The Present and Future of Tokay Aszú
87-92Views:161Tokay wine is Hungary’s noblest wine. Beyond doubt, it is one of those uniquely Hungarian products, which has been without rival for centuries. Today the role of quality has become increasingly important and consumers who are ready to pay more for quality wines expect it. This wine will be able to get back its original popularity if the message of its excellence reaches the public. Knowledge of historical wine-producing regions constitutes a part of basic education and wine-marketing could take important measures to spread it since good products need to be sold properly and consumers require information about wines – with gastronomy – and wine producing regions.
With foreign invested capital, advantageous changes have been started in Tokay-Hegyalja. However, there is much still to do in order to produce, sell and consume Tokay wine on such conditions that are really worthy of a Hungaricum. It is essential to approach the famous oenologists of Europe and the world and to establish suitable production conditions for every winegrower. In addition to following consciously prepared wine-marketing directions, our country needs to make an expected name for this Hungaricum. These aims are important mainly because of approaching EU-accession. There is timely to study on what conditions Hungarian viticulture and oenology could access. It would be a great success of the Hungarian delegation if they could make current Hungarian laws of Tokay-wine-production accepted in the EU. Of course, all of these would be valid after EU-accession. During the pre-accession period, our country needs to fulfil several stipulations. For example, origin-protection, establishment of a registry system, law harmonisation, development of an institutional system.
Strengthening of home consumption has always been an inspirational tool in a product’s life cycle. It is important not only to take the requirements of foreigners into consideration and to produce for export, but we also need to satisfy the home market. Considerable stress should be laid on establishing and preserving viticulture. Increasingly, buyers expect high standards and they are ready to pay more for quality wines. They also demand appropriate professional information and consultation. So there is a lot to do and theoretical approach should be followed by action. In order to get to know what quality expectations exist, we have to examine the consumers of the Hungarian wine-market. Study of the Hungarian people’s consumption behaviour, referring to Tokay „aszú”, was closely connected with my work.
Participants of my study were consumers who buy Tokay „aszú” mainly in shopping centres, supermarkets and low-price shops specified for wine selling. Wine shops have important roles as they give opportunity for salespersons to make closer relationships with buyers. These shops could be communication channels of spreading wine culture. It would be favourable if in every town or city there were at least one wine shop giving the opportunity of consultation besides commercial activity and also providing services that support the improvement of wine culture’s position. The majority of questioned people spend less than 4.000 Forints on buying of Tokay „aszú” in a year. Results of the questionnaire survey support the fact that there is a demand for these wine-specialities, but lack of money strongly effects demand.
The Following summarises the history of Tokay wine, tasks of Hungary and the expected effects relating to EU-accession. Regulation of oenology and the wine-market, referring to quality wines and main results of the survey are also overviewed in the text. -
Effect of vitamin e and selenium supplementation on the antioxidant content of milk and dairy products in dairy cows
9-12Views:271In 2007, the aim of the Ányos Jedlik program and the call for tenders was to support application-oriented, strategic research and development projects, which can increase the competitiveness of the Hungarian economy. In the framework of our project, we intended to examine whether non-protected antioxidants - in this case: vitamin E and selenium – used as feed-additives can increase the antioxidant content of milk. The milk with an increased level of vitamin E and selenium content can be used for producing functional foods which will represent competitive products on the current market of milk products. Our results show that the use of vitamin E and selenium as feedadditives can significantly increase the amount of vitamin E and selenium in the milk and also in the diary products.

The economicalness of apple production in view of post harvest technology
125-131Views:271This study analyses how the level of postharvest technology’s development influences the economic efficiency of apple production with the help of a deterministic simulation model based on primary data gathering in producer undertakings. To accomplish our objectives and to support our hypotheses three processing plant types are included in the model: firstly apple production with no postharvest and prompt sale after the harvest, secondly parallel production and storage combined with an extended selling period and thirdly production and entire postharvest infrastructure (storage, sorting-ranking, packing) with the highest level of goods production and continuous sales. Based on our results it can be stated that the parallel production (plantation) and cold storage, so the second case is proved to be totally inefficient, considering that the establishment of a cold storage carries enormously high costs with resulting a relative low plus profit compared to the first type of processing plant. The reason for this is that this type is selling bulk goods without sorting-grading or packaging; storage itself – as a means of continuously servicing the market - is not covered properly by the consumers. Absolute efficiency ranking cannot be established regarding the other two processing plants: plantation without post-harvest infrastructure resulting lower NPV, but a higher IRR, DPP and PI as developing a plantation and a whole post-harvest infrastructure. Former processing plant type is favourable considering efficiency ratios describing capital adequacy, while the latter is in terms of income generating capacity.

Investigation of harvest index influencing agrotechnical and botanical factors in hairy vetch (Vicia villosa Roth.)
123-128Views:380The biggest problem of Hungarian crop farming is mass production and the simple crop rotation based on cereals. There was a decrease in sowing area of protein crops which raises crucial issues in crop rotation and land use. Therefore, growing papilionaceous plants, which are now considered to be alternative plants, should be taken under close examination. Hairy vetch (Vicia villosa Roth.) belongs to the family of papilionaceous plants and it can be grown in light weak soils.
In Hungary, hairy vetch was used as green forage at first, but it later became a green manure plant. Nowadays, it is used as a cover crop and its sowing seed has a good export market. In low fertile soils it is able to produce a big amount of green yield (25–40 t ha-1) even in spring while its seed yield could be 0.4–0.5 t ha-1 at farm level. In addition to its morphological characteristics hairy vetch is grown mainly with a supporting plant, i.e. triticale in many cases.
Our purpose was to test the harvest index and its agrotechnical and botanical factors of hairy vetch in different cropping systems.

Status and Prospects of Integrated Pest Management in Apple Production in Hungary
307-316Views:163Farming methods supporting the ecological function of agriculture will play an even more dominant role in the near future than they do now, as much in Hungary as in the rest of the EU.
Several farming techniques supporting sustainable development have already evolved, and in this essay, I deal with integrated production i.e. integrated fruit production in Hungary and its perspectives. I analyze both European and Hungarian regulations on integrated production and their development.
It is obvious that in the orchards of Europe, integrated production is gaining ground. We can expect the increased spread of this western trend to Hungary, too, because one of the conditions for remaining on the market will be a product from integrated production. However, we cannot expect any rapid increase in the future. In my opinion, there are three ways to propagate integrated production:
− changes in the approach of farmers;
− vocational training of farmers because of the greater „knowledge-demand”; improving the consultant network;
− strict monitoring of the production process. -
The comparative evaluation of the preparedness and development of graduates

consulted did not pay too much attention to this fact. When asked about the particular fields of further studies, only a small proportion of the respondents regarded the development of their
personality important. I think to dissolve this paradox is necessary as without the development of personality it is impossible to improve interpersonal skills, that is one of the basic pillars of good performance at work. Regarding that it is the graduates who fill managerial posts, dealing with people belongs to one of their tasks.
Among the respondents if the first degree were from a college and not from a university, the greatest proportion of those studying further would live in Heves and Borsod-Abaúj-Zemplén counties. However, this connection cannot be proved in Budapest. Individual motivation is the main drive of studying further after obtaining a degree in a greater and greater proportion.
The graduates’ studying further is significantly directed to acquiring extra knowledge rather than a totally new profession and they get a deeper insight into the knowledge necessary for
their profession driven by their own motivation. -
Economic Assessment of Biodiesel Production for Hungarian Farmers
72-76Views:163Utilisation of oil of plant origin as a fuel is gaining acceptance in the European Union and elsewhere. Besides environmental protection, energy saving, and decreasing over-production of food. Additionally, the subsidisation of farmers and the development of rural sub-regions also contribute to its spread. This study specifically focuses on the direct effects biodiesel's raw materials and final products are now having on farmers, while reviewing and quantifying these effects. I have purposely restricted my analysis to these two elements of the biodiesel chain.
The biodiesel chain seems to be a great method for improving the economic and social position of participant farmers in many ways. Presently, the profitability of raw materials’ production looks to be the crucal point in the chain, and could be strengthened best with intensive, habitat-specific agrotechnic. It would only be possible to reach a favourable profit margin for farmers if yields reach unrealistic averages or if there is a significant hike of the 2000 producer’s price in the oil plant branch.
The main attraction of sunflower- and oilseed rape production lies in the stabilization of market conditions, which is not only gong to appear in oil plant branch but – thanks to the reduction of outputs – also in the cereal branches. Better economic safety for farmers may play a role at least on the same level as in plant production, which involves more risks than profit maximalization.
The reduction of the prime cost of biodiesel could be possible through the direct combustion of the whole oilseed plant or its residues or electricity production using them. Whereas energy demand for biodiesel production is low (appr. 5%) but it needs subsidization and the prices of natural gas and electrical energy presently look favourable in Hungary. Additionally harvesting and baling of the residues is technically problematic, which is why their use may seem to be reasonable just over the middle or long term. Another possible factor of cost reduction could be the centralization of some partial operations, which needs serious financial resources to reduce amortization cost per product, provided there be several biodiesel projects near each other during establishment. Creation and operation of a logistical system could also be a good method for improving the viability of the biodiesel chain, in order to optimize transport schedule and distances. However there are also some organizational difficulties in this case. -

Production and economic risk analysis of pig fattening
171-176Views:213I prepared a “model farm” producing fattening pigs in order to examine the main risk of production and market factors affecting the profitability of fattening pig production. Values of body weight (at the beginning of fattening and at the end of fattening), mortality rate, feed conversion ratio (FCR) of fattening pig as well as the main cost and price data were recorded as the input data of the model. Production value per unit, production cost per unit and income per unit were used as output. The Monte-Carlo simulation was used in the model for risk assessment. Based on the results of the analysis, it was concluded that the production value per unit was most affected by the selling price of fattening pig (ß=0.972), the production cost per unit were most influenced by the body weight at the beginning of fattening (ß=0.567) and the feed conversion ratio (ß=0.537), in addition, the change of the income per unit was most determined by the previously factors.
