In modern and healthy diets antioxidants play an important role providing natural defence against serious diseases. Therefore it is recommended to include fruits and vegetables having high antioxidant capacity in daily diet in a due course. Apricot is one of the fruits receiving an increasing attention in this field. This study was conducted to... investigate the composition and content of fat-soluble carotenoids and tocopherols in different varieties of apricot using recently developed liquid chromatographic methods. Also it was aimed to compare organic and integrated farming in their effect on carotenoid and tocopherol content of the fruits. The results showed that apricot fruit are rich in vital carotenoids and bioactive tocopherols with significant variation between different varieties. The organic farming had favourable effect on the level of the major carotenoids and depending on variety this technology either increases or does not have significant influence on vitamin E content.

The morphological and chemical changes in the leaves of eight apple varieties grafted on M4, M26 and MM 106 rootstocks were examined during fruit development in non-irrigated plantation. The aim of the experiment was to examine the defensive mechanisms in apple trees under the mild and serious dryness occurring during fruit development. The con...tent of a relative chlorophyll (SPA D value) of the apple leaves on eastern side of the trees was lower than western and southern sides under drought occurring du ring fruit devclop111ent Under sustained drought from first of July to August the SPAD value, the weight of leaves were larger and the stomata density was significantly larger than in the previous periods. There was a close positive significant correlations bet ween SPAD and stoma density both in the group with less sensitive to drought (r=0,8429) and in the large water demanded group (r=0,9209) equally. The rate of increase in SPAD values and the stoma density was slower in the group with drought tolerant, than in the group required good water supply. The varieties being sensitive to water deficite such as Akane. Pink Lady and Red Rome van Well have a l ready responded intensively to short time of drought by the increasing of carbohydrate and antioxidants product ions. At 42 days of sustained drought as soon as the level of carbohydrate in the leaves decreased, the antioxidant s contents of the leaves rised suddenly in the apple varieties with moderate water requirement s as Greensleeves and ldared. Gala apple variety seemed to be able to defend the drought for longer time because there was no change in relatively high level of carbohydrates and antioxidants of their leaves under severe drought during fruit development.

Nowadays a number of lignans (arctigenin, matairesinol, pinoresinol and phillygenin) have come to the fore in research due to their various biological activities. In this paper the accumulation of these constituents in leaf extracts of Forsythia plants (F. intermedia, F. ovata 'Robusta’ and `Tetragold', F. suspensa, F. v...iridissima) was quantified using a new isolation method, supercritical CO2 fluid extraction. The total phenolic and flavonoid contents, the antioxidant capacity and the aglycone lignan profile were determined in leaf extracts of Forsythia species. Within the phenols, the flavonoids were only present in small quantities, but the amount of aglycone lignans was extremely high. F. ovata `Robusta' had the highest total lignan content (103.8 mg/g) of all the Forsythia species. The main lignan in this species is arctigenin, which normally makes up about 60% of the total lignan content, but in the case of F. ovata `Robusta' this value was 96.1%. Since this arctigenin content is outstanding compared to that of other Forsythia species, it could be promising to develop a fermentation technology for the production of this natural compound.

Vegetables of Brassicaceae are especially important because of their inner values, which play a provably positive role in curing and preventing diseases. Cabbage (Brassica oleracea L. convar. capitata provar. capitata) is still today one of the most frequently consumed green vegetables, which is known to brak...e the absorption of carcinogenous substances and to obstruct cell mutation. Different cabbage cultivars were compared growing under the same circumstance. The level of different carbohydrate fractions and some biologically active quaternary ammonium compounds were determined. In all cases we analyzed the antioxidant capacity of samples characterizing the free radical scavenging capacity.

Clearly detectable significant differences were found between the varieties tested, which appeared suitable for selecting the most precious varieties for human nutrition.

Foliar application has been determined to be an effective nutrients delivery strategy in vegetable and fruits. The enhancement of vegetable and fruit yields affected by foliar nutrients application has been recognized in previously conducted studies with perennial tree crops. The efficiency of foliar nutrition is dependent on soil, climate, fer...tilizer and the amount of nitrogen used. There is no sufficient information concerning cooperation of foliar nutrition with all nutrients form as well as the rates of these nutrients fertilization in vegetable
and fruit crops. Two successive winter seasons of 2008/2009 and 2009/2010 were conducted under sandy soil conditions to study the effect of spraying with 12 commercial compounds on inflorescences diameter, flower stalk length, number of seed stem /plant, weight of 1000 seed, germination percentage, seed yield, moisture content, catalase , peroxidase activity and malondialdehyde content of onion seeds. The plants
sprayed with union Zn, union Mn, union feer, shams k, elga 600, boron, and amino x had the highest vegetative growth parameter, germination percent and enzyme activity. The plants sprayed with union Zn, union feer, shams K, magnesium, caboron, hummer and amino X had the highest seed yield ha-1. The seeds were stored for one year to study the effect of different commercial compounds and storage temperatures on germination, moisture content and change in antioxidant enzymes activities of onion seeds during the storage period. Storage at cold temperature showed higher germination percent, moisture content and lower malondialdehyde content than storage at room temperature. The treatment with union Zn, union feer, union Mn, boron, elga 600, caboron, amica, hummer and amino x had the highest germination percent.

Selenium (Se) is an essential trace element for animals, microorganisms and some other Eukaryotes. It has become increasingly evident that Se plays a significant role in reducing the incidence of lung, colorectal and prostate cancer in humans. Although it is well known that some species among higher plants are able to accumulate selenium in tissues, but others are not able to do so, and there is evidence that selenium is needed for the growth of algae, meanwhile the question of essentiality of Se in vascular plants is unresolved. We aimed to study the in vitro growing and to characterise some physiological properties in radish (Raphanus sativus L.) seedlings treated with 0 to 200 mg/1 sodium-selenate. The results showed that lower (2 mg/1) concentration sodium-selenate increased the biomass as well as the total antioxidant capacity of seedlings. The seedling's selenium content showed linear correlation with the sodium-selenate content of the medium.

The requirements for in vitro micrografting in apple are described. In vitro multiplicated shoots of cv. Royal Gala were the sources of rootstocks and scions after different pre-treatment, respectively. Oxidative browning of cut surfaces could be inhibited by the use of antioxidant mixture during grafting process. Sci...on base cut in v-shape was stuck by 1% agar-agar solution into the vertical slit of rootstock. There was no any displacement and the rate of fused and further developed grafts was 95 percent. Agar-agar between the rootstock and scion made the transport of different materials possible and hold the graft units together until the fusion took place. Fusion was proved also by histological studies. Some of in vitro micrografts were planted and acclimatisated and the survival was 100 percent.

The consumers have been exigent increasingly about excellent quality. The speci fie flavour and fragrance of apricot evolve during ripening. We need to be acquainted with changing of inert content during ripening to the choosing of optimal harvest time. The Regional University Knowled ge Centre -Research and Development in Foodstuff Chain proje...ct had presented an opportun ity to study the inner content of apricot. Our aim was to study evaluation of health care attributes of apricot fruit. We investigated different ripeness samples of four apricot varieties ('Mandulakajszi', 'Pann 6nia', 'Gonci magyar kajszi'. 'Harcot') in our study of 2007-2009. Samples were taken the orchard of Sóskútfruct Ltd. Hungary. We had measured the water soluble antioxidant capacity, polyphenol-, f3-carotene content and the dissimilar sugar and acid-fractions during ripening. We had experienced significant different in inert content between varieties.

Self-heal (Prunella vulgaris L.), known as a remedy traditionally used as Chinese medicine, was neglected in modern pharmacy until the 20th century. Although in the Middle Ages it was respected for its wound-healing effect, the usage of this medicinal plant was confined just to the conventional pharmacy. Nowadays, because of the great ...dislike of synthetic materials, however, self-heal has become one of the most important target plants again. Owing to its valuable active constituents, besides its wound-healing effect, the plant can also be used as hepato-protective, antioxidant, anti-HIV, anti-cancer remedy, and it is effective against Herpes virus, as well. Its taste — and odourless extracts are applied by the food industry as natural food preservatives. Taking into account the importance of self-heal our aim was to introduce this plant species more detailed with regard to its active agents, effects and cultivation methods.
