  • Consumer preference for apples: the role of attributes influencing the choice and consumption

    Consumers consider good quality fruits to be those that look good, are firm and offer good flavour and nutritive value. Nowadays, consumers are, however, increasingly  interested  in food qualities which  cannot  be discovered  by  looking, tasting or smelling  the products but their roles are not yet really cleared up. Therefore the objective of this study was to explore the importance of selected kinds of attributes (taste, size, colour, cultivar, origin and price) in fluencing the choice of apples of customers. In accordance with several authors, fruit qualities (taste, size and colour) seemed to be the major attributics influencing the choice of apple independently of people's age and gender. However, the size of fruit had lower importance with increased age. Generally, females gave higher importance rating for most attributes than did male. The price was getting more important for consumer's choice with age which can be connected with their socioeconomic situation. The origin of fruit and the cultivar did not have important influence on consumer's choice. Authors also investigated the preference of consumers for six selected apple varieties ('Jonagold', 'ldared', 'Royal Gala', 'Golden Reinders', 'Braeburn' and 'Granny Smith'). and pointed out the role of the origin in fruit quality and in choice of apple in the case of 'Granny Smith' cultivar. Apple fruit samples from Austria, Argentina, Chile, Hungary and South Africa were involved in this study. Authors evaluated fruit quality parameters of above cultivars and compared them to consumer preference. Consumer preference usually represented the quality attributes of the fruit well. It is also concluded that degree of liking of apple cultivars varies through gender and age. Children and young consumers preferred 'Royal Gala', 'Granny Smith  and 'Braeburn' mostly. In spite of 'Idared' is one of the cultivars grown on the largest area in Hungary, the lowest preference ratings were given for it in both gender categories. Middle-aged consumers (between 25 and 50 years or age) preferred crispy apples with red or blemished skin color ('Royal Gala' and 'Jonagold'). 'Jonagold' and 'Idared' were the most preferred cultivars for the consumers above the age of 50 likely because of their relatively low price, as price plays a significant influencing role in the purchase of these consumers. The relatively expensive and soury 'Granny Smith' appeared not really preferred by this age group. In spite of the significant differences in instrumentally measured fruit quality parameters among 'Granny Smith' fruit samples from different countries, consumers did not give significantly different preference rating scores for those.

  • Effects of weather characteristics on blooming dates in an apple gene bank plantation between 1984 and 2001

    The aims of this paper was to investigate the flowering characteristic of apples and their relationship to meteorological parameters. The trees observed are grown at Ujfehert6, Eastern Hungary in the plantation of an assortment (gene bank) with 586 apple varieties. Each of the varieties were observed as for their dates of subsequent phenophases, the beginning of bloom, main bloom and the end of bloom over a period between 1984 and 2001. During this period the meteorological data-base keeps the following variables: daily means of temperature (°C), daily maximum temperature (°C), daily minimum temperature (°C), daily precipitation sums (mm), daily sums of sunny hours, daily means of the differences between the day-time and night-time temperatures (°C), average differences between temperatures of successive daily means (°C). Between the 90th and 147th day of the year over the 18 years of observation. The early blooming varieties start blooming at 10-21 April. The varieties of intermediate bloom start at the interval 20 April to 3 May, whereas the late blooming group start at 2-10 May. Among the meteorological variables of the former autumnal and hibernal periods, the hibernal maxima were the most active factor influencing the start of bloom in the subsequent spring.

  • Large variations in antioxidant capacity and contents of Hungarian sour and sweet cherry cultivars

    Sour cherry (Prunus cerasus L.) cultivars grown in Hungary are of local origin while most sweet cherry cultivars in Hungary are introduced from other countries.A great phenotypic variability is displayed by both species. In the present study, we analyzed 10 sour and 9 sweet cherry cultivars for their antioxidant capacity, total polyphenolics (TPC) and total anthocyanin (TMAC) contents. In general, sour cherries showed higher levels of antioxidant capacity, TPC and TMAC. The anthocyanin contents varied from 0.16 to 6.85 and 1.41 to 127.56 mg/100 g for sweet and sour cherries, respectively. However, TMAC generally seems to have a limited influence on the antioxidant capacity of cherries.An amarelletype sour cherry, ‘Pipacs 1’ showed the highest antioxidant capacity (21.21mmolAA/l) and TPC (44.07mgGA/l) in contrast to its lowanthocyanin content. The detected diversity presents a choice that can satisfy different consumer preferences, and meet specific nutritional requirements.

  • Sensorial appraisal of sour cherries grown by environmental technology

    Sour cherry samples have been tested by a panel of potential consumers, and the judgments expressed by points given for each attribute. The correlation of individual traits with “general impression” has been explored. Primary raising of data was aimed to evaluate the effect of environmental growing technology upon sensorial impression of fruits for fresh consumption. Organoleptic tests consist of tasting and filling out of forms with numerical data as ratings them regarding taste, flavour and flesh firmness. The values of coefficients of correlation showed that a couple of other attributes as appearance, juiciness and sugar/acids perceived were irrelevant from the point of view of acceptance, i. e. the general impression.

    In this study. we are partly focusing on consumer acceptance of fruit, like fruit cracking, weight and flavours, and maturation, fruit density and content of nutrients which are undelie consumer acceptance, and important equally to the growers and marketers. the results on the dynamics of N-uptake corresponded ti thephenological phases of cherry and independent on the applied treatments. Younger leaves contain more N than elder due to the effective N uptake of young leaves. Based on the measurements conducted in June, the P content of leaves was in low P supply category at the control and the Benefit treatment, while was in the lower range of optimal category at Damisol treatment. According to our measurements, the K of cherry leaves decreases continuosly until September, expcept the control at which it increased from the end of June to September. the fruit weight was increased significantly by applying Benefit PZ. the best results for fruit cracing observed at Benefit treatment too. The best result for fruit density was observed at Damisol treatment.

  • Blumeriella jaapii (Rehm) v. (Arx) infection of some sweet cherry cultivars in two years with different precipitation conditions

    We examined Blumeriella jaapii (Rehm) v. (Arx) infection on 21 sweet cherry cultivars in the cultivar-collection of the Experimental Station Pallag of the University of Debrecen, in 2004 and 2005. Considerable differences were detected in the infection degree of the different cultivars. In 2005, due to the more humid weather, the average infection highly exceeded data of the previous year. No symptomless cultivars were detected in either year. The least sensitive ones were Linda and the cultivar 11/106. The most sensitive cultivars were Early Müncheberg, Biggareau burlat and Round Solymári. Infection degrees of Alex, Rita and Vega were different from those of other cultivars on the basis of the two experimental years.

    It is important to consider both the specific weather conditions of the year and cultivar resistance at planning the plant protection system. It is recommended for each cultivar to perform a fungicide-spaying after the harvest.

  • Rheological evaluation of industrial tomato in raw and processed condition

    Tomato (Lycopersicon esculentum Mill.) is the second most important vegetable with one of the biggest producing areas worldwide, and an increasing tendency in Hungary as well. To fulfil the growing demands of the industry the producers must use the most suitable genotypes for the given conditions. In the experiment six genotypes (‘Heinz 1015 F1‘,‘Heinz 9478 F1‘,‘Kecskeméti 407‘,‘NUN254 F1‘,‘Prestomech F1‘ and ‘Rustico F1‘) were evaluated for different quality parameters: fruit shape index (length/diameter), firmness (g cm-2), force needed to tear the skin (kg-1) and consistency of tomato puree (g*sec). According to the results, the ‘Heinz 1015 F1‘ and ‘Heinz 9478 F1‘ were the most suitable genotypes for industrial processing in the mean of fruit quality. Strong positive correlation between consistency of juice and fruit shape index (r=0.891) and firmness of berry (r=0.882) was confirmed. The results have proved the necessity of these quality parameter measurements, which are important for the evaluation of raw material.

  • Evaluation of sour cherry varieties grown with environmental technology

    The evaluation of a produce is an important moment of predicting its success on the market. The general impression, which is decisive, when a consumer chooses to purchase the commodity, should be interpreted in more objective, measurable terms. Primary data have been collected on fresh fruits derived from different growing technologies by organoleptic tests and the data filled up in the forms are processed with correlation analysis. The components were: taste, aroma, flesh firmness. The coefficients of correlation showed that the rest of characters as the appearance, juiciness, and the sugar/acid ratio.

  • Assessment of apple varieties based on consumer judgement on their fruits of organic production for fresh consumption

    The lack of information is often cause of the insufficiency of attributes being developed and appears on the new commodity characterising its utility. Neither own nor other information is presented. For improving this handicap, we endeavoured to praise apple products grown by biological methods and explain their properties as taste, skin, colour, consistency, and size. In addition, we explore the relation between general impression and the individual properties. The scrutiny starts with collecting of primary data on 9 samples taken from biologically grown apple varieties kept over 60–90 days in a store and offered to the consumers. The test is based on an organoleptic assessment (records are registered in a questionnary). The individual judgements are processed and coefficients of correlation between the traits (taste, skin, size, colour) calculated. The validity of the mathematically proved relations is considered to be decisive judging the preferences in consumption of fruits.

  • Possibilities and limits of use plastic constructions in fruit growing technologies

    On the Experimental Station Pallag of Debrecen University different combinations of fruit species and rootstocks have been raised under and without plastic foil cover in 2002. The growth and productivity of the grafts was our objective of comparison. Results revealed substantial differences in fruit set and yield depending on species and varieties. Sweet and sour cherry varieties grew much shorter under the plastic cover, whereas apricots, peaches and plums set fruit much more eagerly compared with the trees outside the plastic cover. Outside the plastic cover, the trees were much more developed at the beginning of their fruiting period. In spite of that, the growing processes were more intense under the foil. The differences are allegedly due to the repeated summer pruning necessary under the restricted space of the foil, on the other hand, due to the root concurrence because of the dense planting. Regarding the inner properties of the fruits, soluble solids, sugar and acids were higher outside, whereas macro- and mezzo-elements (P, K, Ca, Mg) were more abundant in fruits grown under the foil cover. Further efforts to explore those relations with other varieties and rootstocks are justified.

    In a former paper we treated the same relation comparing varieties frown in the biological or organic system of growing, now the tests have been performed with samples grown by the integrated system. The scores registered properties as taste, skin, colour, consistency and size.   • In vitro effect of different cytokinin types (BAP, TDZ) on two different Ocimum basilicum cultivars explants

    Ocimum basilicum L. (sweet basil) is an economically and ethnobotanically important aromatic, medicinal, ornamental and culinary herb, with a very wide gene pool, that is sensitive to cold and prone to several plant pathogens that can demolish harvest and lessen yield. In this research, the effects of BAP (6-Benzylaminopurine) and TDZ (Thidiazuron) on different genotypes for in vitro cloning were determined, in order to provide a detailed protocol guide concerning Ocimum basilicum L. propagation. The results from the O. basilicum seed propagations revealed that the best condition for the secondary shoot growth is with 5.0 mg/l TDZ or 1.5 mg/l BAP on all types of explants except the root, the secondary root growth can be obtained on all types explant with any BAP concentration and all cytokinins can induce callus on all types of explants. On the whole, it shows that multiple secondary shoot induction and regeneration in Ocimum basilicum L. is regulated by appropriate cytokinin concentration.

  • Pruning and incidences of diseases and pests in environmentally oriented apple growing systems: some aspects

    In Hungary, fruit growers are increasingly interested in environmentally oriented growing methods, such as organic and integrated systems. The main factor in creating such systems is the establishment of a system of cultivar-pruning-plant protection based on production technology. Therefore, our aim was to examine the susceptibility of apple cultivars to diseases and pests and the effect of pruning technique on diseases and pests in organic and integrated growing systems.

    Two pathogens (Venturia inaequalis, Podosphaera leucotricha) and two pests (Leueoptera malifoliella, Pannonychus ulmi) were observed in organic and integrated systems under "strong" and "weak" pruning techniques. Our results showed that, compared to integrated production, the pathogens and pests infected the trees more in the organic system. The pruning technique affected mainly the cultivars susceptible to diseases and pests. In general, the "weak" pruning technique correlated with a higher level of damage caused by diseases and pests than the "strong" pruning technique, especially in the organic growing system. The reason that techniques should be carefully chosen is that shoots grow faster and more vigorously after employing the "strong" pruning technique. This supports a better preservation of the trees, as a result of reduced susceptibility of plant tissues to diseases and pests.

  • Evaluation of cauliflower genotypes by different growing method

    Cauliflower is currently cultivated on 350-400 thousand hectares in the world and around 1500 ha in Hungary. Its cultivation requires considerable expertise as it is sensitive to environmental factors and adequate nutrient supply. The aim of our experiment was to compare three genotypes (Abeni, SV5777 AC and Telergy F1) by different growing method – under plastic tunnel and on open field. On open field the planting was on 19th of March, 2018, the row and plant distances were 45 and 35 cm. Under plastic tunnel the transplants were set out on the same day with the same genotypes as on open field, with 55x45 cm arrangement. The results have proved that cauliflower curds from plastic tunnel was two times bigger than on open field. The more protected environment had a positive effect not only on the mass of the curd, but also on the biomass production. Among the examined genotypes Abeni showed the highest yield (about 1 kg/plant) under plastic tunnel. The shape of the head is important for the market. According to our data, we measured the width and height of the curd. Open field conditions induced wider curd with longer stem and caused lower product quality and weaker correlation between the parameters than plastic tunnel.

    Boron (B) is an essential micronutrient in plants especially in fruits. Despite of this fact there are very few information about its application, uptake and symptoms in Hungarian fruit growing sector. Nowadays we should consider the effects of weather conditions on soil B availability increasingly according to the climatic anomalies. Identifying of internal and external symptoms of plant parts (leaf, fruit) is help for growers to recognize the deficiency and excess symptoms in time. Methods and application rates of boron fertilization provide further information for growers to achieve qualify-oriented fruit growing among Hungarian conditions. The aim of this minireview is to focus on the importance of boron in fruit nutrition.

  • The effect of cooling irrigation on the blooming dynamic of plum

    The objective of the present study is to explore the effect of cooling irrigation (aspersion) on the beginning of bloom and on the micro-climate of the plantation. The results show that the water sprayed in the orchard by micro-jet influenced decisively the temperature of the plantation. At higher temperatures (around 20 °C), the drop of temperature may attain 5–7 °C. A low relative humidity of the air may increase the relative effect, The frequent repetition (20 minute intervals) may keep the temperature low also in the buds. The beginning of bloom may delayed for more than ten days. The dynamics of blooming was characterised by a logistic curve in the treated as well as in the control plot. In the treated plot, the curve was steeper than in the control in spite of equal temperatures measured in the plots. Under our (Hungarian) climatic conditions, the method is successfully used to delay blooming dates. The main result is the diminution of the frost damage in the spring and the security of yield. The costs and water requirement should be calculated later.

  • Effect of late spring frost event on nutrition aspects of a sour cherry orchard in East Hungary

    Similarly to 2007, 2011 was also critical year for fruit growers in Eastern-Hungary. Serious frost damage was observed at late blooming period (6 May (T=-1.6°C)) in this region, which caused approximately 60-65% of fruit loss. The aim of this study is to investigate the effects of a spring frost event on nutrient uptake and status of the trees of a sour cherry plantation at Újfehértó. The symptoms of frost were observed visually. This visual observation was confirmed by SPAD readings. The frost affected the macroand micronutrient contents of leaves. It was found that the frost affected the nutrient uptake negatively, but the effect of it was not significantly sometimes. It can be stated that the nutrient demand of trees can be supplied only under even worse conditions.

    There is a very difficult equation for malnutrition and over-consumption. That means malnutrition even of vitamins and/or minerals (Ca, Cu, Fe, I, Mg, Se and Zn, vitamin A) affects more than two billion people worldwide, largely due to low concentrations or poor bioavailability of the nutrients in the diet. In some developed countries in contrast, over-consumption, particularly of over-refined cerealbased foods, has contributed to the development of an epidemic of metabolic diseases. So, producing nutritious and safe foods sufficiently and sustainably is important target at the same time challenge of modern agriculture. In the past, great efforts have focused only on increasing crop yields, but enhancing the concentrations of mineral micronutrients has become an urgent task. The main daily food source is the staple crops specially in developing countries of the world, i.e., wheat, rice, cassava, beans, sweet potato or maize. These kind of plants are often deficient in some of mineral elements. Thus, the increasing of bioavailable concentration of micronutrients in edible crop tissues (via biofortification) has become a promising strategy in modern agriculture, providing more nutritious foods, to more people, with the use of fewer lands. Biofortification of these trace elements can be achieved application with agronomic process such as soil or foliar fertilization or crop breeding even conventional technic and/or genetic engineering. This review highlight progress to date and identify challenges faced in delivering biofortified vegetable crops as well as the agronomic approaches and tools to improve crop yield and micronutrient content of food crops.

  • Variation between some apricot varieties in regard to flowering phenology in Boldogkôváralja, Hungary

    The aim of this study was the estimation of blossoming of 14 apricot cultivars in Boldogkôváralja in 2009, 2010 and 2011 seasons. And this will help growers to select appropriate varieties to their weather conditions. For this target the blooming period of 19 apricot varieties of different origin was observed in three subsequent years. There was no large difference in the beginning of blooming in the different years, and the greatest variation between the start date of flowering was about 1 to 3 days as the place of experiment site near to northern border and also, length of flowering period of apricot trees is also inversely related to date when blooming started. The little differences in flowering dates and flowering periods due to the high temperature through the three seasons of study.

  • Training and maintaining spindle crowns in cherry production

    In cherry production all over the world, intensification of the technology is the main objective of research. Small crowns and high planting densities are aimed to attain high yields per hectare and easier harvesting. Rootstocks of reduced vigour for cherries are more difficult to find than in other fruit species, and the rejuvenation of fruiting structures by pruning is aggravated by the reduced vigour. Intensity of the technology ought to be achieved by a thoughtful application of the technological elements (timing of pruning by various intensity) moreover, by finding different policies for individual varieties. Sweet cherry varieties dominating the assortment proved to be very variable regarding their growing habits. In our experiment, we dealt with the slender spindle and free spindle forms, and how to train the trees to develop and to maintain the desirable form depending on the respective variety in order to achieve the right load of flower buds and yields repeatedly. In this paper, we examine the most important practical issues with the training and maintaining of the crowns of cherries with circular projection and central axis grafted on Prunus mahaleb rootstocks

  • Detection of natural infection of Quercus spp. by the chestnut blight fungus (Cryphonectria parasitica) in Hungary

    The chestnut blight fungus Cryphonectria parasitica (Murrill) Barr [syn.: Endothia parasitica (Murr) Anderson] caused almost total destruction of the American chestnut (Castanea dentata) and widely spread on European chestnut (Castanea saliva) in many European countries. In Hungary, because this fungus threatens most of the Hungarian chestnut stands, great efforts have been made to delay its spread. Biological control with Hungarian hypovirulent strains of the pathogen seems to be an effective method for saving the affected chestnut trees. Until 1998 the fungus was detected on Castanea saliva only, then on some trees of young Quercus petrea in mixed chestnut forests, which also showed the typical symptoms of blight (Kőszeg and Zengővárkony). Although blight symptoms are not so serious in Quercus spp. than in Castanea spp., it seems that C. parasitica threatens the young Quercus spp. in Hungary, mainly in heavily infected chestnut forests. This is the first report of C. parasitica cankers on oak in Hungary.

  • General principles in variety-association for intensive plantations of pomeceous fruits

    Under conditions of Hungary, more than 400 varieties of apple, pear and quince varieties have been observed for time of blooming and fertility relations in order to check the possibility of their use for intense plantations in different combinations with polliniser varieties. Low (below 3%) rate of self-fertility occurred at 65% of apple varieties. That partial self-fertility, however, is far from being sufficient to produce acceptable yield, thus allogamous pollination is absolutely necessary. The same is true for the rear and quince varieties grown in Hun­gary, too. The normal development requires the presence of viable seeds in the fruit set, most in quince, therefore, association of the right varie­ties is most important in that species. Apple and pear varieties are assigned according to their blooming time to 4, quince varieties to 3 groups. The yield of all three pomaceous species declines with the growing distance from the potential pollen source. In the intense plantations, the critical (maximum) distance to be observed is 20 m for apple and 15 m for pear and quince. In combining the placement of varieties, also the principles of a variety-specific cultivation are to be considered carefully. The double objectives are satisfied most by the system of Malus­pollinisers developed for intense plantations.

  • The future of the Hungarian sour cherry growing branch

    The present study deals with the actual situation of the Hungarian sour cherry production in order to outline the chances of the future and the trends of the development anticipated. The general conclusion accepted that on the long run Hungarian sour cherry production ought to be reorganised. The conditions of keeping the position on the international market are outlined: integration of small farms into large plantations (several times 10 hectares), introduction of mechanical harvest and high (15–20 t/ha) yields. For all that, adequate expertise should be developed on the cooperative farms, where the up to date technology could be applied with innovative initiatives. Small farms (up to 1–2 hectares) and home gardens have no chances to stay on the competitive market. The actual volume of sour cherry of 40–70 thousand tons per year cannot be increased in the future. The sour cherry area was 16 000 ha in 2001, the actual is around 12–13 thousand, and will decline during the following 5 years to less than 10 thousand hectares.

  • Terminology of fruit set and fruit drop of sour cherry cultivars

    Fruit set and fruit drop rates of 9 sour cherry cultivars (‘Érdi bôtermő’, ‘Debreceni bőtermő’, ‘Kántorjánosi’, ‘Újfehértói fürtös’, ‘Éva’, ‘Petri’ ‘Oblocsinszka’, ‘Pandy 279’ and ‘Csengôdi’) of eight years-old trees grown in Újfehértó, located in the Eastern north part of Hungary which grafted on Prunns mahaleb have been studied. Significant differences have been found in fruit set among cultivars. The average percentage of fruit set was 18.3%, which the ‘Oblacsinszka’ by 32.6% the highest fruit set, while ‘Debreceni bőtermő’ is very similar to ‘Pandy279’ showed lowest (12%) fruit set. Seasonal changes of fruit set and drop shows that there are four abscission peaks. The first fruit abortion wave appears during second week after pollination Thereafter, the second and third dropping period was found during the third and forth weeks after pollination. The forth abscission happened on the forth week after pollination. The highest fruit drop happened on ‘Pandy279’ (92.4%) very similar to ‘Éva’ (90%) while the lowest fruit drop observed in ‘Oblocsinszka’ (71.5%)
