Evaluation of essential oils by gas-chromatography and a new method: "electronic nose"

The chemical quality of the essential oils is determined by their composition as well as by the complex aroma features. For the evaluation of odour and aroma, sensory tests are practised, especially for applications such as aromatherapy, food industry or perfumery. In the recent studies we investigated eight Mentha origins (populations... of Mentha iperita, M. spicata and M. arvensis) of our genebank collection using a new and effective instrumental sensory evaluation method parallelly with the usual GC analysis.

The results show that the examined mint clones possess different essential oil accumulation levels and special flavour characteristics, too. The GC analysis of the essential oil revealed characteristic differences at both inter- and intraspecific level in the proportion of mentol, menthon, carvon, limonene, menthyl acetate and in two not identified monoterpenes.

In the sensory tests the special complex aroma enables a reliable distinction with a single exception among the populations by the help of the "electronic nose" equipment. The distinction among the samples based on the sensor signals of the instrument — evaluated by multivariate methods — shows a close relation with the detected monoterpene components of the essential oil.

Character association and genetic gain of nine agronomic traits of F1 populations in onion (Allium cepa L.)

F1 populations of half diallel cross were considered for this investigation. Phenotypic component of variation (s2P) was higher than genotypic (s2G), interaction ((s2I) and within error (s2w) components of variation. Trait bulb weight showed the h...ighest values for s2P, s2G, s2I and s2w. The noticeable amount of phenotypic, genotypic, interaction and within error covariation was found in the combination of BW×BY, possibly indicating wide scope of selection for this pair of characters. Genotypic correlations were higher than the respective phenotypic correlations. This situation was also marked in the path coefficient analysis. Bulb yield/plot showed highly significant and positive correlation coefficient with other characters both at phenotypic and genotypic levels. When all the nine characters were included in an index, it exhibited the highest genetic gain as percentage. When a combination of two or more characters was studied in a function, the efficacy was higher than that of direct selection for bulb yield. The combination of five, six, seven or eight characters showed higher percentage of expected gain. Due to significantly correlated with BY and having high positive direct effect at phenotypic level characters viz., LL, BW, PH and NLs is considered as primary yield components. Again combinations of these four characters gave the commendable expected genetic gain of 330.7290% may be considered as important selection index for this material.

Epiphytic microbiota of apple in integrated and organic growing

The surface microbial contamination is of great interest in case of fruits, since they are they potential sources of spoilage or foodborne diseases. The aim of this work was to compare the epiphytic microbiota of food safety concern of different apple cultivars as a function of cultivation methods (organic versus integrated), production year an...d place. Investigating 47 samples it was found that the average microbial contamination of the apple surfaces was within a certain range,, practically independent of cultivar, growing area and year. The frequency distribution of the surface bacterial, mould and yeast counts did not show significant differences between growing technologies or varieties. The principal component analysis the samples ranked the apple samples into seven groups on the basis of their microbial contamination level, and the discriminant analysis proved the goodness of grouping. The grouping was independent from cultivars and growing methods. No foodborne pathogen Salmonella spp. and Listeria spp. were found on the surfaces of apples.

Composition and sensory properties of sour cherry cultivars

Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity e...xpressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.

Comparison of apples from organic and integrated farming

Prima’, ‘Gala’, ‘Remo’, ‘Topáz’, ‘Idared’, ‘Releika’, ‘Resi’, ‘Rubinola’, ‘Rajka’, ‘Rewena’ and ‘Florina’ apple cultivars, both from organic and integrated farming, from Pallag and Újfehértó, were compared. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical sca...venging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined at harvest and after cool storage. Organic apples were more acidic, while integrated fruits had mostly higher copper and zinc content. Total polyphenols and TEAC values did not show a significant difference as a function of farming technology. A principal component analysis shows the separation of provenances as well as stored and fresh apples. Results are considered as preliminary.
