Composition and sensory properties of sour cherry cultivars
19-23.Views:402Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.

Sensory evaluation of white asparagus (Asparagus officinalis L.) hybrids
51-55.Views:338Comprehensive system of sensory evaluation was developed to obtain information on the different varieties by determining asparagus quality parameters. 9 sensory characteristics were estimated to describe flavour differences. The tests were carried out in 4 varieties of white asparagus (Asparagus officinalis L.) grown on brown humus sand soil by etiolate method in ridge cultivation. The experiment was performed at the University of Debrecen in Debrecen-Pallag. To increase the Hungarian asparagus consumption, a classification of varieties
regarding to asparagus flavour is necessary. In our experiment it could be stated that there are strict correlations (0.892) between the sweetness – total impression and between lacks of unpleasant aftertaste – total impression (0.870). The result of surveys can lead to higher popularity of the asparagus. These results are presented in order to recommend the varieties to producers for a successful marketing. The taste of asparagus is mostly influenced by variety, soil type and growing conditions. In our experiment, ‘Vitalim’ hybrid exceeded by several sensory parameters. This hybrid scored 788.38 over 900. The elder population showed more interest in asparagus consumption than younger ones. 50% of the participants are able to pay only 500-600 HUF/kg. It could be realized to ensure the proper growing place, hybrid and direct trade. Marketing and more information is necessary to increase the popularity of this vegetable among the younger generation. -
Effect of boron fertilisation on the flavour of carrots - Applicability of organoleptic analyses to carrots
51-54.Views:121Foliar boron fertilisation has had positive influence only on carotene content. Results were evaluated with chemical analyses and sensory tests. It has been observed that sensory tests are able to detect bitter flavour and also to measure its interaction with sweet flavour. Sensory tests for evaluation are generally used in the EU, also in the case of fruits and vegetables. With the aid of students and staff having received training and acquired practice, our University has the possibility to complete chemical analyses in such a way that satisfies modern demands, as well as facilitating the sale of the products on foreign markets.

Evaluation of essential oils by gas-chromatography and a new method: "electronic nose"
85-89.Views:175The chemical quality of the essential oils is determined by their composition as well as by the complex aroma features. For the evaluation of odour and aroma, sensory tests are practised, especially for applications such as aromatherapy, food industry or perfumery. In the recent studies we investigated eight Mentha origins (populations of Mentha iperita, M. spicata and M. arvensis) of our genebank collection using a new and effective instrumental sensory evaluation method parallelly with the usual GC analysis.
The results show that the examined mint clones possess different essential oil accumulation levels and special flavour characteristics, too. The GC analysis of the essential oil revealed characteristic differences at both inter- and intraspecific level in the proportion of mentol, menthon, carvon, limonene, menthyl acetate and in two not identified monoterpenes.
In the sensory tests the special complex aroma enables a reliable distinction with a single exception among the populations by the help of the "electronic nose" equipment. The distinction among the samples based on the sensor signals of the instrument — evaluated by multivariate methods — shows a close relation with the detected monoterpene components of the essential oil.

Sensory analysis as a supporting method for marjoram breeding
73-77.Views:197Marjoram is one of the most important spices in Hungary, which is utilized both in phytotherapy as well as in alimentary industry. Organoleptic quality of the drugs of two Hungarian varieties of Majorana hortensis /'Francia' and 'Magyar'/ were investigated by two different methods of sensory analysis. The chemical composition of the material was checked by GC analysis of the distilled essential oil. Although their main compounds and proportions showed similar patterns, both the human and instrumental sensory tests based on the complex odour and aroma of the drug, proved a significant differentiation of the two varieties.
On the basis of our results, sensory evaluation may be a useful tool in the practice in determination of complex aromatic values of marjoram, as a spice. At the same time it seems to be a suitable method in promotion of breeding efforts.

Evaluation of sour cherry (Prunus cerasus L.) and European plum (Prunus domestica L.) varieties for making dried fruits
119-124.Views:233The aim of our drying trials was to determine the drying suitability of stone fruits. The tested species were sour and sweet cherries and European plums too. Data and results of sweet cherry drying were published earlier (Klincsek et. al. 2005, 2006).This article containing results of twenty sour cherry and six European plum varieties. Laboratory tests, drying processes and sensory testing were done at Fruit Quality Testing Laboratory of Fruit Science Department of Corvinus University of Budapest. The sensory tests and their valuations were done by the instruction of National Institute for Agricultural Quality Control. In the case of sour cherries by one year data in 2004 we divided fruits to five categories by suitability for making dried fruit. Varieties in the first two groups are the followings: most suggested for making dried, fruits: 'Meteor korai' and `Érdi jubileum'; suggested: 'IV-3-48' and `Piramis'.In the case of European plums three varieties can be suggested for making dried fruits from the six tested cultivars: ‘Révfülöpi’, Althann gage' and `Besztercei'.

Effects of environmental factors on morphological and quality parameters of table beet root
139-146.Views:347In our trial morphological and quality parameters of 15 table root varieties were tested at 3 different sowing dates: 15 April, 9 July and 19 August 2010. In the trials the root shape of the varieties form the April sowing date approached most the regular spherical shape (diameter/length –1.0) which is favoured both by fresh market and the processing industry. In the July and August sowings the roots were elongated with reduced proportions. The highest red pigment content (betacyanin) was observed in the second sowing of July (>80 mg/100 g). In the late sowing (August, under plastic tent) a further 10–20 mg/100 g pigment increase was measured in relation to the earlier sowing dates of the same varieties. A similar trend could be observed in yellow pigments (vulgaxanthis) which proves a close correlation between the quantities of the 2 pigments (r=0.823). The highest vulgaxanthin content (103.3–124.18 mg/100 g) was obtained form roots of the late sowing harvested in December. Varieties reacted differently to temperature and so to sugar accumulation in the different sowing periods. In the July sowing higher water soluble solids content was measured on the mean of varieties (10.12 %) as compared to the April sowing (7.76%). Sensory evaluations included inner colour intensity (1–5), with ring (1–3) and taste (1–5) of the raw material evaluated by scoring. According to laboratory measurements better inner colour intensity was observed in the July and August sowing dates. In these samples uniformly coloured, almost with, ring-free roots were obtained. In our trial varieties from the spring sowing had superior taste. Early sowing is recommended for fresh market sale while the second crop (July) harvested in autumn can satisfy processing requirements. In the late sowing (under unheated plastic tent) fresh beet root can be grown at the end of autumn or beginning of winter, thus prolonging the usability of plastic tents.

Evaluation of morphological parameters and bioactive compounds in different varieties of beetroot (Beta vulgaris L. ssp. esculenta GURKE var. rubra L.)
31-35.Views:466Beetroot consumption based on pickled beets generally in Hungary which is due to the higher yield from second crop harvested in autumn and processed by manufacturing industry. Researches of the past years confirmed its favourable nutritional-physiological effects on human body so demands, as for fresh salad, also increased. The trial aimed at testing the interaction of varieties on quality parameters and in the same time suggestions are made how to use different varieties of beetroot according to its quality. Morphological and sensory evaluations were examined on 10 varieties of beetroot harvested in autumn. The regular spherical shape can reduce the refining loss during the processing of beetroot which is beneficial for the manufacturing industry. In our trial the root shape of Libero, Mona Lisa and Rubin varieties approached most the regular spherical shape (diameter/length – 1.0) which is favoured by not only processing industry but also fresh market. The highest red pigment content (betanin) was observed in Mona Lisa, Akela and Cylindra (34.58–47.66 mg/100 g). A similar trend could be observed in yellow pigments (vulgaxanthins) which proves the close correlation between the quantities of the two pigments (r=0.898). Highest total polyphenol (77.13–83.37 mg GAE/100g) and flavonoid (21.73–22.73 mg CE/100g) contents were detected in Akela, Mona Lisa and Bonel. These varieties are favourable for fresh salad and they can satisfy processing requirements also. Highest water soluble solids content was found in Akela (7.15%). In our conditions nitrate (NO3-N) values below 900 mg/kg were examined in all of the varieties which is favourable in the case of beetroot.

First evaluation of fruit quality of some new and old sour cherry cultivars in Hungarian climatic condition
37-43.Views:303Indeed, in the last decade a large number of new sour cherry cultivars with new notable flavor characteristics have been released. There is no enough information related to qualitative characteristics which consistently segregated based on their predominant sensory characteristics. The present study carried out at tow consecutive years (2008 and 2009) and examined some qualitative characters which are the main importance in the specialty cherries trade, The main objective was to determine fruits quality of Érdi bőtermő, Oblacsinszka, Debreceni bőtermő, Csengődi, Pándy 279, Éva, Kántorjánosi, Újfehértói fürtös and Petri sour cherry cultivars. Changes observed in major characteristics such as fruit detachment force, width, length, weight, peduncle length, flesh firmness, brix, citric acid, Suger/acid ratio and pit weigh.While observed no change in flesh/pit ratio and Coordinate of colour (X*, y*, x*), hue angle and chroma value, in different years. In all measured factors, there was significant difference between selected cultivars of sour cherry fruit. Debreceni bőtermő showed higher values of fruit detachment force in 2008, while had the lover of fruit detachment force in 2009. Fruit firmness of “Érdi bőtermő” were monitored at lover value in both 2-year.
