The change of the inner content parameters of table beet (Beta vulgaris L. ssp. esculenta Gurke var. rubra L.) as a result of storage
Published February 17, 2015
113-119

The stored vegetables play a key role in the vegetable consumption. After harvesting, the storage conditions greatly affect nutritional parameters of the crop. The red beet is a root vegetable, which is manufactured mainly fresh in our county, therefore we do not have enough information about the storage. In our experiment, 5 varieties (Rubin, ...Akela, Larka, Libero, Mona Lisa) were examined in prismatic structure (0–5 °C and 95–97% RH) through 5 mounths.

Our measurements proved that under the appropriate storage conditions water loss was also occurs, which increased the dry matter content (average of 0.5 g 100 g-1). The bioactive compounds, like pigments (betanine and vulgaxanthin) and the quantity of flavonoids, were significantly increased during the experiment.

The results showed that the nutritional parameters of the 5 types was positive during the prismatic structure. However, this storage method negatively affected the bioactive compounds of the Akela genotype. Further studies are recommended for proper storage parameter adjustment, which is justified by the need of the different varieties. The optimal conditions enable us to preserve and to increase the best nutritional index.

Differences in content of beet root and beet root juice, and it’s suitable to develop functional foods from animal sources
Published March 24, 2015
53-57

In Western medicine is beginning to increasingly focus on the key role of healthy nutrition and lifestyle in preventing certain diseases. Therefore, it is important to emphasize the importance of primary prevention in our country, and to promote it; not only the health care team work, but broaden the recommended foods, which have benefit for hu...man health as well.

Polyphenols are antioxidants, which are easily consumable with diet, however, food processing can influence the level of them.

In our study, nutritional assessment was made of raw beet root and a juice, made from this beet root. We investigated in which special diet referenced to eat this foods and whether this is suitable to develop functional foods from animal sources as a row material.

Aflatoxin production on agricultural products
Published March 11, 2014
67-71

Aflatoxins due to their toxicity pose significant economic and human health threat; therefore, it is important to avoid this type of contamination in agricultural products. Until now significant aflatoxin contamination occurred mainly in foods of tropical and subtropical origin because the optimal growth of the producer Aspergillus species is b...etween 32–38 ºC. Nowadays the aflatoxin contamination is becoming higher threat in Hungary, due to the imported products, the rising average temperature and the climatic changes. There is a significant knowledge on the genetic and environmental effectors of the aflatoxin production; however, it is remained a great problem to control mold contamination and toxin production in farming and stock-raising. Here we attempted to summarize the knowledge on aflatoxin production and attempts of the elimination.

Methods for detention of lipid rancidity
Published September 8, 2020
117-120

There are various methods available for measurement of lipid oxidation in foods.Changes in chemical, physical, or organoleptic properties of fats and oils during oxidation may be monitored to assess the extent of lipid oxidation. However, there is no uniform and standard method for detecting all oxidative changes in all food systems. The availa...ble methods to monitor lipid oxidation in foods and biological systems may be divided into two groups. The first group measures primary oxidative changes and the second determines secondary changes that occur in each system.

The Effect of Mg Foliage Fertilization on Beetroot (Beta vulgaris ssp. esculenta var. rubra) Morphology, Quality Traits and their Relations
Published September 22, 2004
67-72

Mg-treatment increased solid soluble content in roots probably due to the larger assimilation area.
The applied foliage fertilization affected inner colour intensity and uniformity in roots positively.
The 2% Mg-sulphate solution affected pigment quantity favourably depending on varieties.
Close correlation (r=0,71) was found between t...he yellow (BX) and red (BC) pigments which indicates a similar biosynthetic pathway of the two compounds.
The Mg-sulphate foliage fertilization improves quality considerably but the individual reaction of varieties needs further studies.

Analysis methods of quality and traceability for honey
Published December 21, 2008
25-32

Honey is our essential food since ancient times. Thanks to the excellent dietetic and medical features, it has an important function in our nourishment. In Hungary about 25.000 tons of honey are produced each year. Most of the produce, about 80% is exported to different countries of the world. Hungarian types of honey have excellent quality. Th...rough exporting, the prestige and demand of Hungarian honey can be increased. In recent years the adulteration of honey caused many damages to producers and traders. The adulteration of honey is not easy to prove. Thereinafter, we represent several methods, such as oligosaccharide analysis or 13C/12C isotopic ratio analysis, which can identify the artificial substances of honey (for example: corn syrup, high fructose corn syrup) or can help to determine the ratio by which original honey can be identified.

Use of extensigraph in the examination of wheat flours
Published December 21, 2008
17-23

The extensograph is widely used in quality control and research laboratories studying wheat flour quality. The most commonly used measurements include Rm, the maximum resistance (maximum height of the curve); R5 the resistance at a constant extension of 5 cm; E, extensibility (total curve length); Rm/E, the ratio of maximum resistance to extens...ion; and A, the area under curve. The extensograph has proved useful in the classification and assessment of flours on the physical dough properties. Another important application is its use in wheat breeding programs. Furthermore, extensograph is an excellent tool to study the effects of a wide range of ingredients on dough properties of wheat flour (like oxidants, enzymes, salt and additives), and it can also be used measure the changes during the frozen storage. In the present study we provide a review of the scientific literature concerning the possible applications of the extensograph.

Antioxidant activity and total flavonoid content of honeys
Published December 15, 2010
25-28

The influence of honey on human health has been known since ancient times. Different components, like vitamins, amino-acids, enzymes, and the so called antioxidant activity of the honey play role in this effect, and also in the excellent quality. The aim of present study was to determine the total antioxidant activity and the flavonoid content ...of some honey samples. These two parameters are widely studied, and a lot of data can be used to compare and analyse. On the basis of them we can state that our results are quite similar than those we can find in literature. Characteristic feature of the examined honey samples is, that the antioxidant activity increased with the darkening of the colour. The lowest antioxidant activity and flavonoid content was produced by the acacia honeys with greenish shade of colour. The highest values was found in the very dark honeys (forest, sage, golden rod). The only exception was the coriander honey, where despite of its lighter colour, very high antioxidant activity was
measured.

Effects of cultivar and fertilization on extensograph parameters of winter wheat flours
Published December 15, 2010
19-24

In present paper we have examined the effect of mineral fertilization on the extensograph characteristics of wheat-flours. The baking quality of winter wheat is largely determined by cultivar, but it can be influenced by fertilization. Flours were from 4 cultivars grown at six nitrogen fertilizer. The average flour protein content of cultivars ...was very different (11.8, 13.0, 14.3, and 13.07%, respectively). We have found that the extensograph
properties of dough are affected by mineral fertilization, nevertheless, different cultivars distinctly react to the increase of fertilizer doses. We estimates the correlation between flour protein content and extensograph properties, based on our investigations, it became obvious that the correlation between flour protein content and extensograph parameters is really strong.

The composition of gluten proteins and their effect on the rheological properties of gluten
Published May 23, 2006
124-129

Wheat is the major cereal component of bread in the world and is grown worldwide. Of the cereals only the bread wheats – and less the triticale – includes storage proteins that play an important role in the performance of gluten. Proteins of gluten complex may be present in two classes:
− low molecular weight (gliadin-) components, and...
− high molecular weight (glutenin-) components.
Gliadins shown appreciable heterogenity and can be separated into 40-50 components with gel electrophoresis. The composition of gliadins is employable for the identification the wheat varieties and to investigate the varieties. In the decreasing electrophoretic mobility sequence may be distinguish α-, β-, γ- and ω-gliadins. A glutenin subunits may be include in two classes:
− high molecular weight glutenin subunits (HMW-GS),
− low molecular weight glutenin subunits (LMW-GS).
Wheat varieties can be identified by glutenin and their quality selection is also possible. The gliadin’s polypeptides encoding genes are located on the short arm of chromosomes 1A, 1B and 1D, 6A, 6B and 6D. Genetic coding for HMW subunits is located on the long arms of chromosomes 1A, 1B and 1D, the LMW-GS are also located on chromosomes 1A, 1B and 1D (Glu-3 loci) near the gliadin-coding loci.
Storage proteins affect the rheological properties of gluten by two factors:
1. The quality and quantity of the protein components of the gluten complex,
2. The interactions between the protein fractions.

Comparison of quality parameters of producers' and commercial honeys
Published November 2, 2009
31-39

Honey is our essential food since ancient times. In Hungary about 25 000 tons of honey are produced each year, and most of the product (80%) is exported. Hungarian honeys have excellent quality but because of scandals of honey adulteration the interest and recognition may decrease. Therefore we must elaborate a method with which the establishme...nt of adulteration is simple and cheap. In this study we concentrate on simple quality parameters which inspection is not elaborate. These parameters for example sugar- and moisture contains, proline content, electrical
conductivity, element content, pH, HMF content, degree of acidity. We examined these parameters in producers’ and commercial samples. We succeed fund parameters which characteristic of one type of honey thus we have possibility identify of honey type. For example the proline content was very low in the producers’ linden honey (mean 126 mg/kg). This value is lower than the regulation, but in case of commercial linden honey this parameter is higher than regulation. According to electrical conductivity and Potassium content is provable the type of linden honey.
