Sweet sorghum (Sorghum dochna L.) restorer lines effects on nutritional parameters of stalk juice
51-56Views:167Sweet sorghum can be utilized for bioethanol production because it has high sugar content (14-17%). We determined the most important nutritional values of 5 silo type sorghum lines in waxy and full maturation. The examined restorer lines were: RL 4, RL 9, RL 15, RL 18, K 1. The following nutritional parameters were examined: dry material content, refractometric total sugar content, reducing sugar content. In waxy maturation 73.85-87.37% of dry matter in stalk juice makes the total sugar. Dry material content, total and reducing sugar content of stalk
decreases from waxy mature to full maturation.
There are differences between lines in dry matter (SzD5%=0.76), total sugar (SzD5%=0.79), reducing sugar content (SzD5%=0.30). RL 4 performed a decrease in total sugar content from 10.07% to 10.02% during this period, reducing sugar also decreased from 4.01% to 2.47%. RL 9 performed a decrease in total sugar content from 11.76% to 11.08% during this period. Reducing sugar also decreased from 3.17% to 2.01% in the waxy
maturation. RL 15 showed a total sugar content decrease from 15.43 % to 15.36%. The reducing sugar also decreased from 3.23% to 1.71% in waxy maturation. In RL 18 total mean sugar content during waxy maturation was 13.78% which dropped to 13.26% approaching full maturation. Reducing sugar also decreased from 4.11% to 2.23% in waxy mature. K 1 performed a decrease in total sugar content from 9.35% to 6.15% during this period, while reducing sugar also decreased from 1.52% to 0.77%.
These lines upcoming for experiments are perspectives since having excellent stalk juice nutritional parameters they are of great or very great height and their stalks are thick-very thick, stalk medullas are wet. -
Effect of different N doses on maize yield and quality
97-101Views:196The effect of N doses on the yield and nutritional values of the Sushi (FAO 340) maize hybrid were analysed in three years (2018, 2019, and 2020). The analyses were performed at the Látókép Experimental Station of the University of Debrecen on calcareous chernozem soil, in a striped, small-plot, non-irrigated long-term field experiment. In the experiment, in addition to the non-fertilized treatment (A0), the N-fertilizer doses were applied as basic fertilizer and top dressing. The 60 and 120 kg N ha-1 dose (A60, A120) applied as spring basic fertilizer were followed by two phases of top-dressing in V6 (V690, V6120) and V12 (V12150, V12180) phenophases; the amounts were +30 and +30 kg N ha-1.
Maize yields were affected to varying degrees by crop year. The highest yields in 2018 and 2020 were recorded in the same V6150 treatment, while in 2019 the highest yield was obtained in the A120 treatment.
Increasing the N doses resulted in an increase in the protein content of the maize kernel. Depending on the fertilizer treatments and the crop year effect, the protein content of maize kernels varied between 6.2–10.2 g x 100 g-1. In all three years, the protein content was the lowest in the control treatment (A0) and the highest in the V6150 treatment.
The starch content ranged from 70.7 to 77.9 g x 100 g-1 in the average of the three years. In 2020, it was significantly higher in all nutrient treatments than in the other examined two years. The highest starch content - except for 2020 (A120, 77.9 g x 100 g-1) - was recorded in the A0 treatment (74.2, 72.3 g x 100 g-1).
The oil content of maize kernels varied between the values of 3.8 and 5.2 g x 100 g-1 in the average of three years. In terms of oil content, the results for 2018 and 2019 can be considered the same, while in 2020 it was significantly lower. Fertilizer treatments did not significantly affect the oil content of maize in any of the years.
The fertilizer dose applied in the V12 phenological phase was not effective in terms of yield and nutritional content (protein, starch and oil content).

The effect of different genotype cattle grazing on the nutrient content of saline grasslands vegetation
46-50Views:208Maintaining saline grasslands in good condition, preserving their yield and diversity is important not only for the purpose of nature conservation, but also for farming. Therefore, the primary purpose of our study is to analyse the effect of pasture use of the smaller weight extensive and the larger weight intensive beef cattle on the grassland vegetation and nutrient content. In this way, we can answer the question whether grazing for nature conservation can be achieved with more profitable, more economical and more intense varieties.
The tests were carried out in May 2016 and May 2017, in the Hortobágy National Park (Pap-ere and Zám puszta), where a total of 16 sample areas were analysed. These areas are grazed with extensive beef cattle (Hungarian grey) and mixed genotype of intensive cattle. The associations were selected along a moisture gradient, such as wet salt marsh (Bolboschoenetum maritimi) and drier saline meadow (Beckmannion eruciformis). All the vegetative material collected both years in May was analysed for the following parameters: dry matter, crude protein, crude fibre and life-sustaining net energy content. We compared the effects of medium grazing (0.46 livestock/ha) and abandonment on vegetation and nutrient content.
We examined the effect of (i) grazing, (ii) different grasslands (salt marsh, saline meadow) and (iii) grazing of different cattle breeds (Hungarian grey, intensive beef) on the nutrient content of the vegetation of grasslands Based on our results, it was found that grazing had an impact on crude protein and life-sustaining net energy content. The highest crude protein content (12.75 m/m%) was obtained in the year 2017 in the area where higher density had been grazed for two years. For the lifesustaining net energy, the highest value (5.05 MJ/kg d.m.) was also obtained in 2017 and the lowest in 2016. Furthermore, it was found that there was no significant difference between the effect of the two cattle breeds on the parameters examined. Significant effects were observed only in the case of life-sustaining net energy: in the area of intensive beef cattle we received a higher value (5.15 MJ/kg body weight) than in the area with extensive beef cattle (4.96 MJ/kg body weight).
Our results have also shown that cattle grazing is of the utmost importance for the maintenance of both wet and mesophilous habitats. Based on our three-year study, we can say that grazing by both extensive and intensive cattle breeds is suitable for the management of saline habitats.

Folic acid content of beetroot leaf and root by different growing stages and genotypes
115-119Views:270An increasing interest has been observed of beetroot leaf as a salad component due to recent studies focusing on their nutritional value. The randomized field experiment was carried out on lowland chernozem soil with 6 varieties, 3 replications and 2 sowing dates. Sampling was performed on 23 of August 2018 at the stage of 30 and 50 days of vegetation, where leaf (30 and 50 days) and root (50 days) were collected. Total dry matter, folic acid and nitrate content were evaluated.
The results of this investigation show that higher total dry matter content was measured in the root (8.47–10.30%) compared to the leaf in both developmental stages (6.47–9.20%). Nevertheless, higher folic acid content was found in the young leaves of 30 and 50 days of development (58.77–113.86 µg 100g-1). Among the examined varieties, Bonel has presented great amount of folic acid not only in the leaves (99.35–113.61 µg 100g-1), but also in the root (89.99 µg 100g-1). Finally, lower nitrate content was found in Libero (316.16 mg kg-1) at 30 days and in Akela (340.41 mg kg-1) at 50 days of development. Thereby, fresh consumption of beetroot leaves are highly recommended.

The effect of sous-vide cooking on the antioxidant properties of oyster mushroom (Pleurotus ostreatus L.)

This study explores the antioxidant characteristics, activity, and β-glucan content in freeze-dried mushroom samples, investigating the influence of sous-vide cooking. Uncooked freeze-dried P. ostreatus and three pre-cooked freeze-dried samples (70, 80, 90 °C through 4 hours) were analysed for Total Polyphenol Content (TPC), Total Flavonoid Content (TFC), Radical Scavenging (DPPH), Ferric Reducing Antioxidant Power (FRAP), and β-glucans content via HPLC and Total Dietary Fiber (TDF) via enzymatic gravimetric method. Results indicate that uncooked mushroom powder exhibited superior antioxidant capabilities compared to cooked samples. The sous-vide cooked (80 °C) mushrooms displayed the highest total phenolic and flavonoid content. Moreover, pre-cooked (70 °C) mushroom powder demonstrated the highest β-glucan content, significantly surpassing the uncooked control sample. Notably, pre-cooked groups (80, 90 °C) demonstrated significantly higher TDF levels compared to uncooked sample. This research offers valuable insights into the potential use of mushrooms as high-antioxidant, antimicrobial, and prebiotic food or feed supplements, with broad implications across various fields.

Review on the fatty acid profile and free fatty acid of common carp (Cyprinus carpio)
99-105Views:160Carp or ponty in Hungarian, is considered commercial freshwater fish, which is an adaptable species in both wild and cultured conditions. Carp has high nutritional value content, favorable taste, it is rich in protein, and low in saturated fat. The nutritional content in fish is composed of many chemical constituents and influenced by many factors. One of the components that its content may be different due to internal and external factors is fatty acids, which may vary depending on endogenous and exogenous factors. The endogenous or internal factors include the genetic, size, sexual maturity, and life cycle phase. While microclimate, water quality, quality of food or diet habit, and the amount of available food or starvation are considered as exogenous or environmental factors. Freshwater fish has the ability to convert essential fatty acid into long chain polyunsaturated fatty acid like AA, EPA, and DHA. Most results showed that palmitic acid and oleic acid were the dominant SFA and MUFA in carp both for wild and farmed carp in all seasons. The PUFA for wild carp was mainly dominated by DHA, while on farmed carp by LA. It confirmed that high LA content in farmed carp was related to the diet habit. The amount of lipid and FA were changed in line with the season. Even the statistical analysis showed no significant difference, but some studies showed a contrasting result. Moreover, most obtained results acknowledged that FA tends to decrease during the spawning period. The amount and composition of FA were affected by the total lipid content. The lipid must be broken down into simpler compounds such as FA or FFA for the metabolism of fish. The result of metabolism then transported into the utilising tissue and used as energy.

The variation of breast milk composition during the lactation stage for mothers from the Csík region
93-98Views:123The aim of our research was the examination of breast-milk composition from mothers living in the Csík region and to follow their milk composition variations during lactation. In this article we present the results obtained from three mothers, paying particular attention to essential components. The breast milk samples were collected from healthy mothers with similar habits and age. The milk samples were collected with a hand pump at the
same time after the feeding. The sampling period was from day 5 to the 14th weeks of lactation. The nutrition of mothers was recorded on a questionnaire, completed by the mothers themselves. Comparing our experimental results with data in the literature it was concluded that the milk protein content was very similar to the milk of mothers from other European countries, and is decreased during lactation.
The total saturated fatty acid content was lower, but the palmitic acid content was slightly higher. Regarding the essential fatty acid composition the linoleic- and the arachidonic acid contents were appropriate from a nutritional point of view. The linolenic acid was present in lower amounts, but the docosahexanoic acid was almost undetectable.
The iron and manganese contents were in good agreemen with published results, but the zinc content of the breast milk was lower and its copper content was higher. These differences in milk composition can be explained by the different nutritional habits of our subjects. -
Utilization of the field experiment results of University of Debrecen in the development of maize-based bio-ethanol production

nutritional characteristics of commercial maize hybrids in Hungary from the aspect of efficient bio-ethanol production. We set up a
randomized block field trial. We determined the starch content and starch yield (t ha-1) of the 51 maize hybrids involved in the field trial.
In laboratory conditions, we examined the amylose and amylopectin ratio and the amount of resistant starch of the selected 20 maize hybrids.
According to our results, there is a significant difference between the starch yield the amylose component of the starch content and resistant starch of the examined maize hybrids. Our studies reveal that maize as a raw material must be selected based on the cultivation objectives. If the objective is bio-ethanol production, detailed knowledge of starch content is necessary. There is a significant difference among commercial maize hybrids in Hungary in terms of characteristics determining the producible amount of bio-ethanol. -
Investigating the above-ground biomass values of sweet potatoes (Ipomoea batatas)
35-39Views:156The role of sweet potato tubers in human nutrition is not new. The above-ground biomass of sweet potatoes is not used for nutritional purposes in most countries, but it has a high biological value. Therefore, the aim of the present study is to investigate the production of press fibre from above ground biomass by wet fractionation. Two sweet potato varieties (purple- and white-fleshed sweet potato) and two types of irrigation system were used: bubbling water flow system (BWS) and continuous water flow system (CWS). Glucan, xylan, arabinan were analysed by HPLC and elemental content was measured by ICP-OES. Our results show that the total carbohydrate content in the pressed fibre of the leaf blades (27.64–29.88 %w/w) is lower than in the stem with petiole (51.14–57.36 %w/w). No significant difference in glucan, xylan and arabinan content was observed in the leaf blade. In the stem with petiole, significant differences were observed for xylan and arabinan contents. For elemental content, generally higher values were measured in the leaf blade than in the stem with petiole. This information may be relevant for the selection of the appropriate variety and treatment, even for the production of functional food.

Element Content of Herbaceous Plants in the Floodplain Meadows
55-58Views:132Animals require well-balanced nutrition. The elemental content of the vegetation of meadows is influenced by as many factors such as heat, rainfall, irrigation, soil type and nutrients, meadow types, species, aspects of the vegetation period and cultivation.
Natural meadows used extensively are common sights on river floodplains. Since chemicals are banned and the species number is high, measuring the elemental composition of plants on these meadows is beneficial. Cenological survey and element content measurements were held on the rich flora of four natural meadows in the year 2001.
Weeds, in a wider sense, are plants not directly involved in growing, although their nutritional values make them important costituents of feed. Meadows are enriched by their relatively high microelement content.
On the sampling sites, the ratio deviated from the ideal 2/3 parts monocotyledon and 1/3 part dicotyledon, but this did not mean a Mn deficiency as it would have been assumed. -
The change of the inner content parameters of table beet (Beta vulgaris L. ssp. esculenta Gurke var. rubra L.) as a result of storage
113-119Views:213The stored vegetables play a key role in the vegetable consumption. After harvesting, the storage conditions greatly affect nutritional parameters of the crop. The red beet is a root vegetable, which is manufactured mainly fresh in our county, therefore we do not have enough information about the storage. In our experiment, 5 varieties (Rubin, Akela, Larka, Libero, Mona Lisa) were examined in prismatic structure (0–5 °C and 95–97% RH) through 5 mounths.
Our measurements proved that under the appropriate storage conditions water loss was also occurs, which increased the dry matter content (average of 0.5 g 100 g-1). The bioactive compounds, like pigments (betanine and vulgaxanthin) and the quantity of flavonoids, were significantly increased during the experiment.
The results showed that the nutritional parameters of the 5 types was positive during the prismatic structure. However, this storage method negatively affected the bioactive compounds of the Akela genotype. Further studies are recommended for proper storage parameter adjustment, which is justified by the need of the different varieties. The optimal conditions enable us to preserve and to increase the best nutritional index.

Opportunities for improving the nutritional value of cereal-based products

Our aims were to decrease the energy content of bakery products with the mixing of plant originated raw materials and byproducts with high fibre contents, and we have evaluated the effect of sodium-chloride on the physical properties of bakery products. We found that the apple pomace, the byproduct of juice production, is excellent for increasing of fibre content of bakery products and the further aim of investigation is to develop economical ways of hygienic byproduct handling and purification. Our experiments, evaluate the bakery use of triticale, have significant achievements and the breads made from triticale flour and whole-grain are commercially available nowadays. Our investigations included the possibilities of decrease of toxin contamination of cereals and our results can form a part of risk estimation systems after further experiments .

Compost application in integrated and organic fruit cultivation

One of the ways to supply the required nutrients in an environmentally friendly way is the application of composts, which is less widespread so far. Compost doses were applied in biological and integrated apple orchards in cooperation with the Institute of Horticultural Science in the years 2010 and 2011. Different changes were resulted by the compost treatments in the examined parameters in case of both apple varieties (Golden Delicious and Pinova). There is no clear effect of compost on the changes of ash-, total acids, Vitamin C and the sugar content until now, because the improvement of the nutritional indicators takes more time. However significant differences were observed after one year between the apple varieties. Higher ash-, total acids and sugar content were measured in case of the apple variety Pinova, while the measurements showed higher Vitamin C content in case of the variety Golden Delicious.

Comparison of macroelement and microelement contents of conventionally and organically grown crops

Our results provide further information to consumers about the nutritional value of organic and conventional crops.

This research aimed to analytically determine which quality parameters of the jams and to what extent they change during storage. Furthermore, this study intended to find out whether a concious consumer can presume any difference between varieties or the year of harvest, or wheather a one-time customer should suspect differences in quality parameters of the different products. This study focused on those differences or alterations in the parameters that occur in the jams made from several different plum varieties produced in different years.
I analyzed the classic chemical parameters (dry matter content and ash content) and physiologically important nutritional components (phenolic and flavonoids antioxidants and vitamin C). In this research I used jams which were produced from 6 varieties grown in 2009 (President, Tophit, Bluefre, Elena, Presenta, Stanley), 4 varieties from 2010 (President, Bluefre, Elena, Presenta) and 6 varieties from 2011 (President, Tophit, Bluefre, Elena, Presenta, Stanley). Jams were produced with traditional technology in cauldrons without added sugar. Jars were placed into a relatively dark and cool place and were stored there until the analysis.
Having regard to the results, when consumers choose between the different products they also choose quality since the processed plum variety, and the year of production/processing determine the nutritional value of the specific product. This could be used for market positioning and promotion of the product, however further research is needed to gain more information from the differences that derive from the varieties, year of harvest or other factors. This way fruit and jam producers could turn these informations into market advantage.

Insect base-protein: A new opportunity in animal nutrition
129-138Views:531The consumption of insect protein, as well as its use in animal feeding, has become a trend. This trend is particularly receiving a lot of attention in animal nutrition because the current protein source of the highest quality in animal feeding which is fishmeal is unsustainable, expensive and its demand is higher than supply. Insect protein can be of great potential in combating world hunger as the world population continues to increase. The potential of insect protein is wide-ranging, it could improve the economics of feed production, lead to cleaner production due to its low environmental footprint.
This review focuses on the need, (nutritional and environmental) advantages of insect protein in feed production, as well as previous research findings.
The unanimous conclusion of the reviewed papers is that insect protein has a great potential in feed production in terms of nutritional value, environmental implication, sustainability as well as economic implication.
However, there is a need for the intensification of research on this alternative protein source in Europe, especially in aquaculture due to the approval of 7 insect species in aquafeeds by the European Union. Another reason for the intensification is that there is still much to be done as a result of past research which shows that growth effects vary based on species and inclusion level.

Development of the antioxidant indexes (FRAP, TFC, TPC) of scabbing resistant apple varieties in storage
89-94Views:155One of the most important groups of bioactive substances in apples are antioxidants, which have a health-preserving effect. The amount of these compounds varies not only during the ripening of the apple fruit, but also continuously during post-harvest storage. A growing group of health-conscious consumers are looking for apple varieties with a nutritional value that satisfies their needs.
In the scope of our research, we examined 5 apple varieties originating from the Derecske horticultural site of KITE cPlc. in 2016. The plantation was planted to be suitable for intensive apple production. Samples were collected at the time of maturity (August-October) of the given variety. The 5 examined apple varieties (Gaia, Isaaq, Modí, Smeralda and Fujion) are all resistant to apple scab (fungal disease caused by Venturia inaequalis). The 2-month storage experiment was conducted at 16–17 °C, which had an aggressive effect on our stored apples. Total polyphenol (TPC) and flavonoid (TFC) content as well as FRAP values of the apples were measured. Measurements were taken immediately after harvest and after 1 and 2 months of storage. Our results were evaluated by using the IBM SPSS Statistics 20 software. Our aim was to compare the antioxidant results of 5 scab-resistant apple varieties, which change continuously during storage.
The antioxidant content of our apple varieties increased during 2 months storage. The best result was achieved by the Modí apple variety (FRAP: 467.32 mg/100g; TFC: 317.76 mg/100g; TPC: 1771.97 mg/100g). Consumers may want to consume apples stored for a longer period of time if they are to absorb large amounts of antioxidants.

Examination of the impact of sowing technology models on the ear, constiuent and yield parameters of the yield formation elements of maize hybrids of different genotypes
17-23Views:138Production year 2012 has been characterised by climatic extremities. The weather of this year can be considered very contradictory in terms of maize production. The droughty conditions of the winter and spring months had a negative effect on both germination and starting vigour. The favourable weather of May-July created ideal conditions for intensive growth and generative processes; however the lack of precipitation in August and September had a damaging effect on the development of yield composing elements and grain saturation processes as well. Under such circumstances, the sowing date models caused significant differences in the yield and quality of the hybrids belonging to different growth periods. The growing period of the maize hybrids has been shortened as a result of the unfavourable climatic conditions.
Based on the trial results, it is verifiable that short growing period hybrids can be securely sown in draughty years even with a later sowing date, however using a later sowing date in the case of longer growth period hybrids may result even in a yield loss of 2–3 t ha-1. In the case of early and average sowing dates, with given yearly conditions the hybrids of the observed FAO 370-390 hybrid group provided the best result (12.40 t ha-1, 10.99 t ha-1), while in the case of the third, late sowing date the yield dominance of the FAO 290-350 hybrid group is the most significant (10.08 t ha-1).
The analysis of the yield composing elements found that the P9578 hybrid has the highest shelling ratio, while its cob is the shortest. The P9494 hybrid has a high yield and the highest thousand grain weight, while the DKC 4983 has the longest cob and its thousand grain weight is above 300 g.
The results confirm the fact that DKC 4590 has the highest yield potential and starch content, while in terms of oil and protein content the Szegedi 386 and NK Octet hybrids are the most important.

The impact of applying foliar fertilizers on the health condition of maize
105-109Views:194The nutrient supply of plants is becoming more important in plant protection since the appropriate condition of plants can be ensured by optimal and satisfactory nutrient supply to avoid nutritional deficiency diseases. Due to the extreme weather conditions, plants are forced to face several stress factors, which leads to deterioration of the plant health. The increasing occurrence of droughts poses threat to nutrient uptake through the roots since all the nutrients can be accessible to the plants only if they are in dissolved form in the soil – which is not possible in the absence of water. Therefore, the importance of foliar fertilizer is becoming a more and more significant part of the nutrient supply, because with the help of this technology the development of any nutrient deficiency can be prevented.
In this experiment, we focused on the efficiency of two different foliar fertilizers on maize. Foliar fertilizers were applied two times, once in the stage with 8 leaves and tasseling phenophase of the maize. To verify the efficiency of the foliar fertilizers, the chlorophyll content of untreated and treated plant’s leaves was measured after each application. Moreover, the length and diameter of maize cobs, thousand kernel weight, protein, oil and starch content were also measured, and the results were compared to the untreated (control) ones. According to the results, in all aspects significant differences were observed and due to the laboratory analysis of leaves, in the case of magnesium and zinc supply the foliar fertilizers were able to prevent the development of nutrient deficiency.

The effect of herbs on the microbiological stability and nutritional quality of pariser
101-104Views:101The purpose of this study was to evaluate the functional properties of dried herbs (Thymus vulgaris L., Origanum vulgare L., Salvia officinalis L.) to improve the quality characteristics and microbiological stability of Hungarian meat product, pariser. The addition of herbs did not affect the microbial properties of the product. According to the Decree No. 4 of 1998 of the Ministry of Health, pariser can be considered safe. The nutritional quality of the different forms of pariser was also acceptable. Studies on Ostrich (Struthio Camelus) - Review
15-22Views:1200Ostrich has been reared in Hungary for decades, but we have limited information on this species. The aim of this review was to provide a concise description of the ostrich (Struthio camelus) based on international studies. We were to investigate some of the most relevant parameters, such as egg, meat and skin production. In this critical review we managed to sum up the most significant features and productivity parameters of ostrich and effecting factors. So as to make an accurate description of the species we have to know its morphological, behavioural and physiological characteristics. Ostrich is a very special bird with special nutritional and environmental requirements. Ostrich products, regarding egg, meat and skin are considered luxury products not only in Hungary but also abroad. Though egg has a significant nutritional value, it is mainly used for hatching chicks. In Europe we can expect roughly 40–50 eggs from a hen yearly. Ostrich has a lean meat with high protein and low fat and sodium content, moreover it is rich in minerals and polyunsaturated fatty acids. Having these advantageous qualities, ostrich meat should be part of our healthy diet. Skin production is not important in our country, but there is a special demand for high quality ostrich leather globally. In the future our aim is to conduct a research on some of the parameters. As low production rate and embryo mortality is a great deal of problem in ostrich industry, we need to investigate the incubation environment. There is an apparent disagreement among researchers on optimal slaughter age. This is also an area for further investigation. The value of skin and effecting factors on our climate as well as adaptability of the species are also worth for further investigation together with the nutrition what differs from other ostrich breeding countries. Nowadays, there is a great emphasis placed on animal welfare too.

The effects of curing technology on the rheological and organoleptic features of meat products

Meat plants do not only use traditional production technologies but also develop methods that preserve the nutritional value of meat or improve the texture and organoleptic features of meat products. These features play an important role in the consumer society. Consumers first meet the external features of meat and this experience influences their decisions. Our analyses compared a traditional and a new curing procedure. Besides organoleptic inspections, we analysed texture with a CT3 type Texture Analyser to obtain quantified information on the condition of meat samples in the various curing phases. We used our results to compare traditional and new curing procedures.
