  • Consumer Perception and Perspectives of Wines with Reduced Alcohol Content and Non-Alcoholic Wines (in Hungary)

    Significant changes have taken place in the international wine supply in recent times and the volume of non-alcoholic wines and the ones with reduced alcohol content and the consumer interest in them have increased as well. The latter is caused by changing consumer habits, like the development of health awareness and the fact that healthier eating is becoming more common. The present study provides a brief overview of some characteristics of the demand for non-alcoholic and reduced-alcohol wines, consumer perceptions, and the effects of alcohol on health. Based on some Hungarian wine consumer behavior research, this research examines the reasons behind the refusal to drink wine, and consumer opinions on the relationship between wine consumption and alcoholism. The revealed phenomena and the preferences and attitudes influencing them intend to prepare the basis for a research examining the domestic possibilities and potentials of non-alcoholic and reduced-alcohol wines.

  • Investigation of Some Connections Between the Coronavirus Epidemic and “Acquisition Fever” in Győr

    The birth of this publication was generated by the events of today. In the light of the research (and the literature data), it can be stated that the coronavirus epidemic that appeared in Hungary in the spring of 2020 caused panic shopping, and the freedom of choice (abundance of goods) was again replaced by consumer vulnerability like before the years of regime change. The analysis shows that 75 percent of those over the age of 60, while only 62 percent of the members of the youngest age group think it is worth piling up. It is also interesting to note that the main reason for over-buying is the creation of a contingency reserve. Larger store types, mostly with a wide range of goods, were well suited for this. Also, 33,2 % of respondents thought they had bought more to reduce the number of shopping trips (and thus presumably to slow down the spread of the virus).

  • Successful Small Business – Effective Marketing? Prospects on the Food Market for a Small Company

    Successful small companies concentrate their marketing strategy on satisfying the specific requirements of market niches which are unprofitable for big concerns. It is a complicated task on the market of common consumer goods – like the food market – because it is difficult to find the right buyer segment among the large number of costumers. It is more difficult to choose the adequate distribution and communication channels. The Darnó-Hús (Darnó Meat) – situated in the north-west of Hungary near the Austrian and the Slovakian borders – also faces this problem. Firstly, they do not choose between traditional local food and functional foods, so they obviously aim at two niches. Secondly, small well-branded bakery shops and big supermarkets can be found among the company’s sales points. Furthermore, these sales points are geographically not concentrated. This small company cannot afford to spend much on widespread media communication, so its brand name is not well-known enough to get good product placement locations in the stores. As the SWOT-analysis, which was carried out with the collaboration of the management, points out, there is no unity in the choice between the offensive and defensive strategies. The internal factors of the company, such as high-quality products and excellent professional team, which is flexible enough to fulfil the specific requirements, would assign the company a stronger market position, however, the company’s management does not have adequate marketing tools to achieve a higher penetration into the consumer market. After twenty years in operation, they have to make a decision about the next stage of development. Actually before they start to improve their production capacity, the management has to define their market more precisely. To reach the targeted market niche effectively, more effective branding, clear – emotional and rational – positioning in communication, and adequate selling placement are needed.

    The Traditions-Tastes-Regions (TTR) programme has more than 20 years of history, promoting and economically stimulating the traditional and local food products of Hungary. Since 2002 the TTR is a registered trademark and used for product differentiation. At the end of 2018 altogether 92 producers with 176 products had the right to use the trademark. The Geographical Indications Programme – initiated by the Hungarian government in order to increase the number of the Hungarian GI products in the EU register – is also based on the TTR initiative. The demand of the Hungarian traditional food products in general, as well the supply side of the TTR programme is well described by the literature, however the field of the consumers’ relation with the TTR trademark seems to be undiscovered. In spite of this background, this study tries to describe the recognition and the embeddedness of the TTR trademark among the Hungarian consumers. Part of an international survey conducted by the Strength2Food H2020 research project, the TTR trademark was analysed on a sample of 444 Hungarian consumers, retrieved from an online survey. Results suggest that the almost 40% recognition of the TTR trademark significantly exceeds recognition of the EU geographical indications labels. However, only roughly 10% of the consumers seeks purposefully food products with TTR label. Regular buyers of such foods usually seek for meat products. Based on the binomial regression models the recognition of the TTR trademark’s logo is significantly higher among female, older and non-vegetarian consumers with lower income levels. The place of regular purchase is also statistically significant: consumers with regular purchase in organic shops and in short food supply chains (directly from the producer) tend to be more aware of the TTR logo. Regarding the regular consumption of such products we can say that males and consumers shopping in supermarkets and discounters are becoming a frequent buyer of TTR products with a higher probability.

  • The Impact of COVID-19 on Sport Habits

    In recent times, our daily lives have been significantly affected and transformed by the coronavirus pandemic that will hit our country in March 2020. Following the outbreak, the WHO (World Health Organisation) advised its Member States to consider ways to prevent the introduction of the disease into new areas and to reduce the human-to-human spread in areas where the virus has already been detected. In the initial period, people's "freedom" was severely restricted as a consequence of the restrictive measures taken to slow down/control the spread of the virus. In addition to telecommuting, closing restaurants, educational institutions, entertainment venues, sports facilities, shopping malls, curfews have become part of our daily lives. The protection of human life and health has suddenly become one of the most important "tasks". Despite the closure of sports facilities in order to reduce personal contact, physical activity has become even more important than before, as it has become even more important to keep our bodies healthy during the epidemic period. When the virus emerged, the Operational Committee recommended that we try to do as much exercise as possible to strengthen our immune system so that it can fight off pathogens as effectively as possible. However, the restrictive measures taken in response to the virus have also had a major impact on our exercise and sporting habits, which has since attracted the interest of many researchers. In my research, I am looking for answers to the question of how the epidemic has changed people's habits/willingness to take part in sport and active physical activity. In the last few months, almost all precautionary measures against the epidemic have been abolished in Hungary, with one or two exceptions. For this reason, I also consider it appropriate to assess the extent to which the virus has affected sporting habits, not only during the period of restrictions, but also after the lifting of restrictions.

  • Impact of Personal Values on the Change of Health Behaviour and the Conscious Food Purchase

    Major aim of the examination is to reveal relationships between personal values, the switch to the health conscious nutrition method, and the food consumer behaviour based on the value list by Kahle (LOV). In order to attain this goal a nationwide representative survey was conducted in Hungary with the participation of 1000 persons. According to the results the most important value for the population is safety that is followed by the need for fun and enjoyment in life. During the analysis of the value list a factor structure – different from the standard – was revealed that formed the base of the segmentation. Four consumer segments were identified, the Value oriented, the Moderately value driven, the Safety seeker, and the Disappointed segments.
    The Value oriented segment can be considered as the primary target group of health protecting foods as members of this group moved to the direction of more health conscious consumption and in parallel of more health conscious food purchase to the greatest extent (18.5%). The second group showing significant changes is the Safety seekers that suggests that the extent of the value orientation significantly affects the behavior, i.e. food purchase and food consumption independently of its content. The value content provides information to the development of the content elements of the marketing strategy and the marketing message for the producers of health protecting foods.

  • Opportunities and Obstacles in the Healthy Food Consumption Area

    The issue of healthy food consumption is an extremely hot topic in today’s fast-paced world. One of today’s ruler trends are the health awareness and health market expansion. The role of the health of consumers is appreciated. People spend more and more to preserve their health. The consequence of conscious consumption is that individuals can keep their physical and mental activity for a longer time remaining their life and accordingly they can be involved in the economic growth. Our central hypotheses were that the financial situation, the level of consciousness and „identity” have a decisive influence on women who assume a healthy eating habit in Hungary. We also presumed a link between health consciousness and financial attitudes, as well as a positive relationship between health consciousness and behavioral intent and normative beliefs. Our results confirm: the income status and the degree of awareness mostly influence the existence of a healthy diet.

  • Analysis of the Affective and Conative Components of Consumer Attitude in the Image of the Pálinka

    The research aim is to explore the potential role of consumer attitude components in image development related to a traditional Hungarian alcoholic beverage, the pálinka. This study focuses on the effect of the affective and conative components of attitude on image of the pálinka. The relevance of this research is the expansion of the pálinka market in recent years and the change of the regulatory environment about homemade spirits. Distillate made at home, which product improperly called homemade pálinka, is very popular in Hungary. This study was supported by the data from a nationwide, representative consumer survey carried out in 2019 and 2020. A total of 626 subjects participated in this survey, the sample is representative for the Hungarian adult population according to gender, age group and region. To understand the effect of the affective and conative attitude components, we used Likert scales and graphically illustrate the consumer feeling and behavior about the homemade spirit and the “in-store” pálinka. The study confirmed the advantage of homemade spirit image over in-store pálinka, and points out the importance of education and information in the case of the affective and conative components of consumer attitude. The reconsidering of the marketing communication of the in-store pálinka producers is timely and very important; however, this task requires a comprehensive marketing strategy covering all three attitude components, and this is the only way for them to remain competitive.

  • Consumer Perception of a Healthy Nutrition – The Results of an Exploratory Study

    Healthy nutrition is becoming increasingly important in the age of endemic non-communicable diseases such as obesity, diabetes, high cholesterol and various cancers. Moreover, due to modern eating habits, more and more people are experiencing food allergies, sensitivity or intolerance to gluten, lactose, milk protein, soy, or egg, just to mention a few. Healthy eating as prevention has become a possible solution for these problems worldwide. Furthermore, an increasing number of people simply want to pay attention to what they consume. The primary objective of this research is to showcase the attitude of consumers in Debrecen (Hungary) towards a healthy nutrition, as well as to explore the factors that influence it. This paper also aims to reveal consumers’ views on the degree to which a healthy diet can be achieved in their daily lives. Focus group interview was chosen as the method of primary data collection, in which consumers living in Debrecen, with different behaviors towards health (health preventive and health risk) took part. The acquired results from the two groups clearly reflect how consumers with dissimilar attitudes towards healthy nutrition reach differing opinions on the same issues.

  • Connection of Food Waste and Consumer Awareness

    One of the most significant problems of developed countries is the food waste and the efficient consumption of food. The developed countries struggle with the overweight and obesity while the other part of the world fight with the starvation. Nowadays, the number of overweight people exceeds the number of hungry people. The consumer asserts that his decisions are consistent and rational. In my research (size of the sample is 918 people) I have to distinguish between the real and presumed awareness in case of food consumption. Real awareness is rooted in the knowledge and behavior of consumer which manifest in a low level of waste, while the presumed awareness exists only in the consumer belief in himself. According to my results, the food waste is significant in Hungary and the proportion of waste is related to the consumer’s income. I can state that the presumed awareness is stronger than the real awareness.

  • Analysis of the Food Consumer Behavior in the Online Environment: Does Digital Food Consumer Exist in Hungary?

    In recent years one of the major players in the market have changed radically, the consumer. They have been titled as „digitally enlightened” citizens by various researches. The main characteristics of „traditional” consumer’s behavior have been discussed previously by numerous researchers. However research on digital consumers, especially in domestic circles, is still in initial stage.
    The main objective of this article is to determine the online consumer behavior trends in our country, in relation to information and shopping in particular of food. At the end of this publication we intent to answer the question asked in the title, i.e. does digital food consumer exist in this country.
    In our study we used the online consumer buying behavior process as base. Each step was mapped out by using relevant and current literature analysis. Using national representative survey (N=1000) we examined in detail the food-related online information searches and the shopping opportunities in online shops.
    The convenience factor – similar to the description of the literature- is the most advantageous aspect of online shopping. At online shops the other factors examined convergence occurring in the median values show the uncertainty of customers’ purchasing behavior, which results in a lack of trust in food purchases.
    Overall, we can conclude that the majority of literature and research on food consumption behavior doesn’t separate properly the online consumer’ roles and most of the emphasis is on the final purchase. Based on literature research, we have attempted to differentiate the digital food consumers based on online behavior in which the basis for the subsequent researches hypothetical fives categories were distinguished.

  • Role and Importance of Healthy Eating

    Healthy nutrition and a regular exercise are two important pillars of healthy lifestyle. Several researches point out that significant part of the population has incomplete knowledge regarding these topics. The Hungarian population is characterized by unhealthy eating habits and low level of regular exercise, which together result in a high obesity rate and poor health status among the Hungarians. Besides these, another unfavourable fact is the sedentary lifestyle: adults spend more than 5 hours a day in sitting position on average. The Hungarians’ daily physical activity is only 70% of the recommendations, and we only spend 10 minutes a day doing sports. Vegetables and fruits are important ingredients of a healthy and balanced diet, the consumption rate of which is quite low in several European countries including Hungary. In our article we present the main characteristics and contexts of healthy nutrition and physical activity. In addition, we analyze a nutrition research activity which can be an important basis for integrative strategies. Based on secondary research, we present research results that demonstrate the protective effects of vegetable and fruit consumption connected to various diseases. Furthermore, we present the unfavorable tendencies of vegetable and fruit consumption of the European and Hungarian population, and we make suggestions in order to improve the unfavourable circumstances and indicators. We also focus on the socio-ecological model of the nutrition guideline, the levels of which significantly affect our habits related to nutrition and physical activity.

  • Investigating the Factors of a Healthy Lifestyle Among Amateur Sportsmen

    Worldwide, there is a growing demand for health-conscious lifestyles and, according to Gfk’s surveys, this trend is becoming increasingly prevalent in Hungary. In this study, middle-aged hobby sportmen were asked about their attitudes towards a health-conscious lifestyle with particular emphasis on eating and consuming functional foods. This research is based on in-depth interviews with four amateur athletes on the topics above. When preparing the interviews, great emphasis was put on the spontaneous responses and reactions of the subjects. According to our results, amateur athletes who take part in a training session several times a week, pay special attention to healthy eating and the appropriate exercise activities, which are complementary to training. They eat and maintain the functional foods required for a given workout, and they have serious professional knowledge. However, their main sources of information are typically not personal consultations with professionals but information available on the Internet.

  • Sour Cherry Seed Extract – An Emerging Functional Food

    Advanced analytical techniques have recently revealed powerful health-promoting properties in components of some plants, which had remained obscure until present days because they were not typically consumed as food by humans. A particularly fascinating example is the seed kernel of sour cherry (Prunus cerasus). Chemical analysis of the seed kernel revealed that the solid flavonoid-rich fraction, comprising approximately 64–68% of the kernel, contains several health-enhancing polyphenolic compunds including catechins, stillbenes, anthocyanidins and resveratrol. The remaining 32–36% is an oil fraction rich in tocopherols and related compounds, including tocotrienols, oleic acid and triglycerides. Previous studies demonstrated that oral administration of sour cherry seed extract to animals strongly stabilizes healthy tissue homeostasis and suppresses ischemia-reperfusion injury by augmenting expression of heme oxygenase-1, a major endogenous cytoprotective enzyme. The sour cherry fruit is a major export of several nations, including Hungary, however the seed is currently considered an agricultural by-product and discarded. The better understanding of health protective effects of the seed extract would open new avenues for the Hungarian agriculture and food industry in the future.

  • Fight for Customers - Correlations of Trade Organizations and Sales Promotionon the Hungarian FMCG Market

    Tract of time after the millennial brought well definable changes in retailers’ trade organizations and marketing activity in the Hungarian three-pole FMCG market. Operation conditions of enterprises became more complicated which is also reflected in the variability of the number and intensity of relevant influencing factors as well as in the difficulties of forecasting them. Out of these the change of consumer/purchase behaviour, the growth of competition intensity, the swell of procurement marketing, changes in channel position, the innovation of informatics and info communication tools, the dominant change of economic environment, the stiffening legislation and the unexpected influence of ecological environment can be highlighted. An important starting point for exploring the impact of the changes focusing on market competition is that the number and activity of chain stores operating in Hungary has stabilized, which has shifted the direction of research to explore the relationship between trade organization and marketing, improving competitive advantages and management efficiency.

  • Game-meat Consumption Behavior the Image and Market Positioning of Quality Venison

    The purpose of our research is to understand the wild game meat, and more specifically, venison consumption behavior of the Hungarian population. In order to examine the issue, we have conducted questionnaire surveys as well as focus group interviews. Only 36.6% of the respondents reported that they consume game-based foods with some frequency. The main reason for the low consumption rate is related to the price of wild game meat which consumers consider too high. Based on focus group interviews, we concluded that the main problem is that most people do not even consider trying game-meat as they do not know about possible preparation methods. The results of our questionnaire survey reveal that 22.4% of the population has consumed red deer, while fallow deer has only been consumed by 7.7%. The respondents primarily associate deer meat with men, as they consider hunting and the preparation of wild-game foods a masculine activity. In Hungary, deer meat is a lesser known product considered to be a luxury good, for which a new marketing communication and sales strategy is needed. Limiting factors include unfamiliarity, high price and that respondents consider wild-game a seasonal product.

  • Growing Demand for Functional Foods – The Customer Perception of the Domestic Cereal Market

    Current scientific research raises questions as to how and why food-market consumer demands have changed over time, in relation to increasing health awareness. As a hypothesis, we assume that today’s customers are more health-conscious and open-minded about healthy food and health-related marketing messages both in Hungary and world-wide. Consequently, customers tend to look for the potential benefits of functional foods. We describe present-day lifestyle trends and the changing habits of nutrition as well as introduce the science of nutrimarketing and functional foods, along with their relevant claims. In our field research, we examine customers’ attitudes and mind-sets regarding the domestic cereal market between 2013 and 2016 with the aid of the Neticle system, an innovative online media-monitoring and analysis programme. Examining and understanding these trending needs could open new opportunities for companies to satisfy their customers with applicable product developments.

  • Parental Health Conciousness and Examination of Eating Preferences in Reflection of Childhood Obesity

    One of the 21st century’s well-known megatrend is the healthy lifestyle and eating which is the basis of this research. We have already known some aspects of this topic, but the parental health consciousness and the examination of eating preferences is not as well known as it has to be, so this makes this study relevant. The goal of this exploratory research was to get to know more about the parental health consciousness, their eating preferences and attitudes, so Hungarian parents were asked who have children under 14 years old to tell more about their habits and lifestyle. In the primer research an online questionnaire was used which reaches 206 people so we could make some consequences about the lifestyle and the preferences of the families in Hungary. The main parts of this research were: the importance of health and the healthy lifestyle, the form of the parental research about the topic, which sources they find the most relevant and authentic, the parental eating habits, family health, the responsibility of the parents. During the statistical analysis some segments of people could be separated whose different attitudes and preferences were shown very clearly. It reveals of the results for example that the groups have different eating habits and researching systems.

  • Public Beliefs and Misconceptions in Macro-Nutrient Related Diets Among TikTok Users

    Nowadays, non-communicable diet-related diseases which risk could be greatly reduced by a good lifestyle are becoming increasingly important. One important component of which, nutrition, is the subject of the current research. At present in Hungary the most popular diets are based on carbohydrate and fat intake. Their spread and appearance in social media allowed for a netnographic study, the main purpose of which was to identify what misconceptions or misinformation live in the public consciousness about the topic. I hope that the conclusions drawn from the results obtained can contribute future research and help resolving dilemmas about nutrition, so that consumers can adopt the lifestyle that best suits them, thereby increasing the number of years spent in good health.

  • Testing for Consumer Preferences of Smoked Asian Sea Bass (Barramundi) Filet Products in Hungary

    The present paper discusses the findings of primary research studies related to the development of smoked fish fillet made of the barramundi fish species into a functional food, connected to product tasting. The study sought to provide information for the target audience, in our case, for consumers in hypermarkets on (1) their certain fish consumption habits, (2) their attitudes towards conscious fish consumption, (3) the reputation of the barramundi brought to the domestic market recently and the related considerations of consumers, and (4) consumers’ perceptions of the latest product development, smoked barramundi enriched with substances of positive nutritional effects (e.g. vitamin complex, pumpkin-seed oil, Gingko biloba extract, Sylibum marianum oil, etc.) Our findings suggest that consumers’ perceptions of the barramundi were positive as they positioned this fish species as an attractive, premium category product. The product development, i.e. the smoked barramundi fillet, as a functional food, was well received by consumers. The target audience had already tasted smoked fish earlier, and they were satisfied with the taste of the new premium product. It is important to stress that the respondents lacked a good understanding of the meaning of “functional foods”; however, they agreed with such kind of product developments. They mostly appreciated the components of functional foods with positive and preventive effects on heart and eye health. On the basis of the research it can be concluded that product development is on the right track, it fulfils all the habits, expectations and demands of the target audience related to fish consumption.

  • Investigation into Online Customer Behaviour and Opportunities of the Food Shopping among Hungarian and American Online Consumers

    Nowadays, it is so much easier to interact with each other (two-way communication) from all over the world as never before. This possibility has only been available for a few people – for the military at first – but after some decades, it became accessible to everyone. Online customer demand increased a lot, for example by the big boom of Web 2.0. by Mark Zuckerberg’s Facebook and by the introduction of Steve Jobs’ iPad. This topic is of interest, because companies from all over the world would like to find the most effective and cheapest methods to reach and keep their online consumers (worldwide). Therefore, they need to discover more about their consumers’ behaviour without generating high expenditure. This article focuses on the behavioural analysis of the online consumer (non-representative) population between Hungary and the USA. The background for my research consists of the awareness of the contents of e-markets. The analysed questionnaire was given out online (N=932) and people with high incomes (outliers) were excluded. Before the analysis of the database, I presumed that the consumers have a focus on online selling products and/or services. In this research we will examine the differences and identities of the behaviour of Hungarian and American customers based on online purchases. I have used Factorial ANOVA to analyse my database and found answers to my research questions about the most popular online goods and/or services. Furthermore, the differences and similarities of the behaviour between American and Hungarian consumers have been examined.
