We set up experiments for improving the nutritional value of cerealbased products. Our aims were to decrease the energy content of bakery products with the mixing of plant originated raw materials and byproducts with high fibre contents, and we have evaluated the effect of sodium-chloride on the physical properties of bakery products. We found...that the apple pomace, the byproduct of juice production, is excellent for increasing of fibre content of bakery products and the further aim of investigation is to develop economical ways of hygienic byproduct handling and purification. Our experiments, evaluate the bakery use of triticale, have significant achievements and the breads made from triticale flour and whole-grain are commercially available nowadays. Our investigations included the possibilities of decrease of toxin contamination of cereals and our results can form a part of risk estimation systems after further experiments .

The data collected from small-plot trials demonstrates that application of sulfonylurea or selective monoctyledonous herbicides can be effective against the Woolly cupgrass.
As the population of the Earth is constantly growing it generates an unmet demand for protein, which is an urgent problem. The protein extraction process is a potential solution, which offers high-quality plant protein suitable for animal and human nutrition at a favorable price. The process used within our project produces green juice from... the green alfalfa biomass through pressing. After the coagulation of protein from this green juice, the by-product is called DPJ (Deproteinized Plant Juices) or brown juice. Our preliminary results match the international literature, namely that brown juice take up as much as 50% of the fresh biomass in weight. To utilize this by-product is a crucial part of the process to make it environmental-friendly and financially viable as well. The examined brown juice samples came from a small-scale experiment of alfalfa varieties carried out in the experimental farm at the University of Debrecen. According to our preliminary results, brown juice has high macro- and micronutrient values, furthermore, it has a potentially high amount of antioxidant compounds. The study highlights that brown juice is suitable as an ingredient in microbiological media, in plant nutrition as a supplementary solution, for feedstock and for preparing human food supplements or functional foods. The potential utilization of all biorefinery products makes it a very appropriate technology for today’s challenges.
Utilisation of oil of plant origin as a fuel is gaining acceptance in the European Union and elsewhere. Besides environmental protection, energy saving, and decreasing over-production of food. Additionally, the subsidisation of farmers and the development of rural sub-regions also contribute to its spread. This study specifically focuses on the... direct effects biodiesel's raw materials and final products are now having on farmers, while reviewing and quantifying these effects. I have purposely restricted my analysis to these two elements of the biodiesel chain.
The biodiesel chain seems to be a great method for improving the economic and social position of participant farmers in many ways. Presently, the profitability of raw materials’ production looks to be the crucal point in the chain, and could be strengthened best with intensive, habitat-specific agrotechnic. It would only be possible to reach a favourable profit margin for farmers if yields reach unrealistic averages or if there is a significant hike of the 2000 producer’s price in the oil plant branch.
The main attraction of sunflower- and oilseed rape production lies in the stabilization of market conditions, which is not only gong to appear in oil plant branch but – thanks to the reduction of outputs – also in the cereal branches. Better economic safety for farmers may play a role at least on the same level as in plant production, which involves more risks than profit maximalization.
The reduction of the prime cost of biodiesel could be possible through the direct combustion of the whole oilseed plant or its residues or electricity production using them. Whereas energy demand for biodiesel production is low (appr. 5%) but it needs subsidization and the prices of natural gas and electrical energy presently look favourable in Hungary. Additionally harvesting and baling of the residues is technically problematic, which is why their use may seem to be reasonable just over the middle or long term. Another possible factor of cost reduction could be the centralization of some partial operations, which needs serious financial resources to reduce amortization cost per product, provided there be several biodiesel projects near each other during establishment. Creation and operation of a logistical system could also be a good method for improving the viability of the biodiesel chain, in order to optimize transport schedule and distances. However there are also some organizational difficulties in this case.
The market of dairy products is a dynamically developing sector of the food industry. Potential, functional dairy products, made by adding herbs or spices, will have antimicrobial and antioxidant effect due to the active biochemical agents of the plant additives. Furthermore, these active components will widen the storage life of food produ...cts and enhance their organoleptic properties too. We worked out a technology for creating fresh cheeses using a gentle pasteurizing method by treating the mixture of raw milk and 1.5% fat contained in commercial milk. As herb additives, we used citronella (Melissa officinalis), and peppermint (Mentha x piperita) harvested by us and dried them via Tyndall-method in convective dryer on 40 °C for 5.5 hours per day. The drying period took three days. We bought dried citronella and mint from the supermarket, which were dried by ionizing radiation, to compare the microbiological pollution with the herbs dried by us.
The main target of this research was to create a microbiologically stable, potential functional dairy product. However, because of the bad quality of the raw milk and the gentle heat treatment we used for sterilizing bulk milk, or else, cheeses were not safe for human consumption. As a consequence, we need further studies to modify our technology and get a microbiologically stable product.
Today’s programmes aiming at enhancement of fruit and vegetable consumption have been intensified. In the unanimous view of experts, different health problems, such as those of the immune system, inflammations, and even certain cancerous diseases can be prevented and/or cured with regular consumption of fresh (raw) fruit and vegetables. It is... well-known fact that among the biologically valuable components, antioxidant compounds – C- and E vitamins, as well as carotinoides – play an important role. In this field, Hungary can expect success in the future since it has excellent plant genetic stock. Regretfully, national data banks regarding cultivation technology, cultivation areas or varieties for fruits and vegetables and their antioxidant contents do not exist in Hungary. Nevertheless, in connection with the so-called “Hungaricums” its existence would be of urgent necessity. Such excellent Hungarian products are – among others – a lot of sour cherry varietiles, the Szeged green pepper and the Makó onion. They enjoy high priority as “Hungaricums” even in the European Union and such activities that support these kinds of products should be enhanced by intense and consequent research work, which may prove their role as functional foods. Presently’ the USA leads in the research of antioxidant compounds of sour cherry, and so far 17 of these compounds have been found partly in Hungarian varieties. Similar research on green, and ‘pritamin’ peppers have not gone so far since they were limited only for seasoning paprika. In Hungary, studies on onion and garlic have not been performed. It should be mentioned that due to the continental climate, these products may be cultivated, consumed or processed only in a limited period. Taking this into consideration, processing and conserving methods are needed which make the consumption of these fruit and vegetables as functional food possible year-round. Scientific establishment of this set of questions is of current concern, because consumption of these products could have an important role in improving the health status of the Hungarian population in the future.
The microbiological quality of milk is important not only for food safety, but it can also influence the quality of dairy products. In this study, our aim was to assess the microbiological status of the bulk milk of a milk-producing farm, and some natural and flavored (garlic, dill, onion) gomolya cheeses made from pasteurized milk produced by...their own processing plant. We determined the number of coliform bacteria, Escherichia coli, Staphylococcus aureus, and molds of three milk and eight cheese samples. The tests were conducted between July and September, 2017.
In bulk milk, the mean coliform count was 3.83±0.17 log10 CFU/ml; the mean E. coli count was 1.38±0.14 log10 CFU/ml; the mean mold count was 3.74±1.30 log10 CFU/ml; and the S. aureus count was <1.00 log10 CFU/ml, respectively. The mean coliform count in gomolya cheeses was 3.69±1.00 log10 CFU/g; the mean E. coli count was 2.63±0.58 log10 CFU/g; the mean S. aureus count was 3.69±1.35 log10 CFU/g and the mean mold count was 1.74±0.37 log10 CFU/g. The amount of coliforms detected in different flavored gomolya cheeses were significantly different (P<0.05). More than 10 CFU/g of E. coli was found only in the dill flavored cheeses, and S. aureus was found only in dill (3.66±1.86 log10 CFU/g) and onion (3.71±0.52 log10 CFU/g) flavored gomolya cheeses. Based on the obtained results, it was found that the amount of coliform bacteria and E. coli in bulk milk exceeded the limit set in regulation of the Hungarian Ministry of Health (MoH) 4/1998 (XI. 11.) and the amount of S. aureus was below the limit. For gomolya cheeses, the S. aureus count exceeded the limit. The amount of coliform bacteria remained above the limit in cheeses, except for the garlic flavored gomolya cheese. In cheeses, a larger E. coli count was detected than in the bulk milk, but there is no specific limit for cheeses in the regulation. The mold count exceeded the limit specified in the regulation in cheeses, but a lower value was detected relative to milk.
The results show that, in the case of bulk milk and gomolya cheeses, certain detected quantities exceeded the limit values set forth in regulation of MoH 4/1998 (XI. 11.). The results indicate an inadequate microbiological state of the raw material and the finished products. The reasons for these are due to reduced technological hygiene or the inappropriate handling of raw material and finished products. In this study, we have summarized the results of our preliminary studies, which can provide a basis for further hygiene studies.

To the second (exceeds a base-line level from 5 to 10 times) belong Acer negundo L., Aesculus hippocastanum L., Betula pendula Roth and Tilia cordata Mill. The most substantial increase of peroxidation secondary product content (more than in 2.5 times) is peculiar for B. pendula, A. hippocastanum and P. pungens Engelm., that well conforms to the rates of heavy metals translocation, it has however species-specific character.
The Regional Biogas Plant of Nyírbátor was built by the Bátortrade Ltd. The biogas plant contains 6 mezophil and 6 thermophil fermentation tanks, because the biogas production is based on mixed compositions. The regional plant is a multifunctional system. It produces agricultural products and biogas with high methane content. The utilization... of biogas is also accomplished here; gas-engines transform it to electricity and
heat-energy. The product electricity is used by the local plants, the surplus is sold.
The aim of the research is the examination of the quality and quantity of the input materials that put into the mixers and follow the seasonal, periodical and optional changes of the input materials. The analyzation of the quality and quantity data can give an answer to the optional changes of biogas production because the input materials determine the composition of the examined recipe. The C/N ratio was between 11-13, the maximal value of the biogas yield was observed by 12.35 C/N ratio.
In pot experiment the effect of different bacterial fertilizers on some soil properties, and the amount of plant biomass were studied. The
experiment was set up in 2010 at the Department of Soil Science and Agricultural Chemistry, in a three replications in a random block design. The ryegrass (Lolium perenne, L.) was used as a test plan
The results of the study were the following:
– The bacterial fertilizers - by basic treatments NPK - had significant positive effect on the AL- soluble phosphorus content of the soil.
– The soil phosphatase enzyme activity was increased in all cases strongly by the microbial preparations used, the greatest impact was the Bactofil A bacterial fertilizer.
– The plant educed P values significantly increased by the effect of microbial products, in addition to the fund NPK. In this case, the EM-1 and Microbion UNC bacterial fertilizer were the effective.
– In case of the rye-grass biomass none of the bacterial preparations used caused any significant changes, either alone or when used them with straw treatment.

Efficiencies of various animal production sectors, poultry, pork, beef, mutton meat, milk and eggs and their environmental footprints are compared, summarizing the most important research results concerning UK, USA, OECD evaluations. Intensive systems using highly productive plant and animal population will play an even more important role in the future especially in poultry, pig, milk and aquaculture production system being efficient users of resources (feed, water, land) and the environmental foot print is smaller per unit product.
Significant part of not cultivated area of Hungary is not suitable for agricultural utilization because of industrial
pollution. Technologies of biorefinery make reutilization of contaminated areas possible. Biomass of plants
produced on polluted soils can be raw material of valuable products. Applicability of biorefinery was tested on a<
utilization was aimed to obtain cosmetic ingredients, pharmaceutical agents, and precursors. During our research
work 88 plant species and varieties were produced and tested for potential utilizable components. Levels of
possible contaminants in these plants were monitored, and amounts of carbohydrates, protein, organic acid and
cellulose were determined as well. Different plant extracts were tested as potential sources of biologically effective
components or as raw materials for lactic acid fermentation. Our results show that biorefinery is a real possibility
for utilization of polluted areas. Numerous plants could be cultivated on contaminated areas without increased
levels of contaminants in their tissues, thus they can be sources of valuable compounds.
This study presents the yield results of some French bean varieties in organic and conventional farming. This study presents the advantage of organic farming in environmental point of view and in nutrition. Sale of organic products is insured, there is solvent demand rather in abroad than in Hungary.

In the first trial, variety comparison with 9 yellow podded French beans in organic and conventional farming was conducted. Varieties: Carson, Cherokee, Debreceni sárga, Goldmine, Héliosz, Minidor, Sonesta, Sundance és Unidor. The following parameters were observed: the time of emergence and flowering, number of plants per plot, plant height and flowing green harvest. We weighed yield of the standardized, un-standardized and diseased pod fractions. The results were evaluated statistically with SPSS and Excell softwares.
Emergence had all at once, but the plants of organic farming were 5 days earlier at flowering and maturity, than conventional farming.
The plants in organic place were more developed than in conventional ones. Emergence was more uniform, the growth and the number of plant were square. Significant difference was not detected in plant height between two places. Most of the varieties examined had better total yield in organic place, than in conventional ones. Deviation depended on variety. ‘Sonesta’ and ‘Debreceni sárga’ had the best yield in both places. In
conventional farming choice can be expanded with ‘Unidor’ and ‘Sundance’. In organic farming choice can be expanded with ‘Minidor’ and ‘Carson’.
In both places the Sonesta, Debreceni sárga and Unidor varieties had the most standardized yield per hectare. In organic place Carson variety had good pod yield because it was infected less by diseases.
In the another trial we studied inside content values of some varieties on organic and conventional places. The parameters were observed: dry matter-, starch-, crude fibre-, crude protein content and amino acid content.
The rates of asparagin or glutamine acid were the highest, which was followed by serin or histidine. In asparagin content was the most deviation between conventional and organic farming.
Significant differences were between varieties in dry matter-, starch-, crude fibre-, and crude protein content both on organic and conventional places. Each variety had significant differences between organic and conventional farming.
Starch had strong and negative correlation with dry matter, crude fibre and crude protein content.
Budai piaci and Minidor varieties and BU-16 variety candidate had higher starch content and lower dry matter, crude fibre and crude protein content on organic place. Sonesta variety had almost equal dry matter content on both places, but crude protein content was higher with 10% and starch content was lower with 6% on organic place, than on conventional place. Paridor variety had almost equal starch content, but it had higher dry matter and crude protein content on organic place.
The use of microbial inoculums is a part of sustainable agricultural practices. Among various bioeffectors, the phosphorus-mobilizing bacteria are frequently used.
The objective of this study is to investigate the effect of some industrial biofertilizer inoculums, of containing P-mobilizing bacteria on the quantity and some quality para...meters of tomato fruits. Spore-forming industrial Bacillus amyloliquefaciens FZB42 (Rhizovital) as single inoculums and combinations with other Bacillus strains (Biorex) were applied on Solanum lycopersicon Mill. var. Mobil test plant. Soil microbial counts, phosphorus availability, yield and fruit quality, such as total soluble solids (TSS) content and sugars (glucose, fructose) were assessed. The results found that single industrial inoculums of FZB42 product had positive effect on P-availability and fruit quality in the pots. Fruit quality parameters, TSS content, soluble sugars were significantly improved (p<0.05). Such better fruit taste was correlated significantly by the most probable number (MPN) microbial counts. Use of such bioeffector products is supported by the positive interrelation among measured soil characteristics and inside healthy quality parameters of tomato fruits.

Environmental pollution is a global problem of our age. In agriculture, the most important thing is to preserve the ideas of sustainable development, because only these can ensure the protection of production resources, which will ensure the continuous production of agricultural products. Present environmental conditions pose a more problematic challenge to agriculture.
Studying the use of natural extracts or biostimulants in improving vegetable plants is the current needs as an alternative way to the use of chemical products. This experiment was carried out to evaluate the effect of Moringa oleifera leaf extract (MLE) as a natural growth regulator on bulb diameter, weight and y...ield of onions ‘Texas Early White’ cultivar. Therefore, three concentrations (control, 2%, 4% and 6%) of MLE and three different onion set sizes [small (3±1 g/set), medium (6±1 g/set), and large (10±1 g/set)] were prepared in a randomized complete block design with three replications and plant spacing 20×15 cm. MLE was applied as a foliar spray directly onto the plants with the amount of 25 ml/plant every two weeks from sprouting to maturity. The achieved results indicate that the interaction of foliar spray with moringa leaf extract 4% and large set size of 10±1 g/set gave the highest value of the total yield 4802.7 g m-2, while the lowest yield 1531 g m-2 was recorded in the interaction of control and the smallest set size of 3±1 g/set. Also, a significant difference was recorded in bulb diameter separately. Thus, the largest bulb diameter 68.90 mm was obtained from the planting of the largest set size 10±1 g/set with 4% of MLE while the smallest bulb diameter 38.40 mm was recorded from the smallest set size 3 ±1 g/set with control treatment. Similarly, a significant effect was recorded in both set size and MLE separately. The highest bulb diameter 58.71 mm was achieved in the planting of the largest sets 10±1 g/set, while the lowest diameter was 42.12 mm in the planting of the smallest set size 3 ±1 g/set. Similar results were recorded for the bulb weight and total yield. The concentration of 4% MLE produced the highest bulb weight 99.74 g/bulb and yield 3324.5 g m-2, while the lowest bulb weight and yield was obtained in the control treatment 55.61 g/bulb, and 1869.3 g m-2. Consequently, the results indicate the positive effect of Moringa leaf extract which can be applied as a natural substance in the form of foliar spray at critical growth stages to improve the growth and yield of dry onions.
In Spring 2005, the owner of the Szalka-Pig Ltd. of Mateszalka, decided to import the willow species Salix viminalis L. and to create a plantation for energy production purposes on the humid arable lands in his ownership. In 2006, he enlarged this area by 43 hectares. The owner further decided not only to plant this species on the more adherent... (KA 70), but also onto the incoherent structured sand (KA 30-35). His main argument was that the cost of coal tar derivatives as energy sources was rapidly increasing in Hungary, so he needed to find a cheaper energy source for the drying of his products and for the heating of his buildings. He also planned to change his gas and oil heating equipment.
The willow’s cropping technology is being established in our country. One of our tasks is to work out an adequate weed control plan. The professional and safe use of herbicides can increase the success of production. In our paper, we discuss the data collected on treatments applied in the pre-emergent stage. The applied herbicide combinations (terbutilazin+S-metolaklór, mezotrion+ S-metolaklór, pendimetalin+S-metolaklór, oxyfluorfen+ S-metolaklór) yielded good results in large scale experiments.

In corn it can be applied incorporated before sowing or with row-cultivator or applied with postemergent timing in tank-mix. In postemergent timing need precipitation for long effect. In oil seed rape and autumn cereals the N-Lock should be applied with liquid nitrogen in tank mix late winter or early spring (February-March). The dose rate is 2.5 l/ha. N-Lock increases the yield of maize, winter oil seed rape, winter wheat and winter barley 5-20 %. The yield increasing can be given the thousand grain weight. In case of high doses of nitrogen it can be observed higher yield. The quality parameter also improved, especially the oil content of winter oil seed rape and protein and gluten contents of winter wheat. The use of N-Lock increases the nitrogen retention of soil and reduces nitrate leaching towards the groundwater and the greenhouse effect gas emissions into the atmosphere. The degradation of the applied nitrogen is slowing down and the plant can uptake more nitrogen in long period. The effect of N-Lock the nitrogen is located in the upper soil layer of 0-30 cm and increasing the ammonium nitrogen form. The product can be mixed with herbicide products in main arable crops.
By joining the European Union, Hungary made a commitment to increasingly utilize renewable energy sources. Keeping in view the agricultural circumstances of Hungary, we can state that biomass utilization has, overall, the greatest range of possibilities to use its products as ‘energy sources’. Biomass raw materials are useful in meeting emi...ssion control regulations for environment protection and to reduce climate change. The role of biomass production in spatial and rural development and in rural employment, and also in the decrease of Hungary’s energy dependence, supports development in biomass energy use. My aim in studying biomass utilization is the creation of a micro-regional level, decentralised, agro-energetic system-model for the use of plant and animal biomass for energy purposes, whether naturally or by anthropogenic activity, on agro- and sylvicultural areas, and on animal breeding farms. This model simulation method serves as a planning base for policy-makers during the spatial planning processes. The examination is presently in the stage of data collection. The collection of the basic data of the examination area and the purchase of the necessary equipment, materials and maps has already started. Contact has been made with local stakeholders, municipalities, municipality associations and micro-region managers.
Pesticides play a key role in fighting weeds, pests and parasitic fungi. According to surveys, pests reduce the yield of agricultural crops by 35% worldwide. Pests, fungi and weeds account for 14%, 12% and 9% yield loss, respectively (Gáborjányi et al., 1995). Chemicals have contributed to increasing and maintaining the yields of crop product...ion for decades. Today, agricultural production (in spite of many efforts) is unthinkable without the use of pesticides (herbicides, insecticides and fungicides). On the other hand, these chemicals contribute to the pollution of the atmosphere, surface and underground waters, and agricultural soils, especially if they are applied improperly.
The sustainable agricultural production pays attention to environment-friendly cultivation-technologies; but at the same time it makes an effort to produce good quality and economical products. The examination of the herbicides’ secondary effects, fits into this chain of idas namely, how the herbicides affect – stimulating or inhibiting – the soil microbiological processes, prevention of soil fertility.
In the course of the experimental work the effect of herbicides on soil biological properties were examined in different maize (Zea mays) cultures. We wanted wished to know that how the herbicides affect the quantity change of soil microorganisms, the life of different physiological groups of bacteria and the activity of microorganisms. A small pot experiment was set up in 2008 with the application of two herbicides - Acenit A 880 EC and Merlin 480 SC – in the breeding house of the Department. The moisture content and nutrient supply were at optimal level in the experiment.
On the basis of results the following can be stated:
1. It can be stated that the two herbicides and all their doses affected negatively the number of total soil bacteria, the
inhibiting effects were significant. The quantity of microscopical fungi increased by the effect of Merlin 480 SC and decreased in the treatments of Acenit A 880 EC.
2. The Acenit A 880 EC had stimulating effect on the nitrate mobilization. The CO2-production was stimulated by the basic doses of herbicides; the other treatments did not influence the CO2-production significantly.
3. The quantity of microbial biomass-carbon –except for only one treatment- decreased significantly by the effect of herbicides. Besides it, the quantity of microbial biomass-nitrogen increased significantly in the treatments of Acenit A 880 EC.
4. The biomass of test plant decreased in the treatments of herbicides, their quantities were smaller than in the control. In the pots treated by Merlin 480 SC, parallel with the increase of doses decreased the quantity of plant-biomass.
Bioenergy and biofuels are very important in today’s energy policy. These kinds of energy resources have several advantages against fossil fuels. Environmental protection is a cardinal point of widespreading these technologies but the economic considerations are important as well. In order to improve the rate of the renewable energy in the en...ergy consumption, the European Union settled down a program which determines a minimum ratio of renewable energy in the energy consumption for each member country of the EU. To fulfil the requirements bioenergy and biofuels should be produced. This production procedure needs adequate stocks which are commonly agricultural products.
One of the promising stocks is sorghum. This plant fits for bioethanol production due to its juice content being rich in sugar. In this study six sweet sorghum hybrids, two sudangrass hybrids and a sudangrass variety have been evaluated to determine their theorical ethanol production capacity.
On the score of the results of the year 2009 it can be set that sudangrasses have a lower theorical ethanol capacity than sweet sorghums have. In the case of sweet sorghums 1860.29–2615.47 l ha-1 ethanol yields had been calculated, while the sudangrasses had only 622.96–801.03 l ha-1. After that throughout three years (2011–2013) the sweet sorghum hybrids have been evaluated in order to determine the fluctuations of the ethanol production capacity caused by the impact of the years. As a result 2425.44–4043.6 l ha-1 theorical ethanol capacities have been calculated, which means that sweet sorghums can be an adequate stock to produce bioethanol.
Efficient plant production requires modern production technologies, including a nutrient supply of a scientific basis. The harmonic nutrient supply of quality products that are required by market demands can be produced by the optimal combination of a compound system of requirements. These requirements are partly preparatory (soil investigation...s, yield measurements, preparation of digital field maps) and are partly based on the knowledge of the most significant characteristics of the applied nutrients. Most artificial fertilizers are applied by spinning disc fertilizer spreaders all over the world, therefore, it is advisable to use them in Hungary as well. Importantly, these machines should be well adjustable, capable of the exact measurement and control of the spread quantity, as well as of even spreading. My report has investigated only the most significant technical requirements affecting the even application of nutrients.
