Preliminary data on the effect of semi-synthetic baits for Noctuidae (Lepidoptera) on the non-target Lepidoptera species
71-80Views:239Noctuidae are one of the most important Lepidoptera groups containing dangerous pest species. Monitoring and detection of these pest species is routinely performed by traps baited with sex-pheromones. Baits that attract both males and females were developed for improved pest management. First the effectiveness of different synthetic compounds was evaluated. We also tested semi-synthetic baits that contained both synthetic and natural components (wine and beer). These were more attractive for moths considering species richness and abundance. Disadvantage of this increased effectiveness is that the traps catch more non target, rare and even protected species. In this study we analysed the effect of semi-synthetic baits developed for Noctuid moths containing wine on other non-target Lepidopterans. In the six sampling sites traps caught 17158 individuals of 183 Lepidoptera species. The number of Noctuidae species was 124, while their proportion was 84.4%. The traps caught 813 individuals of 9 protected and 20 valuable species, which was only 4.7% of all Lepidopterans. In contrast the mean proportion of 33 dangerous and potential pest species was 31.3% (5375 individuals). Number and abundance of both protected and pest species were affected by landscape structure. The risks of catching non-target species was higher in species rich natural and semi-natural landscape. In homogenous arable lands the number and proportion of valuable Lepidopterans was not significant.

Pest species of Macrolepidoptera in the Game Reserve of Velyka Dobron’ (Transcarpathia, Ukraine)
58-64Views:262The Game Reserve of Nagydobrony extends on a marginal area of a former peatland and is covered with extended hardwood gallery forests and oak-hornbeam forests and is surrounded by a mosaic-like agricultural landscape. Due to its richness of nature-like and semi-natural habitats it supports a diverse insect assemblage. By light and bait trapping 383 species of macro-moths were recorded from which larvae of 85 species are feeding either on forest trees and scrubs or on cultivated plants thus these can be considered as potential pest species. Thirteen species (mostly Geometridae and Erebidae: Lymantriinae) have a special significance for forestry due to defoliating activity in gradation periods. Considering the habitat connections, the composition of moth assemblage is dominated by generalist species with broad spectrum of ecological tolerance but the species connected with humid forested habitats are also richly represented. The bulk of species consists of widely distributed Euro-Siberian species, but also some Holo-Mediterranean species with more southern character and Mediterranean-Subtropical migrant species were registered. The bait trapping provided significant results on the phenology of the dominant species. The faunistically significant and/or protected species were observed in a low number of individuals only, thus the applied trapping methods did not damage the faunal composition.

Differences in content of beet root and beet root juice, and it’s suitable to develop functional foods from animal sources
53-57Views:353In Western medicine is beginning to increasingly focus on the key role of healthy nutrition and lifestyle in preventing certain diseases. Therefore, it is important to emphasize the importance of primary prevention in our country, and to promote it; not only the health care team work, but broaden the recommended foods, which have benefit for human health as well.
Polyphenols are antioxidants, which are easily consumable with diet, however, food processing can influence the level of them.
In our study, nutritional assessment was made of raw beet root and a juice, made from this beet root. We investigated in which special diet referenced to eat this foods and whether this is suitable to develop functional foods from animal sources as a row material.

Antioxidant activity and total flavonoid content of honeys
25-28Views:173The influence of honey on human health has been known since ancient times. Different components, like vitamins, amino-acids, enzymes, and the so called antioxidant activity of the honey play role in this effect, and also in the excellent quality. The aim of present study was to determine the total antioxidant activity and the flavonoid content of some honey samples. These two parameters are widely studied, and a lot of data can be used to compare and analyse. On the basis of them we can state that our results are quite similar than those we can find in literature. Characteristic feature of the examined honey samples is, that the antioxidant activity increased with the darkening of the colour. The lowest antioxidant activity and flavonoid content was produced by the acacia honeys with greenish shade of colour. The highest values was found in the very dark honeys (forest, sage, golden rod). The only exception was the coriander honey, where despite of its lighter colour, very high antioxidant activity was
measured. -
Methods for detention of lipid rancidity
117-120Views:377There are various methods available for measurement of lipid oxidation in foods.Changes in chemical, physical, or organoleptic properties of fats and oils during oxidation may be monitored to assess the extent of lipid oxidation. However, there is no uniform and standard method for detecting all oxidative changes in all food systems. The available methods to monitor lipid oxidation in foods and biological systems may be divided into two groups. The first group measures primary oxidative changes and the second determines secondary changes that occur in each system.

Effects of cultivar and fertilization on extensograph parameters of winter wheat flours
19-24Views:128In present paper we have examined the effect of mineral fertilization on the extensograph characteristics of wheat-flours. The baking quality of winter wheat is largely determined by cultivar, but it can be influenced by fertilization. Flours were from 4 cultivars grown at six nitrogen fertilizer. The average flour protein content of cultivars was very different (11.8, 13.0, 14.3, and 13.07%, respectively). We have found that the extensograph
properties of dough are affected by mineral fertilization, nevertheless, different cultivars distinctly react to the increase of fertilizer doses. We estimates the correlation between flour protein content and extensograph properties, based on our investigations, it became obvious that the correlation between flour protein content and extensograph parameters is really strong. -
Analysis methods of quality and traceability for honey
25-32Views:209Honey is our essential food since ancient times. Thanks to the excellent dietetic and medical features, it has an important function in our nourishment. In Hungary about 25.000 tons of honey are produced each year. Most of the produce, about 80% is exported to different countries of the world. Hungarian types of honey have excellent quality. Through exporting, the prestige and demand of Hungarian honey can be increased. In recent years the adulteration of honey caused many damages to producers and traders. The adulteration of honey is not easy to prove. Thereinafter, we represent several methods, such as oligosaccharide analysis or 13C/12C isotopic ratio analysis, which can identify the artificial substances of honey (for example: corn syrup, high fructose corn syrup) or can help to determine the ratio by which original honey can be identified.

The composition of gluten proteins and their effect on the rheological properties of gluten
124-129Views:194Wheat is the major cereal component of bread in the world and is grown worldwide. Of the cereals only the bread wheats – and less the triticale – includes storage proteins that play an important role in the performance of gluten. Proteins of gluten complex may be present in two classes:
− low molecular weight (gliadin-) components, and
− high molecular weight (glutenin-) components.
Gliadins shown appreciable heterogenity and can be separated into 40-50 components with gel electrophoresis. The composition of gliadins is employable for the identification the wheat varieties and to investigate the varieties. In the decreasing electrophoretic mobility sequence may be distinguish α-, β-, γ- and ω-gliadins. A glutenin subunits may be include in two classes:
− high molecular weight glutenin subunits (HMW-GS),
− low molecular weight glutenin subunits (LMW-GS).
Wheat varieties can be identified by glutenin and their quality selection is also possible. The gliadin’s polypeptides encoding genes are located on the short arm of chromosomes 1A, 1B and 1D, 6A, 6B and 6D. Genetic coding for HMW subunits is located on the long arms of chromosomes 1A, 1B and 1D, the LMW-GS are also located on chromosomes 1A, 1B and 1D (Glu-3 loci) near the gliadin-coding loci.
Storage proteins affect the rheological properties of gluten by two factors:
1. The quality and quantity of the protein components of the gluten complex,
2. The interactions between the protein fractions. -
Use of extensigraph in the examination of wheat flours
17-23Views:174The extensograph is widely used in quality control and research laboratories studying wheat flour quality. The most commonly used measurements include Rm, the maximum resistance (maximum height of the curve); R5 the resistance at a constant extension of 5 cm; E, extensibility (total curve length); Rm/E, the ratio of maximum resistance to extension; and A, the area under curve. The extensograph has proved useful in the classification and assessment of flours on the physical dough properties. Another important application is its use in wheat breeding programs. Furthermore, extensograph is an excellent tool to study the effects of a wide range of ingredients on dough properties of wheat flour (like oxidants, enzymes, salt and additives), and it can also be used measure the changes during the frozen storage. In the present study we provide a review of the scientific literature concerning the possible applications of the extensograph.

Comparison of quality parameters of producers' and commercial honeys
31-39Views:257Honey is our essential food since ancient times. In Hungary about 25 000 tons of honey are produced each year, and most of the product (80%) is exported. Hungarian honeys have excellent quality but because of scandals of honey adulteration the interest and recognition may decrease. Therefore we must elaborate a method with which the establishment of adulteration is simple and cheap. In this study we concentrate on simple quality parameters which inspection is not elaborate. These parameters for example sugar- and moisture contains, proline content, electrical
conductivity, element content, pH, HMF content, degree of acidity. We examined these parameters in producers’ and commercial samples. We succeed fund parameters which characteristic of one type of honey thus we have possibility identify of honey type. For example the proline content was very low in the producers’ linden honey (mean 126 mg/kg). This value is lower than the regulation, but in case of commercial linden honey this parameter is higher than regulation. According to electrical conductivity and Potassium content is provable the type of linden honey.
