Composition and sensory properties of sour cherry cultivars
19-23.Views:402Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.

Antioxidant, polyphenol and sensory analysis of cherry tomato varieties and landraces

In the past years several study dealt with the investigation of the inner content of tomato, with special regards to antioxidant content. In this paper cherry tomato varieties and landraces from conventional and organic production were compared. Besides basic investigations sensory analysis were designed and Antioxidant Capacity (AOC) and Total Phenol Content (TPC) were measured. The aim of the research was to compare varieties and to study the effect of variety and production methods on antioxidant capacity and sensory profiles.

Sensory analysis as a supporting method for marjoram breeding
73-77.Views:198Marjoram is one of the most important spices in Hungary, which is utilized both in phytotherapy as well as in alimentary industry. Organoleptic quality of the drugs of two Hungarian varieties of Majorana hortensis /'Francia' and 'Magyar'/ were investigated by two different methods of sensory analysis. The chemical composition of the material was checked by GC analysis of the distilled essential oil. Although their main compounds and proportions showed similar patterns, both the human and instrumental sensory tests based on the complex odour and aroma of the drug, proved a significant differentiation of the two varieties.
On the basis of our results, sensory evaluation may be a useful tool in the practice in determination of complex aromatic values of marjoram, as a spice. At the same time it seems to be a suitable method in promotion of breeding efforts.

Post-storage sensory quality of apple varieties
54-57.Views:129The changing situation of apple production in Hungary has given rise to a great demand for new varieties. Besides bearing capacity, fruit quality and suitability for new training systems, consumer preference is one of the grower's main considerations. Growers need reliable information in order to choose the appropriate variety, so consumer tests have become essential. Altogether, 1 I traditional and new varieties were involved in this project. In the first part of the experiment, panelists ranked the coded samples according to their appearance. In the second part, apples were cut into unpeeled slices and the samples were also coded. The assessors were asked to taste them and rank them again. The sensory tests were held after three different storage periods.

Sensory evaluation of white asparagus (Asparagus officinalis L.) hybrids
51-55.Views:338Comprehensive system of sensory evaluation was developed to obtain information on the different varieties by determining asparagus quality parameters. 9 sensory characteristics were estimated to describe flavour differences. The tests were carried out in 4 varieties of white asparagus (Asparagus officinalis L.) grown on brown humus sand soil by etiolate method in ridge cultivation. The experiment was performed at the University of Debrecen in Debrecen-Pallag. To increase the Hungarian asparagus consumption, a classification of varieties
regarding to asparagus flavour is necessary. In our experiment it could be stated that there are strict correlations (0.892) between the sweetness – total impression and between lacks of unpleasant aftertaste – total impression (0.870). The result of surveys can lead to higher popularity of the asparagus. These results are presented in order to recommend the varieties to producers for a successful marketing. The taste of asparagus is mostly influenced by variety, soil type and growing conditions. In our experiment, ‘Vitalim’ hybrid exceeded by several sensory parameters. This hybrid scored 788.38 over 900. The elder population showed more interest in asparagus consumption than younger ones. 50% of the participants are able to pay only 500-600 HUF/kg. It could be realized to ensure the proper growing place, hybrid and direct trade. Marketing and more information is necessary to increase the popularity of this vegetable among the younger generation. -
Effect of boron fertilisation on the flavour of carrots - Applicability of organoleptic analyses to carrots
51-54.Views:123Foliar boron fertilisation has had positive influence only on carotene content. Results were evaluated with chemical analyses and sensory tests. It has been observed that sensory tests are able to detect bitter flavour and also to measure its interaction with sweet flavour. Sensory tests for evaluation are generally used in the EU, also in the case of fruits and vegetables. With the aid of students and staff having received training and acquired practice, our University has the possibility to complete chemical analyses in such a way that satisfies modern demands, as well as facilitating the sale of the products on foreign markets.

Evaluation of essential oils by gas-chromatography and a new method: "electronic nose"
85-89.Views:175The chemical quality of the essential oils is determined by their composition as well as by the complex aroma features. For the evaluation of odour and aroma, sensory tests are practised, especially for applications such as aromatherapy, food industry or perfumery. In the recent studies we investigated eight Mentha origins (populations of Mentha iperita, M. spicata and M. arvensis) of our genebank collection using a new and effective instrumental sensory evaluation method parallelly with the usual GC analysis.
The results show that the examined mint clones possess different essential oil accumulation levels and special flavour characteristics, too. The GC analysis of the essential oil revealed characteristic differences at both inter- and intraspecific level in the proportion of mentol, menthon, carvon, limonene, menthyl acetate and in two not identified monoterpenes.
In the sensory tests the special complex aroma enables a reliable distinction with a single exception among the populations by the help of the "electronic nose" equipment. The distinction among the samples based on the sensor signals of the instrument — evaluated by multivariate methods — shows a close relation with the detected monoterpene components of the essential oil.

Evaluation of sour cherry (Prunus cerasus L.) and European plum (Prunus domestica L.) varieties for making dried fruits
119-124.Views:233The aim of our drying trials was to determine the drying suitability of stone fruits. The tested species were sour and sweet cherries and European plums too. Data and results of sweet cherry drying were published earlier (Klincsek et. al. 2005, 2006).This article containing results of twenty sour cherry and six European plum varieties. Laboratory tests, drying processes and sensory testing were done at Fruit Quality Testing Laboratory of Fruit Science Department of Corvinus University of Budapest. The sensory tests and their valuations were done by the instruction of National Institute for Agricultural Quality Control. In the case of sour cherries by one year data in 2004 we divided fruits to five categories by suitability for making dried fruit. Varieties in the first two groups are the followings: most suggested for making dried, fruits: 'Meteor korai' and `Érdi jubileum'; suggested: 'IV-3-48' and `Piramis'.In the case of European plums three varieties can be suggested for making dried fruits from the six tested cultivars: ‘Révfülöpi’, Althann gage' and `Besztercei'.

Spectral properties of strawberry plants
17-22.Views:266Strawberry varieties were studied in 3 different growing areas of different soil- and ecological properties in Hungary. We have measured the optical spectra of the leaves together with their nutrient content and performed sensory examinations on the deep frozen and melted fruit. The 6 varieties were Elsanta, Marianna, Spadeka, Symphony, Camarosa, and Raurica. The 3 sites were Újfehértó, Pölöske, and Kecskemet. Colour of the leaves was characterised by their lightness and dominant wavelength. Under non-optimal soil and ecological conditions the varieties could be distinguished by their colour — the leaves became lighter and more yellow. The fruits did not produce the genetically determined taste if the plant can not grow in optimal circumstances — we found a negative correlation between the leaf colour in flowering time and the fruit flavour. Leaf colour measurements performed in flowering time make it possible to improve fruit quality by changing the nutrient supply between flowering and ripening.

Effect of three organic fertilizers treatments on sensory evaluations of baby spinach (Spinacia oleracea L.)
59-63.Views:336Sources of fertilizer are one of the major factors influencing baby spinach leaf texture, sweetness, bitterness and after-taste. However, the effects of fertilizer sources on baby spinach growth performance and consumer preferences are not known. A survey was carried out at the Seke Teachers’ College (SKC) community, Zimbabwe to determine the consumer preferences on the baby spinach grown on the organic fertilizer (cattle, poultry and goat manures) as well as on control inorganic fertilizers (7% N, 14% P, 7% K). The study used 32 females and 30 males as panellists for sensory evaluations. Organoleptic tests were performed for the baby spinach leaves using a panel of 62 testers. An interval line scale (16 cm long) was used to measure the liking for sweetness, colour, bitterness and after-taste. A 9-point hedonic scale was used to decide the overall preferences. Organoleptic tests showed significant differences (P<0.05) in appearance and taste between the inorganic and organic fertilizers used. The baby spinach leaves grown on organic fertilizers was preferred more compared to that grown on inorganic fertilizer (control). Therefore, it is recommended to use organic fertilizers in baby spinach production in order to satisfy consumer preferences.

Experimental results of the effects of Hungarian climatic conditions to German disease-resistant industrial apple varieties
53-56.Views:130In the recent years, several disease-resistant apple varieties appeared through the modern breeding technologies. These varieties can be grown with low usage of pesticides, which mean not only environment friendly fruit growing, but the production costs are also lower. In Eastern-Hungary — it is one of the main apple growing regions — a new apple growing structure started to form by the investment of the German Wink Ltd. — several resistant apple varieties were brought from Germany. 'Resistant' refers genetic resistance that usually transferred from the genome of wild apple species. But the fruit of these apple species is not only resistant to diseases, but its quality is poorer, too. In Germany the Re-apples are grown only for the processing industry. Due to climatic circumstances in Eastern Hungary, the first experiences showed better parameters during laboratory measurement, the fruits have more beautiful view, shape and inner characters than usual industrial apples.
In our paper we discuss the results of sensory (consumer) tests, carried out in Eastern Hungary and in the Budapest-region the data analysis of systematic storing experiments (refraction, flesh firmness, weight loss, etc.) and profile analysis of fresh and stored Re-apples. (In the profile analysis the ProfiSens software [4,5] has been used.)

Effects of environmental factors on morphological and quality parameters of table beet root
139-146.Views:348In our trial morphological and quality parameters of 15 table root varieties were tested at 3 different sowing dates: 15 April, 9 July and 19 August 2010. In the trials the root shape of the varieties form the April sowing date approached most the regular spherical shape (diameter/length –1.0) which is favoured both by fresh market and the processing industry. In the July and August sowings the roots were elongated with reduced proportions. The highest red pigment content (betacyanin) was observed in the second sowing of July (>80 mg/100 g). In the late sowing (August, under plastic tent) a further 10–20 mg/100 g pigment increase was measured in relation to the earlier sowing dates of the same varieties. A similar trend could be observed in yellow pigments (vulgaxanthis) which proves a close correlation between the quantities of the 2 pigments (r=0.823). The highest vulgaxanthin content (103.3–124.18 mg/100 g) was obtained form roots of the late sowing harvested in December. Varieties reacted differently to temperature and so to sugar accumulation in the different sowing periods. In the July sowing higher water soluble solids content was measured on the mean of varieties (10.12 %) as compared to the April sowing (7.76%). Sensory evaluations included inner colour intensity (1–5), with ring (1–3) and taste (1–5) of the raw material evaluated by scoring. According to laboratory measurements better inner colour intensity was observed in the July and August sowing dates. In these samples uniformly coloured, almost with, ring-free roots were obtained. In our trial varieties from the spring sowing had superior taste. Early sowing is recommended for fresh market sale while the second crop (July) harvested in autumn can satisfy processing requirements. In the late sowing (under unheated plastic tent) fresh beet root can be grown at the end of autumn or beginning of winter, thus prolonging the usability of plastic tents.

Field evaluations of 14 sweet cherry cultivars as pollinators for cv. Regina (Prunus avium, L.)
75-77.Views:270In this study, the pollen of 14 sweet cherry cultivars (‘Anella’, ‘Duroni 3', 'Badacsony', 'Cristalina', 'Ferbolus', 'Ferrovia',
'Georgia', 'Hudson', 'Kordia', 'Sam', 'Schneiders’, ‘Spate’, ‘Knorpelkirsche', 'Skeena', 'Summit', 'Sylvia') was used to fertilize the emasculated flowers of sweet cherry cv. 'Regina'. Fruit set was assessed three times during fruit development: 14 May, 30 May and 27 May 2007. We observed full incompatibility among the 14 cultivars for cv. 'Cristalina', which is in the same S-allele group as cv. 'Regina'. After analysis of our data, we have results about fertilization efficiency of the cultivars. Most of the evaluated cultivars are inadequate to fertilize cv. 'Regina' to a sufficient degree. There were two exceptions, cv. 'Sam' and cv. 'Skeena', where percentage of ripened fruits was above 20%. These two cultivars can guarantee such a pollination, which ensures ample quantity of ripened fruits. Results of this study have proved three other cultivars to be quite good pollinators for cv. 'Regina'. In conclusion, ideal pollinators for cv. 'Regina' could be — apart from above-mentioned two cultivars, 'Sam' and 'Skeena' — cvs. 'Sylvia' and 'Bianca', which was suggested by more literature sources.

Determination of quality in stored pear fruits by chemical analysis and sensorial judgement
27-31.Views:290Aim of this research/project to determine the external and internal preferences of pear using descriptive sensory analysis, consumer preference. The research was performed on local consumers. Destructive measurements included fi rmness by puncture tests, soluble solids content (SSC), titrated acidity (TA). While there is a general positive trend for increasing preference with fi rmness, some consumers will prefer softer apples, and some will dislike the fi rmest pear. Sensorial judgement is able to classify the attractiveness, preference of properties specifi c for pear. Tests were performed by 13 persons on 4 pear varieties (Bosc kobak, Conference, Packham’s Triumph, Dessertnaia) checking 11 sensorial properties on a scale of 1 to 100 points. Relations of measurements and judgements were processed by correlation analysis. For analysis, the objects were furnished in 2011 from different growing sites (Csenger, Mérk and Nagykanizsa), taking from the store (in January) immediately. Among those the best notes were given to Bosc kobak and Conference coming from Mérk and to Packham’s Triumph grown at Nagykanizsa. It was stated that the success of sensorial judgement depends on the state of maturity, which is diffi cult to guarantee to be synchronous among samples of different varieties. Mature fruits are more praised as a sample of Bosc kobak taken from a chain of department store proved to be of balanced composition regarding its sugar/acid ratio (0.12) and the optimal fi rmness (5.75 N/cm2). Results of the correlation analysis suggest that the thickness of the skin is a decisive component of preference (r= 0.857), the typical pear flavour (r= 0.948), the taste as sweetness and acidity (r= 0.930 and r= 0.813). At the same time, no valuable relation could be detected between the data raised in the laboratory and the preference expressed by the sensorial tests, which should signalise that the opinion of consumers does not depend on any individual parameter obtained in the laboratory (sugar- or acid content, fi rmness) but rather on the complexity of several decisive components together (sweetness, acidity, fl avour, skin, etc.). The consumers’ preference cannot be measured objectively without the aid of adequate expertise and a prosperous surrounding, samples of optimal maturity and a thoughtfully edited judging form.

Goals and results in improvement of biological background of medicinal plant production
20-27.Views:187The choice of varieties among medicinal plant species is relatively small, compared to other horticultural crops. In Hungary, only poppy (Papaver somniferum) and mustard (Sinapis alba) have several cultivars. Recognising the problem, in the recent years breeding activity has been intensified all over the world, in spite of financial, technical and legal difficulties. The article reports on the results of breeding at the Department of Medicinal and Aromatic Plants of the Szent István University, 11 varieties of which has been officially registered till 2000. Main goals of genetic improvement are: increasing of the production capacity of utilised plant organs, enhancement of active material accumulation capacity, improvement of sensory quality and technological properties. The most often applied methods are selection, and recently, cross breeding, the results of which can be measured on new materials of caraway (Carum carvi), hyssop (Hyssopus officinalis), marjoram (Majorana hortensis), poppy (Papaver somniferum), etc. Efficacy of breeding work is established by additional, regular research on the genetics, physiology, floral and reproductive biology, chemosyndromes of medicinal plant species.

Examination of fruit juices produced with aseptic technology
65-70.Views:161The quality of finished products with a 100% fruit content is influenced to the greatest extent by the fruit-base (fruit pulp and fruit juice concentrate) used. In terms of the production of the fruit juice, the minimization of the quantity of the dissolved oxygen, which can cause detrimental oxidation processes to start, is a very important aspect. Scientific experiments specify de-aeration before pasteurization as the solution to the problem. The choice of the packaging material and the manner of packaging also contribute to the preservation of the alimentation-biological and pleasure value of fruit juice. On the basis of the results of the experiments, regarding the parameters which are important in terms of quality, i.e. dissolved oxygen content, C-vitamin concentration, deepening in the colour and sensory features, Tetra Bric Aseptic packaging proved to be better in the examined cases. Storage circumstances also influence the quality of fruit juice.

First evaluation of fruit quality of some new and old sour cherry cultivars in Hungarian climatic condition
37-43.Views:305Indeed, in the last decade a large number of new sour cherry cultivars with new notable flavor characteristics have been released. There is no enough information related to qualitative characteristics which consistently segregated based on their predominant sensory characteristics. The present study carried out at tow consecutive years (2008 and 2009) and examined some qualitative characters which are the main importance in the specialty cherries trade, The main objective was to determine fruits quality of Érdi bőtermő, Oblacsinszka, Debreceni bőtermő, Csengődi, Pándy 279, Éva, Kántorjánosi, Újfehértói fürtös and Petri sour cherry cultivars. Changes observed in major characteristics such as fruit detachment force, width, length, weight, peduncle length, flesh firmness, brix, citric acid, Suger/acid ratio and pit weigh.While observed no change in flesh/pit ratio and Coordinate of colour (X*, y*, x*), hue angle and chroma value, in different years. In all measured factors, there was significant difference between selected cultivars of sour cherry fruit. Debreceni bőtermő showed higher values of fruit detachment force in 2008, while had the lover of fruit detachment force in 2009. Fruit firmness of “Érdi bőtermő” were monitored at lover value in both 2-year.

Colour components of different table beet varieties
36-38.Views:214Information of the total pigment content of table beet roots is not sufficient enough to estimate their suitability to processing. Differences in the occurrence of the red pigment components of different thermostability determine the mode of processing of the varieties. Pigment extraction methods which require heat treatment (e.g. table beet root powder) need raw materials of higher betanin content.
Of the tested varieties — Bonel, Nero, Favorit, Rubin and Detroit — Bonel and Favorit had the highest betanin content (50.03 and 49.53 mg/100g, respectively).
The isobetanin quantity varies according to varieties (13.10-26.62 mg/100g). Values between 2.92-6.63 mg/100g and 0.96-2.96 mg/100g. respectively were found for betanidin and isobetanidin.
Data revealed the highest BC/BX ratio in the variety Rubin (2.08) indicating good inner colour in sensory tests. However, the high total pigment content (81.01 mg/I00g) was associated with lower betanin content (46,26 mg/100g) and at the same time, with higher isobetanin (25.16 mg/100g), betanidin (6.63 mg/100g) and isobetanidin (2.96 nig/100g) contents. Out of the tested varieties Nero had the lowest total red pigment content (57.43 mg/100g) but the relative betanin value was the highest with nearly 70 %.
Laboratory testing of the table beet root varieties will be required to find the most suitable material to produce colouring agents.

Effect of pre-harvest spray of calcium nitrate, boric acid and zinc sulphate on yield and quality of Nagpur mandarin (Citrus reticulata Blanco)
23-28.Views:285An investigation was conducted on uniform, healthy, eight year old trees of Nagpur mandarin (citrus reticulata Blanco) at Fruit Research Farm, Department of Fruit Science at College of Horticulture and Forestry, Jhalawar during 16 September, 2014 to 1 March, 2015. Various doses of calcium nitrate (1.0%, 2.0% and 3.0 %), boric acid (0.2 %, 0.4 % and 0.6 %) and zinc sulphate (0.2 %, 0.4 % and 0.6 %) were sprayed before harvesting and compared with untreated ones. The results obtained indicated that the trees sprayed with T27 i.e. (calcium nitrate 3.0 % + boric acid 0.6 % + zinc sulphate 0.6 %) showed maximum increase diameter of fruit, fruit weight, fruit volume, number of fruits per plant, fruit yield per plant, estimated yield per hectare, reducing sugar, non reducing sugar, total sugar, juice per cent, sensory score and reduced peel thickness over control. Further, T24 treatment combination (calcium nitrate 3.0 % + boric acid 0.4 % + zinc sulphate 0.6 %) has also significantly increased number of segments per fruit, TSS, TSS: Acid ratio, ascorbic acid content, and reduced number of seeds per fruit and acidity percent of fruits.

Evaluation of morphological parameters and bioactive compounds in different varieties of beetroot (Beta vulgaris L. ssp. esculenta GURKE var. rubra L.)
31-35.Views:466Beetroot consumption based on pickled beets generally in Hungary which is due to the higher yield from second crop harvested in autumn and processed by manufacturing industry. Researches of the past years confirmed its favourable nutritional-physiological effects on human body so demands, as for fresh salad, also increased. The trial aimed at testing the interaction of varieties on quality parameters and in the same time suggestions are made how to use different varieties of beetroot according to its quality. Morphological and sensory evaluations were examined on 10 varieties of beetroot harvested in autumn. The regular spherical shape can reduce the refining loss during the processing of beetroot which is beneficial for the manufacturing industry. In our trial the root shape of Libero, Mona Lisa and Rubin varieties approached most the regular spherical shape (diameter/length – 1.0) which is favoured by not only processing industry but also fresh market. The highest red pigment content (betanin) was observed in Mona Lisa, Akela and Cylindra (34.58–47.66 mg/100 g). A similar trend could be observed in yellow pigments (vulgaxanthins) which proves the close correlation between the quantities of the two pigments (r=0.898). Highest total polyphenol (77.13–83.37 mg GAE/100g) and flavonoid (21.73–22.73 mg CE/100g) contents were detected in Akela, Mona Lisa and Bonel. These varieties are favourable for fresh salad and they can satisfy processing requirements also. Highest water soluble solids content was found in Akela (7.15%). In our conditions nitrate (NO3-N) values below 900 mg/kg were examined in all of the varieties which is favourable in the case of beetroot.

Investigation of the Relationship between the SO2 Production of Different Yeast Strains and Thiamine Concentration
57-62.Views:159Our general conclusion was that the thiamine amounts of 0,6 and 3,0 mg/1 added prior to wine fermentation, resulted in higher free-S02 level in comparison to the control. Furthermore, among the yeast strains examined in our experiments, Uvaferm BC strain produced the highest free-S02 content under the conditions mentioned before. As regards the dynamics of reductone and SO, production, the concentration of the previous one was practically identical in the middle and at the end of the fermentation while the SO2 content — both free- and total — was lower at the end. Thiamine addition did not cause any difference in the organoleptic properties of wines as proved by sensory analysis.

Comparative study of effects of a complex fertilizer and a biostimulator on macroelement content of leaf and fruit quality on sweet cherry (Prunus avium)
91-94.Views:283In this study. we are partly focusing on consumer acceptance of fruit, like fruit cracking, weight and flavours, and maturation, fruit density and content of nutrients which are undelie consumer acceptance, and important equally to the growers and marketers. the results on the dynamics of N-uptake corresponded ti thephenological phases of cherry and independent on the applied treatments. Younger leaves contain more N than elder due to the effective N uptake of young leaves. Based on the measurements conducted in June, the P content of leaves was in low P supply category at the control and the Benefit treatment, while was in the lower range of optimal category at Damisol treatment. According to our measurements, the K of cherry leaves decreases continuosly until September, expcept the control at which it increased from the end of June to September. the fruit weight was increased significantly by applying Benefit PZ. the best results for fruit cracing observed at Benefit treatment too. The best result for fruit density was observed at Damisol treatment.
