The role of dietary fibre and its impact on health is increasing. It is worth noting that their beneficial effects on the body are becoming more widely known, but their consumption is still below the recommended daily intake from food. Dietary fibre, as a class of compounds, includes a mixture of plant carbohydrate polymers, both oligosacch...arides and polysaccharides. Dietary fibre has been linked to a number of diseases, as its consumption can reduce the risk of cardiovascular disease and type 2 diabetes. They influence the composition of the bacteria present in the human gut. Consuming the right quantity and quality of dietary fibre can play a role in the prevention of certain types of cancer. Nowadays, it is common to produce various fibre-enriched foods, called functional foods, because of the beneficial effects they have previously had on the body. In the present work we want to give a general description of dietary fibre and its role in the body.
Nowadays there is an increasing emphasis on the use of raw materials. Typically, raw materials – in this study malt – are used in animal feeds and used in the brewing industry. However, in terms of quality (eg. high fibre content), these can be included in human nutrition, we have limited information on this possibility. The aim of our...work was to compare different malt flours and examine the possibility of using malt in the baking industry. We were to investigate some of the most relevant parameters, such as dietary fibre content, crude protein content, fat content, carbohydrate content, dry matter content, moisture content, salt and energy content. In the future, we aim to conduct a research on some of these parameters with different malt types as the brewing industry uses novel ingredients different cereals, pseudocereals such as amaranth (Amaranthus spp.), oat (Avena sativa L.), quinoa (Chenopodium quinoa Willd.) in addition to the spring barley (Hordeum vulgare L.) or wheat (Triticum aestivum L.). Based on brewing studies, malt has a high fibre and protein content. Having these advantageous qualities, malt should be part of humans’ healthy diet. Using malt flour in the baking industry can be a new direction which can lead to creating a healthier lifestyle and healthier eating habits than suggested by the WHO (World Health Organization).
This study presents the yield results of some French bean varieties in organic and conventional farming. This study presents the advantage of organic farming in environmental point of view and in nutrition. Sale of organic products is insured, there is solvent demand rather in abroad than in Hungary.

In the first trial, variety comparison with 9 yellow podded French beans in organic and conventional farming was conducted. Varieties: Carson, Cherokee, Debreceni sárga, Goldmine, Héliosz, Minidor, Sonesta, Sundance és Unidor. The following parameters were observed: the time of emergence and flowering, number of plants per plot, plant height and flowing green harvest. We weighed yield of the standardized, un-standardized and diseased pod fractions. The results were evaluated statistically with SPSS and Excell softwares.
Emergence had all at once, but the plants of organic farming were 5 days earlier at flowering and maturity, than conventional farming.
The plants in organic place were more developed than in conventional ones. Emergence was more uniform, the growth and the number of plant were square. Significant difference was not detected in plant height between two places. Most of the varieties examined had better total yield in organic place, than in conventional ones. Deviation depended on variety. ‘Sonesta’ and ‘Debreceni sárga’ had the best yield in both places. In
conventional farming choice can be expanded with ‘Unidor’ and ‘Sundance’. In organic farming choice can be expanded with ‘Minidor’ and ‘Carson’.
In both places the Sonesta, Debreceni sárga and Unidor varieties had the most standardized yield per hectare. In organic place Carson variety had good pod yield because it was infected less by diseases.
In the another trial we studied inside content values of some varieties on organic and conventional places. The parameters were observed: dry matter-, starch-, crude fibre-, crude protein content and amino acid content.
The rates of asparagin or glutamine acid were the highest, which was followed by serin or histidine. In asparagin content was the most deviation between conventional and organic farming.
Significant differences were between varieties in dry matter-, starch-, crude fibre-, and crude protein content both on organic and conventional places. Each variety had significant differences between organic and conventional farming.
Starch had strong and negative correlation with dry matter, crude fibre and crude protein content.
Budai piaci and Minidor varieties and BU-16 variety candidate had higher starch content and lower dry matter, crude fibre and crude protein content on organic place. Sonesta variety had almost equal dry matter content on both places, but crude protein content was higher with 10% and starch content was lower with 6% on organic place, than on conventional place. Paridor variety had almost equal starch content, but it had higher dry matter and crude protein content on organic place.
In this paper we analysed the change of the chemical composition and nutritive value of Timothy observed during the spring of 2005. The nutritive value of Timothy was observed between the end of April and the beginning of June relating to the following parameters: crude protein, crude fibre, crude fat, ash, N-free extract, net-energy growth, ne...t-energy lactation, net-energy maintenance, Metabolizable Protein Energy dependent, Metabolizable Protein N-dependent. We also analysed whether a relationship between the environmental factors that affect the
growing period of grasses and the chemical composition can be detected or not. While testing for correlation, the number of days from 1st January, the amount of heat accumulation, solar radiation and rainfall were considered as independent coefficients.
For the estimation of weather conditions we calculated the climate index. The observed year can be described as a year with a rainfall above the average and abundant solar radiation. A correlation can be detected between the change of parameters of nutritive value and the quality of the current year. In 2005 the result of the analysis of nutritive value was showed a significance difference with respect to each chemical composition at the rate of P<0.001 depending on the time when the samples were taken.
According to the outlined data it can be stated that the change of the value of crude protein and ash show decreasing tendency agreeing the research literature. In parallel with the change of nutritive value, the amount of crude fibre and N-free extract increased. However, the value of Net-Energy maintenance showed an alteration only in the first half of the observed period. The same alteration tendency can be detected in the Net-Energy growth and the Net-Energy lactation.
Change in chemical composition and nutritive value of Reed Canary Grass (Phalaroides arundinacea) were investigated in springtime in 2004-2006. It was also analysed whether a relationship between the climatic factors affecting the growing period as well the chemical composition of grasses and the annual weather were looked for. For the estimation of weather conditions the climate index was calculated. A correlation can be detected between the change of parameters of nutritive value and the quality of the current year. Between 2004 and 2006, the result of the analysis of nutritive value indicated a significant difference with respect to each chemical composition at the rate of P<0.01 depending on the time when the samples were taken. According to the outlined data it can be stated that the change of the value of crude protein and ash show decreasing endency agreeing the research literature. In parallel with the change of nutritive value, the amount of crude fibre and N-free extract increased. However, the value of Net-Energy maintenance revealed an alteration only in the first half of the observed period. The same alteration tendency can be detected
in the Net-Energy growth.
We set up experiments for improving the nutritional value of cerealbased products. Our aims were to decrease the energy content of bakery products with the mixing of plant originated raw materials and byproducts with high fibre contents, and we have evaluated the effect of sodium-chloride on the physical properties of bakery products. We found...that the apple pomace, the byproduct of juice production, is excellent for increasing of fibre content of bakery products and the further aim of investigation is to develop economical ways of hygienic byproduct handling and purification. Our experiments, evaluate the bakery use of triticale, have significant achievements and the breads made from triticale flour and whole-grain are commercially available nowadays. Our investigations included the possibilities of decrease of toxin contamination of cereals and our results can form a part of risk estimation systems after further experiments .

interaction between animal and the surroundings.
Our study prepared as a brief version of National Report in the frame of EUROLAN Programme. We deal with the interpretation of some definitions (marginalisation of land use, multifunctionality of land use, marginalisation of agriculture, multifunctionality of agriculture), with sorting and reviewing indicators of marginalisation and finally wit...h the analysis of functions of land use. We suggested a dynamic and a static approach of marginalisation. We can explore the dynamic process by time series and the static (regional) one by cross-section analyses.
It is very hard to explain the perspective of the future of marginalisation of land and of agriculture in Hungary. The process of marginalisation seems faster in the agriculture in the coming years, but it depends on the utilisation of new possibilities given by the EU financial resources and by the Common Market. At this moment agriculture seems one of the big losers of the accession.
In the long term we should face considerable challenges in the land use. It is necessary to take into account that there is a supply market of foods and traditional fibre production world-wide. There are limited possibilities to produce and to market for example biodiesel (fuel), bioethanol, or maybe biogas. Thus the environment and landscape preservation becomes more and more real land use alternatives.
The environmental interpretation of the multifunctionality of land use: activities (functions) of environmental preservation and nature conservation in a certain area, which aim to preserve natural resources by the existing socio-economic conditions.
Preservation of rural landscapes is the task mainly for land-users, who can be commanded by legal means and can be encouraged by economic measures to carry out the above activity. In the recent past measures of „command and control” type regulation were predominant, however nowadays, especially in the developed countries, the role of economic incentives increases.
As a conclusion of our analysis we can state that as long as the main land-dependent activities (agriculture, forestry, housing, tourism, local mining) cease to be viable under an existing socio-economic structure, then it is hardly possible to sustain the rural landscape on an appropriate level by non-commodity products (such as environment preservation, cultural heritage, nature conservation, employment etc.).

A part of places with high ecological values coincides with the areas with unfavourable agricultural endowments and underdeveloped micro-regions. We think so that the marginalisation preserves the non-environmental-sound activities and hinders the development of multifunctional agriculture and this process can change only by joint utilisation of endogenous and exogenous resources and methods. Thus the successful programmes for agri-environmental protection and multifunctional land use can serve the moderation of negative effects of marginalisation or maybe the marginalisation process itself.

On the examined territories there was significant difference between the disembowelled body masses. The does which come from the hunt Nagyszénás weighed 4-5 kilos more than the does from the Csongrád territory. The main feed components were present in different rate in the samples of the territories, in the Nagyszénás samples grain, dicotyledonous herbacous plants were dominant, and were eaten more. The high level of grain in the feed result in better condition and larger body mass.
Maintaining saline grasslands in good condition, preserving their yield and diversity is important not only for the purpose of nature conservation, but also for farming. Therefore, the primary purpose of our study is to analyse the effect of pasture use of the smaller weight extensive and the larger weight intensive beef cattle on the grassland... vegetation and nutrient content. In this way, we can answer the question whether grazing for nature conservation can be achieved with more profitable, more economical and more intense varieties.
The tests were carried out in May 2016 and May 2017, in the Hortobágy National Park (Pap-ere and Zám puszta), where a total of 16 sample areas were analysed. These areas are grazed with extensive beef cattle (Hungarian grey) and mixed genotype of intensive cattle. The associations were selected along a moisture gradient, such as wet salt marsh (Bolboschoenetum maritimi) and drier saline meadow (Beckmannion eruciformis). All the vegetative material collected both years in May was analysed for the following parameters: dry matter, crude protein, crude fibre and life-sustaining net energy content. We compared the effects of medium grazing (0.46 livestock/ha) and abandonment on vegetation and nutrient content.
We examined the effect of (i) grazing, (ii) different grasslands (salt marsh, saline meadow) and (iii) grazing of different cattle breeds (Hungarian grey, intensive beef) on the nutrient content of the vegetation of grasslands Based on our results, it was found that grazing had an impact on crude protein and life-sustaining net energy content. The highest crude protein content (12.75 m/m%) was obtained in the year 2017 in the area where higher density had been grazed for two years. For the lifesustaining net energy, the highest value (5.05 MJ/kg d.m.) was also obtained in 2017 and the lowest in 2016. Furthermore, it was found that there was no significant difference between the effect of the two cattle breeds on the parameters examined. Significant effects were observed only in the case of life-sustaining net energy: in the area of intensive beef cattle we received a higher value (5.15 MJ/kg body weight) than in the area with extensive beef cattle (4.96 MJ/kg body weight).
Our results have also shown that cattle grazing is of the utmost importance for the maintenance of both wet and mesophilous habitats. Based on our three-year study, we can say that grazing by both extensive and intensive cattle breeds is suitable for the management of saline habitats.
