Today’s programmes aiming at enhancement of fruit and vegetable consumption have been intensified. In the unanimous view of experts, different health problems, such as those of the immune system, inflammations, and even certain cancerous diseases can be prevented and/or cured with regular consumption of fresh (raw) fruit and vegetables. It is... well-known fact that among the biologically valuable components, antioxidant compounds – C- and E vitamins, as well as carotinoides – play an important role. In this field, Hungary can expect success in the future since it has excellent plant genetic stock. Regretfully, national data banks regarding cultivation technology, cultivation areas or varieties for fruits and vegetables and their antioxidant contents do not exist in Hungary. Nevertheless, in connection with the so-called “Hungaricums” its existence would be of urgent necessity. Such excellent Hungarian products are – among others – a lot of sour cherry varietiles, the Szeged green pepper and the Makó onion. They enjoy high priority as “Hungaricums” even in the European Union and such activities that support these kinds of products should be enhanced by intense and consequent research work, which may prove their role as functional foods. Presently’ the USA leads in the research of antioxidant compounds of sour cherry, and so far 17 of these compounds have been found partly in Hungarian varieties. Similar research on green, and ‘pritamin’ peppers have not gone so far since they were limited only for seasoning paprika. In Hungary, studies on onion and garlic have not been performed. It should be mentioned that due to the continental climate, these products may be cultivated, consumed or processed only in a limited period. Taking this into consideration, processing and conserving methods are needed which make the consumption of these fruit and vegetables as functional food possible year-round. Scientific establishment of this set of questions is of current concern, because consumption of these products could have an important role in improving the health status of the Hungarian population in the future.
There is a lot of evidence that the pepper is one of the most important sources of vitamin C. Albert Szent-Györgyi was the first to extract ascorbic acid from a red bell pepper in the 1930s. Previously people had eaten vitamin C on the long voyage to protect against scurvy. Vitamin C is an important antioxidant, and it is a cell protector toda...y. Vitamin C protects the cardiovascular system against infection. This vitamin decrease blood-pressure, a raises the HDL cholesterol level (good), and inhibits gout.
„Antioxidant density” is a biological value indicator obtained in synthetic way. „Antioxidant density” indicates the antioxidant capacity of a particular food, e. g. fruits and vegetables, related to 1 Calorie. In our study, we measured the total antioxidant capacity, vitamin C content and „antioxidant density” of Hungarian paprika varieties.
We conducted experiments for developing an in vitro micropropagation protocol starting from meristems of Rudbeckia hirta L seedlings. We pre-soaked the seeds in sterile ion-exchanged water for 17 hours, and then achieved surface disinfection in two separate steps. First, we used concentrated household sodium-hypochloride solution for 20 minutes... and, also for 20 minutes, we applied hydrogen peroxide of 10%, which was followed by washing with sterile ion-exchanged water three times. For the propagation of seedling meristems, the combination of half-strength solid Murashige and Skoog (1962) culture medium containing 10 mg/l of kinetin and 2 mg/l of kinetin + 0.1 mg/l of 2iP proved to be the most suitable. The average number of shoot-buds developed from the seedling axillary meristem in the best culture media varied between 5 and 17. Without separating them, we inoculated the shoot-bud clusters on MS culture medium containing 2 mg/l of IAA. After four weeks of incubation, we obtained elongated shoots, which we separated and inoculated into a new culture medium and from which we obtained elongated roots. The rooted plants were gradually acclimatised in the cultivation room, potted and carried to a greenhouse, and then planted in open field for subsequent observation. By adopting this method, our laboratory started the micropropagation of the superior and/or elite genotypes of the Rudbeckia hirta L. being of special value in respectt to breeding.
In our present study, we performed a quick test of the antioxidant capacity of domestic fruit and vegetable cultivars with a PHOTOCHEM® instrument (Analytik Jena AG, Germany). The instrument is special because it can measure both the total lipid-soluble antioxidant capacity (ACL method) and the total water-soluble antioxidant capacity. Another... advantage of the system is its quick measurement. With similar instruments, such measurement can take several hours, while PHOTOCHEM® can perform it within a few minutes.
In our model studies, we examined the changes in the antioxidant capacity of sour cherry, green pepper, carrot, pumpkin, red beet and Brassica sp. cultivars. We aimed to determine how suitable the instrument is for quick, routine measurements in the case of the different horticultural products and which species have high antioxidant capacity values.
On the basis of our examinations, we can state that the PHOTOCHEM® system is suitable for routine, semi-automated measurements of the total antioxidant capacity at several vegetables and fruits. Besides this, the system can be used for testing the quality of food products, for monitoring storability in post-harvest technologies, and for special breeding programmes and for physiological and biotechnological studies.
In the seventies of the previous century, Dr. Zoltán Kováts set two directions in the research of mallows. One of the directions was the biotechnology of the mallow species and the other direction is using the mallow species as biomass material. In order to do this he brought mallow mother spawns of ornamental and biomass sorts from botanical... gardens abroad and tested many of them, including the a Sida hermaphrodita kind. Fourty years later, for the second time this plant, known as the „energy mallow” got back to Hungary again, right into the sight of hungarian biomass business with the help of László Balogh and his associates using help from Poland. This genus got into the center of our research, because of it’s valuable attributes. The latest experiments are about using it as an energy plant, without examining genetic details. The plant grows up to more
than 3 meters, has high growing rate and produces big amount of green mass. We don’t have any hungarian data about whether the plant continues the sufficient growing rate or not, after cutting it back.
We have to explore the potentials in the Sida’s sublimation. The plant is mostly suitable for ornamental and energy utilization, so further sublimation should be aiming for these aspects. During my research period, we are willing to get to know these potentials and the best possible use of them.
The negative effects of climate change on ornamental plants are also becoming more serious harm. In the current planting display appearing ornamental species and vareities needed in addition to the domestic well-changeable climate-tolerant plantspecies is involved. A natural populations of Sage Park is still unknown to us color- and shape varia...tions are hidden. Plants of the natural vegetation collected from these clones formed three major evaluation of the color version with a temporary color variations have appeared. The axial length of inflorescens, color and brevity of the flowers were also significant differences. The botanists have not been tested by the sepal and bract from top to bottom and may vary. In 2011, the shoots are planted in field breading methods to perform an additional option.
Evidence suggests that a diet high in fruits and vegetables may reduce the risk of chronic diseases, such as cardiovascular disease and cancer, and phytochemicals including phenolics, flavonoids and carotenoids from fruits and vegetables may play a key role in reducing chronic disease risk. Recent research has proven that sour cherry (Prunus ce...rasus L.) is a valuable natural source of some bioactive compounds important in human health preservation.
In our work, we identified the total antioxidant capacity and ”antioxidant density” of sour cherry varieties named ”Újfehértói fürtös”, ”Debreceni bõtermõ”, ”Kántorjánosi” and ”Érdi bõtermõ” and those of the ”Bosnyák” sour cherry clones. ”Antioxidant density” is a biological value indicator obtained in a synthetic way, which indicates the antioxidant capacity of the particular food, e. g. fruit and vegetable, per 1 Calorie.
It can be told about the second half of the XXth century that, apart from preferring the large-scale growing of field plants and the largescale
livestock farming, corresponding to the central political will of the communist era, the significance and innovation output of
horticultural education in Debrecen was rather of follow-up trait, of
research work, and then even this activity was stopped. According to a survey finished in 1997, the mentioned institute had no invention,
granted patent, protection for registered model or any application for patent in progress at the Hungarian Patent Office. Until this time, invention activity at the University of Agricultural Sciences was of medium standard. In the National Patent Office, seven patent applications related to agricultural production and nine patent applications for other fields submitted under the inventors’ names were recorded. In the same period, the Cereal Research Institute (Szeged) led the absolute innovation list of Hungarian agricultural R+D institutions and university education institutes by submitting 164 own patent applications. Both in domestic and international terms, the horticultural innovation conducted at the University of Agricultural Sciences, despite the individual research results and achievements deserving recognition, without appropriate background – remained unnoticed. Let us put it this way: for the past decades, the light of the Debrecen Flower Carnival has not been thrown on the horticultural teachers and researchers of Debrecen.
