Some aspects of food safety from animal origin
153-155Views:288The relationship between the civilisation illnesses and incorrect nutrition can be considered as demonstrated. The functional foods having one or several nutritional- biological advantage can contribute to the healthy nutrition and to improving the quality of life. Beside the healthy nutrition it is an another important requirement that the food does not contain pathogens or substances of chemical and biological origin namely it has to be safe.
In this publication the foods of animal origin were investigated in the point of view of public health hazards arising during their production and processing.
The contamination and infection of food raw materials, the consequence of chemical substances getting in or developing it the food, the judgement of food deviring from genetically modified or cloned animals are discussed. -
Examination the stresseffect of litter’s let-together system (“kindergarten”) by measuring faecal cortisol metabolites of sows and piglets
87-90Views:518Piglets in commercial intensive pig husbandry are often abruptly weaned between 3 and 4 weeks for economic reasons. The process of weaning is a multifactorial stressor, in which nutritional, social, physical and psychologic stressors are combined. Piglets are often exposed to unfamiliar piglets around weaning which results in a period of vigorous fighting. Stress plays an important part in welfare research. Traditionally glucocorticoids are measured in blood samples but their use is often limited as the act of sample collection may stress an animal. Measurement of faecal cortisol/corticosterone metabolites is a non-invasive method for evaluation adrenocortical activity. The aim of this study was to examine the effect of litter’s let-together system (“kindergarten”) in the farrowing house by measuring faecal cortisol metabolites. According to our results the “kindergarten” system has no stress effect on sows and piglets, respectively.

Response of maize seedlings to the latent zinc deficiency under different Fe/Zn rati
125-128Views:293Zinc (Zn) deficiency is a critical nutritional problem for plants and peoples all over the world. Almost half of the world’s cereal crops are deficient in Zn, leading to poor crop yield. In this study, the effect of different Fe/Zn ratio on some physiological parameters of maize seedlings were investigated on the dry matter of shoots and roots and their ratio, SPAD index and the total length of shoots. The relative chlorophyll contents significantly decreased under increasing Fe given to the Zn deficient. The results showed that the different Fe/Zn supplies decreased the total length of shoots - ranging from 9% to 65% - by latent Zn deficiency. Corresponding to several scientific findings, it was observed that the non-optimal Fe/Zn ratio of tissues take part in the evolution of latent Zn deficiency in the case of high Fe concentration.

The importance of millet production in regional production, with special emphasis on climate change
141-146Views:499Regional production is a traditional production structure developed adjusting to the geographical, climatic, biological and soil conditions in given production regions, a certain territorial specification of agricultural production, and a type of farming that best fits the natural conditions and takes the biological needs of plant and animal species into account as fully as possible. The most probable element of risk in plant production is the changeable, extreme weather. That is the reason why the specific characteristics of the place of production and the characteristics of regional production should be considered to a greater extent. The establishment of the range of varieties appropriate for the place of production is the key issue in regional production. One of our historically grown cereal plants that perfectly fits regional production is millet. Due to its short growing season, favourable reproduction ratio and the fact that it is relatively undemanding, it used to be grown in larger quantities in the middle ages. Its good nutritional values made it an important food item, but over time, as a result of industrialisation and technological progress; it has been eclipsed by other cereal crops. In our country it is mainly used to cook porridge, but it is also used in the form of flour and as a base material in the spirit drinks sector. In the recent decades, millet has been applied only in a small area, mostly as a secondary crop in areas that dried out from drainage water in late spring, or as a replacement of extinct sowings due to its late sowing time. Water will be the most significant factor for the future of agriculture, especially considering climate change.My examinations took place in the area of the Institutes for Agricultural Research and Educational Farm of University of Debrecen, in the Research Institute of Nyíregyháza, in a small-plot experiment with four replications in 2016. -
Evaluate the nutritional reaction at winter wheat after different forecrops
77-80Views:288Our field researches took place on the Látókép test farm of Agricultural Science Centre of University of Debrecen, Centre for Agricultural and Applied Economic Sciences, in long-term experiment, on calcareous chernozem soil, in growing season of 2014/2015. In our experiment we examined the fertilizer reaction and the yield of different winter wheat genotypes (GK Öthalom, GK Csillag, Mv Csárdás, Mv Toldi) with grain maize and sweetcorn forecrops. According to our results, the sweetcorn forecrop strongly affected the yield. In the average of the fertilizer treatments and the varieties, after sweetcorn forecrop 6.9 t ha-1, after grain maize forecrop 5.4 t ha-1 average yield was gained. According to our data, the fertilizer reactions of the varieties were significantly different.

A review on fish in vitro digestion studies
55-63Views:294(1) Background: In vitro experiments in fish have been developed to search for dietary substitutes of fish meal in aquafeeds by measuring the digestibility of various feedstuffs by simply simulating the conditions of the stomach or portions of the digestive tract. In vitro digestion studies involving mainly commercial fish species have been conducted to determine the digestibility of conventional and alternative ingredients in fish diets using diverse digestion models. However, there remains a significant knowledge gap, particularly regarding the enzyme functionality, digestion mechanisms in many fish species, and the factors influencing enzymatic activity. This review article is focused on the importance of the use of different enzyme sources in the in vitro digestion model to predict protein hydrolysis.;(2) Methods: For this review, a comprehensive analysis of articles was conducted to gain insights into diverse enzyme interactions and feed evaluation assessments, from the nutritional science and biotechnology sector.; (3) Results: A total of 36 peer-review papers, which include original, and review articles were selected.; (4) Conclusions: In vitro digestion studies offer a valuable tool for evaluating the digestibility of conventional and alternative feed ingredients, helping to identify sustainable dietary substitutes for fish meal while reducing dependence on live animal trials.

Polymorphism of the bovine GH and LEP genes in a population of Slovak spotted bulls

polymorphic site of the growth hormone gene (Alul loci) that results in amino acid change at position 127 of the protein chain (leucine, L to
valine, V) has been linked to differences in circulating metabolites, metabolic hormones and to milk yield. The polymorphism in bovine leptin
gene is situated in the intron between two exons, which results in an amino acid change at position 2059 of the protein chain (cytosine, C to
thymine, T). The polymorphisms were studied in a group of 58 bulls of the Slovak spotted breed. A strategy employing PCR was used to amplify 428 bp (GH gene) and 422 bp (LEP gene) products from blood samples. Digestion of PCR products with restriction enzymes AluI and Sau3AI revealed alleles: L and V; A and B for GH gene and LEP gene, respectively. The growth hormone gene is a candidate gene for body weight gain in cattle, since it plays a fundamental role in growth regulation. Leptin plays an important role in the regulation of feed intake, energy metabolism, growth and reproduction of cattle; therefore, animals with higher leptin gene expression will probably have lower daily weight gain than others with similar forage offer and nutritional condition and will also likely have longer calving intervals. -
Seedling morphology of different wheat genotypes at early stages under hydrocultural conditions
249-254Views:557Consuming “sprouted seeds” is one of the most important factors of a healthy diet. An experiment was conducted in the University of Debrecen, Research Centre of Nyíregyháza (Hungary) in 2014 to analyse some morphological traits of four winter wheat genotypes (Triticum aestivum L.) and one spelt (T. spelta) variety. Our results showed that the spelt wheat variety “Franckenkorn” could maintain higher root length throughout the experimental period. On average, both “Perbetei” and “Franckenkorn” varieties could maintain higher root number compared to the other varieties. The extensive breeding line “1401 HK” had the highest shoot length throughout the whole experiment, being significantly higher than the landrace variety “Perbetei” and both of the varieties “KG Bendegúz” and “KG Kunhalom”. It could be concluded that “KG Bendegúz” cultivar and “Perbetei” landrace seem to be the most suitable for aquaculture techniques. In addition, “1401 HK” breeding line can be the most suitable for the production of juice since the minimal required shoot length (12 cm) was achieved within the shortest period of time after sowing (9 days). This breeding line and “Franckenkorn” can also be suitable for production of “wheatgrass”, because it is consumed without roots. Further research is needed to evaluate nutritional values of these genotypes.

Differences in content of beet root and beet root juice, and it’s suitable to develop functional foods from animal sources

Therefore, it is important to emphasize the importance of primary prevention in our country, and to promote it; not only the health care team work, but broaden the recommended foods, which have benefit for human health as well.
Polyphenols are antioxidants, which are easily consumable with diet, however, food processing can influence the level of them.
In our study, nutritional assessment was made of raw beet root and a juice, made from this beet root. We investigated in which special diet referenced to eat this foods and whether this is suitable to develop functional foods from animal sources as a row material.
