Brown rot blossom blight of pome and stone fruits: symptom, disease cycle, host resistance, and biological control
15-21.Views:1771In this paper, important features of symptoms, biology and biological disease management are summarised for brown rot blossom blight fungi of pome and stone fruit crops (Monilinia laxa, Monilinia fructicola and Monilinia mali). Firstly, European brown rot caused by Monilinia laxa is discussed highlighting the blossom epidemiology features, then host susceptibility of the most important stone fruit species including several Hungarian and international cultivars. At the end of this chapter, recent biological control possibilities against Monilinia laxa are also included. Secondly, American brown rot caused by Monilinia fructicola is discussed. Symptoms, biological features of blossom blight and host susceptibility of flowers to Monilinia fructicola are demonstrated. Finally, the symptoms and the biology of the least frequent species, Monilinia mali are shown.

Spore dispersal, diurnal pattern and viability of Monilinia spp. conidia and the relationship with weather components in an organic apple orchard
17-19.Views:719In a two-year Hungarian study, spore dispersal diurnal periodicity and viability of Monilinia spp. and their relation to weather components were determined in an organic apple orchard. Conidia of Monilinia spp. were first trapped in late May in both years. Low number of conidia were trapped until end-June. Thereafter, number of conidia continuously increased until harvest. Conidia in a 24-h period showed diurnal periodicity pattern, with th highest concentration in the afternoon hours. Spore viability with FDA staining showed that viability of
conidia ranged from 45 to 70% with showing lower viability in the dry than in the wet days in both years. Temperature and relative humidity correlated positively with mean hourly conidia numbers in both years. Mean hourly rainfall was negatively but poorly correlated with conidiacatches in both years. Results were compared and discussed with previous observations. -
Comparative study of sour cherry samples for their anthocyanin content measured by tools of the laboratory and by portable equipments
29-31.Views:1088The inner quality of fruits depends on many components. The analysis of pharmacologically important fruit species as the sour cherry consumed as a common food is an expensive task, mostly requiring an equipped laboratory. In sour cherry, one of its valuable components, the anthocyanin content deserves special attention. A portable analytical implement, which has been developed by our team measures the anthocyanin content on a scale of 1024 PharMgrades. The system is a member of the UVEX family of implements working with a microprocessor and performs the measurement quickly. The portable variant (UVEX-ML-1) does not require much training, the laboratory variant (UVEX UL-1) performs a large quantity of tests under modest laboratory conditions. Preparation of the samples is easily done, the necessary elements are available in the trade. The reagent is easily stored and dosed. The system was tested and proved to be of sufficient precision and the result showed acceptable variance according to the checks performed by a spectrophotometer in the laboratory.

Allyl isothiocyanate baited traps to monitor cabbage flea beetles (Phyllotretra spp., Coleoptera: Chrysomelidae)
95-99.Views:442A new trapping concept has been proposed based on a volatile compound, allyl isothyocianate, known to be attractant to some of these insects for a long time.
(l) The first question was whether this compound is effectively attractive to all flea beetle species attacking cabbage under our conditions? Field experiments were made at different localities with non-sticky baited traps early and late spring. Eleven Phyllotreta species attacking cabbages were captured at baited traps most of them were first observed at this bait. So the bait has proved to be sufficient for use for trapping purposes effectively.
- Based on these findings a second question arose whether the captured samples reflected the specific composition of natural flea beetle populations at trapping localities? To reply the question field samples were taken at four different kinds of cabbage crops and at a fallow ground in the close vicinity by a manual sampler device suitable to detect the local composition of flea beetles and trapping was made parallel with baited and unbaited traps from early spring to early autumn. No significant differences were found between the specific structures of Phyllotreta assemblages sampled with the different methods applied. This means baited traps reflected the specific composition of local Phyllotreta populations fairly well.
- Thirdly, the most effective trap design was searched for. Some sticky and non-sticky trap designs which had been developed to capture other insects were compared. The tested sticky and funnel trap designs baited with allyl isothiocyanate captured large numbers of flea beetles attacking cabbages. Results showed that non-sticky funnel traps were more effective than sticky delta traps. Accordingly, non-sticky funnel trap designs can advantageously be used and could possibly be recommended in plant protection practice to monitor flea beetles attacking cabbages as their catching capacity is considerably greater than that of the delta type and additionally captured beetles are much cleaner, more intact and consequently their identification is much easier.

Examination of valuable ingredients of some wild fruits
71-74.Views:385A possible way of the development of Hungarian agriculture is the selection and growing of new fruit species and varieties featuring special qualities, with high biological nutritive and health protecting properties due to their natural composition. A reserve for such new fruits is the native dendroflora, e.g. those wild-growing trees and shrubs of Hungary, which bear edible fruits. The publication is giving a summary of chemical analyses done on the fruits of the plants listed below. The research team on the project started the work in 2001 with
woody species (genera) as follows:
- common elder (Sambucus nigra) clone named Szcs-1, Szcs-2, Szcs-3, Szcs-4, Szcs-5, SzcsK-1, SzcsK-2
- dog rose (Rosa canina) types: clones named Sz-1, Sz-2, Sz-3, Sz-4 and Sz-5 .
- native rowans: Sorbus dacica, S.rotundifolia, S. degenu, S.bakonyensis cv. Fánivölgy
- hawthorns: Crataegus monogyna, C. orientalis,C..v lavallei.
- cornel cherry: Cornus mas cv. Császló.
The present paper is reporting on the content of the following compounds in the fruits: dry matter (refractometric values), total acid content, ascorbic acid, 13-carotene, pectin, minerals and carbohydrates. The results have shown that these wild fruits have excellent composition. Besides their curative effects, their content of minerals, ascorbic acid and 13-carotene has surpassed that of the traditional fruits. These fruits are rich in ascorbic acid, 13-carotene and pectin. The high content of the above-listed, biologically active compounds makes the new wild fruits studied suitable for the preparation (and later: mass-production) of special curative and exclusive products.

Pollen morphology of fruit species
49-57.Views:13875Size and surface morphology of pollen has been studied in 87 twit varieties of 10 fruit species during the period of 1990-1995. No preceding work of that type came to our knowledge, yet.
The samples comprised a wide variety of cultivars included male sterile, self-incompatible, partially self-fertile stone fruits, diploid and hexaploid plums, diploid and triploid apples.
The large number of species and varieties facilitated the comparison of items within and between the respective species.
It was stated that the size, shape and surface morphology of pollen is genetically determined and those data, combined with other variety characters, are suitable for the classification and distinction of varieties.
In assessment of pollen size and shape, their moisture content is crucial. The major diameter of the swollen pollen as well as the length and width of the dry grains are characteristic to species and/or to variety.
The width and shape changes largely with moisture content. Large grains are proper to quince, apricot, peach and almond, medium sizes are found in apple, sweet cherry, sour cherry, European plum, whereas small size is typical to Japanese plums.
The low number of varieties studied does not allow conclusions concerning differences within pears, quinces and almonds as species. In the rest of species, valid differences have been registered as between varieties.
Within species, as apple and plum, the effect of ploidy (i.e. number of chromosomes) was expressed in the size of their pollen. In stone fruit species, the correlation between size. of anthers and size of pollen grains was positive.
Genetic relations between the self-fertile sour cherry varieties of the Pándy type (Debreceni bőtermő, Kántorjánosi, Újfehértói fürtös) as well as the self-incompatible apricots of "giant" fruit size are supposed to be analysed by pollen studies but there did not turn out any decisive conclusion, yet. Other characters also should be considered.
The assembly of pollen characters is decisive in the determination of the variety. The ratio of empty pollen grains, the grain size and the density as well as the size of the pits on the surface are best suited to distinguish pollen lots.

Improvement of the grapevine variety ‘Kadarka’ by the selection of new clones
57-63.Views:321Red wine culture in Hungary was developed due to the grapevine variety ‘Kadarka’, originated from the Balkans, from the 16th and 17th centuries. ‘Kadarka’ was the first grapevine variety cultivated on the largest area in Hungary until the 1950’s, but its production area has been reduced significantly in the past decades. In the period of Hungarian grapevine reconstruction (from the 1960’s), the selection of the grapevine varieties and clones was determined by the system of cultivation (large growing space, large load and mechanized technology) that was based on the aspects of quantity. It did not promote the majority of the autochton and regional grapevine varieties to remain competitive. ‘Kadarka’ is a grapevine variety having an extraordinary variability in forms; however, a considerable part of its old stocks has disappeared. Nowadays, only two of its high yield clones are cultivated. ‘Kadarka’ becomes more differentiated from other, red wine producing, grapevine varieties, more preferred and newly requested by the fine aroma, spice, unique harmony of its wine less rich in tannin. The new market and environmental challenges in the field of wine production necessitate the preservation and improvement of the biological basis. In 2001 the Institute of Viticulture and Enology Pécs analyzed an old stock having a variability in forms in order to preserve the development and variability of the biological basis of ‘Kadarka’. Clones of great biological value were selected from it, with which the quality and yield security of ‘Kadarka’ can be increased. In 2010 and in 2012, six clones were submitted for state approval.

First evaluation of fruit quality of some new and old sour cherry cultivars in Hungarian climatic condition
37-43.Views:14638Indeed, in the last decade a large number of new sour cherry cultivars with new notable flavor characteristics have been released. There is no enough information related to qualitative characteristics which consistently segregated based on their predominant sensory characteristics. The present study carried out at tow consecutive years (2008 and 2009) and examined some qualitative characters which are the main importance in the specialty cherries trade, The main objective was to determine fruits quality of Érdi bőtermő, Oblacsinszka, Debreceni bőtermő, Csengődi, Pándy 279, Éva, Kántorjánosi, Újfehértói fürtös and Petri sour cherry cultivars. Changes observed in major characteristics such as fruit detachment force, width, length, weight, peduncle length, flesh firmness, brix, citric acid, Suger/acid ratio and pit weigh.While observed no change in flesh/pit ratio and Coordinate of colour (X*, y*, x*), hue angle and chroma value, in different years. In all measured factors, there was significant difference between selected cultivars of sour cherry fruit. Debreceni bőtermő showed higher values of fruit detachment force in 2008, while had the lover of fruit detachment force in 2009. Fruit firmness of “Érdi bőtermő” were monitored at lover value in both 2-year.

Review of sweet and sour cherry incompatibility

Historical apple cultivars that display high level of resistance to fire blight
19-23Views:317Following the first outbreak of fire blight caused by the bacterium Erwinia amylovora (Burrill) Winslow et al. in Hungary, we have started research with the aim to screen domestic gene sources, mostly historical Hungarian apple cultivars, for disease resistance as part of an apple breeding program for multiple resistance. The present study was conducted with the aim to choose the most tolerant historical apple cultivars among 25 selected cultivars by screening their behavior towards fire blight under controlled conditions. Six cultivars were shown to be the most disease tolerant: `Batul', 'London pepin', Nemes Sóvári Alma', `Sikulai', `Szemes alma', Wilmos renet'. We evaluated these cultivars by investigating both morphological- characteristics under original environmental circumstances and fruit quality. The cultivars had a remarkable degree of fire blight resistance compared to the control cultivars. These were not competitive with the commercially grown 'Jonathan M40' during cultivar tests but on the basis of certain characteristics they could serve as genetic sources for breeding new varieties.

Sensory analysis as a supporting method for marjoram breeding
73-77.Views:331Marjoram is one of the most important spices in Hungary, which is utilized both in phytotherapy as well as in alimentary industry. Organoleptic quality of the drugs of two Hungarian varieties of Majorana hortensis /'Francia' and 'Magyar'/ were investigated by two different methods of sensory analysis. The chemical composition of the material was checked by GC analysis of the distilled essential oil. Although their main compounds and proportions showed similar patterns, both the human and instrumental sensory tests based on the complex odour and aroma of the drug, proved a significant differentiation of the two varieties.
On the basis of our results, sensory evaluation may be a useful tool in the practice in determination of complex aromatic values of marjoram, as a spice. At the same time it seems to be a suitable method in promotion of breeding efforts.

New sweet cherry cultivars in intensive plantings
13-16.Views:1129The study took place in the largest sweet cherry plantation in West Hungary. The purpose has been the identification of those varieties, which will be suitable for intense cultivation, early fruiting and excellent fruit quality, moreover, the selection of the optimal phytotechnical procedures. At the same time, scion-rootstock combinations have been tested also from the point of view of growing intensity and fruiting in high-density plantation. The dense planting is induced to start fruiting early and yield regularly by special methods.Yielding was stimulated by maintaining the balance of vegetative-generative growth by binding the shoots, by summer pruning, by cuts on the trunk and root pruning. Best experiences have been found in yield and quality in the following varieties: Canada Giant, Carmen, Firm Red, Giant Red, Katalin, Kordia, Regina. Dense planting has been feasible also on vigorous rootstock, like P. mahaleb. Dwarfing rootstocks like P-HL-A, Gisela 6, accelerate the formation of flower buds and yielding earlier with fruits of adequate size. ‘Firm Red’ and ‘Giant Red’ excelled with their large fruit (>27 mm diameter) in all combinations, thus being promising under Hungarian conditions.

Cracking susceptibility of sour cherry (Prunus cerasus L.) in Hungary and relation to calcium application
109-118.Views:769The rain induced fruit cracking is a big, serious problem especially for sour cherry growers but in some year sour cherry growers had also problem with fruit cracking caused by too much rainfall in the harvesting season. The cracked sour cherry fruits can be easily infected by different diseases like Monillinia sp. Cracked and infected fruits can not be transported for long distance and using for preservation because they lost their market value by the pour fruit quality. There are two possibilities to protect fruits against the rain induced fruit cracking. The most effective protection technique is the plastic rain cover over the tree rows. The installation of these equipments is too expensive for the growers. That is the reason why researchers tried to find other less expensive and sufficiently effective ways like sprayings different mineral salts, hormone and other type chemicals against the rain induced fruit cracking. Several calcium formulas calcium chloride (CaC12), calcium hydroxide (Ca (OH),) and calcium nitrate (Ca(NO3)2) can be sprayed in appropriate solution concentration.
The aim of our trial is to determinate the fruit cracking susceptibility of wide grown Hungarian sour cherry varieties and find the most effective calcium formula and its concentration for spraying in orchards to prevent the fruit cracking. In the first trial year (2006) cracking index of tested sour cherry varieties were determined under field and laboratory conditions. Under field conditions were not found differences between cracking tendency of tested cultivars. After results of immersing fruits in distillated water for 24 hours tested sour cherry varieties were divided to three groups by the susceptibility to rain induced fruit cracking: very susceptible (`Maliga emléke', 'Piramis', 'Érdi jubileum', 'Erdi nagygyümölcsű’ and 'Meteor korai'); susceptible ‘Érdi bőtermő, Tandy 279' and Cigány 59.; moderately susceptible/tolerant ("T" and "R" clones). In the second trial year (2007) calcium chloride (CaCl2) and calcium nitrate (Ca(NO3)2) were sprayed in 0,35m/m%; 0,5m/m% and 1,0m/m% solution concentration. One more commercial product "Damisol-Kalcium" was also applied in the advised 1,0m/m% concentration. Like in the trial year before (2006) under field conditions we did not kept differences between the cracking susceptibility of varieties and calcium treatments. As the result of laboratory testing (immersing calcium treated fruits in distillated water) we kept that calcium chloride (CaCl2) seems the most effective against the fruit cracking in 0,5m/in% solution concentration. The other calcium formulas also decreased the cracking ratio but in less scale.

Nectar production and pollination in peach
123-126.Views:1326Observations were made at two growing sites, Siófok and Szatymaz, in the years 1998 and 1999, on 16 peach varieties. The production of nectar was measured, the foraging behaviour of bees, fruit set and the effect of exclusion of bee visits for different periods were observed systematically.
Production of nectar confirmed earlier data, 9.09 mg per flower in average. There was large variation due to variety and date of observation. Bee visits were relatively abundant. At favourable weather, 1 to 30 visits/flower/day occurred in the average. Artificial hand pollination increased fruit set, substantially. Open pollination yielded superior fruit set than self pollination, without bees. Supplementary bee pollination can be regarded to be beneficial to peach production as well.

Preliminary data on attractiveness of phenylacetaldehyde-based lures on economically important plant bug pests (Hemiptera: Miridae)
87-94Views:807Several plant bug species (Miridae) are important pests of crops and vegetables, thus monitoring them is of essential importance for effective pest control. During the current, preliminary study synthetic plant volatile combinations were tested in field conditions in Hungary in alfalfa fields. Beside semiochemical baited traps, sweep-netting was also performed. In the experiments three plant bug species were found in higher numbers: Adelphocoris lineolatus, Lygus rugulipennis and L. pratensis. As a novel, interesting finding L. pratensis was attracted to phenylacetaldehyde baited traps. For all species, both males and females were trapped in all combinations. Sweep-netting and semiochemical baited traps showed different efficacy in case of the three species, as sweep-netting catches were highly biased for A. lineolatus, which indicates the higher efficacy of this method as compared to the tested semiochemical-baited traps. On the other hand, semiochemical baited showed better performance for L. rugulipennis and L. pratensis. For these species none of the tested combinations performed better than phenylacetaldehyde baited traps. The potential implication of results in view of monitoring are discussed.

Vegetative Indicators of sour cherry cultivars and resistant clons
55-58.Views:358Sour cherry is a hungaricum. Hungary has several excellent and self fertile sour cherry cultivars. Hungarian sour cherries have a name for fruit quality and they are suitable for fresh consumption. Today breeding is focused not only on fruit quality, but also on disease resistance. The new, investigated cultivars have these characteristics too. But growth characteristics are also very important because they contribute to successful production. The vegetative and generative properties of the cultivars are different. If a cultivar is very productive, the ignorance of cultivar-specific pruning may result in the decrease in tree condition and fruit quality. The properties of producing fruiting wood greatly determine the renewal capabilities of cultivars. Knowing these properties is essential in case of sour cherries, the fruit species that requires a lot of sunlight and tends to produce bare wood. The research of candidate cultivars until now focused on fruit quality. Our aim was to investigate the vegetative characteristics of the resistant ‘bosnyák’ cultivar group in detail, defining the growth characteristics of these cultivars.

Analyses of Hungarian sour cherry germplasm with simple sequence repeat markers
27-31.Views:1354Twenty-four sour cherry cultivars (genotypes), belonging to four cultivar groups were fingerprinted using microsatellite markers. All genotypes have been arisen from the Carpathian basin, which could be secondary gene centre of sour cherry, since its progenitor species, ground cherry and sweet cherry overlap here. Five SSR primer pairs, earlier used for fingerprinting Turkish sour cherry germplasm were tested. None of the five primer pairs showed any polymorphism within the cultivar groups. The primer pairs were able to distinguish between the cultivar groups. The Oblacsinszka and the Cigánymeggy cultivar groups were the most difficult to separate, while the Pándy cultivar group was the most distinguishable.

Self-fertility studies of some sweet cherry (Prunus avium L.) cultivars and selections
21-26.Views:294Fruit set of two sweet cherry cultivars (Alex' and 'Stella' ) and four Hungarian selections have been studied over two years following open pollination, unassisted self-pollination (autogamy) and artificial self-pollination (geitonogamy). Among accessions 'IV-6/240' proved to be self-sterile, while the other five revealed to be self-fertile. Significant differences have been found in fruit set among years and among pollination treatments but not among self-fertile accessions. Fruit set following unassisted self-pollination was significantly lower than of other pollination treatments. Thus pollen transfer is essential for profitable yield in sweet cherry growing.
There was no significant relationship in the fruit set of open- and self-pollination.

The selection and cultivation of Tilia clones tolerating polluted urban environment
82-86.Views:512Two urban stress tolerant Tilia clones were selected by the Department of Floriculture and Dendrology. The mother trees of the Observed clones were found in an alley of linden trees, settled on a traffic island of a busy two-lane road.
Tilia hybrid 'Saint Stephen' has a beautiful cone-shaped crown, the leaves are bright green and they keep their green colour for much longer time than the leaves on the other trees in the alley. In the nursery the Tilia hybrid 'Saint Stephen' was budded on T. cordata, T. platyphyllos and T. argentea and it had good compatibility with every rootstock. The average height of the one year old buddings was 200 cm and the buddings kept their good growing capacity in the following years as well. They had an outstanding growing capability comparing with the other Tilia cultivars.
Tilia platyphyllos 'K3' clone has similar cone-shaped crown. The growing vigor and urban stress tolerance seems to be better than Tilia hybrid 'Saint Stephen'.

Security of growing habits and bud formation of German sour cherry varieties
45-48.Views:811Intensive sour cherry production is concerned to find the most productive varieties under special growing conditions. High planting density, adapted to manual picking or on the other hand to mechanical harvesting. Almost as important is the prolongation of the ripening season by enlarging the choice of varieties. Unfortunately, three of our four leading commercial varieties are ripe almost at the same date.
Therefore, new varieties ought to be examined thoroughly. In the Pallag Experimental Station of the Debrecen University, five European varieties have been grown (’Schattenmorelle’, ’PI-SA 12,100’, ’Jade’, ’Gerema’, ’Achat’) and a Hungarian one, ’Debreceni bôtermô’ used as a check for the experiments to compare their growing and yielding habits in 2010. The plantation was three years old, standing on Prunus mahaleb rootstocks, in high density (5 x 2 m) and trained to slender spindle crowns. The results are proving that some of the varieties in
question are suitable to prolong the harvesting season. Growing habits and yields of the varieties related to the variety ’Debreceni bôtermô’ were similar or even better as ’Jade’, ’Gerema’ and ’Achat’. The ’Jade’ excelled with its vitality and ’Gerema’ with its generative character. Further studies are expected to prove the utility of
one of them at least to enlarge the ripening season on the fruit market. -
Promising white poplar (Populus alba L.) clones in sandy ridges between the rivers Danube and Tisza in Hungary
113-116.Views:416White poplar is a native stand-forming tree species in Hungary, covering 3.1 per cent of the forested area. More than 70 per cent of the white poplar stands can be found on calcareous sandy sites in the Danube—Tisza region, so they play a significant role in the poplar management of this part of the country. The most important task ahead of Hungarian poplar growers is to improve the quality of poplar stands and plantations based on selecting new clones and cultivars. The growth and yield of four promising white poplar clones was evaluated on a marginal site in central Hungary. The clones `1-1 425-4' (Populus alba x Populus alba), and 11 758' (Populus alba Mosonmagyaróvár 124) seem to be suitable for wood production, while the 427-3' (Populus alba x Populus alba cv. Bolleana) and 422-9' (Populus alba x Populus grandidentata) clones (with decorative stem form) could be better used for tree lines and ornamental plantations.

Utilisation of data raised in blooming phenology of fruit trees for the choice of pollinisers of plum and apricot varieties
35-41.Views:1081Information concerning the blooming time of stone fruit varieties is, first of all, an important condition of finding suitable pollinisers securing adequate fruit set. For that purpose, varieties are assigned to blooming-time-groups. Depending on the number (3 or 5) of the groups, i.e. the length of intervals separating the groups established, pollenisers are to be chosen for self-incompatible and partially self-fertile varieties belonging to the same blooming-time-group. The mutually most overlapping blooming periods of the respective varieties should be found by raising data of their blooming phenology, i.e. dynamics, which is compared by drawing their phenograms and calculating blooming (V) indices. Variety combinations have to be checked, however, concerning mutual fertility relations of the respective pairs of varieties. That is most important in the case of Japanese plums because of the abundant incompatible combinations. Synchronous blooming has been determined by assigning the varieties to blooming-time-groups, or comparing overlaps of blooming phenograms, or by blooming (V) indices. Synchronous blooming phenology has been studied in European plum varieties (111 varietiy combinations) Japanese plums (156 variety combinations) and apricots (153 variety combinations) under Hungarian conditions, over several seasons. In determining overlaps, the less favourable season has been considered as decisive. Polliniser combinations have been chosen with at least 70% synchronous blooming. Blooming time of varieties is an important part of the variety descriptions. Blooming dates may serve also for the estimations of frost risk or security of yield.

Effect of certain bentonite products on the temporal variation of elemental content in white wine
15-21.Views:316The 'terroir' character of wines can be shaped with certain technological elements such as bentonite fining. Bentonite is an agent used for the removal of thermolabile proteins in wines. However, during fining, the quantity of certain wine components can change, including the elemental composition of the wine. According to the recommendations of bentonite suppliers, wines should be racked off the bentonite fining sediment within 2-3 weeks. However, in winemaking practice, wines can remain on bentonite fining sediment for up to 1-4 months. One reason for this is that racking wines off the sediment has a negative impact on wine quality. Thus, it is a question of how much the later or earlier racking time can alter the elemental content of the wine. Our study aimed to examine the elemental content of wines treated with three different bentonite products sampled from over the bentonite fining sediment at various time points. Our investigation was conducted with the 2019 vintage white wine of the University of Debrecen. Fining was performed with three bentonite products: Nucleobent, BW200, and Granubent Poretec. The sampling schedule following fining was: 0 days - unfined control, 7th, 14th, 27th, 56th, and 85th days. The macro-, meso-, and microelement contents (P, K, Ca, Mg, S, Al, Na, B, Cr, Mn, Fe, Co, Ni, Cu, Zn, Sr, Cd, Ba, and Pb) of the wines were determined using ICP OES and ICP MS devices. Our results showed significant changes in the Al, Na, Cr, Fe, Co, Ni, Sr, Ba, Cu, and Pb contents of the wines depending on the sampling time. It is noteworthy that all three bentonite products increased the Al and Pb contents of the wines. For Fe, dynamic increases were observed over time with the BW200 product, reaching the threshold value of susceptibility to brakeage. However, from a winemaking technology perspective, it was favorable for the Cu content of the wines to decrease with both earlier and later racking times, for all bentonite products examined. Based on the elemental analyzes of the white wines studied, it can be concluded that racking of wines should be timed according to the recommendations of suppliers.

Large variations in antioxidant capacity and contents of Hungarian sour and sweet cherry cultivars
25-28.Views:1137Sour cherry (Prunus cerasus L.) cultivars grown in Hungary are of local origin while most sweet cherry cultivars in Hungary are introduced from other countries.A great phenotypic variability is displayed by both species. In the present study, we analyzed 10 sour and 9 sweet cherry cultivars for their antioxidant capacity, total polyphenolics (TPC) and total anthocyanin (TMAC) contents. In general, sour cherries showed higher levels of antioxidant capacity, TPC and TMAC. The anthocyanin contents varied from 0.16 to 6.85 and 1.41 to 127.56 mg/100 g for sweet and sour cherries, respectively. However, TMAC generally seems to have a limited influence on the antioxidant capacity of cherries.An amarelletype sour cherry, ‘Pipacs 1’ showed the highest antioxidant capacity (21.21mmolAA/l) and TPC (44.07mgGA/l) in contrast to its lowanthocyanin content. The detected diversity presents a choice that can satisfy different consumer preferences, and meet specific nutritional requirements.
