  • The analysing of value measuring features of Hungarian speckled hen

    Our College has been dealing with the crossbreeding of two Hungarian speckled hen breeds, the bare-neck and the featheredneck, to maintain the breeds since 1977. Apart from the gene preservation, we endeavour to find the best way for the production-purpose utilisation of the speckled hen stock. On the basis of our experiments the laying hens can be used in small-scale egg production. As for meat production, these pure-breds cannot compete with the various types of the colour-feathered hybrid constructions available in Hungary. On the basis of the results of the cross-breeding with cock-lines of various hybrid types for direct production purposes we can conclude that the Hungarian speckled hen is suitable as a mother line to produce meat-type chickens in alternative breeding systems.

    Our Faculty has been dealing with the cross-breeding of Hungarian speckled hen to maintain the breed since 1977. We keep two breeds of the Hungarian speckled hen, the bare-neck variant and the feathered-neck type on the pilot farm. Because of the spread of intensive poultry keeping the population of these breeds has become endangered. Beside the gene preservation, we endeavour to find the best way for the production-purpose
    utilisation of the speckled hen stock. We examined the egg production of these breeds.

    According to the data of population density, 98% of Hungary’s territory has rural features. Gaining EU supports, in order to focus on developing the most underdeveloped communities, and in order to decrease – not to increase – the differences between communities, the establishment of priorities and determination of the rank of rural communities based on their development potential is necessary. The claim of measurability arises because of comparison and classification. A possibility or a target area of measuring is analysing population retaining and income producing capability of rural areas.
    To gain adequate, many-sided information about the development potentials of a given community, micro- or macro region, complex condition survey, as well as secondary information completed with empirical data and subjective value judgment is essential. The aim in every case is to gain experience of the present condition via determining the direction of change.
    In this study, I deal with the clarification of the definition of population retaining ability and the ability to economically provide for a population and introduce the most important results of the inquiry with questionnaires completed in the frame of an empirical survey.

  • Organoleptical and instrumental examination of broilers’ valuable meat-parts

    The aim of our study was to compare some meat quality parameters (color,- evenness of colour- and tone of meat) of Ross 308, Cobb 500 and 
    Ross parents hibrids. These qualities are of preliminary importance for consumers and are related to several evaluating features influencing the preparation. The colour of the breast and thigh muscles was measured by Minolta CR-300 type colour measuring equipment. The evenness of color- and tone of the breast and thigh muscles were measured in the laboratory of Campden BRI Magyarország Nonprofit Kft.
    We found that in the females the color of Ross 308 pullets’ breast meat was significantly darker. In the males the darkest breast meat was detectable in the case of the Ross parents hybrids. In neither sexes wast found significant difference – in all but one – in quality parameters of thigh meat.
