  • Affinity for Consumer Resistance Among Hungarian Consumers

    The causes of the loss of market results go beyond the realities of intense and noisy competition. The rejecting attitude and resistant behaviour of consumers can exert pressure on the companies’ business processes – several market examples draw attention to the weight of those consequences. To find out the appropriate way to handle this phenomenon became inevitable. The resistant behaviour of consumers exists in numerous markets and industries, among these foods are particularly concerned. There are examples for short and long term, but intense consumer indignation. Although consumer resistance is not a product- or market-specific phenomenon, it’s worth considering the issue of food, because of its embeddedness in everyday life, so market players may face easily criticism and conflict of interest. The study provides an overview of markets facing consumer resistance. The aim of the quantitative research is to find out the affinity of Hungarian consumers for consumer resistance and its various forms.

  • Interpretation of Health-conscious Food Consumption Behavior on the Basis of LOHAS Concept

    In our study, the information search behavior of sustainability committed consumer group is analyzed. Furthermore, consumer opinions about nutrition labels on food packaging are highlighted. According to the international literature, LOHAS (Lifestyle of Health and Sustainability) group is the most committed consumer segment to sustainability.
    Exploration of Hungarian sustainability committed consumer groups’ opinion about food labels is supported by the closing part of a research chain which was started in 2010. This, last research was carried out in 2012, where, with the aid of quota sampling, Trend followers’ and Unconcerned’s judgment on food labels was investigated. The quota and the two mentioned groups were formed on the basis of a national representative research, which was performed in 2011. Information search behavior was evaluated according to the structure of Grunert-Wills’ information search model. In this study we focus on our research results, which connect to the last two steps (understanding, interferences and use) of the mentioned model.
    Goal of this research is to investigate in a practical aspect of information search behavior of domestic sustainability committed consumer group (“Trend followers”) in connection with food labels proving health effects of foodstuffs. Four hypotheses were defined to reach our goal:
    H1: Among health information on food packaging, labels stating energy value, are getting a higher influencing role in food purchasing process, where conscious consumer groups have a deeper knowledge about the objective meaning of food labels.
    H2: Consumer knowledge about objective meaning of food labels is getting a highlighted role in formation of brand loyalty.
    H3: Trust has an essential role in consumer acceptation of food labels, where common qualifier activity of different organizations (state, profit and nonprofit area) come into the front.
    H4: Correct understanding of food labels has a positive influencing effect on acceptation of higher prices and on real use of food labels during food purchasing.
    One- and multivariate analysis and cross table analysis were calculated to investigate our assumptions. In the closing part of our study, three practical recommendations are defined, which relate to follows: optimization of communication strategy of food industries, way of introduction of new food labels and need of objective guidance of consumers about food information.

  • Consumer Perception of Corporate Social Responsibility

    Several studies have drawn attention to the importance of and the impact on consumer behavior of the corporate efforts in order to promote sustainable consumption in the last decades. The concept and framework of sustainable consumption appear at global, European and national levels. Several studies have examined the possible design and modeling opportunities for sustainable societies. The socially responsible operation of companies and their efforts for sustainable consumption can be the driving force behind social changes. In our study, we examined the consumer’s perception of social responsibility of companies on based on a national representative sample of 1,038 respondents over 15 years of age. In our analysis, opinions and attitudes related to sustainable development are presented, followed by the characterization of the groups that can be separated on the basis of the monitoring of sustainable corporate activities. The research shows that only a minority the consumers do not believe that consumers could make to sustainable development through their decisions. In contrast, nearly a third of domestic consumers is neutral or attaches importance to the efforts of companies for sustainable development, which is average by European standards. The company moves which lead to better opinions of domestic consumers, or which may lead to the rejection of shopping are introduced. Four groups of consumers are separated according to the monitoring of sustainable business activities.

  • Health or Taste? Consumer Dilemmas with Functional Foods – Literature Review

    The current study of our two-part paper series is dealing with one of the most important attitude influences on functional food consumer behaviour. Namely, it focuses on “health effects vs. taste” attitude factor of functional food products, which describes the possible conflict between a pleasant taste and the health benefit of the product. This factor is analysed on the basis of two aspects of factors influencing food choice: internal (food) effects (e.g. sensory aspects) and external (non-food) effects (e.g. psychological, social, cultural factors). The most important internal (or intrinsic) characteristic is the taste of the food product. A remarkable finding of this study is that good taste is a crucial, self-relevant characteristic of any food product and bad taste would not be accepted in functional food products either. Consumers are hardly willing to compromise on the taste of functional food products for potential health benefits. Another aspect in the case of functional food products is that intrinsic product characteristics are given by the combination of the health-enhancing ingredient with the type of carrier product used. Studies have shown that functional ingredients that weaken the taste of such food products reduce their acceptance. There is a consensus in the literature that a natural match between added ingredient and carrier product increases the overall acceptance of functional food products. External (or extrinsic) characteristics, e.g. psychological and lifestyle factors, and socio-cultural differences provide further aspects of the potential conflict of “health effects vs. taste”. From a psychological point of view, one may assume that an individual who chooses a functional food is committed to the products’ benefits and may be willing to accept some unpleasant taste in order to achieve the desired health benefit. It has to be noted, however, that although the importance of a given health benefit may lead to the acceptance of an unpleasant taste, this acceptance is not necessarily supported by each of the health benefits. Lifestyle variables also influence the acceptance of functional foods, e.g. wellness-oriented consumers appear to be more willing to trade the taste for health benefits. However, the segment of consumers who are ready to sacrifice the taste for potential health benefits cannot be identified by using classical demographic characteristics as segmentation variables. The “health effects vs. taste” conflict is influenced by cultural differences, too. E.g. the priority of taste can be observed in whole Europe; in contrast, the preference for nutritional benefits is rather typical in the Asian countries. The final conclusion of our study is similar to that of the literature. Good taste and healthiness are not necessarily to be traded-off against each other. Hoping for consumer willingness to compromise on the taste for health is highly speculative and risky, so the functional food industry must develop good taste solutions. In addition to sensory perception of the food, the expectations have also been found to have an impact on the acceptance of functional food products. Consumers’ expectations are highly influenced by marketing communications. In case of functional food products marketing communication is strongly based on health-related information and this information influences not only the perception of healthiness but the liking of foods, too. Hence, additional values of functional food products (health+convenience+pleasure) have to be communicated as hedonic values, emphasizing especially the role of pleasure.

  • The Price of Health – The Consumption and Purchasing Patterns of Foods  with Special Attention to Price

    The economic events of recent years (war, the COVID epidemic) have had a significant impact on our daily life, including our consumer and shopping habits. The main aim of this research is to examine how food consumption and purchasing habits have changed in response to price changes, particularly for foods perceived to be healthy. Two focus group surveys were conducted to explore consumer habits on this topic. The period covered by the research was the consumer prices in April 2022 and April 2023. Our research explored general food purchasing habits and consumer motivations. We examined the extent to which products that participants perceived as healthy were purchased online, and the impact of price changes on the demand for health-conscious foods and on consumers' brand loyalty. We also looked at the online price monitoring system, where we mapped consumer adoption and the consumer benefits that the system provided. One of our key achievements is to identify a growing consumer awareness, with more and more people choosing quality, expertise and choice over convenience and price. The types of consumer responses identified in the EUROPA.EU research was in terms of products perceived as healthy in the wake of the price rise, although the proportions have shifted significantly; many are looking for alternatives, seeking substitutes for products; and fewer are the concern-averse, loyal consumers and the well-off but not engaged. Price sensitivity is increasing as a result of recent sustained price rises, with a small proportion of people who are not concerned. There is also a low proportion of emotional comfort seekers, a group largely confined to high-income consumers. For those who are not aware of the price of products, there is no change in brand loyalty and no brand abandonment, but for those who are price-aware, there is a tendency to switch between brands.

  • The Consumer Behavior of Volunteer Simplifiers Special Reference to Dietary Habits

    This paper introduces voluntary simplifier consumers who freely limit their consumption; freely purchase less than the average consumers. They refuse the logic of the consumer society, and choose an anticonsumer lifestyle that features environmental, social and economic sustainability. According to the international literature the concept of voluntary simplicity will be defined; the types/stages, main motives and influence factors of this frugal lifestyle will be presented. Since the inhabitants of the strictly regulated eco-villages can be regarded as voluntary simplifiers, we extended our research to eco-villages. With exploratory goal we examine two eco-villages’ webpages searching for information about their dietary habits.

  • Impact of the Financial and Economic Crisis of 2009 on the Hungarian Food Retail Sector in the Light of Consumer Confidence – Improving Trends, Increasing Consumer Confidence

    As a result of the international financial and economic crisis of 2009, Hungarian customers started to make informed purchasing decisions. Merchants recognizing this phenomenon formed their strategies accordingly, while trying to meet the requirements of the constantly changing government regulations. This strategy ensured primarily that they could maintain their position in trading, new consumer expansion was, however, limited. Limited because consumers have realized the situation, i.e. traders have been competing for their income and complex shop visiting has become widely common, implying the weekly tour of different shops in retail chains with an eye on the current promotions. Based on the data of the last eight years, the year most affected by the economic crisis was 2009 – which proved to be the deepest point. It has to be highlighted however that though signs of recovery are clearly visible, the volume of food retail returned to its growth path only in 2014, while sale increase in value has been continuous since 2008. This suggests that the impulses of the crisis starting in the fourth quarter of 2008 formed the domestic food trade for full six years. Also, this period was required to regenerate consumer trust. The more favourable prospects of the finances of both individuals and the economy encourage an increase of willingness to buy. The six-year period impacted by the crisis intensified concentration among trade stakeholders. The forecasts proved realistic, supermarkets have become more popular sites for shopping, although hypermarkets as strong competitors have been able to keep pace due to tailored promotions in the 6 trading days permitted by law until April 2016. Due to the massive social and political pressure the Government repealed the Act prohibiting work on Sundays in most retail shops with effect from 16 April 2016.

  • Consumer Perception and Perspectives of Wines with Reduced Alcohol Content and Non-Alcoholic Wines (in Hungary)

    Significant changes have taken place in the international wine supply in recent times and the volume of non-alcoholic wines and the ones with reduced alcohol content and the consumer interest in them have increased as well. The latter is caused by changing consumer habits, like the development of health awareness and the fact that healthier eating is becoming more common. The present study provides a brief overview of some characteristics of the demand for non-alcoholic and reduced-alcohol wines, consumer perceptions, and the effects of alcohol on health. Based on some Hungarian wine consumer behavior research, this research examines the reasons behind the refusal to drink wine, and consumer opinions on the relationship between wine consumption and alcoholism. The revealed phenomena and the preferences and attitudes influencing them intend to prepare the basis for a research examining the domestic possibilities and potentials of non-alcoholic and reduced-alcohol wines.

  • Awareness and Effect of CSR on Consumer Decisions

    Corporate social responsibility (CSR) is a common topic, both at national and international levels. Profit maximisation is essential for companies, but they should not forget the social and environmental impacts of their activities. The question of sustainability is also a common topic requiring examination. The future of the Earth, our natural resources and the generations that will come after us also impact on the responsibilities of companies. For many companies, this kind of responsibility is natural and they take such CSR and sustainable steps that are worth following. From modern society, there is a high expectation and even strong pressure on companies to conduct responsible business practice. The number of responsible companies is increasing due to this pressure. What do we mean by CSR? What sorts of activities and steps are covered by CSR? What are the motivators of the CSR strategies, CSR activities of companies? What are their reasons? Many researchers investigate the motivators of CSR. From them, opinion on the company, image of the company, “consumers will prefer us”, are among the most frequent ones. However, are the CSR actions of companies appreciated by consumers? The results of many researchers demonstrate that they are not appreciated. In general, responsible business practise is a high expectation from consumers, but when purchasing a product, this aspect is one of the least important factors. The aim of this paper is to collect some of the most relevant research findings on CSR, to introduce the informedness of Hungarian respondents on CSR in general, to find out the main influencing factors of their purchasing decisions, and also find correlations between the received results and the demographic variables based on our primary research. Our results support the present practice in terms of the definition of CSR. Almost all the listed alternatives are strongly associated with CSR by the respondents. The highest average received for the “creating workplaces, employment” alternative indicates the importance of this activity. Regarding the different factors influencing purchasing decision, our results underline the importance of price and price value ratio. This research finding is in line with other research findings, which shows that CSR actions of companies, responsible business practice is not the number one influencing factor of actual consumer decision.

  • The Role of the Cognitive Component of Consumer Attitude in the Image of the Pálinka

    The research aim is to explore the potential role of consumer attitude components in image development related to a traditional Hungarian alcoholic beverage, the pálinka. This study focuses on the effect of the cognitive component of attitude on image of the pálinka. The relevance of this research is the expansion of the pálinka market in recent years and the changing of the regulatory environment about homemade spirits. Distillate made at home, which product improperly called homemade pálinka, is very popular in Hungary. Based on the qualitative studies, the most important characteristics in the consumer perception of alcoholic beverage are quality, price, prestige, fashion and origin. The importance of these attributes of the most popular alcoholic beverages in Hungary was assessed by the participants on Likert scales. Homemade spirit has the most favorable attitude and in-store pálinka has the most unfavorable attitude. To understand the effect of the cognitive component, we used two types of the multiattribute attitude model of Fishbein. By using a 7-point semantic differential scale, we could graphically illustrate the consumer belief about the homemade and in-store pálinka. Image profiles on the semantic differential scales show the differences in image of the analysed alcoholic beverages. The study confirmed the advantage of homemade spirit image over in-store pálinka, points out the importance of education and information in the case of the cognitive component of consumer attitude. The reconsidering of the marketing communication of the in-store pálinka producers is very important and urgent.

  • Analysis of the Affective and Conative Components of Consumer Attitude in the Image of the Pálinka

The relevance of this research is the expansion of the pálinka market in recent years and the change of the regulatory environment about homemade spirits. Distillate made at home, which product improperly called homemade pálinka, is very popular in Hungary. This study was supported by the data from a nationwide, representative consumer survey carried out in 2019 and 2020. A total of 626 subjects participated in this survey, the sample is representative for the Hungarian adult population according to gender, age group and region. To understand the effect of the affective and conative attitude components, we used Likert scales and graphically illustrate the consumer feeling and behavior about the homemade spirit and the “in-store” pálinka. The study confirmed the advantage of homemade spirit image over in-store pálinka, and points out the importance of education and information in the case of the affective and conative components of consumer attitude. The reconsidering of the marketing communication of the in-store pálinka producers is timely and very important; however, this task requires a comprehensive marketing strategy covering all three attitude components, and this is the only way for them to remain competitive.

  • Drivers of Local Food Product Consumption among Young Consumers

    Future trends in sustainable food consumption include, among others, the expansion of short food supply chains coupled with a shift in consumer behaviour, e.g., a growing interest in product information, increased appreciation of trust towards local producers and locally produced food. There is a growing body of literature on local or alternative food to address the problem of consumer behaviour called the buyer's "black box". This paper aims to identify the most prominent drivers for the segment of young consumers for purchasing healthy and quality products: curiosity, uniqueness, and experience. We conducted this study to direct the attention specifically to the buying behaviour of young consumers, as previous research found this segment the most open to sustainable food consumption. A quantitative study was conducted on a large-sample survey with respondents aged 18 – 45 in Hungary. The questionnaire focused on product features, intrinsic and extrinsic motivational elements, and demographic characteristics. The findings of this study can support managerial decision-making and serve as a basis for further academic research.

  • Changes in Food Purchasing Habits During the Covid Pandemic in Slovakia and Hungary, Focus on Southern Slovakia and Western Hungary

    The global pandemic of COVID-19 has led to many drastic changes worldwide, not only in the economy, but amongst others, in the structure of people’s daily routines as well. Some developments have been involuntary – as social distancing, wearing masks, restrictions on travel, etc., but for others, it has merely accelerated the adoption of behaviors already gaining traction, such as the digitalization of shopping and more. Consequences of subsequent lockdowns and their effect on the consumers’ grocery purchasing habits and their implications for food retail had been investigated in our research with a particular focus on regions of South Slovakia and West Hungary in a period ranging from November 2020 till April 2021. The constructed online questionnaire chosen for data collection aimed to identify specific ways in which consumers changed their grocery shopping behavior during the lockdown (e.g., frequency of shopping trips, time spent in stores, the aim of shopping, purchase of ingredients, online shopping). The results of the online questionnaire underlined the main regional differences between the two countries. The overall outcome of our research showed the moderate reduction in grocery shopping frequency, minor changes in shopping location and partially increase in online shopping. Our results showed that although the proportion of online purchases has increased, such a crisis does not seem to be sufficient to overcome barriers to shopping, such as the purchase of a new, unknown product. But changes that provide positive experiences are likely to last longer, particularly those driven by convenience and well-being, such as digital adoption, value-based purchasing, and increased health awareness. This provides an opportunity for companies to offer innovative, value-based, and integrated products or services to meet customer needs. Companies and retailers will need to adapt fast, understand consumers’ preferences, and stay relevant.

  • Chocolate Consumption Habits of Hungarian Women and Their Consumer Behaviour Regarding Sugar-free Chocolate

    In line with the global trend of health and wellness, there is now an increased demand for products that have a positive effect on health (or that are at least less unhealthy), such as sugar-free or reduced-calorie chocolate, especially among female consumers. Therefore, in our research, we set out to explore the chocolate consumption habits of Hungarian women, with particular regard to consumer acceptance of sugar-free chocolate. In the course of our primary research, we conducted an online questionnaire survey with the participation of 370 female respondents, during which we explored some elements of their consumer behaviour related to conventional and sugar-free/reduced-calorie chocolates; moreover, possible differences in the willingness to pay for sugar-free and conventional chocolates were also examined by using the packaging of two real, 100 g Stühmer milk chocolate bars and their modified versions as well. According to our results, the vast majority of women interviewed like chocolate, with milk chocolate being the most popular. Most of them eat chocolate a few times a week, but consumption of sugar-free/reduced-calorie chocolate is much less common. When buying chocolate, the respondents are clearly most influenced by the taste, which is followed far behind by the price, and then the healthiness of the chocolate. Most of the women asked are interested in sugar-free and reduced-calorie chocolates, the majority of them consume such products because of health awareness. The respondents’ willingness to pay for sugar-free chocolates is not lower compared to the versions sweetened with sugar, but the willingness to pay reaches the market price only in the case of a gift purchase; in the case of a purchase for one’s own consumption, it mostly falls short of it.

  • The Size and Characteristics of the LOHAS Segment in Hungary

    Until the 1990s, those exchange processes were in the focus of marketing in which the producers had the bargaining power in their hands. After realizing the limited sources and the natural challenges at the beginning of the twenty-first century, today marketing experts are interested in global issues like sustainable development and sustainable consumption. The aim of our research was to define the size of the Hungarian LOHAS consumer group by analysing its lifestyle based on sustainable values. This has been achieved in three steps. At first, the appearance of sustainable values was analysed using factor analysis. Secondly, we made the value-based lifestyle segmentation of the Hungarian consumers with the help of k-means analysis, and finally, with further segmentation, we estimated the size of the consumer group that is the most devoted to LOHAS values. In order to achieve the set objective, a nationwide representative questionnaire-based survey was carried out involving 1000 people in Hungary. During the value-orientated research, 25 lifestyle statements were drawn up. The 25 statements were grouped around 5 aspects which were the following: environmental consciousness, health consciousness, ethical values, authentic values and individualism. Results reveal that in the value order of Hungarian consumers, the characteristics showing in the direction of sustainability are present and they are separated in six value categories. They are individualist values, authentic values, environmental consciousness, ethical (competence) values, health consciousness and ethical (corporate) values. From among the value dimensions, authentic values, health and environmental consciousness, as well as ethical corporate behaviour are especially important to Hungarian consumers. According to our results five value-based segments could be separated which are Uninvolved elderly people (16.4%), Young trend followers (32.1%), Young environmentally conscious people (18.6%), Ethical traditionalists (22.6%) and also Disappointed pessimists (10.3%). The biggest cluster, the group of Young trend followers, reflects the characteristics of the LOHAS consumers’ lifestyle the most. Yet, this segment cannot entirely be regarded a consumer group devoted to LOHAS values. The biggest heterogeneity can be observed based on the ethical (competence) values of Young trend followers, and a further segmentation of this group was considered necessary to be able to ascertain the rate of the most devoted LOHAS consumers. The third sub-cluster that overestimates the ethical (competence) statements the most can be identified with the LOHAS consumer group. Based on the results of our research, their rate is 8.7% within the Hungarian population. Further research is necessary to find out whether the situation of value orientation in the other Eastern European countries is similar to that in Hungary, where the social and the cultural backgrounds show many similarities.

  • The Transformational Impact of Industry 4.0 on the Wine Marketing and Wine Sector

    Industry 4.0 - like other industries - is transforming the wine sector. From viticulture to winemaking processes to wine marketing and sales, Industry 4.0 technologies have appeared everywhere and have proven to be effective with numerous best practices. It can be stated that sooner or later every serious market participant will incorporate some of Industry 4.0's solutions into their business strategy - otherwise, they will suffer from a difficult-to-catch and manage competitive disadvantage. This study summarizes the processes and main characteristics of the first three industrial revolutions, then analyzes in more detail the fourth industrial revolution and the concept of Industry 4.0, its events, the development opportunities inherent in Industry 4.0 innovations, and certain social risks as well. Subsequently, using case studies and examples uncovered through literature research, it illustrates the connection points between Industry 4.0 and the wine industry - primarily wine marketing.

  • Analysis of the Food Consumer Behavior in the Online Environment: Does Digital Food Consumer Exist in Hungary?

    In recent years one of the major players in the market have changed radically, the consumer. They have been titled as „digitally enlightened” citizens by various researches. The main characteristics of „traditional” consumer’s behavior have been discussed previously by numerous researchers. However research on digital consumers, especially in domestic circles, is still in initial stage.
    The main objective of this article is to determine the online consumer behavior trends in our country, in relation to information and shopping in particular of food. At the end of this publication we intent to answer the question asked in the title, i.e. does digital food consumer exist in this country.
    In our study we used the online consumer buying behavior process as base. Each step was mapped out by using relevant and current literature analysis. Using national representative survey (N=1000) we examined in detail the food-related online information searches and the shopping opportunities in online shops.
    The convenience factor – similar to the description of the literature- is the most advantageous aspect of online shopping. At online shops the other factors examined convergence occurring in the median values show the uncertainty of customers’ purchasing behavior, which results in a lack of trust in food purchases.
    Overall, we can conclude that the majority of literature and research on food consumption behavior doesn’t separate properly the online consumer’ roles and most of the emphasis is on the final purchase. Based on literature research, we have attempted to differentiate the digital food consumers based on online behavior in which the basis for the subsequent researches hypothetical fives categories were distinguished.

  • Analyzing Consumer Attitudes Towards Health-protecting Food

    The main goal of our research was to analyze the role of health-protecting food in our daily nutrition. In our secondary research, we analyzed the generalities and characteristics of health and health behavior with the help of relevant domestic and foreign literature. We analyzed the domestic tendencies of health in details. We examined the most important characteristics of functional foods and investigated the factors of personalized nutrition. Based on a literature review, in our primary research we conducted an online questionnaire survey with 231 respondents. Our survey cannot be considered representative, however, the proportion of genders in our sample population is almost the same as the Hungarian population’s. In the questionnaire survey, we examined the frequency of consumption of health-protecting food. After that, we analyzed respondents’ perceptions of the actual health effects of health-protecting food. We have measured consumer attitudes towards health-protecting food. We analyzed the perception of potential health risks and problems from the consumer perspective. We measured the impact of various health factors on shopping. Besides, we have explored our intention to participate in personalized nutrition-related programs. Based on our research, most of the analyzed health-protecting food is consumed once or twice a week. It can be stated that the respondents considered the examined food categories less scientifically proven. We could identify the preventive behaviors of respondents for various health problems. However, there is also uncertainty in the decision of respondents in what is the right way to prevent the diseases. In this uncertain situation, only experts can provide real help to them.

    Neuromarketing opens up a new field of the examination of consumer behaviour for the marketing researchers. The utilization of the results of neuroscience came up at the beginning of the ’90s but it came true at the end of the decade. The term “neuromarketing” appeared in 2002 for the first time, it became widespread and these tools were used in different kinds of market research problems. Nowadays there are research results in decision making, brand preferences, packaging and branding as well. The article aims to look through one of the fields of neuroeconomics, neuromarketing. Neuromarketing means the utilization of the instrumental methods of neuroscience to study market research problems. In basic researches the term “neuromarketing” is usually avoided because it suggests practical utilization. In basic researches the terms neuroeconomics and consumer neuroscience are more frequently used. In a wider sense it means the application of the results of neurology to solve marketing problems.

  • Preliminary Research in Connection with the Significance of the Traditional and Regional Foods in the North Great Plain Region

    The traditional and regional foods represent distinctive and unique values for customers in the world food market by their inimitable tastes and appearances. In today’s fast-moving world in which globalization’s different – both positive and negative – effects determine the daily activities of consumers and influence their needs, their choices and their decisions during the regular food and raw material purchases; it is relevant to strive for the presence and regular consumption of traditional products also to become known to a wide circle of society. The key objectives of our research are the main effects of traditional and regional foods in the Northern Great Plain, particularly with regard to the marketing and economic aspects approach. Our study is an experimental study of a later larger number of elements and representative survey, and it is based primarily on online questionnaires. During the research we received 151 available questionnaires. The interviewed inhabitants of the region have declared a positive opinion in the context of traditional and regional foods, most of them purchased and consumed these products regurarly.

  • Game-meat Consumption Behavior the Image and Market Positioning of Quality Venison

    The purpose of our research is to understand the wild game meat, and more specifically, venison consumption behavior of the Hungarian population. In order to examine the issue, we have conducted questionnaire surveys as well as focus group interviews. Only 36.6% of the respondents reported that they consume game-based foods with some frequency. The main reason for the low consumption rate is related to the price of wild game meat which consumers consider too high. Based on focus group interviews, we concluded that the main problem is that most people do not even consider trying game-meat as they do not know about possible preparation methods. The results of our questionnaire survey reveal that 22.4% of the population has consumed red deer, while fallow deer has only been consumed by 7.7%. The respondents primarily associate deer meat with men, as they consider hunting and the preparation of wild-game foods a masculine activity. In Hungary, deer meat is a lesser known product considered to be a luxury good, for which a new marketing communication and sales strategy is needed. Limiting factors include unfamiliarity, high price and that respondents consider wild-game a seasonal product.

The study tries to draw up a system for the connections of food and meal topic and also tries to present research results about it. Some research results are presented in the study in order to illustrate the behaviour of Hungarian consumer.

  • Qualitative Investigation of Salt and Sugar Free Nutrition in the Canned Vegetable Market

    “Free from” products as important components of a health-conscious diet are prevalent on store shelves. Our research is based on the analysis of the market situation and introduction possibilities of a potential canned vegetable that can even satisfy the needs of consumers for salt and sugar free meals. Secondary data and information collection provided the basis for further research. In the primary research, we used three qualitative methods, which were netnographic examination, expert interview, and focus group research. In the course of netnography, we examined consumer needs for salt and sugar free canned food on the Internet, mainly on social media, based on pre-collected keywords. The interview with an expert in the canning industry focused on the specificity of canned food and the position of “free from” canned food. Focus group research was composed to learn about the perceptions of university students about both canned food and their customers alike. Among other things, we have shed light on the fact that consumers associate the expression “free from” with the word health, but emphasizing “free from” nature of the product can create a sense of lack. Examining “free from” canned food, we found that young, time constrained, health-conscious consumers can be the target group. Due to the target market, we recommend promoting it on online platforms, where it would even be advisable to use educational campaigns.

  • Examinations of Attitudes towards Functional Foods – Literature Review

    The current study of our two-part paper series dealing with psychological influences on functional food consumer behaviour focuses on attitudes towards functional foods, while the subsequent study will discuss other psychological influential factors. Several research studies have already examined attitudes towards functional foods but the wide range of available products, the significant international heterogeneity of attitudes and the diversity of the applied research methods make their comparison and generalization remarkably hard. This paper aims to organize these research studies according to specific standpoints, and based on this, to draw generalizable conclusions. Based on the literature review, we can state that attitudes towards functional foods are positive worldwide, and those attitudes have a positive effect on the purchase and consumption of functional foods. There are, of course, international differences in attitude factors that play a significant role in this positive effect, and also in the composition of those factors. These differences can be attributed primarily to the different development stages of markets. However, we can state that the most important attitude factor everywhere is the reward from using functional foods (health protection and promotion, well-being, good performance and mood) that has to be forwarded stated simply and obviously towards the consumers in marketing communication messages. Besides this, social necessity (including medicine-like effects) of and confidence in functional foods also influence the intention for consumption, thus, the healing effect can also be a useful buzzword in messages. In the less developed markets – such as Hungary – confidence includes the belief in the safety of the products indicating the fact that where consumers are not familiar with these products, perceived risks of functional foods can be a strong barrier to their consumption. Therefore, a key role of marketing communication messages in those markets is the reduction of perceived risks. It is worth noting, however, that functional foods cannot be seen as a homogeneous food category, thus the importance of different attitude factors may vary between the different types of food. Additionally, consumers cannot be seen as one, homogeneous group, either, therefore different marketing communication messages developed according to the attitude-based segments will be effective.

  • Investigation into Online Customer Behaviour and Opportunities of the Food Shopping among Hungarian and American Online Consumers

    Nowadays, it is so much easier to interact with each other (two-way communication) from all over the world as never before. This possibility has only been available for a few people – for the military at first – but after some decades, it became accessible to everyone. Online customer demand increased a lot, for example by the big boom of Web 2.0. by Mark Zuckerberg’s Facebook and by the introduction of Steve Jobs’ iPad. This topic is of interest, because companies from all over the world would like to find the most effective and cheapest methods to reach and keep their online consumers (worldwide). Therefore, they need to discover more about their consumers’ behaviour without generating high expenditure. This article focuses on the behavioural analysis of the online consumer (non-representative) population between Hungary and the USA. The background for my research consists of the awareness of the contents of e-markets. The analysed questionnaire was given out online (N=932) and people with high incomes (outliers) were excluded. Before the analysis of the database, I presumed that the consumers have a focus on online selling products and/or services. In this research we will examine the differences and identities of the behaviour of Hungarian and American customers based on online purchases. I have used Factorial ANOVA to analyse my database and found answers to my research questions about the most popular online goods and/or services. Furthermore, the differences and similarities of the behaviour between American and Hungarian consumers have been examined.
