  • The effect of different berries in human nutrition

    The aims of this study were on the one hand to compare of examined compounds according to their importance in nutrition and human-health, and on the other hand we made preexperiments to investigate the relationships among antioxidant capacity and the endogenous substances which contribute the antioxidant status of the plants. The following species were involved in the experiment: raspberry, blackberry, black currant, elderberry and sour cherry. These fruits have potent health-promoting antioxidant power. Glucose, fructose, total phenol, formaldehyde and anthocyanin contents were determined in addition to ferric reducing ability. Our results reflected considerable differences in the measured parameters of the analysed species. In blackberries and elderberries the high antioxidant capacity is coupled with low carbohydrate content. Besides the formerly proven correlations between total phenol content, anthocyanin concentration and antioxidant capacity, these parameters also correlated with the measured formaldehyde concentrations, hereby we can follow the methylation /demethylation status of the plant.

  • Investigation of the Antioxidant Effect of Hungarian White Wines and Tokaj Wine Specialities

    Authors investigated the antioxidant effect of wine-phenolics, expressed as total antioxidant status (TAS-value). This property may play an important role in elimination of the harmful effects of free radicals in human body.

    Independently of their polyphenol composition, special quality Tokaj wines did not show extremely high TAS-values. In Tokaj Aszu wines the total antioxidant status was independent of the "puttony" number but was influenced by the length of aging time.

  • Dried fruit quality judging on different sweet cherry varieties grown in Hungary

    The modern consumer's habit needs new material to enrich biological complete human foods. The mueslis contain more and more part of dried fruit. The organic nutrition prefers fruit, grown in that area, where they will be consumed. Therefore we thought on cherries, because earlier, almost all kind of fruit, including cherries, were dried. First of all we collect all sweet cherry varieties grown in Hungary (by the National List), (Harsányi &. Mády, 2005) than they were dried similar way to the dried plum. After a short storage the samples were judged, by different consumers. The aim was to know, which variety gives the best result, i.e. which variety is the most suitable to gather round for dried fruit. At the judging we used the methods, worked out by the National Institute for Agricultural Quality Control in Hungary. Our work shows orders, which varieties were the best, from different point of view. (e.g. colour, size; firmness of flesh, flavour, and total score). The best varieties by total score will be shown and characterised shortly (Apostol, 1996; Beschreihende Sortenliste Steinobst 1997; Brózik & Kállay, 2000; Tóth, 1997; Harsányi & Mády, 2005; Horváth, 2004; Tomcsányi, 1979).

  • Nutritional values of traditional open-pollinated melon (Cucumis melo L.) and watermelon (Citrullus lanatus [Thumb]) varieties

    The aim of our experiments was to investigate the internal quality parameters of some old melon and watermelon landraces or varieties whether they have any desirable characteristics. Measurements were carried out using 8 different types of melon (Cucumis melo L.) and 8 accessions of watermelon (Citrullus lanatus [Thumb]), which were self pollinated under greenhouse conditions. Besides the determination of dry matter content; soluble solids, titratable acidity of the fruit juices, investigation of carbohydrates, total phenol content was measured by spectrophotometer. Total antioxidant capacities were determined spectrophotometrically using the FRAP method. We found some accesions both among melon and watermelon varieties, which could be characterized by outstanding inner content.

  • Comparative study of some nutritionally important components on different cabbage (Brassica oleracea L.) genotypes

    Vegetables of Brassicaceae are especially important because of their inner values, which play a provably positive role in curing and preventing diseases. Cabbage (Brassica oleracea L. convar. capitata provar. capitata) is still today one of the most frequently consumed green vegetables, which is known to brake the absorption of carcinogenous substances and to obstruct cell mutation. Different cabbage cultivars were compared growing under the same circumstance. The level of different carbohydrate fractions and some biologically active quaternary ammonium compounds were determined. In all cases we analyzed the antioxidant capacity of samples characterizing the free radical scavenging capacity.

    Clearly detectable significant differences were found between the varieties tested, which appeared suitable for selecting the most precious varieties for human nutrition.

  • Nutritional aspects of producing fruits organically

    Recent interest to avoid use of agrochemicals in fruit growing to safeguard environmental and human health has stimulated interest in organic fruit production (OFP) all over the world. Organic production requires a holistic approach to agricultural ecosystem management. Because of the perennial nature of orchards, this is not a great departure from conventional orchard management, except that corrective techniques are limited primarily to naturally derived materials. Organic mineral nutrition management hinges on two principles: 1) practices that lead to the build up and maintenance of soil that is biologically active and high in organic matter; 2) supplementing the mineral nutrients provided by the soil with fertilizers from approved sources. Organic orchards should be sited on land with superior soils and preplant soil preparation to increase organic matter and correct any sub-optimal soil characteristics. For successful organic fruit growing the following statement should be considered:Weed management is critical to reduce competition for nutrients and water. Soil and leaf analysis provide the basis for correcting mineral nutrient deficiencies or imbalances in organic production. It may be necessary to use a number of strategies to supply mineral nutrients over the life of the orchard. The slower, natural methods applied require a management approach that is simultaneously patient and dynamic.

  • The impact of irrigation on the yield and tuber fraction distribution of potato cultivars

    Potato is one of the most important plants in human nutrition, it is grown in about 140 countries. As a food, it can be prepared in many ways, it is easily digestable with proteins of high biological value, favourable dietetical-physiological characteristics, high starch content and good taste. An increase in its consumption would be favourable from the dietetical point of view. In Hungary, the growing area of potato has decreased considerably for the last decades and we are lagging behind the Western-European countries regarding yield. The experiments were carried out at the Experimental Site of the University of Debrecen at Látókép between 2002 and 2004. In the large-plot experiment, the yields and the distribution of the tuber fractions were studied for 9 medium early cultivars. The experiment was set up on 50 m2 plots on calcareous chernozem soil. Among the studied cultivars, 3 were of Dutch (Desiree, Kondor, Kuroda) and 6 were of Hungarian breeding ('Góliát', 'Hópehely', 'Kankan', 'Lilla', 'Százszorszép', and 'White Lady'). The experiment was set up in 4 repetitions in a randomized design, two of the repetitions were irrigated while two were non-irrigated.
