  • Exploration of relations among the members of the supply chain on the basis of relationship indicators

    Today the various business units on the market are not competing individually against each other, but doing this as members of a supply chain, which are delivering the products or services to the customers with coordination. The participants are cooperating in the process of purchasing, production and sale. Their common objective is to deliver for the consumer demand. The supply chain approach of the enterprises is a business philosophy, which requires trust, commitment, coordination, shared objectives, support from the management, and the understanding and acceptance of the mutual dependence (Német, 2009). The main objective of our study is to analyse the relationships among the players of the supply chain through several relationship indicators, such as trust, economical satisfaction, social satisfaction, compelling power, non-compelling power, dependence, reputation and conflict. The relationship among the players of the supply chain has been analysed from two aspects, through the position and through the role of the players of the supply chain. This study aims to present the results of the analysis highlighting the critical points.

  • Complex problem analysis of the Hungarian milk product chain

    Hungarian dairy sector went through significant changes in past two decades. The most significant changes were caused by our accession to the European Union. In Hungary milk production remarkably declined after EU accession. The size of our dairy herd has been practically reducing since the political transformation, but increasing yields per cow could compensate it in some way and for some time. However, in recent years, increasing yield per cow came to a stop and in parallel, the number of cows declined further and faster. Low prices, high production costs and tightening quality requirements ousted several producers from the market in past years. Feeding cost represents the highest rate in cost structure of production, but animal health expenditures and various losses are also significant. There are undeniably competitive disadvantages in the level of organisation and labour productivity; however competitiveness already depends on cost effectiveness in the medium run. In Hungary concentration of the dairies is relatively strong in spite of the relative high number of corporations. The dairies compete with each other and with the export market for the raw material and the better exploitation of their capacities. Applied technology of the Hungarian dairies lags behind the Western-European competitors’; in addition they have handicaps in efficiency and product innovation. Presence of chain of stores being dominant in sale of milk products does also not favour in all respects to the position of the dairies. The aforementioned retail chains are namely consumer-centric, engage in price follower conduct and weaken the position of the dairies with their private label products. As a result of increasing import of milk and milk products Hungary became a net importer in recent years. Today, disposable income still essentially determines the consumption habits of price-sensitive consumers. Loyalty for Hungarian products is not typical, consumers are open for import products being preferred by retail chains. In addition Hungarian milk and milk product consumption is about half of the Union average and it is far behind the level being necessary for healthy eating. In Hungary lack of competitiveness and vertical integration relationships and backwardness are revealing among the dairy farmers and the dairies, while chain of stores are in unprecedented “monopolistic situation”; the whole sector can be characterised by defencelessness. 

  • Examination of the Effect of Transaction Costs in the Hungarian Beef Sector

    technical and economic characteristics, which give rise to high levels of uncertainty and greater control in the supply chain. In order to investigate the role of different transaction costs in marketing behavior, we carried out research in the central region of Hungary among beef retailers and wholesalers. This research is based on primary data collection and examines the motivation of choices in the beef sector on distinction among different marketing channels and the role of transaction costs in procurement. Since this case can be regarded as a qualitative choice situation the hypothesis that transaction cost’s variables are significant is judged by the application of multinomial logit model in order come up with the variables that can influence the supply chain structure and the choice of different marketing channels. This analysis enabled us to explore the structure in data and confirm or reject the expected interrelations of causative variables. Our

  • Qualitative detection of genetically modified organisms in plant samples

    We analysed the GMO content of corn samples by polymerase chain reaction following the appropriate optimization of the reaction. The analysis included two main steps: extraction of DNA from the sample, and detection of the GMO content by polymerase chain reaction. The polymerase chain reaction is an in vitro method to multiply chromosomatic or cloned DNA (cDNA) sequences through the enzymatic pathway. The reaction is sensitive enough to produce DNA in sufficient amount for the analysis from a single DNA. We identified the PCR products by agarose gel electrophoresis. When optimizing the reaction, the MgCl2 concentration, reaction time and temperature have to be taken into consideration. The temperature of the anellation has to be increased until the highest specificity and yield is reached. If the temperature of the anellation is too high, the primer is linked to non-specific sites as well; in the gel visualization, more lines can be seen at one sample. If the temperature of the anellation is too high, the primer is insufficiently linked or is not linked at all (too few lines in the gel visualization). After optimization, the GMO content in the unknown sample can be determined along with the appropriate positive and negative controls.

  • Economic Assessment of Biodiesel Production for Hungarian Farmers

    Utilisation of oil of plant origin as a fuel is gaining acceptance in the European Union and elsewhere. Besides environmental protection, energy saving, and decreasing over-production of food. Additionally, the subsidisation of farmers and the development of rural sub-regions also contribute to its spread. This study specifically focuses on the direct effects biodiesel's raw materials and final products are now having on farmers, while reviewing and quantifying these effects. I have purposely restricted my analysis to these two elements of the biodiesel chain.
    The biodiesel chain seems to be a great method for improving the economic and social position of participant farmers in many ways. Presently, the profitability of raw materials’ production looks to be the crucal point in the chain, and could be strengthened best with intensive, habitat-specific agrotechnic. It would only be possible to reach a favourable profit margin for farmers if yields reach unrealistic averages or if there is a significant hike of the 2000 producer’s price in the oil plant branch.
    The main attraction of sunflower- and oilseed rape production lies in the stabilization of market conditions, which is not only gong to appear in oil plant branch but – thanks to the reduction of outputs – also in the cereal branches. Better economic safety for farmers may play a role at least on the same level as in plant production, which involves more risks than profit maximalization.
    The reduction of the prime cost of biodiesel could be possible through the direct combustion of the whole oilseed plant or its residues or electricity production using them. Whereas energy demand for biodiesel production is low (appr. 5%) but it needs subsidization and the prices of natural gas and electrical energy presently look favourable in Hungary. Additionally harvesting and baling of the residues is technically problematic, which is why their use may seem to be reasonable just over the middle or long term. Another possible factor of cost reduction could be the centralization of some partial operations, which needs serious financial resources to reduce amortization cost per product, provided there be several biodiesel projects near each other during establishment. Creation and operation of a logistical system could also be a good method for improving the viability of the biodiesel chain, in order to optimize transport schedule and distances. However there are also some organizational difficulties in this case.

  • Challenges in the mangalitsa sector – present and future

    The Hungarian mangalitza pig sector has experienced numerous structural changes in the past few decades. The increased demand in the foreign markets for the mangalitza pork, changes in the domestic consumer perceptions have increase the number of sows and breeders. After the European Union’s accession started a significant growth in the sector, which was due to the target programme from the year of 2005 for the keeping of animals representing high genetic value, as the breed is indigenous. From 2008 continuous decline can be observed. The main reason for the decrease was the drastic growth of feed costs because of the drought damage in 2007, and the global economic crisis. Since 2010, a further period of supports has been in place, it extands the willingness to keep mangalitza pigs and the number of sows continuously increasing. On the basis of the average farm size (58 sows/farm) in 2011 it can be stated, that after our EU’s accession the medium-sized farms became stronger. To evaluate the geographic concentration of the mangalitza livestock it was analysed the data of sow number among the years of 2000 and 2011. The geographic concentration of mangalitza stock has a medium value over each year under the survey period, except the years of 2004–2007, when the values of Herfindahl-Hirschman index (HHI) have low degrees. Due to the subvention period of indigenous breeds it was established more mangalitza farms in different parts of Hungary. Despite of the growth since 2000, numerous problems are in the segment. The aim of the study is to find out the sectoral problems, which are completed with the objectives tree and draw up the main activities to solve the problems. After estimating the SWOT-matrix according to the methodology of the strategic analysis and the discussions with the secretary of National Association of Mangalitza Breeders is prepared the sectoral problem- and objectives tree. The core problem of the mangalitza sector is that the origin of mangalitza products are not certified in the domestic markets. The reason of it is that the breeders don’t request the certificates of fattening pigs, so it can appear not real mangalitza product on the markets as mangalitza. To solve the problems it is drawn up different suggestions in the objectives tree. This analysis is an useful tool for the decision makers in the mangalitza sector to evolve strategic plans on behalf of the efficient cooperations among chain actors.

  • Element content analyses in the Institute for Food Sciences, Quality Assurance and Microbiology

    The role of chemical elements to ensure and promote our health is undisputed. Some of them are essential for plants, animals and human, others can cause diseases. The major source of mineral constituents is food, drinking water has a minor contribution to it, so the knowledge of elemental intake through food is crucial and needs continuous monitoring and by this way it promotes the food quality assurance and dietetics.
    With the evolution of spectroscopic methods increasingly lower concentrations could be determined, so the elemental composition of a sample could be more precisely and fully described. Due to the results the gathered knowledge up to the present is supported and new observations can be done helping us to understand such complex systems as biological organisms are.
    The quality of a food is determined by the full process of its production, consequently it starts with agricultural production so elemental-analysis usually cover the whole soil – plant – (animal) – food chain, by this way the „Fork-to-Farm” precept is true in elemental analysis field also.
    The history of elemental analysis in the University of Debrecen, Centre for Agricultural and Applied Economic Sciences, Faculty of Agricultural and Food Sciences and Environmental Management, Institute of Food Processing, Quality Assurance and Microbiology goes back to 1980s when the so called Regional Measurement Central gave the background for research. The continuous deployment resulted in an obtain of an inductively coupled plasma atomic emission spectrometer (ICP-AES) in 1988, which extended the scope of examinations due to its excellent performance characteristics
    compared to flame atom absorption (FAAS) and flame emission spectrometers (FES). The instrumental park retain up to date correlate to the developing analytical techniques due to acquiring a newer ICPAES in 1998 and an inductively coupled plasma mass spectrometer in 2004 – which sensitivity is three order of magnitude better compared to ICP-AES. The Institute supports the work with its own ICP-AES and ICP-MS since 2011. 

  • Associations analysis of production traits with leptin gene T3469C polymorphisms in pig

    The aim of this study was to define the connection between the leptin (LEP) gene T3469C polymorphism and its potential association with production traits in improved hybrid pigs. The study included data from 397 gilts and barrows from 2 different sample. The polymorphism was identified by using the polymerase chain reaction-restriction fragment-length polymorphism (PCR–RFLP) method with HinfI restriction enzyme. Two alleles of LEP gene were identified: T (0.93) an C (0.07). The analysis of values of production traits, depending on LEP genotype did not reveal significant (P≤0.05) differences. In the examination the loin diameter (between the 2nd and 3rd ribs), the live weight at slaughter and the averege daily gain during fattening were higher at pigs with C allele than pigs with TT genotipe. Accordingt to our data the effect of C allele was favourable in this population, because these animals had bigger bodyweight without valuable change of lean meat percent.

  • Economic Aspects of Bioethanol Production

    Sustainability and multifunctionality look to be crucial points of the future of developed agriculture. Energy utilization of a part of the available biomass perfectly fits in these expectations. Bioethanol production allows for the substitution of the most expensive and most pollutable energy source, gasoline, by agricultural materials. This article contains a complex evaluation of economic characteristics of this method and calculations for the expectable economic effects of a would-be Hungarian bioethanol program. This essay includes the most important technological knowledge, a comparison between bioethanol and the competitive energy sources (gasoline, biodiesel, MTBE) and the most interesting elements of bioethanol programs operating in foreign countries. Introduced are which participants in the bioethanol chain have financial interests and counter-interests under present economic conditions in the spread of bioethanol by the enumerazation of macro- and micro-economic factors. The statements and consequences are based on my own calculatiosn so I am truly interested in any professional opinion.

  • Review on the fatty acid profile and free fatty acid of common carp (Cyprinus carpio)

    Carp or ponty in Hungarian, is considered commercial freshwater fish, which is an adaptable species in both wild and cultured conditions. Carp has high nutritional value content, favorable taste, it is rich in protein, and low in saturated fat. The nutritional content in fish is composed of many chemical constituents and influenced by many factors. One of the components that its content may be different due to internal and external factors is fatty acids, which may vary depending on endogenous and exogenous factors. The endogenous or internal factors include the genetic, size, sexual maturity, and life cycle phase. While microclimate, water quality, quality of food or diet habit, and the amount of available food or starvation are considered as exogenous or environmental factors. Freshwater fish has the ability to convert essential fatty acid into long chain polyunsaturated fatty acid like AA, EPA, and DHA. Most results showed that palmitic acid and oleic acid were the dominant SFA and MUFA in carp both for wild and farmed carp in all seasons. The PUFA for wild carp was mainly dominated by DHA, while on farmed carp by LA. It confirmed that high LA content in farmed carp was related to the diet habit. The amount of lipid and FA were changed in line with the season. Even the statistical analysis showed no significant difference, but some studies showed a contrasting result. Moreover, most obtained results acknowledged that FA tends to decrease during the spawning period. The amount and composition of FA were affected by the total lipid content. The lipid must be broken down into simpler compounds such as FA or FFA for the metabolism of fish. The result of metabolism then transported into the utilising tissue and used as energy.

  • Cytochrome b diversity of Hungarian Botrytis cinerea strains

    In the mitochondrion of eukaryotes, cytochrome b is a component of respiratory chain complex III. Cytochrome b is encoded by the
    cytochrome b (CYTB) gene located in the mitochondrial genome. The fungicidal activity of QoIs relies on their ability to inhibit mitochondrial respiration by binding at the so-called Qo site (the outer quinol-oxidation site) of the complex III. Since their introduction, QoIs (like azoxystrobin) have become essential components of plant disease control programs because of their wide-ranging efficacy against many agriculturally important fungal diseases like grey mould on various crops. QoI resistance primarily arises from a target-site-based mechanism involving mutations in the mitochondrial CYTB. As the management of grey mould is often dependent on chemicals, the rational design of control programs requires the information about the diversity of genes connected with resistance in field populations of the pathogen.
    Monospore B. cinerea field isolates has been collected during 2008-2009 from different hosts in Hungary. PCR fragment length analysis
    indicated the high frequency presence of type large intron in the isolates while in a few strains G143A substitution could also be detected.
    These results indicated the heterogeneity of CYTB in the Hungarian B. cinerea populations, which possibly involve the heteroplasmy of this
    mitochondrial gene, moreover indicates the existence op azoxystrobin resistant populations in Hungary.

  • Association analysis of TNNI1/XbaI polimorphism on carcass quality in hybrid pigs

    The contractile protein, which is encoded by troponin I 1 (TNNI1) gene, is located on the thin filaments of slow fibres in striated muscle. TNNI1 protein is a part of the troponin complex which plays an important role in regulation of muscle contraction by preventing actin-myosin interaction in absence of calcium. According to biological role, this gene can be potential marker for meat production related traits. The aim of this study is to define whether the previously reported gene polymorphism (EU743939:g.5174T>C) is connected with the slaughter traits measured in a standard slaughterhouse of the examined four-line European hybrid. The study included data from 404 gilts and barrows from 2 different samples. The polymorphism was detected using PCR-RFLP (Polymerase Chain Reaction-Restriction Fragment Length Polymorphism) method with XbaI restriction enzyme. In this study the allele frequencies were found as follows: C: 0.84 and 0.808; T: 0.16 and 0.192. Based on result of the present study no significant impact of polymorphisms on production parameters was found.

  • Influence of H-FABP gene polymorphisms on slaughter value of hybrid pigs

    The H-FABP gene was defined as a potential candidate gene influencing the fat deposition traits, primarily the intramuscular fat content. The aim of this study is to define whether the previously reported gene mutations are connected with the slaughter traits measured in a standard slaughterhouse. The study included data from 405 gilts and barrows from 2 different samples. The two chosen mutation (HFABP1: c. 103 T>C, HFABP2: c. 1970 T>C) were detected in one reaction with PCR-RFLP (Polymerase Chain Reaction-Restriction Fragment Lenght Polymorphism) method with HinfI restrictoin enzyme. The allel frequencies are as follows: 103T(H)=0.75; 103C(h)=0.25, 1970T=0.32; 1970C=0.68. A HFABP1 mutation has significant effect on backfat thickness and lean meat % at stable 1 (sample 1), but there were no effect at stable 2 (sample 2). The analysis of values of production traits, depending on HFABP2 genotype did not reveal significant differences. Based on this study we can’t get a clear conclusion on the impact of polymorphisms on production parameters. In the examined flock the allele frequency of mutation in 5 'UTR is identical to the literature data, i. e. the more favorable variant regarding the intramuscular fat content is predominant in the population.
