Effect of using antioxidants as feed additives in the diet of dairy cows on the vitamin E and lycopene content of milk

In the framework of our project, we intended to examine whether non-protected antioxidants – in this case: vitamin E and lycopene – used as feed-additives can increase the antioxidant content of milk. The milk with an
increased level of vitamin E and lycopene content can be used for producing functional foods which will represent competitive products on the current market of milk products. Our results show that the use of vitamin E as feed-additive can significantly increase the amount of vitamin E in the milk. The use of lycopene as feedadditive also gave good results. At the beginning of the experiment, the lycopene content of the milk was below the detection limit, while in the post-feeding milk samples the lycopene became detectable. Based on our results, we are of the opinion that further experiments and analyses are needed regarding the quality of food of animal origin and animal health. -
Deproteinized plant juice as part of circular economy: A short review and brief experimental data
23-26Views:1822As the population of the Earth is constantly growing it generates an unmet demand for protein, which is an urgent problem. The protein extraction process is a potential solution, which offers high-quality plant protein suitable for animal and human nutrition at a favorable price. The process used within our project produces green juice from the green alfalfa biomass through pressing. After the coagulation of protein from this green juice, the by-product is called DPJ (Deproteinized Plant Juices) or brown juice. Our preliminary results match the international literature, namely that brown juice take up as much as 50% of the fresh biomass in weight. To utilize this by-product is a crucial part of the process to make it environmental-friendly and financially viable as well. The examined brown juice samples came from a small-scale experiment of alfalfa varieties carried out in the experimental farm at the University of Debrecen. According to our preliminary results, brown juice has high macro- and micronutrient values, furthermore, it has a potentially high amount of antioxidant compounds. The study highlights that brown juice is suitable as an ingredient in microbiological media, in plant nutrition as a supplementary solution, for feedstock and for preparing human food supplements or functional foods. The potential utilization of all biorefinery products makes it a very appropriate technology for today’s challenges.

Microbial assessment of potential functional dairy products with added dried herbs
59-63Views:198The market of dairy products is a dynamically developing sector of the food industry. Potential, functional dairy products, made by adding herbs or spices, will have antimicrobial and antioxidant effect due to the active biochemical agents of the plant additives. Furthermore, these active components will widen the storage life of food products and enhance their organoleptic properties too. We worked out a technology for creating fresh cheeses using a gentle pasteurizing method by treating the mixture of raw milk and 1.5% fat contained in commercial milk. As herb additives, we used citronella (Melissa officinalis), and peppermint (Mentha x piperita) harvested by us and dried them via Tyndall-method in convective dryer on 40 °C for 5.5 hours per day. The drying period took three days. We bought dried citronella and mint from the supermarket, which were dried by ionizing radiation, to compare the microbiological pollution with the herbs dried by us.
The main target of this research was to create a microbiologically stable, potential functional dairy product. However, because of the bad quality of the raw milk and the gentle heat treatment we used for sterilizing bulk milk, or else, cheeses were not safe for human consumption. As a consequence, we need further studies to modify our technology and get a microbiologically stable product.

Utilization and examination of red, elemental selenium nano spheres, produced by fermentation technology, in animal tests
245-247Views:270In our experiments we tested the toxicity of Nano-Se and LactoMicroSel® compared with other organic and inorganic selenium forms, in case of a subakut animal test. We produced the Nano-Se and LactoMicroSel® by probiotic lactic acid bacteria in our laboratory. (Prokisch et al., 2010; Eszenyi et al., 2011). We mixed the inorganic selenium forms, selenite and selenate, the organic form, Sel-Plex® and our products, Nano-Se and LactoMicroSel® into the standard food of laboratory mice and we fed them for two consecutive weeks. After the extermination we observed mortality, the change of body mass,and measured the blood antioxidant capacity with FRAP method.

Changes in fatty acid composition of pork rich in conjugated linoleic acid frying in different kind of fats
31-35Views:256In 1990ys antiatherogen, antioxidant and anticarcinogen effect of conjugated linolacids (CLA) was detected. From this reasons, our aims in this study were producing pork rich in CLA and studying the change of fatty acid composition of the produced pork cooked different kind of fats. For frying palm and sunflower oil and swine fat were used. Thigh was cutted for 100 g pieces. Meat pieces were fried at 160 °C for 1 and 8 minutes. Estimation of frying data it was determined that higher (0.13%) CLA content of pork was spoiled (60-70%) except in case of swine fat cooking,
because it is extremly sensitive for oxidation and heating. Swine fat has higher (0.09%) CLA content than plant oil, protecting the meat’s original CLA content. Cooking in swine fat did not have significant effect on fatty acid composition of meat. Low level of palmitic acid contect of sunflower oil (6.40%) decreased for half part of palmitic acid content of pork (24.13%) and it produced cooked meat with decreased oil acid content. Contrary of above, linoleic acid content of fried meat was increased in different folds as compared to crude pork. If it was fried in sunflower oil with high level linoleic acid increased (51.52%) the linoleic acid content in fried pork. The linoleic acid content of the high level CLA pork increased four times (48.59%) to the crude meat (16.59% and 12.32%). The high palmitic acid content of palm fat (41.54%) increased by 60% the palmitic acid content in fried pork, low stearic acid (4.44%) and linoleic acid content (10.56%) decreased the stearic and linoleic acid content of crude meat. -
The effect of dried herbs on the souring of sunflower oil

Sunflower oil fortified with eight different plants and stored at room temperatur in my experiment. Specified intervals with determination of peroxide value, FFA, iodine value, anisidine value and TOTOX value followed the quality of the sunflower oil.

Violation prooxidative-antioxidant stability at maize shoots at different level of accumulation of cadmium and nickel
89-94Views:120Joint influence of cadmium and nickel was investigated on the feature of their accumulation by the vegetative organs of 10-days' old maize shoots. It was established that most intensively noted metals are taken in by the roots of shoots in the first 7 hours stressing influencing, while in leaves they appear only after a 7-hour long exposition. It was stated that the absorption process of the noted metals by a root system is carried by two-phase character. The indexes of inner-tissue contamination are calculated. Activating by the cadmium and nickel ions of lipid peroxidation as marker of the stressing influencing, and also was shown the proper increase of intensity of functioning of ascorbate peroxidase as the antioxidant enzyme protection of cell.
