  • Texture analysis as a method for grape berry characterization

    The marketability of table grapes is mainly characterized by berry size, color, taste and texture. Mechanical measurements of table grape berries could provide objective information on the textural qualities of grape berries. In addition, this method might be suitable to study the effects of phytotechnical methods (such as girdling) on table grape quality. The aim of this preliminary work was to demonstrate how instrumental testing could be used to examine the effects of girdling on berry grape texture and define the textural characteristics of table grape berries. Cane girdling was carried out at veraison in two table grape varieties. Texture analysis was performed several times during the maturity. Besides this examination another five varieties were analyzed to assess their berry mechanical properties. Double compression test was used to determine berry hardness and its derived parameters. Puncture test was applied to evaluate skin hardness, skin elasticity and skin break energy. Skin thickness was also investigated. Berry hardness, skin hardness and skin thickness of the girdled grapevines were significantly affected by this technique. Most of the textural parameters showed differences among the seven cultivars.

  • Examination of physical properties of final product and drying properties of combined (convective pre-drying and freeze finish-drying) dehydration method

    In this study, the effects of freeze drying (FD), hot-air drying (HAD) and combined drying (HAD-FD) on drying characteristics, energy uptake, texture, rehydration and color of carrot were investigated. Results showed that HAD-FD significantly improved the drying time compared with FD under the same operating conditions, and the HAD-FD can reduce the total cost of dehydration. The drying kinetics was described by the Henderson-Pabis and the third degree polynomial models in the case of HAD, FD and HAD-FD. The HAD carrot samples were exhibited shrinkage, case hardening, poor rehydration and brown surface. The FD carrot cubes appeared porous structure, excellent rehydration, soft texture and loose color. The HAD-FD samples were superior to HAD products and was nearer in quality to FD products with respect to appearance, rehydration and surface resistance (texture). Finally, it is concluded that HAD-FD is effective in improving the FD drying rate. However, the combined drying has a small-scale adverse effect on product quality.

  • The effects of curing technology on the rheological and organoleptic features of meat products

    Meat products are important staple foodstuffs owing to their high protein, vitamin and mineral content. Meat plants do not only use traditional production technologies but also develop methods that preserve the nutritional value of meat or improve the texture and organoleptic features of meat products. These features play an important role in the consumer society. Consumers first meet the external features of meat and this experience influences their decisions. Our analyses compared a traditional and a new curing procedure. Besides organoleptic inspections, we analysed texture with a CT3 type Texture Analyser to obtain quantified information on the condition of meat samples in the various curing phases. We used our results to compare traditional and new curing procedures.

  • Examination of extensographical parameters of winter wheat (Triticum aestivum) flour

    In the trade of the European Union principally the analysis of alveographical and extensographical parameters mean the acceptance system.
    In the present study we analysed the extensographical parameters of 10 winter wheat varieties breed by the Cereal Research Non Profit Company with Brabender extensigraph and we made a comparison, correlation among the results. The examinations with Brabender the following among: show the GK Kalász and the GK Élet varieties show high resistance of extension and the GK Petur variety produces high extensibility. The GK Garaboly has shown low extensibility and energy. The other parameters had different values in the examined three years. The measurings with SMS2 Texture Analyser show middle positive correlation between extensibility and subarea. There are weak correlation between at the significantial level in the 90, 135 resistence of extension by Brabender and by SMS2 Texture Analyser and in the 45 extensibility by Brabender and by SMS2 Texture Analyser of relaxed dough. There is no correlation among other parameters. 

  • The Relationship Between the Moisture Content of Sweetcorn Raw Material and the Quality of the Deep-Frozen End Product

    One of the remarkable effects of the economical and social development is the changing of the eating habits, first of all increasing consumption of deep-frozen products. The spreading of the sweet corn under these vegetables is characteristic.
    The parameters exerting influence on the quality of the deepfrozen sweetcorn is classed in 3 categories:
    • Physical quality: foreign matter, clumps, blemished corn, broken kernel, miscut, pulled kernel.
    • Organoleptical features: taste, colour, texture, and sweetness.
    • Microbiological features: TVC, mould, yeast.
    The moisture content of the raw material influences the organoleptical features to the highest degree.
    We take continuously samples from the raw material arriving in to the factory to determinate moisture content, and from the product to specify the organoleptical features.
    Based on the data of 2002 we can make the following findings:
    The colour of the deepfrozen sweetcorn is less influenced by the moisture content. The taste is between 69% and 72% the most optimal, but over 72% get worse, more „milky”, water-tasted because of the underdevelopment of sweetcorn. The texture continuously becomes better with the increasing of moisture content. Under 67% of water the class „C” is typical, which means a taste with weak charasteric, a bit scathing or bitter, and texture with rubbery inner part and hard pericarpia. The decadence of taste is caused by converting a great part of sugar into starch.
    The correlation between moisture and quality is varying by varieties; different varieties have their best quality by different moisture content. By our investigations the best harvest time is at the 69-72% moisture content. At this point are the organoleptical features the most optimal, and the grower has not the loss of yield caused by early harvesting.

  • Some Aspects of the Relationship Between the Quality of Sheep Milk and Dairy Products

    The correlation between the quality of raw milk and the quality of milk products is evident. In spite of this fact we can find only a few references contained exact data related sheep milk. In recent paper we investigated the effect of SCC of sheep milk on the cheese yield (semi hard traditional cheese) and certain texture parameters of yoghurt from sheep milk. We wanted to know the relevant limit values of these properties for dairy applications.
    In our opinion – in the case of the cheese yield – that the strong negative effect can be experienced when SCC is above 700.000-1 million/cm3.
    In the case of yoghurt from sheep milk the limit values of SCC can be 1 million/cm3 for Adhesivity and Whey draining and 500.000/cm3 for Hardness. Considering these limit values in the selection of milk become materialise the highest quality of products and the economical production.

  • Mathematical modelling of surface irrigation for field crops in Jordan based on soil hydrological-physical properties

    Jordan suffers from drought and depletion of water resources. In-field crop management, the issue of irrigation scheduling is important and influential. In this research note, a simple method was developed for scheduling surface irrigation of field crops based on inputs of crop ecology, effective root depth, soil texture, soil hydrology, and logical mathematics. It was concluded that the science of mathematics has succeeded to meet academic irrigation scheduling in terms of surface irrigation for field crops based on both soil hydrological and physical traits. Extension scholar has a decision to choose mathematical irrigation model depends on the traditional inputs or updating the model by searching for renewable inputs such as different varieties root depths, optimum row spacing of each crop, drip irrigation mathematical modelling, and digital sensing. In both cases, the input related to the effective root depth is a major and basic factor in mathematical irrigation scheduling. It is, therefore, recommendable that extension research-based systems should focus on basic mathematics to capacitate the complementary role of academics, research, and extension in irrigation modelling, and rural development.

    Literature experience was utilised to develop a method for the extensograph analog testing of paste with a QTS25 Texture Analyser. 54 wheat flour samples from the same variety from variety-preservation experiments at the Szeged were tested with this method. A study was made to establish whether the method is suitable for the estimation of results derived by traditional classification (trial baking, farinograph and gluten tests).
    A close and significant correlation was found between the hardness and area data measured with a QTS25 micro-extensograph, the farinograph values and the gluten spreading data, and also between the stretching index (BC/AC) and the water uptake capacity. These correlations correspond well with the findings from a previous experimental series on industrial flour samples. A close and significant correlation was likewise observed between the grain hardness established by the MININFRA method and all the QTS25 micro-extensograph data. In contrast with earlier QTS25 data, however a close correlation was not found between the QTS25 data and the loaf characteristics.
    With the use of micro-extensograph data, the estimation of the baking industry value has been improved through stepwise variable selection, with the inclusion of several variables. The estimation of loaf volume could also be solved by means of stepwise variable selection with the inclusion of QTS25 and MININFRA data.

  • The effect of crop year and agrotechnical factors on the yield of various maturity groups of Limagrain maize hybirds

    The Limagrain maize hybrids in different maturity groups were examined at the Látókép Experimental Station of the Centre of Agricultural Sciences and Engineering, University of Debrecen on a calcareous chernozem soil with loam texture, between 2001 and 2007 in a multifactorial long-term field trial. Doses of fertilizers: 1 N:0.75 P2O5:0.88 K2O fixed proportion of NPK doses. The basic dose of nitrogen is 30 kg ha-1. The application of fertilization was 1, 2, 3, 4, and 5 times more than the basic dose, beside of untreated control. The long-term field trial is performed in none irrigated and in irrigated version.
    The goal of the study was to analyze the effect of precipitation (environment factor) in one hand, and to evaluate the effect of fertilization and irrigation (agrotechnical factors) on the yield of maize hybrids in different maturity groups in the other hand. At the same time I studied the effect of interaction of different factors on the yield of maize. 

    Analysis the yield of Limagrain hybrids revealed: the years considerably affected the level of the yield. In dry years the yield was 1.351 t ha-1 less, than in rainy years. As the effect of fertilization the yield increased, the statistically proved biggest increment was at level of 90 kg N ha-1. Evaluating the maturity groups, FAO 300 hybrids reached higher level of yield. 
    In non irrigated conditions in the average of the seven years 60 kg N ha-1 was sufficient to reach the maximum yield. The efficiency of fertilization on yield in irrigated version increased, 120 kg N ha-1 assured the reliable level of yield. 
    Without irrigation in comparison to the results of FAO 200 group, with the growth of FAO numbers the yield is increasing in all cases. The most significant increase was at FAO 300 (3.562 t ha-1). With irrigation the greatest difference in yield was in FAO 400 (+2.720 t ha-1) compared to FAO 200.

  • The possibility of use of the 0,01 M CaCl2 and Baker- Amacher extractants for the determination of plantavailable potassium

    The Hungarian fertilizing recommendation systems use AL soil test for the evaluation of potassium supply. The 0.01 M CaCl2 is a definitely milder extractant, it extracts the easily soluble and exchangeable potassium amount. Its European introduction was already taken into consideration in 1994. The research project on this topic is started in several european countries, also in Hungary at the Department of Agricultural Chemisty of Agricultural University of Debrecen. Another advantage this multielement method is that the different element-ratios can also be calculated.
    The Baker-Amacher extractant’s principle is that it contains a known amount of K, P, Mg in the CaCl2 solution. During the soil extraction adsorption and desorption process take place, so the adsorption or desorption can be calculated from the original and the final concentrations.
    In this paper we introduce the results of comparing analysis of the samples (n=630) from Soil Information and Monitoring System. Our aim was to measure the use of new extractants beside conventional extractant (AL) for the evaluation of K-supply would be reasonable.
    It can be stated that there is a medium close relationship (r=0.75) between AL-K and 0.01 M CaCl2-K. My calculations confirmed the results of  former examinations, and proved that the two extractants don’t extract and change the same rate of K-fractions. We found that regression  between 0.01 M CaCl2 and AL depend on texture classes, pH classes, amount of lime, and organic matter content of soils.
    Comparing the relations between AL and Baker-Amacher we find relatively loose correlation (r=0.45). We stated that there are K-fixing soils among soils considered to be well supplied with potassium by AL. This might be caused by the high amount of mineral clay and the quality of mineral clay. We stated that the dK averages show that the Hungarian nutrient-supply categories characterize generally well K-supplement of soil.
    It can be stated that it would be necessary to use new extractants to specify evaluation of plant available K. We found that the 0.01 M CaCl2 and Baker-Amacher extractants could complete usefully the AL procedure and could help effective potassium fertilization.
