Fruit yield quality and quantity are effectively enhanced if healthy vegetative conditions are ensured. These optimal conditions — i.e. the balance between shoot development and yield — can be achieved by the rationalization of the production technologies, such as:

By establishing an improved level of plant nutrient uptake, this will ensure a healthy balance between shoot growth and yield.
In this study, the pollen of 14 sweet cherry cultivars (‘Anella’, ‘Duroni 3', 'Badacsony', 'Cristalina', 'Ferbolus', 'Ferrovia',
'Georgia', 'Hudson', 'Kordia', 'Sam', 'Schneiders’, ‘Spate’, ‘Knorpelkirsche', 'Skeena', 'Summit', 'Sylvia') was used to fertilize the emasculated flowers of sweet cherry cv. 'Regina'. Fruit set...was assessed three times during fruit development: 14 May, 30 May and 27 May 2007. We observed full incompatibility among the 14 cultivars for cv. 'Cristalina', which is in the same S-allele group as cv. 'Regina'. After analysis of our data, we have results about fertilization efficiency of the cultivars. Most of the evaluated cultivars are inadequate to fertilize cv. 'Regina' to a sufficient degree. There were two exceptions, cv. 'Sam' and cv. 'Skeena', where percentage of ripened fruits was above 20%. These two cultivars can guarantee such a pollination, which ensures ample quantity of ripened fruits. Results of this study have proved three other cultivars to be quite good pollinators for cv. 'Regina'. In conclusion, ideal pollinators for cv. 'Regina' could be — apart from above-mentioned two cultivars, 'Sam' and 'Skeena' — cvs. 'Sylvia' and 'Bianca', which was suggested by more literature sources.
We analyzed the relationship to sour cherry quality parameters of average temperature, maximum temperature, minimum
temperature, night and day-time temperature, precipitation and climatic water balance variables. Three cultivars of sour cherry were included
in the selection: “Debreceni bôtermô”, “Kántorjánosi”, and “Újfehé
present only those that proved to be the best fit.We couldn’t find any significant differences in the weather tolerance of the varieties. The data
base of sour cherry quality parameters covers the 1998 to 2008 intervals. The researched parameters were the following: dry matter content
(%), sugar content (%), C-vitamin (mg), total acid content (%). Maximum temperature, the difference of night and day-time temperature and
minimum temperature all have a significant correlation with the investigated quality parameters of sour cherry. Minimum temperature shows
a quadratic relationship with sugar content, while night and day-time temperature differences show the same with dry matter content. The
other weather parameters had a linear correlation with the quality parameters of sour cherry. The research results show that an increasing
amount of precipitation causes decreasing tendency in total acid content of sour cherry, so that increasing temperature has a positive influence
on total acid content. Big differences in night and day-time temperature also has positive effects on the dry matter and sugar content of sour
cherry while the amount of precipitation has a negative effect. High minimum temperatures cause decreasing sugar content respiratory energy
losses are significant if dawn temperatures do not drop considerably.A more favourable climatic water balance has a positive effect on vitamin
C content in cases of a large negative water balance, vitamin C content is generally low.
Numerous apple varieties have been tested parallel with traditional Jonathan varieties during four years, 1990-1994 on three different geographical areas of Hungary. The picking time took place at three different times in a year: ten days before the probably optimal picking time, at close-to-optimal picking time, and ten days after the optimal...picking time. The effect of storage on quality of fruits have been tested in February, March, and April under circumstances of a semi-industrial storage experiment.
The results of experience can contribute to answer numerous current, from point of view of practice important topics:
- The stochastic relations between various fruit quality parameters at different varieties
- The change of fruit — quality during storage
- The effect of different picking date on storage losses
- The possibilities of storage — loss predicting by the utilization of multiple regression analysis.
The most important results of experiences are as follows :
- The starch — degradation test and Streiff — index are well applicable for practical purposes to determine the optimal harvest-date.
- On base of analysis of various losses and physiological diseases the high importance of mass loss is obvious. In the variety Jonnee the earlier picking date considerably increased the mass loss. The effect of variety on mass loss is rather limited. In the Jonathan varieties the Jonathan spot was a rather important physiological disease. The late picking time increased the frequency of Jonathan - spot. At optimal date of harvest at Jonnee the frequency of Jonathan -spot was lower, than at Jonathan M 41. In the Jonathan M41 and Jonnee the importance of scald was rather limited, but in the Wellspur Delicious and Smoothee this disease occurred relatively frequently. In the Smoothee the earlier picking time considerably increased the probability of scald.
- The multiple regression analysis yielded reliable results, fit for prediction of storage losses and diseases on the base of chemical and physical properties, determined at the time of picking.
The experiment was conducted to examine the effect of the foliar application of zinc on yield and crop quality and on fruit mineral composition of cucumber plants (Cucumis sativus cv. Mustang) which were grown in peat in containers under unheated conditions and were not showing visible signs of zinc deficiency.
In the trial the... following 3 treatments were set up in 4 replications: Znl = 0.35 g/litre Zn, as foliar fertilizer; Zn2 = 0.7 g/litre Zn, as foliar fertilizer, control = no foliar fertilization. Foliar fertilization was applied 5 times with 10 day intervals. After their planting out the plants were fertigated daily with water soluble complex fertilisers. Fruits were harvested twice a week, 16 times in all, and were divided into three quality classes (class I, class II and substandard). Shoot length of the plants (plant height) was measured on 3 occasions. Zinc content of the fruits and leaves was analysed at two times.
From the results of the trials it can be concluded that the 0.35 g/litre Zn (0.35 mg/ml) foliar fertilisation had beneficial effect on cucumber both in terms of yield and quality. Under the conditions of the experiment (daily fertigation through drip irrigation) the effect of a more concentrated foliar application of zinc seemed less beneficial.
The zinc content of the fruits showed no evident increase in response to foliar fertilization, while a significant increase was seen in the leaves, particularly with the more concentrated Zn treatment. This indicates that in the case of cucumber zinc, through its assimilation in vegetative parts, has an indirect effect on fruit development.
Today, successful fruit growing depends largely on the security of production. Among the technological elements of a secure growing system, the use of hail protection nets serves special attention. Components of security are the regularity, conspicuous large yields with excellent quality, which determine the prices and profitability as well (Sz...abó et al., 2010). In the European Union, most of the apple growing countries produce higher yields by 10-20% than Hungary. The conditions of better yields are partly due to a more favourable ecological milieu, partly to more developed technologies and serious discipline of the operations. Our own competitiveness could be developed first of all in those moments. As a consequence of global climatic changes, excesses of weather, i.e. hail-storms became more frequent. Different methods of protection against hail are developed abroad but also in Hungary. The examination of effects of the hail protection nets compared with the check without nets has been the purpose of our experiments. The growing system was the intensive one with high planting densities. Fruits of the two subsequent years have been compared as grown with and without hail protective nets. It turned out that in one season when shoot growth was stimulated, the shadowing effect of the net increased in addition the growth and at the same time braked the differentiation of flower buds, which exerted negative effects on yield of the next year. Let alone this phenomenon, the quality of fruits was not influenced by the hail protection net.
In this study, the rate of scab infection and quality parameters (content of vitamin-C, dry matter, sugar, total acids, specific weight, quality index and flesh firmness) of some apple cultivars are given, moreover, the relation between those characters was examined in two environmental systems (organic and integrated) in a rainy season. In the... organic fruit production, scab infection of leaves was significantly higher than in the integrated system, in case of the same cultivars, which means that the rate of decrease in leaf area was heavier in the organic production. Cultivars did not differ statistically in parameters of inner content when the integrated system was compared to the organic one. Results did not show statistical difference between loss of leaf area caused by apple scab and the parameters of inner content, which is attributed to the regeneration of leaf area due to favourable weather conditions. Data on apple scab and inner content of the fruit justify essentially the environmental systems of apple production.
Hungary possesses very good agroecological conditions even in a European comparison. Agriculture and food production is highly important despite its decreasing relative economic significance, since providing high quality and affordable food for the population is a basic social necessity and one of the decisive factors in quality of life. The de...velopment of vegetable and fruit production is of great importance both from a healthy nutrition as well as from a comparative advantage (cheap labour, expertise, production traditions, favourable climate) point of view.Vegetable and fruit consumption per capita is lower than in developed countries, which is a decisive indicator of healthy nutrition, but improvement is continuous and desired. Appropriate quality and quantity in production is a requirement to meet customers’ needs in a highly competitive market from one year to the next. Hungary can only be competitive if production results are improved while risks are reduced. Fruit production is a sector with high capital requirements, risk assessment is very important from a production, investment as well as from a national economy point of view. Our examinations will focus on production risk, which is present in the annual fluctuation of average yields, especially as a result of extreme weather factors.
Tomato (Lycopersicon esculentum Mill.) is the second most important vegetable with one of the biggest producing areas worldwide, and an increasing tendency in Hungary as well. To fulfil the growing demands of the industry the producers must use the most suitable genotypes for the given conditions. In the experiment six genotypes (‘He...inz 1015 F1‘,‘Heinz 9478 F1‘,‘Kecskeméti 407‘,‘NUN254 F1‘,‘Prestomech F1‘ and ‘Rustico F1‘) were evaluated for different quality parameters: fruit shape index (length/diameter), firmness (g cm-2), force needed to tear the skin (kg-1) and consistency of tomato puree (g*sec). According to the results, the ‘Heinz 1015 F1‘ and ‘Heinz 9478 F1‘ were the most suitable genotypes for industrial processing in the mean of fruit quality. Strong positive correlation between consistency of juice and fruit shape index (r=0.891) and firmness of berry (r=0.882) was confirmed. The results have proved the necessity of these quality parameter measurements, which are important for the evaluation of raw material.
On the basis of different experiments the technology of intensive foliar nutrition was studied in apple orchards in the period from 1996 until 2000. Yearly apple nutrition programs based on soil analyses. The foliar nutrition program was prepared in accordance with the soil, fruit analyses and climatic conditions. If needed, certain improvement...s were made according to the analyses of leaves and precipitation in the current year. The richness of the soil and ratios between individual nutrients gradually improved. The foliar nutrition influenced the yield quantity, quality and flower bud differentiation. The yield was doubled and the mean of five years reached 70 tons per hectare. In spite of high yields there were no problems with alternative bearing. The analyses of soluble solids, firmness, fructose, glucose, sucrose, malic acid, citric acid in the fruits and mineral soil composition indicated that the produced fruits were of high quality despite greater yields.
Influence of a three-year-long foliar fertilization on mineral composition of leaf, content of sugars (glucose, fructose, galactose and sucrose) and organic acids (citric, malic and fumaric acid) of sweet cherry (Prunus avium L.) fruits was studied. The experiment was conducted during 2005-2007 in West Hungary on mature cv. `Germersdor...fi 3' grafted on Prunus mahaleb rootstock, planted in 1999. Trees spaced 7 x 5 m, and growing in a calcareous chernozem soil. Trees were foliar-fertilized with potassium (K) as KNO3 and calcium (Ca) as Ca(NO3)2. Potassium spraying was carried out 3 (K1) and 5 (K2) while calcium was applied at 3 (Ca 1), 5 (Ca2) and 6 (Ca3) weeks after full bloom. Beside fruit analysis, complete soil and leaf analysis were done to study the rate of nutrient uptake and its effects on fruit quality. Contents of nutrients of soil and leaf were determined by atomic absorption and spectrophotometric method, while sugars and organic acids in fruit were determined by HPLC. The applied treatments (except K1) had been increasing leaf K significantly compared to the control till ripening. Most of treatments had no significant effect on Ca content of leaf till ripening. From applied treatments only the boron treatments had significant increasing effect on contents of all examined sugars, compared the control. Furthermore, the effect of calcium spraying on the contents of organic acids was significant.
The modern nursery industry requires seed sources of a high quality and regular quantity year by year. Besides the seed sources of processed cultivars (Bartlett pear, Shipley, Elberta peach) special seed orchards are planted with selected seed trees producing high quality and genetically determined seed (hybrid seed or inbred lines). Seedlings...are still the most common commercial source of rootstocks for stone fruits (almond, apricot, peach, plum, prune and walnut). Although clonal rootstocks are spreading, usage of seedlings is still predominant at stone fruits and nuts. For successful seed production and planning of seed orchard the knowledge on floral biology, flower fertility, pollination, blossom time of trees (selected clone or cultivars) used for seed production is essential. In this field very little systematic research was carried out most of the papers were published in the second half of the 20th century. Our mini review gives an overview on the importance of flower fertility in the mating systems applied in seed orchards, and the research results on floral biology of fruit tree rootstocks propagated by seed (Prunus avium, Prunus mahaleb, Prunus armeniaca, Prunus cerasifera, Prunus insititia, Prunus amygdalus, P persica, P amygdalopersica, Pyrus pyraster, Pyrus communis and Pyrus betulifolia) over the last decades.
Strawberry varieties were studied in 3 different growing areas of different soil- and ecological properties in Hungary. We have measured the optical spectra of the leaves together with their nutrient content and performed sensory examinations on the deep frozen and melted fruit. The 6 varieties were Elsanta, Marianna, Spadeka, Symphony, Camaros...a, and Raurica. The 3 sites were Újfehértó, Pölöske, and Kecskemet. Colour of the leaves was characterised by their lightness and dominant wavelength. Under non-optimal soil and ecological conditions the varieties could be distinguished by their colour — the leaves became lighter and more yellow. The fruits did not produce the genetically determined taste if the plant can not grow in optimal circumstances — we found a negative correlation between the leaf colour in flowering time and the fruit flavour. Leaf colour measurements performed in flowering time make it possible to improve fruit quality by changing the nutrient supply between flowering and ripening.
Field sensitivity of 271 European pear genotypes were evaluated in a large variety collection of pear in Hungary during a nine years survey. Substantial differences were detected in the rate of pear scab infection of leaves and fruits. Some 18 per cent of the inspected genotypes remained completely free of infection even in the years with weath...er favouring to the disease. On the other hand, 78 % of the inspected genotypes were infected in some or more extent. The rate of infection was generally higher on leaves than on fruits. 18.6 % of the genotypes inspected were tolerant to leaf infection and their majority (81.1 %) were tolerant to fruit infection. Some one fi fth of the genotypes (19.7 %) were highly susceptible to leaf infection but only minor rate of them (2.2 %) were highly susceptible to fruit infection. There were 44 genotypes that could be regarded as tolerant to pear scab leaf and fruit infection under fi eld conditions. Some of these genotypes may be suitable to commercial pear growing with highly reduced chemical control against pear but their yield capacity and fruit quality should be evaluated.
The interest in wild growing fruits was increased considerably by the pharmaceutical industry, the cosmetics as well as by the food industry. (Stefanovits-Bányai et al., 2004). Elderberry (Sambucus nigra L), sand thorn (Hippophae rhamnoides L.), cornet (Cornus mas L.), dog rose ...>(Rosa canina L. bearing hips) and the Sorbus species (Sorhus ssp.) have been well known medicinal and/or ornamental plants since long. Recently, precious substances have been detected in their fruits, which are indispensable in healthy foods. Several species and micro-species of the genus Sorbus are components of the native flora of Hungary, and the fruit of some of them have been consumed traditionally, however, they are preferably considered as ornamentals. The nursery of Alsótekeres (Balatonvilágos) maintained some 16 clones of Sorbus species, which are mainly apomictic "micro species" of. the collection. In 2003, a comprehensive analysis of sorb fruits born on apomictic micro species was initiated in order to find those, which will be suitable to establish plantations. It turned out that considerable differences exist between the fruits of individual taxa, however, it is largely influenced by seasonal effects. According to physical measurements, a scale of mean fruit masses could be established. As for chemical ingredients of the fruits, those are of special interest, which are involved mainly in anti-oxidant activities of the organisms (calcium, potash, phosphorus, copper, magnesium).
High density central leader systems, the so called "spindle trees" are spreading in intensive stone fruit orchards established for hand picking in Hungary. Results of Brunner (1972, 1990) and Zahn (1967, 1996) inspired the researchers to implement their theories into practice under our climate and special soil conditions. For...sweet cherry it is essential to apply an orchard system appropriate for hand picking because of the European market requirements. In intensive sweet cherry orchards two new training and orchard systems are developed and adapted to environmental conditions in Hungary based on previous inventions. The first step of the development is represented by modified Brunner-spindle, which applies the delayed heading of the central leader and the sectorial-double-pruning system from Brunner (1972), resulting intensive orchard of 600-800 trees/ha density, planted on standard vigour rootstocks. Modified Brunner-spindle trees are developed with a central leader and wide-angled branches on it. Light bearing wood is positioned on the central leader and wide-angled branches. During training, shoots for branches are bent or a sectorial double pruning is used. The growth of central leader is reduced by delayed heading, and the strong upright shoots are pinched in summer. Based upon tree size spacing of 5 m between row and 2.5-3 m between trees is recommended, tree height is around 3.5-4 m. This training system is useful for hand-picking; 60-70% of the crop can be harvested from ground. Modified Brunner-spindle is suitable for either standard or moderate vigorous rootstocks. The cherry spindle is an intensive orchard planted with 1250-2300 trees per hectare and it is recommended for sweet and sour cherries on semi dwarf to vigorous rootstocks, depending on soil fertility and quality. Trees are 2.5-3.5 m high, 75-80% of the crop can be harvested from the ground. Permanent basal scaffolds are developed on the basis of the canopy to counteract the stronger terminal growth. The tree is headed only once, after planting, from the following year the central leader grows from the terminal bud. The central leader developed from the terminal bud results moderated growth in the upper parts of the tree head. The strong upright shoots that may develop below the terminal bud are pinched to 3-4 leaves in the summer or removed entirely. The weaker, almost horizontal shoots growing from the central leader form fruiting twigs in the following year if their terminal bud is not removed. Brunner's double pruning is used only once or twice on the permanent basal branches because of its good branching effect. Trials on various rootstocks are running to find optimum spacing and fruiting wood management. The training and pruning guidelines are discussed in the paper. The average crop of bearing years is around 20-30 t/ha depending on site and cultivars. This new system is spreading in Hungary, around 70 ha sweet and sour cherry orchards are trained according to our guidelines.
'Fuji' apples from five different growing regions in Korea were analyzed for internal and external quality attributes which included fruit shape, color and sugar. Significant relationships were observed between final fruit color (a*) and air temperature in August. Red color was poorly developed where the average temperature in August was over 2...5 oC. The sugar composition was significantly different depending on region. The sucrose content decreased with increasing temperature above 16 oC during the harvest season. The fruit shape was not affected by agro-climatic conditions in this study.
In this paper we introduce our results of three years (2007-2009) investigatio ns carried out in the framework of "Research and development in foodstaff chain" - project of Regional University Knowledge Center by the members of Corvi nus U niversity of Budapest - Department of Pomology and. Research Institute for Fru it growing and Ornamentals.... Budapest-Erd. The main objectives of the project were the followings: submi ssion of sour cherry candidate suitable for industrial process for state approval; determination of physica l parameter and inner content value changes of sour cherry varieties duri ng ripening; evaluation of health care attributes of sour cherry fruit; ripen ing process description by the colour and the force required to pick fruits of sour cherry. We stated that the optimal begi nning and period of the harvest can be determined wi th the fruit removal force. In this period the fruit growth stops. ju iciness rat io does not change. refractions are approximately equal.acidic content turns to decreasing trend.However the proportion of anthocyan in and polypheno l can still increase. Fruits harvested in this period fulfil a wide range of industrial process opportunities. 'Erdi jubileum ·and candidate IV-3/48 according to their inner content values arc suitable for high quality products (containing real fruit material in high proportion).
Earlier results of experiments with paprika grown in soil have shown the high sensitivity of the crop to nutrient supply. According to these findings, yield and also fruit quality are highly affected not only by the nitrogen and potassium level, the concentration of nutrient solution, but also by the nitrogen-potassium ratio. Our preliminary te...sts have also proved, that the composition of the nutrient solution, first of all, the N/K ratio has a definite effect on the yield quantity and quality. Therefore we have investigated the ratio of the two nutrients with the aim of developing a nutrient solution of optimal composition for white fruited paprika forcing. The most balanced burden of the plants was found when the N/K ratio was 1:1. The highest yield was produced with N/K 1:1.3. Significant yield reduction (30%) was found with the treatment N/K 1:1.9 as compared to the 1:1.3 and 1:1.6.
Producing high quality apples in mature trees of the cv. 'Golden Delicious' is rather difficult because of the russeting of it's fruits, especially in seasons of high relative humidity and/or wetness.
Earlier experiments proved the possibility to decrease russeting by treatments of GA4.7 during a period after petal... fall.
Phyl-Gold, a product of Phylaxia Co. (ai. 10 g1-1 GA4.7) was applied to inhibit russet formation in fruit skin of 'Golden Delicious' apples. Four consecutive sprays were carried out (with 10 ppm a.i.) in weekly intervals, starting at petal fall and tank-mixed with the current pesticides of the plant protection program.
Due to the GA4.7 application the russet formation decreased at a rate of economical importance. As for the side-effects of treatments, fruit set was reduced slightly in trees treated, however, there was no consequent influence on return bloom.
: Elderberry used to be a common medicinal plant since long. Its ripe fruit and inflorescence has been collected. Cultivation however, started in Hungary recently, with the early 90-es. Initially, has been planted, the 'Haschberg' cultivar. Our Department started first with the selection of favourable genotypes in the Hungarian spontan...eous populations of the species, we aimed to find clones, which are earlier ripening than 'Haschberg', moreover, superior in any of the agronomical or quality traits. Present study deals with 19 new selected clones by their content of vitamin-C, anthocyanins and their antioxidant capacity. Environmental stresses are inducing, increased, accumulation of free radicals in living organisms. To evoid the harmful effects of the free radicals, we need to consume antioxidant compounds (flavonoids, anthocyanins, vitamins, etc.) In the literature there are quite a few references related to the anthocyanins and antioxidants of the elderberry. Measurements prove that substantial differences exist among the population of the species as for the content and quality of those compounds. In anthocyanin content, the difference between the highest and lowest values was 3000 mg/I, whereas in antioxidant content this value was 6001.1M. Those types, which contained less anthocyanin (<5000 mg/I), produced lower antioxidant capacity, whereas the highest anthocyanin content was associated with the strongest antioxidant activity. C-vitamin content varied between 36.5 and 96.4 mg/100g. These values provide daily human requirements by their consumption. Summing up all parameters, examined the best type was Cinkota 1.
Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity e...xpressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.
The keeping quality of fruits is a very important factor in storage point of view, since it could be elongated the consumption time of fruits. In many cases the storage may be necessary, e.g. in short time it is not able to market due to the rich harvest, or all fruits could sell in markets throughout the year. The keeping quality of various fr...uit species is greatly different; moreover it could be observed some differences between the varieties as well. In our research, we have investigated the spectral properties of the external surface and fl esh of two ripe apple varieties – Jonagored and Granny Smith – before and after storage (about 3°C and about three weeks). The hyperspectral investigation was carried out with AvaSpec-2048 Fiber Optic Spectrometer. The experimental results represented the differences between healthy and chilling injured apple fruits. Furthermore, some indices were created to given countenance to the spectral differences.
Sweet and sour cherry need 550–600 mm yearly precipitation. The critical period is 1–1.5 month after flowering, it is normally between 15.April – 15. June in Hungary. The rain induced fruit cracking is also a critical and costly problem for cherry growers. Fruits grown under arid conditions are less resistant against rainfall during harve...st and up to 50–60% crack damage may occur. A computer program was developed to calculate the precipitation related production risks of sweet cherry. Focus of the research was Zala county. Spatial distribution of precipitation was compared in two directions (East and North of Zala county) based on the data of meteorological stations. The first results indicate that the developed method estimates the risks quite well, compared to the farm experiment results. The developed computer program can be parameterised according to the user’s requirements, this allows to take into account the real variety structure of a given orchard.
Sour cherries are not adapted to long storage. The largest percentage of sour cherries reaches the consumer either directly or indirectly through the tin can or the frozen pack. Different concentrations of ethephon usually are used commercially to facilitate harvesting sour cherry fruits that this hormone influences on fruit quality. The object...ive of this study was effect of ethephon preharvest application on sour cherry fruits quality during storage period at modified atmosphere packaging was investigated. Modified atmosphere packaging used with 10, 15 and 75 percent for 02, CO, and N2 respectively that those held at 0 °C. This gas compounds synchronous to 0 °C temperature caused to increase shelf life postharvest of fruits. Fruit samples were evaluated at harvest date and after 6 weeks in storage. Skin fruit colour, pH, total soluble solids, titrateable acidity, sugar/acid ratio, firmness were monitored. Ethephon concentration influenced on total soluble solid, titrateable acidity, sugar/acid ratio and L* value. In more case, 225 ppm ethephon's concentration has no observable different to control samples. Thus, the best ethephon's concentration was 225 ppm ethephon's concentration.
