Differences in content of beet root and beet root juice, and it’s suitable to develop functional foods from animal sources
53-57Views:334In Western medicine is beginning to increasingly focus on the key role of healthy nutrition and lifestyle in preventing certain diseases. Therefore, it is important to emphasize the importance of primary prevention in our country, and to promote it; not only the health care team work, but broaden the recommended foods, which have benefit for human health as well.
Polyphenols are antioxidants, which are easily consumable with diet, however, food processing can influence the level of them.
In our study, nutritional assessment was made of raw beet root and a juice, made from this beet root. We investigated in which special diet referenced to eat this foods and whether this is suitable to develop functional foods from animal sources as a row material.

The change of the inner content parameters of table beet (Beta vulgaris L. ssp. esculenta Gurke var. rubra L.) as a result of storage
113-119Views:203The stored vegetables play a key role in the vegetable consumption. After harvesting, the storage conditions greatly affect nutritional parameters of the crop. The red beet is a root vegetable, which is manufactured mainly fresh in our county, therefore we do not have enough information about the storage. In our experiment, 5 varieties (Rubin, Akela, Larka, Libero, Mona Lisa) were examined in prismatic structure (0–5 °C and 95–97% RH) through 5 mounths.
Our measurements proved that under the appropriate storage conditions water loss was also occurs, which increased the dry matter content (average of 0.5 g 100 g-1). The bioactive compounds, like pigments (betanine and vulgaxanthin) and the quantity of flavonoids, were significantly increased during the experiment.
The results showed that the nutritional parameters of the 5 types was positive during the prismatic structure. However, this storage method negatively affected the bioactive compounds of the Akela genotype. Further studies are recommended for proper storage parameter adjustment, which is justified by the need of the different varieties. The optimal conditions enable us to preserve and to increase the best nutritional index.

Aflatoxin production on agricultural products
67-71Views:159Aflatoxins due to their toxicity pose significant economic and human health threat; therefore, it is important to avoid this type of contamination in agricultural products. Until now significant aflatoxin contamination occurred mainly in foods of tropical and subtropical origin because the optimal growth of the producer Aspergillus species is between 32–38 ºC. Nowadays the aflatoxin contamination is becoming higher threat in Hungary, due to the imported products, the rising average temperature and the climatic changes. There is a significant knowledge on the genetic and environmental effectors of the aflatoxin production; however, it is remained a great problem to control mold contamination and toxin production in farming and stock-raising. Here we attempted to summarize the knowledge on aflatoxin production and attempts of the elimination.

The effect of dried herbs on the souring of sunflower oil
87-89Views:137Many herbs have antioxidant activity, which can replace the use of potencionally harmful synthetic antioxidants. Sunflower oil fortified with eight different plants and stored at room temperatur in my experiment. Specified intervals with determination of peroxide value, FFA, iodine value, anisidine value and TOTOX value followed the quality of the sunflower oil.

Methods for detention of lipid rancidity
117-120Views:335There are various methods available for measurement of lipid oxidation in foods.Changes in chemical, physical, or organoleptic properties of fats and oils during oxidation may be monitored to assess the extent of lipid oxidation. However, there is no uniform and standard method for detecting all oxidative changes in all food systems. The available methods to monitor lipid oxidation in foods and biological systems may be divided into two groups. The first group measures primary oxidative changes and the second determines secondary changes that occur in each system.

Analysis methods of quality and traceability for honey
25-32Views:196Honey is our essential food since ancient times. Thanks to the excellent dietetic and medical features, it has an important function in our nourishment. In Hungary about 25.000 tons of honey are produced each year. Most of the produce, about 80% is exported to different countries of the world. Hungarian types of honey have excellent quality. Through exporting, the prestige and demand of Hungarian honey can be increased. In recent years the adulteration of honey caused many damages to producers and traders. The adulteration of honey is not easy to prove. Thereinafter, we represent several methods, such as oligosaccharide analysis or 13C/12C isotopic ratio analysis, which can identify the artificial substances of honey (for example: corn syrup, high fructose corn syrup) or can help to determine the ratio by which original honey can be identified.

Use of extensigraph in the examination of wheat flours
17-23Views:161The extensograph is widely used in quality control and research laboratories studying wheat flour quality. The most commonly used measurements include Rm, the maximum resistance (maximum height of the curve); R5 the resistance at a constant extension of 5 cm; E, extensibility (total curve length); Rm/E, the ratio of maximum resistance to extension; and A, the area under curve. The extensograph has proved useful in the classification and assessment of flours on the physical dough properties. Another important application is its use in wheat breeding programs. Furthermore, extensograph is an excellent tool to study the effects of a wide range of ingredients on dough properties of wheat flour (like oxidants, enzymes, salt and additives), and it can also be used measure the changes during the frozen storage. In the present study we provide a review of the scientific literature concerning the possible applications of the extensograph.

The composition of gluten proteins and their effect on the rheological properties of gluten
124-129Views:172Wheat is the major cereal component of bread in the world and is grown worldwide. Of the cereals only the bread wheats – and less the triticale – includes storage proteins that play an important role in the performance of gluten. Proteins of gluten complex may be present in two classes:
− low molecular weight (gliadin-) components, and
− high molecular weight (glutenin-) components.
Gliadins shown appreciable heterogenity and can be separated into 40-50 components with gel electrophoresis. The composition of gliadins is employable for the identification the wheat varieties and to investigate the varieties. In the decreasing electrophoretic mobility sequence may be distinguish α-, β-, γ- and ω-gliadins. A glutenin subunits may be include in two classes:
− high molecular weight glutenin subunits (HMW-GS),
− low molecular weight glutenin subunits (LMW-GS).
Wheat varieties can be identified by glutenin and their quality selection is also possible. The gliadin’s polypeptides encoding genes are located on the short arm of chromosomes 1A, 1B and 1D, 6A, 6B and 6D. Genetic coding for HMW subunits is located on the long arms of chromosomes 1A, 1B and 1D, the LMW-GS are also located on chromosomes 1A, 1B and 1D (Glu-3 loci) near the gliadin-coding loci.
Storage proteins affect the rheological properties of gluten by two factors:
1. The quality and quantity of the protein components of the gluten complex,
2. The interactions between the protein fractions. -
Comparison of quality parameters of producers' and commercial honeys
31-39Views:239Honey is our essential food since ancient times. In Hungary about 25 000 tons of honey are produced each year, and most of the product (80%) is exported. Hungarian honeys have excellent quality but because of scandals of honey adulteration the interest and recognition may decrease. Therefore we must elaborate a method with which the establishment of adulteration is simple and cheap. In this study we concentrate on simple quality parameters which inspection is not elaborate. These parameters for example sugar- and moisture contains, proline content, electrical
conductivity, element content, pH, HMF content, degree of acidity. We examined these parameters in producers’ and commercial samples. We succeed fund parameters which characteristic of one type of honey thus we have possibility identify of honey type. For example the proline content was very low in the producers’ linden honey (mean 126 mg/kg). This value is lower than the regulation, but in case of commercial linden honey this parameter is higher than regulation. According to electrical conductivity and Potassium content is provable the type of linden honey.
