  • Examinations connected with productive life in Hungarian Holstein Friesian populations

    In Hungary, an intensive dairy population has developed in the last few decades as the result of upgrading to Holstein-Friesian. Intensive milk production, adjusted with housing and feeding, unfavorably affected secondary traits. The number of days between two calvings has increased remarkably and productive lifetime has decreased drastically. In the interest of profitable milk production, it is important that cows should be able to stay in the herd as long as possible, in order to have great lifetime productivity.
    The aim of this paper was to compare the production and pedigree of cows with eight or more lactations to cows which were culled after their first lactation.
    It can be stated that cows with longer herd lives produced more milk in their first lactation than those which were culled after their first lactation. When analyzing the pedigree effect of sires, this could not be proven, although some bulls, mainly of Hungarian origin, appeared at a higher frequency. In the analysis of the effect of dams, it was found that many of the offspring of the cows with longer herd lives had similarly great lifetime productivity. Correlation between herdlife and milk production quantity traits was found to be mild or stronger (r>0,60), while according to our analysis, there is no correlation between herdlife and milk production quality traits.

  • The trend of cowmilk yield, its compostion and the body condition during the lactation

    The authors examined the data of 2767 trial milkings andthe months Body Condition Scores of 479 Holstein dairy cows. The condition loss was significant between the 30-60th days. The improvement of BCS begins only after the 120th day. The change in the milk protein and milk fat content were close after the condition changing. In each period of the lactation the closeness of the relationship among the condition, the milk quantity and the milk composition were different. In the aspect of the milk quantity the most significant difference was between the 2.5 and 4 BCS cows (6.68 kg) in the last period of the lactation.

  • The effect of supplemental pig milk replacer on carbohydrate metabolism – a review

    The aim of this review is to examine the effect of milk supplementation on pigs’ carbohydrate metabolism. These parameters regulate the growth of piglets, the nutrient intake and the period of pre-weaning. Due to the increased litter size, the sow milk yield reaches an individual maximum. The individual maximum has not increased proportionally with the number of piglets born alive. The use of liquid milk supplementation may give the opportunity to keep these large litters. The examined hormones are insulin, insulin-like growth factor, growth hormone, growth hormone releasing hormone, ghrelin and leptin. This review seeks to find these hormones’ interactions.

    This study was conducted to investigate the effects of supplemental n-6 and n-3 fatty acids on sow’s milk fatty acid composition during the lactation period and on reproductive efficiency of sows in the subsequent gestation period. Data were collected on a total of 213 DanBred sows (108 control and 105 experimental) representing parity of 2–7, respectively. Control and experimental sows were placed in the same housing conditions during lactation and gestation period. Control group received 6.3 g of sunflower oil (SO) per kg feed as n-6 fatty acid supplementation, whilst experimental animals received the same amount of fish oil (FO) as n-3 fatty acid source. Diets were corn meal-extracted soybean meal based. The experiment was conducted in one replication as being a part of a longer and more comprehensive trial. It was found that the consumed long-chain polyunsaturated fatty acids (LC-PUFAs) appeared in the sow’s milk and changed its fatty acid profile. With this alteration, the n-6/n-3 ratio of experimental (FO) sows’ milk were narrower than in SO group (SO: 13.82 vs. FO: 5.89). The benefits of n-3 fatty acids supplementation were evident for the subsequent reproduction cycle, when experimental sows heated more reliable and earlier than control (weaning to oestrus interval: SO: 5.86 vs. FO: 4.48 days). Only 2.33% of experimental sows (FO) did not heat within 7 days after weaning, but this was 12.36% in the control group (SO). The present study requires further research to evaluate the effect of n-3 fatty acids on maintenance of pregnancy and improved subsequent litter size.

  • Macro element contents of different genotype cows’ milk

    The level of mineral elements is important factor regarding the quality of milk. The aim of our research study was to determine the content of mineral elements in milk of Holstein, Jersey, Brown Swiss, Ayrshire, Norwegian-red, Swedish-red cows in the first stage of lactation. All cows were fed with the same type (composition) of feed and they were kept under the same condition. The concentration of macroelements (K, Na, Ca, P, Mg, S) in digested milk samples was determined by inductively coupled plasma optical emission spectrometry (ICP-OES).

  • Storage of ram semen in gelatin supplemented extender

    The aim of our study was to examine how different gelatin concentrations affect ram semens viability in liquid storage at 5 oC for five days. Our hypothesis was if we add gelatin to the semen extender, than the viability of ram semen will be better in the extenders containing gelatin, than the control. We used two different semen extenders:1.5% UHT milk and 1.5% UHT milk + 5% egg yolk. We added 0; 0.5; 1.0; 1.5; 2.0% Dr. Oetker gelatin to the semen extenders. We stored the semen for five days at 5 oC and in every 24 hour we made sampling.
    We stained the smears with Kovács-Foote staining and evaluated them with light-microscope. We categorized the cells in five groups like: live and intact cells, live cells with injured acrosome, dead cells, live head with dead tail and live tail with dead head. We used one-way analysis of variance (ANOVA) to assign how gelatin concentration affects the number of the categorized cells. On the fifth day, the viability was the best in the following semen extenders: 1.5% fat UHT milk + 1.0% gelatin and 1.5% fat UHT milk + 1.5% gelatin, but it was not significant (p>0.05).

  • Analyzing the Efficiency of Dairy Farms by Using the Method of Data Envelopment Analysis (DEA)

    In Hungary the dairy sector is in a long-term critical period, the stock has been in constant decline. The consumption of milk and dairy products in Hungary is slightly rising compared to the world tendency, and it is fallen behind the level in 1990. The milk consumption per capita in 2006 was with 75 liters less than the EU-15 average. Dairy enterprise is a very risky activity: the profitability of the enterprise is affected by the fluctuation of feed and animal health products prices from the side of inputs, and by the fluctuation of end-product prices. Under these circumstances it is vital for the
    cattle breeders, in order to survive, to harness the reserves in the breeding as effectively as possible. In our research we made a multi-faceted efficiency analysis of an agricultural holding’s three dairy farms. The chosen method for the analysis was Data Envelopment Analysis (DEA). The
    selection of the method is justified by the fact that there is not such a reliable database by which we could define production functions, and that DEA makes possible to manage several inputs and outputs, i.e. multiple decision problems, simultaneously. By using DEA the sources that causes shortfalls can be identified, analyzed and quantified on farms that does not operate efficiently, thus it can help the corporate decision support successfully. In the model inputs are the cost data per one liter milk – feed, medicinal product use, logistic costs -, and the main parameters
    concerning the keeping and rearing. Outputs are indicators concerning milk production, milk quality and others. We prepared the model in MS Excel, the linear programming model series were programmed by Visual Basic. After solving the model, in light of the shadow prices we can determine why either of the farms is not efficient.

  • Microbial assessment of potential functional dairy products with added dried herbs

    The market of dairy products is a dynamically developing sector of the food industry. Potential, functional dairy products, made by adding herbs or spices, will have antimicrobial and antioxidant effect due to the active biochemical agents of the plant additives. Furthermore, these active components will widen the storage life of food products and enhance their organoleptic properties too. We worked out a technology for creating fresh cheeses using a gentle pasteurizing method by treating the mixture of raw milk and 1.5% fat contained in commercial milk. As herb additives, we used citronella (Melissa officinalis), and peppermint (Mentha x piperita) harvested by us and dried them via Tyndall-method in convective dryer on 40 °C for 5.5 hours per day. The drying period took three days. We bought dried citronella and mint from the supermarket, which were dried by ionizing radiation, to compare the microbiological pollution with the herbs dried by us.

    The main target of this research was to create a microbiologically stable, potential functional dairy product. However, because of the bad quality of the raw milk and the gentle heat treatment we used for sterilizing bulk milk, or else, cheeses were not safe for human consumption. As a consequence, we need further studies to modify our technology and get a microbiologically stable product.

  • The results of the investigation of the β-casein gene polymorphism in sheep breed – Review

    β-casein is the most abundant protein fraction in sheep milk, and has at least six different alleles (A, B, C, G, X, Y). The alleles of the β-casein gene may influence on the quality and quantity of milk. Knowing the gene polymorphism has an important role in the process of milk production. The properties of milk could be positively influenced by themolecular genetic methods.

  • The milk production and prolification of Saanen goats of various body condition and ages

    In our experiments we tried to find correlation between the age and the body condition of milking goats. We found that these factors significantly incluence the economic parameters of the goats; they have effect on their milk production and reproduction as well. Body condition is the lowest in case of the 3-5-year-old goats, whereas it is the highest in case of the 1-2-year-old. The highest number of kids (2.5) are produced by the 3-5-year-old, while the 1-2-year-old have the fewest kids. Lactation milk production is the highest in case of the 4-5-year-old animals, the lowest in the 1-2-year-old. The lactation period is the longest in case of the 3-4-year old animals in contrast to the younger. The difference is significant in each experiment.

  • Investigation of the β-casein (CSN2) gene polymorphism in goat breed – Review

    Milk plays an important role in the human nutrition as an important protein and energy source. Β-casein is the most abundant casein fraction in the goat milk. The β-casein gene has at least 9 polymorphism in goat breed (A, A1, B, C, C1, D, E, 0 and 0’). The most important alleles are the zero (0) and zero’ (0’) alleles, because they decrease the quantity of β-casein protein in milk. The lower quantity of the β-casein changes the properties of the coagulation and the allergenin milk. This review is about the β-casein gene polymorphism in goat breed.

  • The effect of feeding different glycerol sources on the performance of lactating sows

    Glycerol is a by-product of the biodiesel industry and it might be a good alternative to moderate the energy deficiency of sows during the lactation period. Preliminary experiments were carried out to test the effect of a powder, solid based “food grade” glycerol source with 72.9% glycerol content (Trial 1) and a liquid “feed grade” glycerol source with 86% glycerol content (Trial 2) on the performance of lactating sows and their litters. Trial 1 was conducted with 5 Hungarian Large White×Hungarian Landrace sows/treatment (313±24.9 kg) and Trial 2 with 12–12 DanAvl (323±17.0 kg) sows and their litters/treatment. Neither the solid, powder based glycerol (Trial 1), nor the liquid glycerol source (Trial 2) had significant effect on the feed intake, reduction in live weight and back-fat thickness, and weaning-tooestrus interval (p>0.05) of lactating sows. In Trial 2, on the 14th, 21st and 27th days of lactation the milk samples were collected and it was found that 50 kg/t glycerol decreased the protein content of milk samples (p<0.05). Glycerol supplementation had no effect on dry matter, fat, lactose content of milk samples (p>0.05). In Trial 2, no significant difference was found between control and experimental sow groups in triglyceride concentration of blood samples and in the activity of liver enzymes (ALT, AST, GGT; p>0.05), but the concentration of plasma glucose and cholesterol increased tendentiously (p<0.10).

    Based on our preliminary results, it can be concluded that additional dose trials are needed to perform in order to study the effect of glycerol supplement on milk production and on metabolic processes of lactating sows.

  • Preliminary Research Concerning the Association Between the Genotypes at the Kappa-Caseine Locus and Milk Production Traits in Cattle

    The genotypes for kappa-casein locus were established using PCR-RFLP. Genome DNA for PCR amplification was isolated from hair roots in cows (30 Schwitz individuals), and from frozen semen in bulls (42 bulls of different breeds).
    A higher frequency of the B allele in Schwitz (pA = 0.45 and qB = 0.55 in cows and pA = 0.25 and qB = 0.75 in bulls), and a higher frequency of the A allele in bulls belonging to different breeds (pA = 0.61 and qB = 0.39 in Deutsch Simmental, pA = 0.84 and qB = 0.16 in Romanian Simmental; pA = 1.00 and qB = 0.00 in Holstein, and pA = 0.67 and qB = 0.33 in Pinzgauer) were estimated. The associations between the genotypes and alleles determined at the kappa-casein locus and milk production were tested. They emphasized significant associations only for milk and milk fat quantity, in advantage of individual carriers of the B allele in homozygous and heterozygous states.

    Agriculture in Hungary was characterised by the duality of large-scale farms (co-ops and state farms) and small-scale private enterprises until the beginning of the 1990s. Due to the privatisation and transformation of co-ops farm structure has significantly changed. The transformation of the structure is not considered to be a completed process. Level of concentration and integration on private farms are rising, new co-operation forms are appearing and new types of enterprises and producers’ groups are being formed.
    Concentration and integration have great importance in the dairy sector among agricultural enterprises. In recent years, milk production in the European Union has been characterised by concentration, leading to greater competitiveness. Today, most dairy producers belong to different kinds of producers’ organisations as concentrated demand may only be competitive by meeting concentrated supply. In Hungary, the problems of production have been the fragmentation and decrease of the average farm size while, at the same time, concentration has occurred in the processing sector. Establishing producers’ groups may be one of the solutions for improving competitiveness production.

  • Effect of the claw disorders on production performance in dairy cattle

    The aim of the study was the influence of claw disorders on production traits in dairy cattle. Observed were claw traits as claw angle, claw length, heel index, claw height, claw diagonal and claw width. Right hind claw after functional trimming was evaluated. Occurrence of claw disorders like interdigital dermatitis and heel erosion (IDHE), digital dermatitis (DD) and sole ulcer (SV) as well as the progress of disease were observed. Basic summary and variation statistics was performed by the SAS software. Two herds were included in the study. Holstein dairy cows (n=101) produced 11 875 kg of milk, 468 kg (3.94%) of fat and 396 kg (3.34%) of proteins. Holstein cows were affected with IDHE in 22 cases, with DD in 6 cases and with sole ulcer in 10 cases. Slovak Simmental dairy cows (n=101) produced 5834 kg of milk, 258 kg (4.44%) of fat and 209 kg (3.59%) of proteins. Slovak Simmental cows were affected with IDHE in 8 cases, with DD in 5 cases and with sole ulcer in 19 cases. Observed was that claw disorders caused deviations of milk production.

  • Analytical overview of dairy industry in the Poltava region, Ukraine

    The author presents essential characteristics of the state and place of Poltava region in it. The study aims at identification and description of latest trends in Ukraine’s and Poltava’s dairy industry. The author stresses an important place of the dairy industry in the agriculture of Ukraine, and particularly in the Poltava region. This article also presents the information of main indicators of dairy industry of Ukraine in the comparison with other countries of the World. It describe sources of forming the main agricultural products and directions of their use for the calendar year, data on per capita consumption of main dairy products in Ukraine and the Poltava Region and per capita average daily consumption of basic micro- and macro elements in foods. The study contains basic indicators which characterize the social and economic state of agriculture in Ukraine and its regions for 1990–2012. There are also the data of gross production and main kinds of dairy products per capita and as well as some indicators of livestock’s productivity and so on.

    The goal of the article is to describe the complex evaluation of the achieved level of milk production, consumption of milk and dairy products in Ukraine and the Poltava Region, to show the specifics of the national dairy cattle breeding, identifying the main challenges in it.

  • Analysis of longevity in Holstein Friesian cattle using proteomic approaches

    The aim of the present study was to determine marker proteins those are associated with functional longevity of dairy cattle. Holstein-Friesian cows were grouped based on their performance as follows: group 1) individuals with good longevity traits; group 2) short production life because of poor reproduction traits; group 3) short production life with low milk yield. Twelve individuals were sampled in each group, blood and milk samples were collected from cows. Blood samples were analysed with two dimensional polyacrylamide gel electrophoresis (2D PAGE), MALDI TOF/TOF and nanoLCMS/MS. The milk samples were analysed with MALDI TOF/TOF and nanoLC-MS/MS. Using the optimized gel based proteomic approach,
    we have succesfully separated 143 proteins in the group1, 139 proteins in the group2 and 136 proteins in the group3, but we could not find significant differences between groups in the expression pattern. Using MALDI TOF/TOF and nanoLC-IonTrap MS, we have found eleven protein sequences those were expressed only in the samples of good longevity group.

    We carried out the examinations on a farm of 500 cows where We examined the body condition of the stock every month. We recorded the body condition data together with the milk production and calving data. We analysed the daily milk production as well as the body condition. During the examinations we sought an answer how the body condition and the production level change during the lactation period.

  • Study on the Work Organization at Dairy Farms

    Joining the European Union Hungarian producers have advantages but they need to solve some problems too. Only those producers can compete who will be able to produce extra quality milk. However the circumstances of milk production are not up to the task.
    The author examined the work organization of 7 dairy farms in Hajdú-Bihar County. Data were collected about the situation of farms, equipment of barns, objets of production, work force, qualification of workers, and productivity of work. He examined the applied motivation methods at farms. He concluded that as the number of cows per farm increases work productivity increases too. From the examination it appeared that family farms applied different motivation system from bigger producer organizations. The author put forward proposals for motivation possibilities to improve milk quality, atmosphere, and general feeling of workers.

  • Possibility of oil seeds in feeding dairy cows

    The efforts to modify the fatty acid composition of milk have intensified with health conscious nutrition coming to the forefront.This experiment of ours was designed to investigate to what extent the natural-based feed additives, such as oilseeds, can influence the fatty acid composition of cow’s milk.Further information was gained about feeding of oilseeds in specific amounts to be fitted into the technology of a large-scale dairy farm in practice. The feed supplements were whole, untreated rapeseed and whole, untreated linseed, as part of a total mixed ration. In case of saturated fatty acids when supplementing with whole rapeseed the most significant change was observable in the concentration of the caprylic acid, capric acid, undecylic acid, lauric acid, myristic acid, stearic acid. In case of unsaturated fatty acids the quantity of oleic acid enhanced considerably. When observating the feeding with whole linseed the concentration of many saturated fatty acids lowered (caprylic acid, capric acid, lauric acid, myristic acid, palmitic acid). The quantity of some unsaturated fatty acids was showing a distinct rise after feeding with linseed, this way the oleic acid, α-linolenic acid, conjugated linoleic acid, eicosadienoic acid. The aim of the study was to produce food which meets the changed demands of customers, as well.

    Within the framework of Ányos Jedlik program we started an experiment on feeding anti-oxidants with dairy cows at Körös-Maros Biofarm Kft. The purpose of the experiment was to test whether vitamin E and selenium fed as feed-supplement have an effect on the composition of milk produced. Furthermore we examined the cheese and yoghurt made out of the milk to explore how much vitamin E and selenium is retained in the products after processing. Our goal is to develop such functional dairy product which can be part of the daily diet helping us to remain healthy.

    After analyzing the data we found out that the anti-oxidant fed to the cows resulted in elevated vitamin E and selenium levels in the milk and that these were retained in the cheese and yoghurt in relatively large amount.

  • The methodology of Event History analysis and its application in the quality control of raw milk

    Event-history analysis is among the most frequently adopted mathematical methods, mainly due to the numerous types of models, available in the analysis. This method is also appropriate for analysing risk. Specifically, it has been employed in medical and animal-breeding science to manage risks. In this article, I give a presentation of the basic concepts, the basic types of models and their theoretical basis. I deal with the nonparametric Kaplan Meier and the parametric Cox proportional hazard model. The case study is also analysed with these methods. The results shows, that the 16-stall caroussel is the most effective facility from the viewpoint of quality. Milking into assay crucible (sample- cup) is more effective than to the floor after 16 decades.

    The author summarizes the main new challenges facing animal agriculture: growing GDP in many countries increasing animal protein demand, bioenergy industry as a new player using potential food or feedstuffs, increasing demand, Growing water and land scarcity, weaking the position of plant agriculture, feed production. Forecasts are summarized regarding the magnitude of meat consumption increases, and the possible plant biomass quantities required additionally in the next 20 years to cover the needs of food, feed and biofuel on a global scale.
    Efficiencies of various animal production sectors, poultry, pork, beef, mutton meat, milk and eggs and their environmental footprints are compared, summarizing the most important research  results concerning UK, USA, OECD evaluations. Intensive systems using highly productive plant and animal population will play an even more important role in the future especially in poultry, pig, milk and aquaculture production system being efficient users of resources (feed, water, land) and the environmental foot print is smaller per unit product.

  • Enhancement potentials for labour efficiency in small and large scale cattle farms

    The author examined the possibilities of increasing the labour efficiency at 6 large-scale farms and at 109 small-scale farms in Hajdú-Bihar county. He stated that the level of labour efficiency was higher for large scale farms than for small-scale farms. However, there is potential for work organisation of milking, feeding and other jobs on the large-scale farms, too. The reason for the low labour efficiency on small-scale dairy farms is the small number of livestock, obsolete machinery, and lack of expertise. The author points out that the quality of raw milk is also an important issue. Using examination methods of work organisation, he determined the critical points of raw milk production.
