit).

    In general, the symptoms caused by NaCI treatments (with doses higher than 10 g/m2 weekly) have been the following:

    • They have reduced the leaf area, the height of the plants, the total and the early yield, the number of fruit set per square meter, the average weight of the fruit (and, in some measure, fruit length, too) and the thousand seed weight.
    • They have increased the calcium and the chlorine content of the leaves and fruits and the dry matter content of the fruits.
    • They haven't affected the dry matter content of the leaves, the nitrogen, phosphorus and potassium content of the leaves and fruits, and the germinating ability of the seed.
    • The effect on stem diameter and on seed production per fruit has been contradictory in some cases.

    The effects of the intermediate treatments haven't been explicit in several cases.

    The results of the examination of cuticular secretion have indicated the increase of the sodium and chlorine content of the leaves. This can be important in field growing where the rainwater may wash out a part of sodium and chlorine from paprika leaves.

    The hot, pointed variety and the tomato shaped paprika haven't shown clearly higher salt tolerance than the varieties of white fruit colour.

    Foliar application has been determined to be an effective nutrients delivery strategy in vegetable and fruits. The enhancement of vegetable and fruit yields affected by foliar nutrients application has been recognized in previously conducted studies with perennial tree crops. The efficiency of foliar nutrition is dependent on soil, climate, fertilizer and the amount of nitrogen used. There is no sufficient information concerning cooperation of foliar nutrition with all nutrients form as well as the rates of these nutrients fertilization in vegetable
    and fruit crops. Two successive winter seasons of 2008/2009 and 2009/2010 were conducted under sandy soil conditions to study the effect of spraying with 12 commercial compounds on inflorescences diameter, flower stalk length, number of seed stem /plant, weight of 1000 seed, germination percentage, seed yield, moisture content, catalase , peroxidase activity and malondialdehyde content of onion seeds. The plants
    sprayed with union Zn, union Mn, union feer, shams k, elga 600, boron, and amino x had the highest vegetative growth parameter, germination percent and enzyme activity. The plants sprayed with union Zn, union feer, shams K, magnesium, caboron, hummer and amino X had the highest seed yield ha-1. The seeds were stored for one year to study the effect of different commercial compounds and storage temperatures on germination, moisture content and change in antioxidant enzymes activities of onion seeds during the storage period. Storage at cold temperature showed higher germination percent, moisture content and lower malondialdehyde content than storage at room temperature. The treatment with union Zn, union feer, union Mn, boron, elga 600, caboron, amica, hummer and amino x had the highest germination percent.

    Evidence suggests that a diet with high fruit and vegetable consumption may decrease the risk of chronic diseases, such as cardiovascular diseases and cancer, and phytochemicals including phenolics, flavonoids and carotenoids from fruits and vegetables may play a key role in reducing chronic disease risk. Recent research has proved that sour cherry (Prunus cerasus L.) is a valuable natural source of some bioactive compounds important in human health preservation. According to the published data, the most important biological effects of sour cherry are connected — directly or indirectly — to their endogenous antioxidant behaviour as well as to their specific pattern of anthocyanin components. In the present work, we measured the total antioxidant capacity of some Hungarian sour cherry varieties in combination with their anthocyanin-, and vitamin-C content. In 2003, twelve clones were selected and grafted from a local sour cherry population called "Bosnyák" sour cherry grown in small home gardens and farms of the village Csengod (Great-Plain Region, South Hungary). Other Hungarian sour cherry varieties, i.e. cv. Újfehértói fürtos, cv. Érdi bőterrnő, cv. Debreceni bőterrnő, cv. Csengődi and cv. Kántorjánosi served as a control.

  • Possibility of modernization of Ganoderma lucidum strains substrate

    Ganoderma lucidum (Reishi mushroom), the object of our experiments, is also known to contain medicinal compounds. This fungus has been used for many centuries as medicine in China. The fruiting body of the fungus contains carbohydrates, amino acids, little protein, fat, alkaloids, vitamins and minerals. Two groups of its substances are reported to be effective particularly. One of them is constituted by the polysaccharides, whose antitumor and immunostimulating effects are well demonstrated, and the other is constituted by the triterpenes. The latter include ganoderic acids, ganolucidic acids and lucideric acids. These acids have been reported to suppress liver hyperactivity (Lelley 1999). The experiment was carried out with 8 Reishi mushroom strains in 3 repetitions. Experiments were performed on 3 different substrates The spawn run period took approximately 2 weeks, the first fruiting bodies appeared on the 33rd day from inoculation, but the formation of the fruiting bodies took almost 70 days on the different substrates. Spawn run presented a diversified picture as influenced by the specific substrates. No spawn run was seen with any of the strains on the substrate composed of 100% wheat straw. Among the strains the fastest spawn run was produced by GA02 and GA06. The earliest start of spawn run was registered for substrate 1 after 1 week.

    The Spent mushroom compost means the remained soil without sporophores after the productive.period. The leftover can't be used for mushroom growing again (Gy6r1i, 2001). Unfortunately spent musnroom compost still has bad judgment, as it would be garbage, but on the contrary it is a significant and valuable material, which is full of organic residue, a perfect soil structure improver, nutrition supplement and propagating medium. In our experiment we took the following mediums: control material with 50% flat moor peat and 50% high moor peat (Novobalt) content, 100% spent compost, 50% spent compost and 50% control medium, 25% spent compost and 75% control medium. On the day of plantation and after the forcing experiment we took sample from the control medium  and from all mixtures.

    It gets more and more popular to grow transplants in different trays for the field vegetable growing. The best transplant-growing substrates in the world are made of peat. The peat is applied to provide an optimal supply of plants with water and air. To improve the water regulation and the structure of the mixtures there are often mineral matters used in different amounts. By measuring the physical properties of soil mixtures based on peat, the flexibility can be measured by Stable Micro System type table penetrometer. Our measuring confirmed the increase of bulk and flexibility of different kinds of peat by watering.

  • Foliar application of zinc and its effect on greenhouse grown cucumber

    The experiment was conducted to examine the effect of the foliar application of zinc on yield and crop quality and on fruit mineral composition of cucumber plants (Cucumis sativus cv. Mustang) which were grown in peat in containers under unheated conditions and were not showing visible signs of zinc deficiency.

    In the trial the following 3 treatments were set up in 4 replications: Znl = 0.35 g/litre Zn, as foliar fertilizer; Zn2 = 0.7 g/litre Zn, as foliar fertilizer, control = no foliar fertilization. Foliar fertilization was applied 5 times with 10 day intervals. After their planting out the plants were fertigated daily with water soluble complex fertilisers. Fruits were harvested twice a week, 16 times in all, and were divided into three quality classes (class I, class II and substandard). Shoot length of the plants (plant height) was measured on 3 occasions. Zinc content of the fruits and leaves was analysed at two times.

    From the results of the trials it can be concluded that the 0.35 g/litre Zn (0.35 mg/ml) foliar fertilisation had beneficial effect on cucumber both in terms of yield and quality. Under the conditions of the experiment (daily fertigation through drip irrigation) the effect of a more concentrated foliar application of zinc seemed less beneficial.

    The zinc content of the fruits showed no evident increase in response to foliar fertilization, while a significant increase was seen in the leaves, particularly with the more concentrated Zn treatment. This indicates that in the case of cucumber zinc, through its assimilation in vegetative parts, has an indirect effect on fruit development.

  • Hydroponic pepper growing on baked clay pellets

    Nowadays one of the most important issues of greenhouse vegetable production in soilless media is the protection of the environment, in particular, the selection of the root medium to be applied. The objective of the trial was to test the applicability of baked (expanded) clay granules in hydroponic pepper growing with special respect to the growing pot (plastic tubes and buckets with bottom and lateral holes). From the result of the experiment it can be concluded that baked clay pellets, similarly to rockwool, are a suitable medium for providing root anchorage for pepper, however, it is necessary to examine some technological issues (e.g. fertilization, irrigation) prior to starting a large scale commercial cultivation. Relative to the three growing containers tested, it can be concluded that with the 4-8 mm crushed clay pebbles cultivation can be carried out successfully both in the white plastic tube and in the bucket, with the latter it is recommended to locate the drainage holes on the side of the growing container (at 6 cm from the bottom of the bucket).

  • Foliar Nutrition and Post-Harvest of Onion Seed: Effects of storage temperatures, storage period and foliar nutrition

    The aim of onion bulb storage is to meet consumer demand for extended availability of onions whilst maintaining product quality. The principal biological factors leading to onion bulb deterioration are respiration, resumption of growth and pathogen attack. In onion bulbs a dormant period, when sprouting and rooting cannot be induced, is followed by a period of internal changes that prepare the bulb for breaking of dormancy and subsequent growth. Out of storage, the bulb then proceeds towards flowering and seed production. Two successive winter seasons of 2008/2009 and 2009/2010 were conducted under sandy soil conditions to study the effect of spraying with 12 commercial compounds on yield and yield components of onion seeds and storage The seed yield of each commercial compounds plot from previous experiment was divided into two groups, storage under room temperature and 5°C. Seeds transferred immediately after drying to Increasing Export Competition of Some Vegetable Crops Project Laboratory located in Faculty of Agriculture, Cairo University. The effects of storage temperature, storage period and foliar with some commercial compounds on onion seed quality were considered. Storage in 5°C had the higher germination percentage than storage in room temperature. Results indicated that as storage period increased the germination percent decreased. The treatment with boron or amica in the first season had the highest germination percentage. While, the treatment with union Zn, union feer, union Mn, boron, elga 600, caboron, amica, hummer or amino X had the highest germination percentage in the second season. Storage in 5°C resulted in higher moisture content than storage in room temperature. Regarding the effect of storage period on moisture content, the water content was significantly increased with prolongation of storage period. The lowest values of water content were recorded for treatments with union feer, shams K or boron in the first season, and union feer, shams K, boron, magnesium, shetocare or hummer in the second one. Catalase activity was significantly decreased as storage period increased. The treatment with shams K, boron, shetocare or amino X had the highest catalase activity in both seasons. Peroxidase activity was significantly decreased as storage period increased. Foliar application with boron had the highest peroxidase activity in both seasons. Seed stored in room temperature had the higher malondialdehyde content than those stored in 5°C in the second season. The malondialdehyde content increased as storage period increased. The treatment with magnesium, caboron and the control in the first season, and the treatment with magnesium and the control in the second season had the highest malondialdehyde content.

  • Total anthocyanine content and antioxidant density of some Hungarian sour cherry varieties

In our work, we identified the total antioxidant activity, anthocyanine content and "antioxidant density" of sour cherry varieties named "Újfehértói fürtös", "Debreceni bőtermő", "Kántorjánosi" and "Érdi bőtermő" and those of the "Bosnyák" sour cherry clones. "Antioxidant density" is a biological value indicator obtained in a synthetic way, which indicates the antioxidant capacity of the particular food, e. g. fruit and vegetable, related to 1 Calorie.

  • Role of hydrogen peroxide and Pharmaplant-turbo against cucumber powdery mildew fungus under organic and inorganic production

    Cucumber leaves have been sprayed with a solution of hydrogen peroxide (H202) or Pharmaplant-turbo combined with organic or inorganic fertilizers under plasic house. Under the influence of H202, leaves exhibited resistant against Podoshaera fusca fungus, the causal agent of cucumber powdery mildew. H202 (15 mM) was able to decrease the disease severity from 90.4% to 12% in two experiments conducted in two seasons. Pharmaplant-turbo (Turbo) is new chemical compound and used as an antifungal compound. Turbo in 1 ml/L was able to decrease the disease severity from 90.4% to 11.5% in the both experiments as well. Both of H202 and Turbo were combined with organic treatment (compost + compost tea + seaweed extracts) which showed significant effect against cucumber powdery mildew fungus and strongly suppressed it as compared to control leaves. Organic treatment produced higher vegetative growth characters and greater early and total yields as compared to inorganic treatment, also organic fruits produced the lower nitrate content and the higher ascorbic acid content as compared to inorganic fruits. Our study have indicated that, H202 and Turbo combined with organic fertilizers play a role in the resistance of cucumber against powdery mildew by decreasing the disease severity. We suggest to give more attention to the direct application of H202 in low concentration and Turbo against powdery mildew diseases and other plant diseases.

  • Significance of vegetable and fruit processing industry with a special regard on berries and nuts

    The main goal of our paper is to evaluate the economic performance of processing industry and its significance within food industry, furthermore to define economic weight of processed goods made of nuts and berries. Fruit and vegetable processing industry plays a key role in Hungarian food industry: it provides 10% of its production value and revenue, its export is outstanding and its export-import balance was positive in the last 15 years. Purchase of berries has been continuously reduced in the processing industry, mostly raspberry and blackberry decreased. Nut products is and important group; their revenue was 12% of the industry’s revenue in 2012. Processed goods made of nuts and berries are high added value products, while the purchased quantity is small, the value of finished products is high, especially in case of nuts.

  • Observing population changes of thrips (Thysanoptera) species damaging forced pepper and their natural enemies

    By the strengthening of environmental protection and food safety efforts in Hungary, integrated and especially biological pest control methods should increasingly put forward, for which a solid knowledge on the life course and efficiency of natural enemies applied against certain pests is necessary. Pepper has distinguished significance in domestic vegetable forcing, and the profitability of production is determined primarily by the efficiency of the control of thrips pests. This is why we attached great importance to study what results may be expected by introducing arthropod predators (Amblyseius cucumeris, Orius laevigatus) to control thrips species under domestic conditions on rock wool in a long vegetation period pepper culture. We also liked to find out what kind of role the cultivars play in the change of phytophagous and zoophagous populations. The A. cucumeris predatory mite introduced in late January proved to be effective in controlling thrips pests until mid-April. Despite repeated introductions, the predatory bug O. laevigatus (Heteroptera: Anthocoridae) did not proliferate. Among the three pepper cultivars (Hó, Keceli, Titán) grown at Ráckeve, thrips species proliferated in the highest number on cultivar 'Hó', while the population of predatory mites was lowest on the cultivar 'Titan', compared to the other two cultivars.

    Everywhere in the world button mushroom is cultivated on heat-treated horse manure or on a compost mixture of straw, horse manure and chicken manure. In the ZKI trials continued on straw which seemed to be a simple and cheap substrate. To improve yield the N-content of the straw was increased by mixing it with wheat bran, alfalfa flour and ProMycel. Enriching agents were added to the dry heat-treated straw (100 "C) at 1, 2, 3 weight per cent. All the 3 agents increased yield as related to control. The highest yield was obtained with ProMycel.

  • Micropropagation of Rudbeckia hirta L. from seedling explants

    We conducted experiments for developing an in vitro micropropagation protocol starting from meristems of Rudbeckia hirta L seedlings. We pre-soaked the seeds in sterile ion-exchanged water for 17 hours, and then achieved surface disinfection in two separate steps. First, we used concentrated household sodium-hypochloride solution for 20 minutes and, also for 20 minutes, we applied hydrogen peroxide of 10%, which was followed by washing with sterile ion-exchanged water three times. For the propagation of seedling meristems, the combination of half-strenght solid Murashige and Skoog (1962) culture medium containing 10 mg/1 of kinetin or 2 mg/I of kinetin + 0.1 mg/1 of 2iP proved to be the most suitable. The average number of shoot-buds developed from the seedling axillary meristem in the best culture media varied between 5 and 17. Without separating them, we inoculated the shoot-bud clusters on MS culture medium containing 2 mg/1 of IAA. After four weeks of incubation we obtained elongated shoots which we separated and inoculated into a new culture medium and we obtained elongated roots. The rooted plants were gradually acclimatised in the cultivation room, potted and carried to a greenhouse, and then planted in open field for subsequent observation. By adopting this method, our laboratory started the micropropagation of the superior and/or elite genotypes of the Rudbeckia hirta L. being of special value in respect of breeding.

  • Does foliar nutrition influence the pear fruit quality?

    The influence of the foliar nutrition on the pear fruit quality (Pyrus communis L.) cv. 'Williams' was studied in years 1997 and 1998. We determined the contents of individual sugars (glucose, fructose, sucrose and sorbitol) and organic acids (malic, citric, fumaric and shikimic) by HPLC (High Performance Liquid Chromatography). The sizes of the fruits (diameter, length, weight) were measured as well as the amounts of soluble solids and titrable acids. The experiment comprised two treatments: the foliar nutrition and the control. In the treatment of foliar nutrition the trees were sprayed five times (from May 22 to July 7) with a foliar fertilizer, which contained 15% of P205, 20% of K20, 0.1% of Mn, 0.1% of B and 0.1% of Mo. The foliar nutrition influenced higher quantities of sugars (glucose, sorbitol, soluble solids) and organic acids (malic, citric) but had no effect on the contents of shikimic acid, pH juice and titrable acids. At the treatment of foliar nutrition a trend of decrease in the contents of fructose, sucrose, fumaric acid, boron, and zinc was noticed.

  • Investigation of nitrate accumulation in green pepper

    Pepper, despite being among the vegetables consumed in largest quantities, does not play an important role as a nitrate source due to the low nitrate accumulation capacity of the cultivars grown in Hungary. Iii the classification of the average nitrate levels or that of the detected hazardous levels it can be sorted into the very 'favorable' class not exceeding 200 and 500 mg/kg respectively. The different elements of the production technology, this way the N supply, do not influence significantly the amount of nitrate accumulated within pepper fruits.

  • Evaluation of producer organisations in the fruit and vegetable sector: Experiences from Hungary and Belgium

    This paper focuses on the Producer Organisations (POs) in the fruit and vegetable sector in Hungary and in Belgium. Findings are drawn from a survey among members and leaders of POs. The aim of the research is to evaluate the operation of the Hungarian POs and to compare the results with the Flemish ones based on the perception of the respondents. We mark out from the research results that Hungarian PO members and PO leaders' perception significantly different in the following constructs: satisfaction with the CMO, environmental friendly production and willingness to cooperate. The most important difference between Hungarian and Flemish respondents was about the willingness to cooperate, and about the innovations in trading activities.

  • Influence of foliar nutrition on apple production

    On the basis of different experiments the technology of intensive foliar nutrition was studied in apple orchards in the period from 1996 until 2000. Yearly apple nutrition programs based on soil analyses. The foliar nutrition program was prepared in accordance with the soil, fruit analyses and climatic conditions. If needed, certain improvements were made according to the analyses of leaves and precipitation in the current year. The richness of the soil and ratios between individual nutrients gradually improved. The foliar nutrition influenced the yield quantity, quality and flower bud differentiation. The yield was doubled and the mean of five years reached 70 tons per hectare. In spite of high yields there were no problems with alternative bearing. The analyses of soluble solids, firmness, fructose, glucose, sucrose, malic acid, citric acid in the fruits and mineral soil composition indicated that the produced fruits were of high quality despite greater yields.

    The aim of our experiments was to investigate the internal quality parameters of some old melon and watermelon landraces or varieties whether they have any desirable characteristics. Measurements were carried out using 8 different types of melon (Cucumis melo L.) and 8 accessions of watermelon (Citrullus lanatus [Thumb]), which were self pollinated under greenhouse conditions. Besides the determination of dry matter content; soluble solids, titratable acidity of the fruit juices, investigation of carbohydrates, total phenol content was measured by spectrophotometer. Total antioxidant capacities were determined spectrophotometrically using the FRAP method. We found some accesions both among melon and watermelon varieties, which could be characterized by outstanding inner content.

    The primer function of fruit and vegetable wholesale markets — which was the physical concentration of supply and demand previously — is changing gradually as consumer habits change and logistics functions (e.g. product manipulation, redistribution without the physical presence of the product) become more important with the technical development. Mainly individual growers sell their product to retailers at the Hungarian regional producers' markets and the Budapest Wholesale market on NagykOrosi Street, which is the largest wholesale market in Hungary regarding area, produce arrival and turnover. Parallel to the establishment of Producers' Organisations (P0) their market presence should be urged in selling their produce and also in ownership — and decision-making procedure — of the markets. The produce auction system and the on-line sales experiences of New Jersey State (USA) can contribute to the investigation of development possibilities and realization of development of Hungarian wholesale markets.

    Vitamin C (L-ascorbic acid) being essential for many living organisms, including man, became once more into the focus of interests because of its numerous physiological effects. Its anti-scurvy and anti-oxidant properties have already been recognised since long in the human body, but it turned out gradually that it has many other functions. In plants, its primary importance is defense against the photo-oxidative stress.

    The present review is intended to reveal some details of the artificial synthesis of vitamin C. Emphasis is put on the metabolism of L-ascorbic acid in higher plants. Biosynthetic processes, translocation and accumulation are discussed in detail on the basis of recent results published in the scientific literature.
