Study of effects on quality of different wheat flour fraction
123-129Views:151Wheat is one of the most important cereals in the world and the bread made of its flour belongs to the everyday life of human mankind.
The Hungarian standard relating to the laboratory production of wheat flour (MSZ 6367/9-1989) does not mention the type of laboratory mill used for milling, and it only builds up some general criteria, such as: the laboratory mill should be provided with four differently nicked barrels, a sieve with appropriate hole sizes, and also with the separated collections of the pilot flour and the bran. Our study was started at this point and the answers for the following questions were aimed to be found: do the flour patterns studied and produced with different grinding and sieving
techniques, widely used in laboratory mills of the same wheat pattern show any alterations after the impact of the formula production as regards chemical constitutions and reologic parameters. Various flours and whole grains of the wheat patterns sieved with different particle sizes were studied in this experiment. In producing this pattern two different mill types of FQC 109 and CHOPIN CD 1 as well as two different grinder types such as PERTEN 3100 and type of RETSCH 200 were applied. There were 3 different corn sizes of 160; 250; 800 μms used in the partition of the fractions. To study the differences the following measurements were conducted: dry matter, ash, protein content, wet gluten content, gluten index, gluten expansiveness, farinographic value, falling number and amilographic rate.
The results this research confirm that the quality of wheat flour can be modified by different methods of pattern production. In all cases the differences can be explained by the flour-bran ratio, and in some of the cases the higher germ content of the fractions also played a role. The results show differences between the various types of mills and grinders, too. -
Preliminary results of the phylogenetic analysis of European hare (Lepus europaeus)
99-104Views:151Brown hare (Lepus europaeus) is one of the most wide spread mammal in Europe. Its genetic structure is affected not only by last glacial, even by human activities (hunting, agricultural activities), isolation of such areas or competing for food resources. According to literature datas brown hare populations has different genetic variants in Europe, however its evolution, phylogenetics has not studied well.
The main goal of this work was to know genetic structure of some brown hare. Mitochondrial DNA analysis was performed in two regions (D-loop, 513 bp and cytochrome-b, 1183 bp). Genetic distance values and Network analysis were calculated. NCBI Genbank was used for further sequences. Our results showed that Italian samples differed from the Genbank samples. We found two main clades: 1: Greece without islands; Bulgaria, Italy and Central-Europe; 2: East-Macedonia,Greece with islands, Cyprus and North Israel.

Comparison of chemical parameters of enzyme active and inactive malt types
161-166Views:247Nowadays there is an increasing emphasis on the use of raw materials. Typically, raw materials – in this study malt – are used in animal feeds and used in the brewing industry. However, in terms of quality (eg. high fibre content), these can be included in human nutrition, we have limited information on this possibility. The aim of our work was to compare different malt flours and examine the possibility of using malt in the baking industry. We were to investigate some of the most relevant parameters, such as dietary fibre content, crude protein content, fat content, carbohydrate content, dry matter content, moisture content, salt and energy content. In the future, we aim to conduct a research on some of these parameters with different malt types as the brewing industry uses novel ingredients different cereals, pseudocereals such as amaranth (Amaranthus spp.), oat (Avena sativa L.), quinoa (Chenopodium quinoa Willd.) in addition to the spring barley (Hordeum vulgare L.) or wheat (Triticum aestivum L.). Based on brewing studies, malt has a high fibre and protein content. Having these advantageous qualities, malt should be part of humans’ healthy diet. Using malt flour in the baking industry can be a new direction which can lead to creating a healthier lifestyle and healthier eating habits than suggested by the WHO (World Health Organization).

Selection of Sport- and Racehorses
3-10Views:119The utilisation of the horse has changed from time to time in response to human needs. For a few decades, it has been serving in several equestrian sports more intensively. It has also been proved that the standards for this kind of performance cannot be established in the way certain characteristics, such as the weight gain or milk production of other animal breeds can. Breeding horses for sporting comprises highly complex selection criteria.
Some of these (e.g. external features, temperament, manageability and intelligence) do not put the breeder in a difficult position, but finding the traits that establishes the safety of sporting achievements poses a genetic problem.
The performance of a horse for sports is a highly complex feature, which cannot easily be assessed or put down in figures. In addition, man plays a decisive role in shaping all kinds of performance of a horse at any given time by not only creating conditions for a better performance, but also by playing an active role in increasing it.
The performance of the horse is mostly defined by its general aptitude to movement, ie., the regularity, clear rhythm and springiness of basic types of strides, as well as the ability to move in a naturally balanced way. Training and riding principles are based on these traits. These two together will determine about 70% of the value of the horse and its adequacy for high performance equestrian sports. In order to avoid subjectivity in determining the above variables and to increase the degree of objectivity, competent expert teams (trainers, judges, other riders) are employed to form an opinion on an individual animal.
Assessing horse performance outside races does not seem to be efficient, as owing to the dominant effects of the environment, the indicator of inheritability is hardly above 0.1.
Free jumping is an especially appropriate means for assessing a horse’s readiness and ability to move in an environment free of disturbing factors. In free jumping, it is especially important to judge the style of the jump. The first phase of jumping – as a sequence of movements – lasts from the moment the fore-feet touch the ground until the moment the hind-feet push off, while the second phase lasts from this moment until touching the ground. The most important task in the first phase is to make the angle of the dip of the body by the supporting fore-feet that is necessary for the jump. The quality of the jump is determined by the jumping and adequately expanded hind-legs. The intensity of pushing off and jumping done by the hind-legs can be inferred, and differences between individuals can be discerned from the shaping of the curve by the hocks and the paths of the pasterns in relation to the withers. -
Possible alternatives in crop nutrition
109-112Views:116The protection of the environment is our common task. All pollution that exposes our soils, plants or the environment – as taken in any proper or extended sense – will appear sooner or later in the food chain and in human beings who are on the top of the food-chain pyramid. The aim of our work is to give a brief overview of the effects of selected industrial wastes on the physiological parameters of corn plants. Sewage sludge and lime sludge were examined. These materials contain lots of useful element for plants (e.g. iron, phosphorus, potassium, zinc). However, their aluminum, chrome and lithium contents are also considerable. The element contents in sewage sludge and the filtrates of lime sludge, as well as the dry matter accumulation and relative chlorophyll contents, were measured. The disadvantageous and advantageous physiological effects of the examined materials were confirmed. The compensation effect of the environment is excluded; however, the neutralization of environmental impacts is not infinite under natural circumstances.

Effect of allithiamine on the level of hyperglycaemia-induced advanced glycation end products
41-44Views:292Diabetes mellitus is a rapidly growing public health burden in both developed and developing countries. Diabetes mellitus is accompanied by hyperglycaemia, which can cause tissue injury by several mechanisms. One of these is the formation of advanced glycation end-products (AGEs). In this study, the effect of allithaimine, a fat-soluble thiamine derivative, was investigated on hyperglycaemia-induced AGEs levels using human umbilical cord vein endothelial cells (HUVECs) as a hyperglycaemic model. HUVECs were isolated by enzymatic digestion, characterized by flow cytometer and treated 30 mM glucose plus allithaimine or thiamine or cell maintenance medium as control. Allithiamine was synthesized and purified. The structure of the synthesized and isolated compound was verified by reverse phase HPLC and MALDI-TOF. AGEs were evaluated by ELISA. Collectively, our results indicate that allithiamine can reduce level of the hyperglycaemia-induced AGEs similar to thiamine.

The importance of predator species in the population dynamics of the Brown hares (Lepus europaeus, Pallas 1778) – Literature review

The predator species play an important role in the sustainable utilization of the domestic brown hare populations. A portion of these species are under nature protection and with the rest of the species can be utilizing by the wildlife management professionals. Important prey species of brown hares: perspective are red fox, domestic dog and domestic cat. Based on latest date of the National Game Management Database in hunting bags increasing every year the number of the European badger, the stone marten and the golden jackal. In Hungary the brown hare’s most important predator bird species are common buzzard, marsh-harries and goshawk. The human race is not only as a top predator affects the number of the population of brown hares with the wildlife management but indirectly with traffic, (soil cultivation, mowing, and pest control) as well. The control of predators is absolutely necessary for successful small game management, but without sufficient habitat size and habitat development it is hardly sufficient.

Overview of test methods used to classify wheat flour and bread samples – REVIEW
27-34Views:125In Hungary, common wheat (Triticum aestivum ssp. vulgare) is of good quality and world famous. In addition, it plays an important role in the human diet. The classification of flours ground from wheat is quite decisive and there are several methods for its examination. The most important flour testing requirements include moisture content, protein content gluten properties and the most important bakery value number. The measured characteristics give us the opportunity to conclude about the properties of the dough, and then bakery products. Several dynamic and static methods have been developed to study the physical properties of dough. The evaluation of products can be carried out in several respects with the help of a baking test. The multitude of methods currently used to qualify flour, dough and finished products also proves that the overview of the methods is quite topical.

The Legal Rules Pertaining to Land Protection in Hungary
324-331Views:94Buildings in industry, mining, transportation and for personal and commercial activities cover increasingly more valuable agricultural land. The increase of sub-urbanization and vehicular traffic and the spread of malls and other kinds of investments are causing serious harm for not only to human society, but to a whole national economy as well.
The law on agricultural land (1994:LV) contains legal rules for the preservation, use and classification of agricultural land. These rules define the temporary or permanent use of land for agricultural and non-agricultural purposes; the scale of the land-protection fee and the rules of the process on cases in which land is used for non-agricultural purposes without the consent of the land registry. In the field of land classification, the law prescribes the regulations which are to be followed in order to define the net income of agricultural land in Golden Crowns.
Hungarian land protection rules are unique in the European Union, because only few member-states have similar laws to ours. Community law does not regulate the member states, except in the case of land classification, because this is the basis of the tax paid on the agricultural lands, but even here, there are differences among the states. -
Comparative analysis of physiologically important fatty acids

Element content analyses in the Institute for Food Sciences, Quality Assurance and Microbiology
203-207Views:144The role of chemical elements to ensure and promote our health is undisputed. Some of them are essential for plants, animals and human, others can cause diseases. The major source of mineral constituents is food, drinking water has a minor contribution to it, so the knowledge of elemental intake through food is crucial and needs continuous monitoring and by this way it promotes the food quality assurance and dietetics.
With the evolution of spectroscopic methods increasingly lower concentrations could be determined, so the elemental composition of a sample could be more precisely and fully described. Due to the results the gathered knowledge up to the present is supported and new observations can be done helping us to understand such complex systems as biological organisms are.
The quality of a food is determined by the full process of its production, consequently it starts with agricultural production so elemental-analysis usually cover the whole soil – plant – (animal) – food chain, by this way the „Fork-to-Farm” precept is true in elemental analysis field also.
The history of elemental analysis in the University of Debrecen, Centre for Agricultural and Applied Economic Sciences, Faculty of Agricultural and Food Sciences and Environmental Management, Institute of Food Processing, Quality Assurance and Microbiology goes back to 1980s when the so called Regional Measurement Central gave the background for research. The continuous deployment resulted in an obtain of an inductively coupled plasma atomic emission spectrometer (ICP-AES) in 1988, which extended the scope of examinations due to its excellent performance characteristics
compared to flame atom absorption (FAAS) and flame emission spectrometers (FES). The instrumental park retain up to date correlate to the developing analytical techniques due to acquiring a newer ICPAES in 1998 and an inductively coupled plasma mass spectrometer in 2004 – which sensitivity is three order of magnitude better compared to ICP-AES. The Institute supports the work with its own ICP-AES and ICP-MS since 2011. -
Búzaminták fungicid szermaradvány ellenőrzése és gombafertőzöttségének kimutatása
45-51Views:88To protect crops with chemicals against different microorganisms are very important because residues of toxins could pollute infected grains. This could have the meaning of serious danger to the human and animal health. Similarly important is knowledge of details about presence or absence of any practically applied protective compounds. Experimental studies were performed on fungicide treated cereals of the Cereal Research Non-Profit Company, Szeged. Chromatographic methods were used (GC and some GC-MS) to find low level fungicide residues, microwave-assisted isolation of ergosterol was followed by HPLC to detect possible fungal infections and a more detailed microbiological analysis completed the work. Concerning the dry year 2000, no fungicides were found in the samples (by November), the ergosterol level was found to be less than 8 ppm, meaning good quality, coupled with an extremely low level of fungal infections. This was confirmed by direct microbiological testing. In comparison with the microbiological results from 1999, a negative difference can be recognized, most probably due to the rainy weather throughout the year.

Development of maize production technology that increase the efficiency of bioethanol production
17-26Views:112Maize is one of the most important crops worldwide and also in Hungary, it can be utilized for multiple purposes: as a feedingstuff, for human nutrition and for industrial processing. In the last decades, the per ha yield of maize varied greatly in Hungary, between 2004 and 2006, it was 6.82-7.56 t/ha, while in 2007, it was only 3.6 t/ha. Resulting from this, the price of maize became 2-2.5 times higher. The high price hinders bioethanol production. The largest per ton amount of bioethanol, 387 l, can be produced from maize.
In addition to its classical utilization as feed and food, the industrial use (especially for bioethanol production) of maize is increasin.
For industrial production, a new production technology is needed. I tested and selected hybrids appropriate for this purpose and set up fertilization and plant density experiments. The experiment were set up on chernozem soil in 2007.
The applied fertilization treatment was N 120, P2O5 80 uniformly, and five different dosages of potassium: K2O 0, K2O 100 (KCl), K2O 100 (Kornkáli), K2O 200 (KCl), K2O 200 (Kornkáli) kg/ha active ingredient. The applied plant densities were 40, 50, 60, 70, 80, 90 thousand plants/ha.
The yield of maize hybrids in the fertilization experiment ranged between 10.53 – 14.62 t/ha. Both regarding the form and dosage, 100 kg/ha Kornkáli proved to be the best potassium treatment. Regarding the inner content parameters, the highest starch content in the average of treatments was obtained for the hybrid PR36K67: 73.57%, and its yield was also the highest, so this hybrid proved to be the most suitable for bioethanol production. The highest protein content was observed for the hybrids KWS 353 (12.13%), which can be favourable for feeding purposes.
Most of the hybrids gave the highest yield at 80 thousand plants/ha plant density, however, hybrids PR36K67 and Mv Tarján achieved the highest yield at 90 thousand plants/ha.
In bioethanol production, the selection of a high-yielding hybrid with high starch content, a slight reduction of N, increase of potassium, the application of the highest plant densities of the optimum interval, harvest at full maturity (when starch content is the highest compared to protein content) are of great importance. -
Public finance resources and regional distribution of rural development
73-77Views:310Rural development, more specifically the economic development of counties have three public finance resources: the municipality, the central budgetary and the labour market fund resources. Based on the provisions of public finance, there are currently five provisions of the municipality resources of rural development: supporting settlements struggling with employment problems, supporting multi-purpose small regions, supporting settlements which are in a difficult position through no fault of their own, supporting public utility development and supporting holiday resorts. The opportunity of increasing investments is using EU funds. The structural change has a favourable direction, the proportion of the economic development program and regional developments increased in the recent years, but their share is still low. The proportion of agricultural and rural development programs which are important from the aspect of rural development is a less favourable phenomenon. Furthermore, the share of human and social development somewhat decreased, but it is still high. Apart from the regional programs, the Budget Act does not specify the regional distribution of budgets, only the professional purposes of uses, of which it is possible to conclude to which county development can be requested resources for.
Between 2008 and 2011, the 13–15% share of the North Great Plain region was close to the population share of 14.7%. In 2012, there was a turn of events in which the necessity of developing the region was shown. In this year, not only the proportion, but also the absolute extent of development resources increased. Therefore, the region could use resources of 16.9 billion HUF in 2010, 31.4 billion HUF in 2011 and 56.3 billion HUF in 2012. In order to properly use these resources, determined utilisation structure is necessary to be performed. The distribution of development purposes provides an explanation for the backward position of the economic performance of Hajdú-Bihar county.
Of the development resources available for four years, the region spent only 12.2% on economic development.

Condensed tannin content and antioxidant activity of Hungarian sorghum varieties grown at Research Institute in Karcag
155-160Views:292Cereal-based products are one of our main energy sources, and are consumed on a daily basis. One of the weaknesses of wheat based products is their low antioxidant content. Sorghum is a minor cereal, mostly consumed in Africa and Asia. Amongst other phenolic components it contains tannins, which are potent antioxidants and have other positive effect on human health, for example anti-tumor, anti-inflammatory and anti-viral/bacterial effect. We evaluated the tannin content (vanillin-HCL) and antioxidant capacity (DPPH) of sorghum varieties (Alföldi1, Zádor, Foehn, Albita, Albanus) grown in Hungary, with two type of agronomy technology.. Red varieties especially Alföldi1 and Zádor had higher tannin contents than white varieties. The highest condensed tannin content was 1470±73 mg 100g-1 (Control, Alföldi1), 1810±154 mg 100g-1 (Fertilized, Alföldi1), and the highest total antioxidant capacity was 2099±19 mg 100g-1 (Control, Alföldi1) and 2117±26 mg 100g-1 (Fertilized, Alföldi) We found that sorghum type, variety and color influence their tannin and antioxidant contents in general.

Causes of floods and flood protection in Subcarpathia
72-75Views:106Subcarpathia is one of the richest regions in surface waters in the Ukraine. Due to its geographical, relief and climatic conditions, it belongs to the active precipitation zone, where great floods frequently occur. As a result of many years of observation, it can be concluded that the interactions of many natural factors can lead to various floods in the catchment area of the river Tisza. These are mostly hydro-meteorological factors, which can lead to great floods with the characteristics of the formed flow. Human activity also significantly influences the occurance of floods: clearing, which can accelerate the process of the runoff, ploughing in the catchment area, which can lead to erosion and the utilisation of areas endangered by floods for various economic sectors.
A series of questions arose in recent years regarding the formation of floods: what could be the causes of floods and what actions need to be made to prevent them. The evaluation of floods made us conclude that passive protection by using dams does not always ensure protection against floods as these were constructed in different times for different water levels. Many factors can affect the whole process which cannot be foreseen, therefore the development of new solutions and new technologies is necessary in flood protection. -
The effect of different compost rates on the yield of ryegrass (Lolium perenne L.)

This makes necessary nowadays the development of environmentally conscious living and spread of that in the future. The amount of organic waste materials, produced during human activities, could be decreased by composting instead of dispose them in landfills. Applying appropriate treatment technology and additives, the compost could be used as fertilizer for horticultural crops and it could increase the easily available nutrient content of soils. Compost utilization prevents nutrient deficiencies and by using the optimal rate, we could reach significant yield increases.

The measurement of successfully completed projects funded by the European Union
9-12Views:150Projects funded by the European Union contribute significantly to the socio-economic development of Hungary, its increasing competitiveness, thereby the local people's general level of satisfaction, their ”happiness and prosperity”. Successful spending from the Union's funds, successful project implementation directly impacts all actors in the Hungarian economy and society. Therefore, to examine the factors that support or jeopardize the implementation of the projects is a priority at EU and national levels. My research and doctoral dissertation aims to develop a methodology to assess the management efficiency of projects supported by the European Union, implemented in Hungary taking into account all measurable factors (technical and special expertise) and the "suspected" factor (EU thinking learning).
I intend to draw up guidelines for future EU funded project management teams to realize projects successfully for the benefit of Hungary.

Describing Fusarium diseases on maize in 2013 using data from several production sites
60-64Views:218As in other parts of the world, the frequency of weather extremes has increased greatly in Hungary in recent years. This means that maize production is faced with greater risks from all aspects: nutrient replacement, irrigation, plant protection. This is especially true of fusarium diseases. In a continental climate, the pathogens causing the most serious problems are species belonging to the Fusarium genus. They infect the ears, which – besides reducing the yield – poses considerable risk to both human and animal health due to the mycotoxins produced by them. Depending on which Fusarium species are dominant at a given location, changes can be expected in the level of infection and in the quality deterioration caused by the mycotoxins they produce. Fusarium spp. not only damages the maize ears but when pathogen attacks the stalk, the plant dies earlier, reducing grain filling and resulting in small, light ears. In addition, the stalks break or lodge, resulting in further yield losses from ears that cannot be harvested. The degree of infection is fundamentally determined by the resistance traits of the maize hybrids, but also a great role in that region Fusarium species composition as well.

Application of yeasts fortified with microelements – Review
101-106Views:152Microelements are increasingly becoming into the focus of interest from both a point of view of nutrition science and feeding. An always growing care must be paid to the microelements coverage both in human and animal organisms because of incorrect alimentation habits and
unsatisfactory feedstuff nutrition value. For the increased supply of the micro-nutrients, enrichment or fortification with microelements can not only be realized with traditional foodstuffs and forage but there are already alternative ways such as single-cell proteins from yeasts directly enriched or fortified with microelements for the purpose.
We would like to draw the attention that the production of these items is more favourable in comparison with traditional foodstuffs or forage since yeasts are capable to multiply microelement levels compared to their original state, and establish organic bonds with them.
For this purpose, we explored and analysed the scientific literature, studies and research results on this subject, that is why we stressed the significance of yeasts, the features and health effects of certain microelements, as well as the possibilities for use of yeasts enriched with micro-nutrients. -
Investigating the above-ground biomass values of sweet potatoes (Ipomoea batatas)
35-39Views:156The role of sweet potato tubers in human nutrition is not new. The above-ground biomass of sweet potatoes is not used for nutritional purposes in most countries, but it has a high biological value. Therefore, the aim of the present study is to investigate the production of press fibre from above ground biomass by wet fractionation. Two sweet potato varieties (purple- and white-fleshed sweet potato) and two types of irrigation system were used: bubbling water flow system (BWS) and continuous water flow system (CWS). Glucan, xylan, arabinan were analysed by HPLC and elemental content was measured by ICP-OES. Our results show that the total carbohydrate content in the pressed fibre of the leaf blades (27.64–29.88 %w/w) is lower than in the stem with petiole (51.14–57.36 %w/w). No significant difference in glucan, xylan and arabinan content was observed in the leaf blade. In the stem with petiole, significant differences were observed for xylan and arabinan contents. For elemental content, generally higher values were measured in the leaf blade than in the stem with petiole. This information may be relevant for the selection of the appropriate variety and treatment, even for the production of functional food.

Comparison of supplier quality assurance methods for compound feed manufacturing from efficiency, product consistency and economical point of view

The food industryparticularly has intensively implemented the recent quality management principles and developed systems that facilitate the continuous improvement and efficiency of the industrial production. Feed production has taken similar approaches however the intensity of deployment at the manufacturer and the rollout towards its supply chain has shown slower progress. The methods, that the feed manufacturer manages the supplier chain of mainly primer agricultural products according to, have a certain impact on the efficiency of the inbound operations, feed product quality and its consistency as well as on other resources. These methods have been built on sound quality management principles that are stated not only in quality standards but also in relevant regulations. Current study addresses the questions related to the link between supply chain quality management and feed product. The objective of the frontier research was to highlight the theoretical possibilities and benefits of the robust design methodimplemented into animal feed manufacturing dealing with highly variable ingredients.

The slaughter technology of poultry produces large amount of poultry feather with 50–70% moisture content. This means more million tons annually worldwide (Williams et al., 1991; Hegedűs et al., 1998). The keratin content of feather can be difficulty digested, so physical, chemical and/or biological pre-treatment is needed in practice, which has to be set according to the utilization method. The microbiological and enzymatic degradation of feather to soluble protein and amino acids is a very favourable and relatively cheap opportunity to produce valuable products of the resulting feather. Our applied treatments were based on the determination of the most effective method, which is able to follow the biodegradation of waste poultry feather.
