  • Following-up organic pollutants in the course of producing foods

    We analysed the raw materials in various food products, including additives, carrier solvents and end product for several selected organic pollutants. We analysed these food products for the type of chlorinated hydrocarbon pesticides, polychlorinated biphenyls and other currently used pesticides.
    We analysed three product categories: bakery products, canned mushroom and meat products. The analysis of the bakery products and of the canned mushroom did not conclude in positive findings, which means that these products contained the agents given during the production of the product and the environmental pollutants in undetectable low concentration.
    However, the results for meat and fish products indicate that polychlorinated compounds are persistent and are of a lipophyl character, as some of these components have been detected in these food products, the concentration of the PCBs were detected in the range of 9.8-24 μg/kg.

  • Genetic polymorphism of candidate genes in pig meat production

    H-FABP, LEPR and MC5R genes were suggested as candidate genes for fat content in pig meat. The aim of this study was to detect genetic variation in the porcine H-FABP, LEPR and MC5R genes by PCR-RFLP method in a group of pigs. Genotyping of pigs was done by PCRRFLP methods. We identified three genotypes in the set of pigs, HH (0.504), Hh (0.412) and hh (0.084) for H-FABP (HinfI). Allele H showed higher frequency than allele h (0.710 vs. 0.290). Three genotypes were identified for the H-FABP (HaeIII) gene (DD - 0.194, Dd - 0.494, dd - 0.312). The allele D (0.441) showed slightly lower frequency than allele d (0.559). All three genotypes were identified for LEPR (HpaII) in the group of pigs (AA – 0.137, AB - 0.314, BB – 0.549). Higher frequency of LEPR gene was confirmed for allele B (0.706), as compared with allele A (0.294). We identified two genotypes for MC5R (BsaHI) in the group of pigs (AA - 0.348 and AG - 0.652), genotype GG was not found. As conforms with genotype structure, we recognize a higher frequency of allele A (0.674) as compared with allele G (0.326). 

  • Brief overview of the polymorphism analysis of genes affecting pig prolificacy (LEP, PRLP, ESR BF, EGF, FSH-β, H2A.Z)

    Researches are being performed around the world to increase swine prolificacy by using marker-assisted selection (MAS). The present study processes researches of polymorphism examinations on 7 genes. The result of the experiments showed that the leptin gene (LEP) prolactin receptor gene (PRLP), estrogen receptor gene (ESR), properdin B (BF) epidermal growth factor (EGF), follicle-stimulating beta gene (FSH-ß) and Z member of the H2A histon family gene (H2A.Z) and their alleles have a positive effect on reproductive characteristics of different swine breeds. In addition to this, leptin gene (LEP) influences the build, meat production and growth of body fat. Further studies are concerned with the polymorphism of an increasing number of genes, which enables a faster genetic development of swine breeding.

  • Effect of genotype on the hematological parameter of TETRA-SL and Hungarian Partridge coloured chickens at young age

    Indigenous chickens are well known for their dual-purpose function and palatable meat. However, the information on their hematology parameters is lacking and hence hampering the poultry industry production of local breeds. The main objective of this study was to examine the hematological parameters of Hungarian Partridge Coloured hen (HPC) and TETRA-SL (TSL) genotype and determine the hematological reference interval values. This trial was part of the larger experiment where a total of 200 chicks (HPC + TSL) were reared. For this trial the blood samples were obtained from brachial wing veins of 8 chicks of each genotype for blood hematological analysis. The results indicated that some of the hematological parameters such as red blood cells-RBC, white blood cells-WBC, hemoglobin-Hb, hematocrit-Ht, platelets-Plt, lymphocytes-LYM, and granulocytes-GRAN were significantly affected by the genotypes (p < 0.05). The genotype did not affect the mean corpuscular volume-MCV, mean corpuscular hemoglobin-MCH, mean corpuscular hemoglobin concentration-MCHC, and GRAN (p > 0.05). The hematological reference interval values were slightly higher in the TSL genotype compared to HPC chicks. It is concluded that genotype has a significant effect on the hematological parameters. The results from this trial will be help and design the baseline reference values for the HPC genotype which will be useful in assessing the health status of these indigenous chickens.

    In the Nature, Robert Bud gave an account of the fact that the generator of the concept "biotechnology" was the Hungarian Karl Ereky who, in his book published in Berlin in 1919 entitled "Biotechnologie der Fleisch-, Fett- und Milcherzeugung im landwirtschaftlichen Grossbetriebe" ("Biotechnology of Meat, Fat and Milk Production in a Large-Scale Agricultural Farm"), disclosed his observations and new views in that regard. Later on, Ereky's two essays, published in German language again, and other contemporary German sources have been processed which have confirmed the assumption whereas – in scientific terms – the further first applications of the expression "biotechnology" can be attributed to Ereky's works. Recently, we have explored and found biographical sources and documents which had been published by Ereky, which, however, have already been forgotten, by dint of which the story of origin of the first concept "biotechnology" can as well be clarified in a factual manner.

  • Data supporting the quality of sheep milk for processing

    Although the volume of ingredients in ewe’s milk is substantially higher than in cow’s milk, its hygienic quality is lower. The weak quality of raw ewe’s milk limits the possibilities of processing and results in bad quality products. In our investigation we analysed the state of ewe’s milk processing at a typical medium size dairy firm. We investigated the collection, the amount and the quality of milk and the level of ingredients in milk throughout the purchasing period (lactation period).
    The purchasing of ewe’s milk was limited to 5 months (from April to September). Although meat (lamb) provides the major source of income to sheep breeders the extension of the period of ewe’s milk production can be beneficial to shepherds and dairy firms. The amount of ewe’s milk ingredients found corresponded to published findings. However, the hygienic quality of ewe’s milk was varied greatly in the different milk samples and these deviations meant bad quality on average. Physiological factors, the circumstances of sheep breeding and milking, the slow cooling of the milk, the little amount of daily milk and the long storage before transportation to the dairy firm together cause poor hygienic quality. The main problem is the long storage time of milk, but our results raise the question of reconsidering the quality classes. Investigating the effect of the hygienic quality of raw milk on product quality, we can get correct data that can be really authoritative.
